ABSTRACT: Effects of sesame oil addition to soybean oil during frying on the lipid oxidative stability and antioxidants contents of fried products during storage in the dark were studied. Flour dough pieces (2 cm × 2 cm × 0.1 cm) were fried at 160 °C for 1 min in sesame oil-added soybean oil. Concentrations of sesame oil in the frying oil were 0%, 10%, and 20% by volume. Fried products were put into a glass bottle, and the bottles were tightly sealed and stored at 60 °C in the dark for 18 d. Lipid oxidation of fried products was determined by fatty acid composition changes and conjugated dienoic acid (CDA) and p -anisidine (PA) values. Tocopherols and lignan compounds in the fried products were determined by high-performance liquid chromatography. Relative content of linolenic acid decreased, and CDA and PA values increased during storage of the fried products in the dark. Fatty acid composition change and CDA and PA values during storage were lower in the products fried in sesame oil-added soybean oil than in the products fried in soybean oil without sesame oil. The results clearly showed that addition of roasted sesame oil to soybean oil at 10% and 20% during frying decreased the lipid oxidation of fried products during storage in the dark for 18 d by extension of induction period and decrease in decomposition of oxidized lipids. Fried products contained 134 to 267 ppm tocopherols and 0 to 148 ppm lignans before storage; however, their contents decreased during storage in the dark. Lignan compounds were more stable than tocopherols, and the rate of tocopherols degradation was lower in the products fried in sesame oil-added soybean oil than in the products fried in soybean oil without sesame oil, which could be because of protection of tocopherols from degradation by lignan compounds.  相似文献

This study investigated the effects of the addition of gardenia seed, green tea, or cactus pear (Opuntia ficus-indica) to rice batter at 10% on the lipid oxidation, pigments, antioxidants, and antioxidant activity of lotus root bugak and frying oil. Lipid oxidation was evaluated based on the conjugated dienoic acid and p-anisidine values. Lipid oxidation and tocopherol degradation were significantly reduced in the gardenia seed-added bugak and frying oil, whereas the cactus pear-added bugak and frying oil showed an increase. The addition of green tea had no significant effects on the lipid oxidation of bugak and frying oil. The in vitro antioxidant activity of lotus root bugak significantly increased with the addition of gardenia seed, green tea, or cactus pear. The results suggested that green tea and gardenia seed could improve the health and food functionality of antioxidation for lotus root bugak, respectively.  相似文献

Loach (Misgurnus anguillicaudatus) from Heilongjiang Province, China, was processed via curing in brine solution and frying in soybean oil to obtain a ready-to-eat fried loach in this study. Some chemical, volatile, and textural indices of the fried loach were assessed to reflect its quality attributes. The fried loach had enhanced protein and lipid contents of 349.4 and 200.6 g/kg, respectively, and increased ash and NaCl contents, as the results of curing as well as frying-induced water loss and oil uptake. The fried loach also had the respective ratios of essential amino and fatty acids to total amino and fatty acids about 39 and 13 %. Protein fraction from the fried loach had amino acid profile similar to that of the fresh loach, indicating the frying had insignificant impact on loach protein. As the result of oil uptake, lipid fraction of the fried loach was different from that of the fresh loach in fatty acid profile, including higher oleic (46.4 vs. 44.8 %) and linoleic acids (12.4 vs. 3.6 %) but lower docosahexenoic (8.7 vs. 10.4 %) and arachidonic acids (0.8 vs. 2.8 %). In comparison with the fresh loach, the fried loach showed increased hardness, springiness, and chewiness by 65, 98, and 385 %, respectively. In addition, twenty-six volatiles of six types and twenty-eight volatiles of eight types were detected in the fresh and fried loaches, respectively; however, the furans and pyrazines arisen from the frying were only detectable in the fried loach.  相似文献

Refined oils including corn, sunflower, soybean, and palm oils as well as low-quality olive oil such as refined lampante and pomace olive oils are commonly used for extra-virgin olive oil (EVOO) adulteration. Indeed, K 270 could be used as a parameter for the detection of EVOO fraud for each type of the studied refined oils, 10 % olive, 4 % pomace olive, 10 % palm, 5 % corn, and 2 % soybean oils. Moreover, the adulteration could also be detected by the increase of the trans fatty acid contents with 10 % pomace olive, 3 % soybean, 3 % sunflower, 2 % corn, and 10 % palm oils. Actually, stigmasta-3,5-diene content is one of the most effective means of detecting refined oils in EVOO at low levels: 2 % olive, 0.4 % pomace olive, 1 % palm, 0.2 % soybean, 0.5 % sunflower, and 0.1 % corn oils. Finally, the application of linear discriminant analysis could represent an alternative and innovative tool for faster and cheaper evaluation of EVOO adulteration.  相似文献

