Two extractions with methanol and water were used to determine the antioxidant and binding properties of some berries as a supplement to food. Fluorometry, FTIR spectra and radical scavenging assays were used for characterisation of bioactive compounds (polyphenols, flavonoids, flavanols and tannins) and the levels of their antioxidant activities (AAs). The contents of bioactive compounds and AAs in water and methanol polyphenol extracts in gooseberries, blueberries and cranberries differed, but not always significantly. Water extracts of gooseberries showed the lowest amounts of polyphenols (mg GAE g?1), 6.24 ± 0.6, and flavonoids (mg CE g?1), 0.29 ± 0.01, and AAs (μMTE g?1) determined by DPPH, FRAP, ABTS and CUPRAC assays such as 6.05 ± 0.6, 8.07 ± 0.9, 18.70 ± 1.8 and 13.44 ± 1.2, respectively, in comparison with blueberries and cranberries. Polyphenol content highly correlated with antioxidant activity (R2 from 0.94 to 0.81). The quenching properties of berries were studied by the interaction of water and methanol polyphenol extracts with HSA by 3D fluorescence. In conclusion, the bioactivity of gooseberries was lower than in blueberries and cranberries. Gooseberries can be used as a new source for food consumption and supplementation based on their antioxidant and binding properties. 3D fluorescence spectroscopy and FTIR spectroscopy can be applied as additional analytical tools for rapid estimation of the quality of different food products.  相似文献

Fluorometry, ESI-MS, FTIR, and radical scavenging assays were used for characterization of bioactive compounds and the levels of their antioxidant activities. Polyphenols, flavonoids, anthocyanins, and ascorbic acid and the level of antioxidant activity of water extracts of “Murtilla-like” [Myrteola nummularia (Poiret) Berg.], and other widely consumed berries were determined and compared. The contents of bioactive compounds and the levels of antioxidant activities in water extracts differed significantly in the investigated samples (P?<?0.05). “Murtilla-like” extracts contained polyphenols (mg GAE/g)—19.13?±?0.9, flavonoids, (mg CE/g)—3.12?±?0.1, anthocyanins (mg CGE/g)—120.23?±?5.4, and ascorbic acid (mg/g)—2.20?±?0.1; and antioxidant activities (μmolTE/g) by ABTS and CUPRAC assays were 200.55?±?8.7 and CUPRAC 116.76?±?5.7, respectively. Chemometrical processing was done on the basis of kinetic data of two variables (concentration and reaction time) by DPPH scavenging reaction. Polyphenol content highly correlated with antioxidant capacity (R2 from 0.96 to 0.83). The quenching properties of berries were studied by the interaction of water polyphenol extracts with a small protein such as BSA by 3-D fluorescence and FTIR spectroscopy. These methods were used as additional tools for the characterization of polyphenols. Wild-grown non-investigated berries were compared with widely consumed ones, using their bioactive composition, antioxidant activities, and antiproliferative and fluorescence properties. In conclusion, the antioxidant properties of “Murtilla-like” can be used as a new source for consumption. The bioactivity of “Murtilla-like” is comparable with blueberries and raspberries. 3-D fluorescence and FTIR spectroscopy can be applied as additional analytical tools for rapid estimation of the quality of food products.

ABSTRACT: Amounts of total phenolics, anthocyanins, and ascorbic acid in 4 American cranberry varieties harvested at 4 stages of maturity were measured. The larger amount of phenolic compounds was found in berries of “Black Veil” cultivar (504 mg/100 g) at II stage of maturity. Significantly larger amounts of anthocyanins were determined in the overripe berries of the cultivars “Ben Lear” and “Black Veil.” The amount of ascorbic acid in berries increased during ripening from I to III stage, and slightly decreased in the overripe berries. The biggest quantities of ascorbic acid were found in the ripe berries of “Ben Lear” cultivar (15.8 mg/100 g). The distribution of anthocyanins pigments was determined by HPLC‐UV/MS in mature berries. The composition of individual anthocyanins in berries was quite similar in all the studied cranberry cultivars. While skins of cranberries are rich in anthocyanins and other phenolic compounds, the extracts of the by‐products of cranberries juice—berry cakes, were analyzed and obtained results were compared with the properties of extracts made from whole berries. The anthocyanins and total phenolics content, radical scavenging activity, antimicrobial activity of the whole berries, and their press cakes extracts were measured. All investigated extracts from berries and their press cakes showed good radical scavenging activity and revealed antimicrobial properties. It was found that Bacillus cereus (ATCC 10876) and Micrococcus luteus (ATCC 9341) were the most sensitive among 10 tested Gram‐negative and Gram‐positive bacteria.  相似文献