Chips of yam (Dioscorea rotunda) were fried in palm oil heated to 150°C prior to frying as follows: (a) palm oil without ingredients as control, (b) palm oil with 1% pepper (Capsicum annum), and (c) palm oil with 1% salt. The qualities of the oil in the frying medium and the oil absorbed by the fried yam were investigated for 10 fryings. The amount of carotenes in the oil/ingredient mixtures, both in the frying medium and the yam extract, was less than in the control. The peroxide values of samples in the frying media did not indicate either a pro-oxidant or antioxidant role for the ingredients. In samples of oil absorbed by the yam, the salt gave exceedingly high peroxide values but in the pepper samples, peroxides were not detected in six out of 10 fryings. However, high p-anisidine values of samples in the medium and yam extract have put into question the reported role of pepper as an antioxidant. Thus, pepper encouraged the accumulation of secondary rather than primary oxidation products in the oil.  相似文献

The health benefits of phenolic antioxidants justify their inclusion in foods like deep-fried potato fritters that are exposed to high heat during processing. In this study, phenolic antioxidants [quercetin, rutin or an apple phenolic extract (APE)] were incorporated into batters that were subsequently used in the preparation of deep-fried potato fritters. The fritters were deep fried at 180 °C for 2.5 min or 165 °C for 3 min using fresh or used canola oil. The study aimed to investigate the effect of added phenolic antioxidants on the lipid deterioration during deep frying potato fritters. The effectiveness of these phenolics against lipid deterioration was also examined for the potato fritters that have been left in the air at room temperature for 0.5 or 1 h after deep frying. The total oxidation (Totox) value (based on the peroxide value and p-anisidine value) and free fatty acid content of the oil extracted from the deep-fried potato fritters, as well as the total extractable phenolic content, of the fritters were evaluated. Results showed that APE, quercetin and rutin suppressed oil deterioration to different extents, and their effectiveness was influenced by deep-frying conditions, the number of times the oil had been used and the time period that the fritter was exposed to the air after deep frying. For the fresh or singly used oil, the recommended deep-frying parameters are 180 °C for 2.5 min (“high heat short time” approach). For oil used more than once, deep frying of potato fritters at 165 °C for 3 min (“low heat long time” approach) is generally recommended. Adding phenolics to the batter used for making potato fritters before deep frying increases product nutritional value and reduces oil oxidation, which indicates the feasibility of producing healthier potato fritters.  相似文献

Sunflower oil, olive oil, and refined palm oil were enriched with an extract - rich in polyphenols - obtained from olive tree (Olea europaea) leaves at levels of 120 and 240 mg total polyphenols per kg oil. Potatoes were pan-fried in both the enriched and the non-supplemented oils under domestic frying conditions. Total polyphenols were estimated by Folin-Ciocalteu and antioxidant capacity was assessed by the DPPH radical scavenging assay. Tocopherols' content was determined by HPLC analysis, phytosterols and squalene by GC, and oxidative stability by Rancimat. Supplemented frying oils had higher total polyphenols and tocopherols' content, oxidative stability, and antioxidant capacity, while phytosterols and squalene content were not affected by the supplementation. French fries prepared in supplemented oils had higher total polyphenols, tocopherols, phytosterols, and squalene content and exhibited higher antioxidant capacity than those fried in non-supplemented oils. By consuming French fries pan-fried in enriched oils, up to 1.4-, 2.2-, and 1.5-fold increase of tocopherols, phytosterols, and squalene intake could be achieved as compared to those prepared in the non-supplemented oils.  相似文献

The effect of type of frying oil and temperature on the oxidative stability of potato chips during storage was studied. Cottonseed oil, soybean oil, olive kernel oil and palmolein were used as frying media. The chips were packaged in metallized cellophane bags and incubated at 63 °C. At definite time intervals the absorbed oil was extracted and analyzed for peroxide value, Totox number and conjugated diene content. Olive kernel oil and palmolein absorbed into the chips showed better stability, whereas soybean oil presented the higher oxidation rate. Frying temperature (170, 180 or 190 °C) did not affect the oxidation rate during storage, with the exception of conjugated diene formation which was greater for chips fried at 190 °C. Ground oregano or oregano extract, obtained by petroleum ether extraction, were added to the chips as antioxidants. Both retarded significantly the oxidation rate of the oil absorbed into the chips, with results comparable to tertiary butylhydroquinone (TBHQ) during storage at 63 °C for 7 days; however TBHQ proved significantly more effective after that time. © 1999 Society of Chemical Industry  相似文献