In Finland, berries are part of the traditional diet significantly contributing to the intake of flavonoids and other phenolic compounds. Compositional data on phenolic compounds in berries has been rapidly accumulating and included in the national food composition database. Among the different bioactive substances in berries, phenolic compounds including flavonoids, tannins, and phenolic acids have received considerable interest due to their effects in food and health. A great amount of in vitro evidence exists showing that berry phenolics are powerful antioxidants. However, the antioxidant effect of berry phenolics is strongly dependent on the choice of berry raw material, as the antioxidant activity differs between the different phenolic constituents, including anthocyanins, ellagitannins, and proanthocyanidins. In foods, the antioxidant effect is also influenced by the structure of food. Tannin-containing berries exhibit antimicrobial properties against pathogenic bacteria, thus offering many new applications for food industry. Much of the interest in berry phenolics has focused on cranberries and both cultivated and wild blueberries, although also other berries including black currants, cloudberries, lingonberries, and red raspberries possess promising bioactivities that may have relevance to human health. Antioxidant activity of berry phenolics, in addition to other mechanisms, may contribute to human health, but the possible relationship remains yet to be scientifically substantiated.  相似文献

In this study, three-dimensional fluorescence spectroscopy in combination with ultraviolet visible (UV–Vis) absorption spectroscopy, Fourier transform infrared spectroscopy (FTIR) and two-dimensional chromatography techniques were employed to investigate the main compounds in gooseberries, blueberries and cranberries. The determination of the terpenes (the main group of secondary metabolites) in the three berries was done by headspace solid-phase microextraction coupled with comprehensive two-dimensional gas chromatography with time-of-flight mass spectrometry (HS-SPME/GC × GC–TOFMS). Main volatiles were assigned in each of the three berries' chromatograms. The compounds were organized in different groups: monoterpene hydrocarbons and monoterpene oxygen-containing compounds (oxides, alcohols, aldehydes, and ketones). The highest amount of alcohol and ester compounds (85%) was estimated in blueberry; carboxylic acids, ketones and aldehydes were found in cranberry (62%) and terpenes in cape gooseberry (8%). Human serum albumin (HSA) has been used as a model protein to study drug–protein interaction. Specific binding of polyphenols from berries to HSA under the physiological conditions was a result of the formation of a polyphenol–HSA complex. The berries' extracts interact with HSA before and after incubation with different binding affinities which are related to their antioxidant properties. The effect of the complexation on the secondary protein structure was verified in the changes of amide bands. The aim of this research was to characterize a new kind of Chilean Murtilla-like berries (Myrteola nummularia (Poiret) Berg. Myrtaceae, called by locals as Daudapo) vs.well known Murtilla, blueberries, raspberries and black chokeberries. Polyphenols, flavonoids, flavanols and tannins and the level of antioxidant activity by ABTS, FRAP and CUPRAC radical scavenging assays of methanol extract of studied berry samples were determined and compared. It was found that the contents of the polyphenol compounds and the level of antioxidant activity in extracts of berries differ significantly (P < 0.05). The significantly highest contents of polyphenol compounds were in methanol extract of non-ripe Murtilla (121.31 ± 5.9 mg GAE/g for polyphenols; 14.43 ± 0.7, 31.79 ± 1.5, and 9.93 ± 0.3 mg CE/g for flavonoids, tannins and flavanols, respectively). Also the antioxidant activity according to ABTS, FRAP and CUPRAC was significantly highest in methanol extract for non-ripe Murtilla (878.18 ± 41.2, 486.92 ± 23.3 and 1012.42 ± 43.2 ??M TE/g, respectively). The amount of polyphenol compounds and their antioxidant activities of Murtilla berries are significantly higher than in other studied berries and are comparable with blueberries and raspberries, however, these indices in the Murtilla-like non-ripe berries were the following: 31.55 ± 1.4 mg GAE/g for polyphenols; 5.22 ± 0.3, 12.16 ± 0.6 and 2.24 ± 0.1 mg CE/g for flavonoids, tannins and flavanols; ABTS, FRAP and CUPRAC: 244.22 ± 12.1, 81.32 ± 3.9 and 203.83 ± 9.3 ??M TE/g, respectively. The correlation between the polyphenol compounds and the antioxidant activities were relatively high. DPPH kinetic measurements were used to compare, distinguish and discriminate the antiradical activity among berry methanolic extracts by multivariate analysis. 3-D fluorescence was used as an additional tool for the characterization of the polyphenol extracts during various stages of ripening and different berries cultivars. The interaction between methanol polyphenol extracts of Murtilla-like and bovine serum albumin (BSA) showed that the new kind of berries has a strong ability, as other studied berries, to quench the intrinsic fluorescence of BSA by forming complexes.In conclusion, for the first time these berries were analyzed and compared with widely consumed cultivars, using their polyphenols' composition, antioxidant activities and fluorescence properties. The ability of Murtilla-like berries to quench the intrinsic fluorescence of BSA and relatively high content of polyphenol compounds can be used as a new source of antioxidants.  相似文献

对蓝靛果中花色苷的组成进行鉴定,并对其抗氧化能力进行比较分析。实验以蓝靛果(‘蓓蕾’品种)为原料,采用有机溶剂60%乙醇(0.1%盐酸酸化)溶液,超声辅助提取90 min;利用D101大孔树脂对获得的粗提物进行纯化,之后冷冻干燥制得粉末物质。通过pH示差法和福林-酚法分别测定总花色苷含量和总多酚含量,分别为(353.35±0.79)、(474.01±2.12)mg/g;并用高效液相色谱-质谱联用法对花色苷组成进行鉴定,共发现11 种花色苷,其中矢车菊-3-葡萄糖苷为主要花色苷(90.679%)。此外,实验还通过总抗氧化能力测定和2,2’-联氨-二(3-乙基苯并噻唑-6-磺酸)二铵盐自由基、1,1-二苯基-2-三硝基苯肼自由基清除能力测定,比较分析蓝靛果花色苷提取物、矢车菊-3-葡萄糖苷、VC的抗氧化能力,结果表明,3 种物质的抗氧化能力排序为:矢车菊-3-葡萄糖苷>花色苷提取物>VC。  相似文献

BACKGROUND: Consumer demand for organic foods is increasing despite a lack of conclusive evidence of nutritional superiority of organically grown produce. The objective of this investigation was to evaluate the effects of thermal treatments on phytochemicals in conventionally and organically grown berries. Two cultivars of conventionally and organically grown red raspberries and blueberries were analysed for total anthocyanins, total and specific phenolic compounds and total antioxidant activity. Fresh berries were thermally processed into cans and juice/puree with and without blanching, and the changes in phytochemicals were monitored. RESULTS: Total anthocyanin and phenolic contents of berries were not influenced by the agricultural production system. Total antioxidant activity of berries was also not influenced by the production system, but antioxidant activity varied significantly between cultivars. After canning, total anthocyanins decreased by up to 44%, while phenolic contents and antioxidant activity of both berries generally increased by up to 50 and 53% respectively. The level of changes in phytochemicals during berry puree/juice processing was influenced by blanching and type of berries. CONCLUSION: Phenolic contents and antioxidant activities of berries increased while total anthocyanins decreased during canning. Blanching prior to puree/juice processing improved the retention of phytochemicals in blueberries. Copyright © 2010 Society of Chemical Industry  相似文献