To provide efficient antioxidant capacities, proper carriers are needed to protect antioxidants against oxidative stress. Collagen mesh structure or chitosan gel was loaded with α-tocopherol and their effects were evaluated in bulk corn oil or oil-in-water (O/W) emulsion at 60 °C. Added collagen and chitosan enhanced oxidative stability in corn oil and O/W emulsions at 60 °C compared to corn oils without carriers or with addition of α-tocopherol (p < 0.05). Stability of α-tocopherol in corn oil loaded in collagen or chitosan was significantly enhanced compared to that in oils without carriers (p < 0.05). In O/W emulsions, α-tocopherol loaded collagen showed higher antioxidant properties than α-tocopherol loaded chitosan (p < 0.05). Collagen mesh structure and chitosan gel retarded the rates of lipid oxidation efficiently in both food matrices when α-tocopherol was not loaded. Collagen mesh structure and chitosan gel can be useful carriers for α-tocopherol in bulk oil or O/W emulsion.  相似文献

Consumers like fried snacks, and taste, color, and texture are key aspects in their preference. However, during frying of foods some toxic compounds, such as furan and acrylamide, are produced. The objective of this work was to mitigate furan and acrylamide formation in potato chips, without affecting their main quality attributes, by using vacuum frying. To accomplish this purpose, potato slices were fried at atmospheric (P abs 29.92 inHg) and vacuum conditions (P abs 3.00 inHg), using equivalent thermal driving forces (T water boiling point ? T oil = 50, 60, or 70 °C). Furan and acrylamide concentration, oil content, and texture of both atmospheric and vacuum-fried samples were determined. Vacuum-fried potato chips showed reductions of about 81, 58, and 28% of furan, acrylamide, and oil content, respectively, when compared to their atmospheric counterparts. Additionally, the texture was not affected (p > 0.05) by changes in the pressure during frying. Results clearly showed that vacuum frying is an effective technology for furan and acrylamide mitigation in potato chips, since it reduces the content of both contaminants and preserves the quality attributes of fried snacks.  相似文献

This study evaluated contribution of minor compounds naturally present in peppermint (Mentha piperita) to the iron-catalyzed lipid oxidation of oil-in-water emulsion. Emulsions consisted of tocopherol-stripped soybean oil and pH 4.0 citrate buffer (4:6, w/w) with iron. Minor compounds included α-tocopherol, rosmarinic acid, caffeic acid, β-carotene, and chlorophyll b at natural concentration in 400 ppm of the peppermint extract. The emulsions were oxidized in the dark, and headspace oxygen contents, hydroperoxide contents, and p-anisidine values were determined. Addition of phenolic compounds decreased headspace oxygen consumption and hydroperoxide and p-anisidine values of emulsions, however, β-carotene or chlorophyll b tended to increase them. The results suggest that tocopherols at low concentration were the most important to reduce lipid oxidation of emulsions via radical scavenging, followed by high contents of polyphenols via radical scavenging and iron-chelation. Carotenoids and chlorophylls should be precisely controlled even in the dark, possibly due to their oxidation products.  相似文献

本文通过模拟西式快餐门店的煎炸实验,考察了稻米油在快餐煎炸中应用的可行性。通过油脂理化指标、肪酸组成分析及微量成分分析来比较稻米油与棕榈油和大豆油的差异,通过模拟西式快餐门店168℃下煎炸薯条过程中极性物质和酸价的变化,并对薯条进行感官评价,对比稻米油、大豆油与棕榈油的煎炸性能。结果显示:稻米油所含的饱和脂肪酸和不饱和脂肪酸均介于棕榈油和大豆油之间,并且其含有的维生素E与大豆油接近且明显高于棕榈油;另外稻米油还含有12035.74 mg/kg植物甾醇和4359.17 mg/kg谷维素。在煎炸过程中,稻米油的酸价上升速度远远低于大豆油,接近于棕榈油;尽管其初始极性组分较高,但其极性组分在煎炸后期上升比较平稳,至煎炸终点时其极性组分低于棕榈油和大豆油;同时在煎炸过程中,棕榈油、稻米油、大豆油中的维生素E随煎炸时间的延长明显降低,至第6 d对应的含量分别10.01、8.49与2.11 mg/kg;而稻米油中谷维素和植物甾醇含量也随煎炸时间的延长而减少,但至煎炸终点时,仍有较多的保留,含量分别为1531.98和6618.45 mg/kg。另外,感官评价发现,稻米油炸制的薯条比大豆油、棕榈油更酥脆、风味更好,整体喜好度更高。总之,但稻米油具有良好煎炸性能,其煎炸性能明显优于大豆油,可用作西式快餐煎炸油。  相似文献