目的:桑树叶片在传统医学中被用作降糖和降血压的药物,其作用机理与活性成分含量有关。评价桑叶提取物不同生物活性,包括生物活性物质含量、抗氧化活性和抗α-淀粉酶活性。方法:采用SPE(固相萃取技术)将多酚粗提液分离纯化为花色苷、非花色苷多酚和水层三个组分,采用HPLC-PDA和HPLC-ESI/MS2对桑叶中的多酚物质进行系统地定性和定量。利用DPPH(1,1-二苯基-2-三硝基苯肼自由基清除能力)、ABTS(2,2’-联氮-双(3-乙基苯并噻唑啉-6-磺酸))和FRAP(铁离子还原能力)三种方法测定不同提取物的抗氧化活性,并采用福林酚法、pH差异法和比色法测定桑叶提取物总酚、总花色苷和总原花青素含量。结果:桑叶中共鉴定出6种花色苷、42种非花色苷多酚,其中,矮牵牛素-3-葡萄糖苷和原花青素衍生物含量很高;桑叶中总酚、总花色苷和总原花青素的含量分别为14.09 mg GAE/g DW、0.17 mg C3G/g DW和17.24 μg PA2/g DW;多酚粗提液、花色苷、非花色苷多酚和水层对α-淀粉酶活性的IC50(半抑制浓度)分别为8.31、13.70、0.25和12.00 mg/mL,由此看出非花色苷多酚的抗α-淀粉酶活性最高。结论:桑叶具有较强的抗氧化活性,其中花色苷显示出最高的抗氧化活性。这些数据可以为蒙古桑叶用作功能食品提供重要参考。  相似文献

为了对树莓、蓝莓、黑果腺肋花楸及蓝靛果四种小浆果浆汁进行初步活性评价,测定了四种小浆果浆汁的多酚、超氧化物歧化酶(SOD)、花色苷及总黄酮含量,并研究其体外抗氧化活性。结果发现,蓝靛果的多酚(4.659 mg/mL)、SOD(115.38 mg/mL)及总黄酮(10.717 mg/mL)是其他三种小浆果含量的1.5~7倍,花色苷(3.768 mg/mL)则是黑果腺肋花楸含量的14倍左右。以VC作阳性对照,蓝靛果体外抗氧化效果最优,对·OH、DPPH·自由基的清除及对脂质过氧化的抑制作用的IC50值分别为2.066 mg/mL、61.342 μg/mL和181.590 μg/mL,对O2-·自由基的清除效果并没有明显优势。活性成分含量与抗氧化活性相关性分析表明,四种小浆果浆汁中多酚、花色苷、SOD及总黄酮含量与对·OH、O2-·、DPPH·自由基的清除率及对脂质过氧化的抑制率均呈正相关性,且相关性显著。四种小浆果浆汁均具有较好的体外抗氧化活性,蓝靛果显示了最佳的抗氧化活性。  相似文献

Polyphenol-rich extracts from certain berries inhibited α-glucosidase activity in vitro. The two most effective berry extracts, from black currant and rowanberry, inhibited α-glucosidase with IC(50) values respectively of 20 and 30μg GAE/ml and were as effective as the pharmaceutical inhibitor, acarbose. These berry extracts differed greatly in their polyphenol composition: black currant was dominated by anthocyanins (~70% of total) whereas rowanberry was enriched in chlorogenic acids (65% total) and had low levels of anthocyanins. Both black currant and rowanberry extracts potentiated the inhibition caused by acarbose and could replace the inhibition lost by reducing the acarbose dose. However, no additive effects were noted when black currant and rowanberry extracts were added in combination. The mechanisms underlying the synergy between acarbose and the berry polyphenols and the lack of synergy between the berry components are discussed. These extracts exhibited the potential to replace acarbose (or reduce the dose required) in its current clinical use in improving post-prandial glycaemic control in type 2 diabetics. As a result, these polyphenols may offer a dietary means for type 2 diabetics to exercise glycaemic control.  相似文献

The human health benefits from consumption of cranberry products have been associated with the fruits' unique flavonoid composition, including a complex profile of anthocyanins and proanthocyanidins. However, when processed by techniques such as pressing, canning, concentrating, or drying, a number of these natural components may be compromised or inactivated due to physical separation, thermal degradation, or oxidation. Fresh cranberries were compared to freeze-dried berries and individual fruit tissues (skin and peeled fruit). Products examined included cranberry juices (commercial and prepared from concentrate), cranberry sauces (commercial and homemade), and sweetened-dried cranberries (commercial). Freeze-drying resulted in no detectable losses of anthocyanins or proanthocyanidins from cranberry fruits. Anthocyanins were localized in the skin. Proanthocyanins were higher in the skin than in the flesh, with the exception of procyanidin A-2 dimer which was concentrated in the flesh. Anthocyanins were significantly higher in not-from-concentrate juice than in reconstituted juice from concentrate (8.3 mg and 4.2 mg/100 mL, respectively). Similarly, proanthocyanidins were markedly higher in not-from-concentrate juice compared to juice from concentrate (23.0 mg and 8.9 mg/100 mL, respectively). Homemade sauce contained far higher anthocyanins and proanthocyanidins (15.9 and 87.9 mg/100 g, respectively) than canned sauces processed with whole berries (9.6 and 54.4 mg/100 g, respectively) or jelled-type (1.1 and 16 mg/100 g, respectively). Sweetened-dried cranberries were quite low in anthocyanins (7.9 mg/100 g), but they still retained considerable proanthocyanidins (64.2 mg/100 g). Commercially processed products contained significantly lower levels of polyphenols as compared to fresh and home-processed preparations. Anthocyanins were more sensitive to degradation than proanthocyanidins. Practical Application: As cranberry juices and other products are increasingly consumed for their recognized health benefits (including prophylaxis against urinary tract infection), it is relevant to consider how various degrees of commercial and home processing can alter innate levels of the biologically active flavonoids (especially anthocyanins and proanthocyanidins) characteristic to the intact fruits.  相似文献

Pulsed electric field (PEF) treatments (1–10 kJ/kg at 3 kV/cm) were applied before pressing of blueberry fruits to improve the yield and quality of expressed juice as well as the recovery of anthocyanins from blueberry by-products (press cake) via solid–liquid extraction. A PEF pre-treatment at 1 kJ/kg was sufficient to significantly increase the juice yield (by 32%) with respect to the untreated sample. Higher energy input (10 kJ/kg) was most favorable for the largest increment of anthocyanin content (55%) and antioxidant capacity (36 and 41%, determined by ferric reducing antioxidant power (FRAP) and 2,2-diphenyl-1-picrylhydrazyl hydrate (DPPH) assay, respectively) in juice. Extracts obtained from the press cake of PEF-treated blueberries at 10 kJ/kg possessed an anthocyanin content (75%) and antioxidant capacity (71 and 109%, determined by FRAP and DPPH assay, respectively) higher than that of the extracts obtained from non-treated berries press cake. HPLC analyses revealed the major classes of the detected anthocyanins as glycosides of delphinidin, cyanidin, petunidin, peonidin, and malvidin, and no significant degradation of individual anthocyanins due to PEF application was observed. The present PEF pre-treatment could be a promising approach to facilitate efficient extraction of juice and antioxidants especially anthocyanins from blueberry and their by-products.  相似文献