Effects of temperature on the autoxidation and antioxidants changes of soybean, sunflower, and olive oils were studied. The oils were oxidized in the dark at 25, 40, 60, and 80 °C. The oil oxidation was determined by peroxide (POV) and p-anisidine values (PAV). Polyphenols and tocopherols in the oils were also monitored. The oxidation of oils increased with the oxidation time and temperature. Induction period decreased with the oxidation temperature; 87 and 3.6 days at 25 and 60 °C, respectively, for sunflower oil. The activation energies for the autoxidation of soybean, sunflower, and olive oils were 17.6, 19.0, and 12.5 kcal/mol, respectively. Olive oil contained polyphenols at 180.8 ppm, and tocopherols were present at 687, 290, and 104 ppm in soybean, sunflower, and olive oils, respectively. Antioxidants were degraded during the oil autoxidation and the degradation rates increased with the oxidation temperature of oils; for tocopherols, 2.1 × 10−3 and 8.9 × 10−2%/day at 25 and 60 °C, respectively, in soybean oil.  相似文献

Physicochemical properties and oxidative stability of refined coconut oil (RCO), refined soybean oil (SBO), pure olive oil (POO), and vegetable shortening (VST) during repeated frying of potato chips were determined. Polyunsaturated fatty acids of all the oils significantly decreased after frying. Tocopherols in SBO, POO and VST, and DPPH radical scavenging activities of POO and VST significantly decreased after frying. L* values of the oils significantly decreased, and a* and b* values significantly increased after 80 times repeated frying. Conjugated dienes and p-anisidine value of SBO after 80 times repeated frying were 21.8 mmol/L and 47.7, respectively, the highest among the oils. Levels of total polar compounds of all the oils after 80 times repeated frying were between 8.1 and 9.5%, not exceeding rejection limit after frying. Compositions and contents of alkanals, 2-alkenals, and 2,4-alkadienals in the oils during frying were largely affected by their fatty acid compositions.  相似文献

ABSTRACT: Effects of roasted sesame seed oil on the oxidative stability of soybean oil during frying of flour dough at 160 °C were studied by determining fatty acid composition and conjugated dienoic acid (CDA), p -anisidine (PA), and free fatty acid (FFA) values. Concentration of sesame oil in frying oil was 0%, 10%, 20%, or 30% (v/v). Tocopherols and lignan compounds in the frying oil were also determined by high-performance liquid chromatography. As the number of fryings performed by the oil increased, linolenic acid content in frying oil decreased, and the decreasing rate was lower in frying oil containing sesame oil than in the oil containing no sesame oil. CDA and FFA values of frying oil increased during frying and their relative values to the initial value were lower in frying oil containing sesame oil than in the oil containing no sesame oil. This indicates that the addition of sesame oil improved thermooxidative stability of frying oil, possibly due to the presence of lignan compounds in sesame oil. Tocopherols and lignan compounds in frying oil decreased during frying. As the amount of sesame oil in frying oil increased, degradation of tocopherols increased and lignan compounds degradation decreased. Tocopherols were suggested to protect lignan compounds in sesame oil from decomposition during frying.  相似文献

向大豆油中添加不同量的阿魏酸酰胺类物质(阿魏酸苯乙酰胺、阿魏酸酪酰胺)与不同抗氧化剂(抗坏血酸棕榈酸酯、茶多酚棕榈酸酯、谷维素、迷迭香提取物、混合生育酚)的二元复配抗氧化剂,测定大豆油在不同煎炸时间下极性物质含量,以考察复配阿魏酸酰基抗氧化剂在煎炸过程中的抗氧化能力。结果表明:阿魏酸酪酰胺与茶多酚棕榈酸酯组成的复配抗氧化剂的抗氧化效果优于其他几种复配抗氧化剂,在二者的添加量各为250 mg/kg时,煎炸120 min内所得煎炸大豆油中极性物质含量最低,表现出最佳的抗氧化性能。研究结果为研究阿魏酸酰胺类物质的抗氧化机理及加快其工业化应用提供了重要依据。  相似文献