Citrus fruit is a rich source of bioactive phytochemicals. Information on the fatty acid and tocopherol composition of locally grown citrus fruits in Korea is elusive. This work was aimed to study fatty acid, tocopherols, ascorbic acid, antioxidant potential, and selected phenolics from peel and pulp of six citrus species. The most dominant fatty acid was linoleic acid (15–45%), followed by linolenic, palmitic, and oleic acid. Stearic acid was highly abundant in yuzu peel (14.45%) and pulp (15.88%) compared to the other fruits. Unsaturated fatty acids (54–74%) contributed higher composition than saturated fatty acids (25–46%). Peel exhibited better antioxidant potential and contained higher phytochemicals than pulp. The concentrations of α-tocopherol and γ-tocopherol were ranged from 22.96 (yuzu) to 86.93 (cheonhyeyang) and 38.59 (yuzu) ~83.03 (tangerine) μg/g DW, respectively. J-Redhyeyang peel exhibited highest total flavonoids (4.17?±?0.10 mgQE/g DW) and DPPH radical scavenging activity (6.17?±?0.03 mgTE/g DW). FRAP values were highest (20.05?±?0.64 mgTE/g DW) in yuzu peel, while peel of cheonhyeyang was superior in total phenolic contents. Tangerine (3.02?±?0.05 mg/g DW) and yuzu (7.49?±?0.38 mg/g DW) had higher hesperidin concentrations in pulp and peel, respectively. Naringin was found in an appreciable amount in yuzu pulp (2.04?±?0.09 mg/g DW) and peel (6.30?±?0.19 mg/g DW) but not detected in all other fruit species. Our results indicate that citrus fruit peel is the rich source of antioxidant compounds, which can be used to prepare antioxidant rich food product.  相似文献

Abstract: GC‐FID and GC‐MS analysis of essential oil from oregano leaves (Origanum compactum) resulted in the identification of 46 compounds, representing more than 98% of the total composition. Carvacrol was the predominant compound (36.46%), followed by thymol (29.74%) and p‐cymene (24.31%). Serial extractions with petroleum ether, ethyl acetate, ethanol, and water were performed on aerials parts of Origanum compactum. In these extracts, different chemical families were characterized: polyphenols (gallic acid equivalent 21.2 to 858.3 g/kg), tannins (catechin equivalent 12.4 to 510.3 g/kg), anthocyanins (cyanidin equivalent 0.38 to 5.63 mg/kg), and flavonoids (quercetin equivalent 14.5 to 54.7 g/kg). The samples (essential oil and extracts) were subjected to a screening for antioxidant (DPPH and ABTS assays) and antimalarial activities and against human breast cancer cells. The essential oil showed a higher antioxidant activity with an IC50= 2 ± 0.1 mg/L. Among the extracts, the aqueous extract had the highest antioxidant activity with an IC50= 4.8 ± 0.2 mg/L (DPPH assay). Concerning antimalarial activity, Origanum compactum essential oil and ethyl acetate extract showed the best results with an IC50 of 34 and 33 mg/mL, respectively. In addition, ethyl acetate extract (30 mg/L) and ethanol extract (56 mg/L) showed activity against human breast cancer cells (MCF7). The oregano essential oil was considered to be nontoxic.  相似文献

研究体外消化前后蓝靛果提取物的总酚和花色苷含量、花色苷组成以及抗氧化能力的变化。实验分别采用福林-酚法和pH示差法测定总酚和花色苷含量,利用高效液相色谱-电喷雾二级质谱联用技术结合分子质量,离子碎片,出峰顺序及参考文献分析花色苷组成;采用总抗氧化能力(total antioxidant capacity,T-AOC)和氧自由基吸收能力(oxygen radical absorbance capacity,ORAC)法测定体外消化前后提取物的抗氧化能力。结果表明:模拟体外消化后样品总酚含量增加了48.2%,花色苷含量降低了67.6%,单体花色苷由11 种降为8 种,此外,ORAC值和T-AOC值分别下降了80.0%和55.6%。综上,与未经消化提取物相比较,模拟体外消化处理的蓝靛果提取物的多酚含量增加,花色苷含量和种类均减少,抗氧化能力下降。  相似文献