Samples of oils of different degrees of unsaturation, namely palm olein, olive oil, high‐linoleic sunflower oil, high‐oleic sunflower oil, rapeseed oil and soybean oil, were heated at 180 °C for 2, 4, 6, 8 and 10 h in the presence or absence of their natural antioxidants. Also, tocopherol‐stripped oils were supplemented with α‐tocopherol (500 mg kg?1), δ‐tocopherol (500 mg kg?1) or a mixture of α‐, β‐, γ‐ and δ‐tocopherols (250 mg kg?1 each) and heated under the same conditions. Losses of tocopherols and formation of polymeric triacylglycerols were followed. Total polar compounds were also evaluated after 10 h of heating. Results demonstrated that tocopherols were lost very rapidly, in the expected order, with α‐tocopherol being the least stable. Polymeric and polar compound formation during heating was inhibited to a variable extent, being more dependent on the natural content and type of tocopherols than on the degree of unsaturation of the oil. For example, polymeric and polar compound contents in soybean oil were significantly lower than those found in high‐linoleic sunflower oil. However, the expected influence of the degree of unsaturation was evident when oils were unprotected or possessed identical initial antioxidant contents. Finally, levels of degradation compounds after 10 h of heating were not dependent on the remaining content of antioxidants. © 2002 Society of Chemical Industry  相似文献

Cottonseed oil containing commercial antioxidants was used for continuous (a 2-day time period; < 24 hr) frying of beef nuggets that were batter-breaded with either 100% commercial coating mix or a coating system containing defatted glandless cottonseed flour (GCF). Analyses of oil samples revealed that oil used for frying the nuggets with the GCF-containing coating was less susceptible to lipid hydrolysis and oxidation and color-darkening. GCF in the coating also minimized lipid oxidation in beef nuggets fried in the oil at various stages of heating time during the 2-day frying operation. Results indicated that GCF in the coating not only could enhance the oxidative stability of fried nuggets but also could decrease the breakdown of the frying oil.  相似文献

In this study, antioxidant activity of absolute ethanol, 50 % ethanol and water extracts of two species of seaweeds namely, Fucus serratus and Polysiphonia fucoides were evaluated for their ability to retard lipid and protein oxidation in minced mackerel. Mackerel mince added with 0.5 g/kg of extracts was prepared. For comparison, BHT at 0.2 g/kg and a control with no added extracts were also prepared. The samples were stored at 5 °C for 8 days, and sampling was done at time 0, 1, 2, 4, 5 and 8 days. The 50 % ethanolic extracts of P. fucoides were found to be very effective in retarding lipid and protein oxidation, as it resulted in low levels of peroxide value, volatiles and carbonyl compounds and protected against the loss of α-tocopherol and tryptophan residues. In spite of the higher phenolic content, the absolute ethanol extracts of both species showed a pro-oxidative tendency in minced mackerel. Water extract with lowest phenolic content showed no antioxidant effect in minced mackerel. In conclusion, the 50 % ethanolic extracts of P. fucoides can be a potential source of natural antioxidants, as these extracts have antioxidant activities similar to synthetic antioxidants such as BHT. However, the extent of protection offered by these extracts against protein oxidation was not clear and further studies are needed to understand the nature of the interaction between proteins and these extracts.  相似文献

The mechanism of moisture loss, oil uptake, and pore formation during frying is required to be clarified. The main objective of this study was to evaluate moisture content, oil uptake, and pore development of the crust and core regions of potatoes during frying. Potatoes were fried for 4, 8, 12, 16, and 20 min and separated into two parts as crust and core for the analysis of moisture and oil contents, porosity, and pore size distribution. Moisture contents of crust and core parts of fried potatoes were significantly different (p?≤?0.05). It was about 53.7 % for the crust and 82 % for the core region. On the other hand, oil content of the crust was found to be higher than that of the core region. Porosity and pore size distribution of crust and core regions were significantly different. Crust region of potatoes was less porous as compared to core region through the whole frying time. Larger pores were observed at the core region, especially at longer frying times. The size of the pores increased in both core and crust regions with increasing frying time.  相似文献