为探讨笃斯越桔、越桔、欧洲越桔3种浆果提取物的体外抗氧化活性,以3种野生浆果果实为原料进行提取并分离纯化,得到冻干粉末9组,分别测定了其花色苷含量、总多酚含量、清除羟自由基能力、清除DPPH自由基能力及总还原能力。结果表明,越桔、笃斯越桔和欧洲越桔3种浆果的提取物均有较好的抗氧化能力,DPPH自由基清除率分别可达(86.68±2.39)%、(97.63±1.65)%、(98.09±1.54)%;羟自由基清除率分别可达(81.80±1.23)%、(91.04±1.26)%和(93.22±1.39)%,笃斯越桔和欧洲越桔抗氧化活性高于越桔。9种纯化组分中,笃斯越桔和欧洲越桔30%乙醇洗脱物组分的抗氧化活性最强,总还原力分别为(1 197.4±25.93)/g和(1 237.5±27.13)/g。  相似文献

The aim of this study was to compare the effectiveness of microwave-vacuum pretreatment conducted at 100, 500 and 800 W on the drying kinetics of whole cranberries (Vaccinium macrocarpon) during hybrid osmotic and microwave-vacuum drying. Additionally, the effect of microwave-vacuum pretreatment and subsequent osmo-microwave-vacuum drying on selected quality indicators of dried cranberries, including phenolic content, antioxidant activity and color, was studied, and the quality of samples was compared with freeze dried, microwave-vacuum dried and osmo-microwave-vacuum dried samples. Irrespective of microwave power, the initial pretreatment accelerated mass transfer during osmotic dehydration of cranberries, and the Weibull model well fitted the experimental data. Final microwave-vacuum drying of cranberries was a two-stage process involving a relatively long phase with a constant drying rate, followed by a short period with a decreasing drying rate. Microwave-vacuum and osmo-microwave-vacuum drying resulted in similar retention of polyphenols and similar antioxidant activity, both of which were relatively higher than in freeze-dried cranberries. However, microwave-vacuum pretreatment at low microwave power (100 W) before dehydration also resulted in high retention of phenolic compounds, high antioxidant activity and attractive color, which were consistent with the high content of total anthocyanins and flavonoids. Microwave-vacuum, osmo-microwave-vacuum and osmo-microwave-vacuum drying combined with microwave-vacuum pretreatment at low microwave power (100 W) were the most suitable methods for the production of high-quality dried whole cranberries.  相似文献

In the present study the anthocyanin content of commercially available bilberry juices and fresh fruits were quantified by using 15 authentic anthocyanin standards via high performance liquid chromatography with an ultra-violet detector (HPLC-UV/VIS). Delphinidin-3-O-glucopyranoside, delphinidin-3-O-galactopyranoside, and cyanidin-3-O-arabinopyranoside were the major anthocyanins found in juices, nectar, and fresh bilberries. In contrast, fresh blueberries had higher concentrations of malvidin-3-O-arabinopyranoside and petunidin-3-O-galactopyranoside. Up to 438 mg anthocyanins per 100 g fresh weight (2762 mg/100 g dry weight (DW)) were detected in blueberries from various sources, whereas bilberries contained a maximum of 1017 mg anthocyanins per 100 g fresh weight (7465 mg/100 g DW). Commercially available bilberry and blueberry juices (n= 9) as well as nectars (n= 4) were also analyzed. Anthocyanin concentrations of juices (1610 mg/L to 5963 mg/L) and nectar from bilberries (656 mg/L to 1529 mg/L) were higher than those of blueberry juices (417 mg/L) and nectar (258 mg/L to 386 mg/L). We conclude that using several authentic anthocyanin references to quantify anthocyanin contents indicated them to be up to 53% and 64% higher in fresh bilberries and blueberries, respectively, than previously reported using cyanidin-3-O-glucoside. This study has also demonstrated that commercially available juices produced from bilberries contain much higher anthocyanin concentrations than those from blueberries. PRACTICAL APPLICATION: We have investigated the contents of a special class of antioxidants, namely anthocyanins in blueberry and billberry fruits and juices commercially available in Germany. To achieve reliable data we have used authentic standards for the first time. We think that our results are important in the field of nutritional intake of this important class of polyphenols and fruit juice companies get a closer insight in the occurrence of these antioxidants in market samples to be used in food composition databases and for nutritional survey.  相似文献
