The objective of this study was to evaluate chemical and physical stability and consumers' acceptance of olive oil flavoured with oregano essential oils (EOs; Compacto, Cordobes, Criollo and Mendocino). Samples of olive oil were added with 0.05% EO and stored in dark (D) and light (L) conditions for 126 days. Samples with oregano EO had lower lipid oxidation indicator values [K232, K269, peroxide value (PV) and anisidine value], especially in darkness. Olive oil with Cordobes EO in D had the lowest PV (18.71 meqO2 kg?1). Using prediction equations, 20 meqO2 kg?1 PV in olive oil should be reached in 34 days in L control sample and in 126 days in the Cordobes EO sample in darkness. Samples with Cordobes and Criollo EOs in darkness had the highest chlorophyll content after 126 days (2.91 and 2.88 mg kg?1, respectively). Sensory analysis showed that oregano EO addition in olive oil was detected by panellists in discriminative test and affected consumer acceptance.  相似文献

Four commercial varieties of oregano are farmed in Argentina: "Compacto,"Cordobes,"Criollo," y "Mendocino." Oregano essential oil is known for antioxidant properties. The objective of this study was to evaluate changes in the intensities of positive and negative attributes in extra virgin olive oil with addition of essential oil obtained from the 4 Argentinean oregano types. Oregano essential oil was added into olive oil at 0.05% w/w. The samples were stored in darkness and light exposure during 126 d at room temperature. The intensity ratings of fruity, pungency, bitterness, oregano flavor, and rancid flavor were evaluated every 21 d by a trained sensory panel. In general, samples with addition of oregano essential oil in olive oil exhibited higher and lower intensity ratings of positive and negative attributes, respectively, during storage compared with the control samples. The first 2 principal components explained 72.3% of the variability in the olive oil samples. In general, positive attributes of olive oil were highly associated with the addition of oregano essential oil in darkness, whereas rancid flavor was negatively associated with them. Olive oil with oregano "Cordobes" essential oil was oppositely associated with light exposure treatments and negative attribute (rancid flavor) suggesting better performance as natural antioxidant of this essential oil in olive oil. The result of this study showed that the presence of oregano essential oil, specially "Cordobes" type, preserve sensory quality of extra virgin olive oil prolonging the shelf life of this product. Practical Application: Extra virgin olive oil is highly appreciated for its health benefits, taste, and aroma. These properties are an important aspect in this product quality and need to be preserved. The addition of natural additives instead of synthetic ones covers the present trend in food technology. This research showed that the addition of oregano essential oil preserved the intensity ratings of positive attributes in extra virgin olive oil during storage. The essential oil of the oregano variety called "Cordobes" exhibited better protecting effect on sensory properties of olive oil than the other oregano varieties. The addition of oregano essential oil should be considered for the food industry as a natural source of antioxidant additives for preserving sensory properties in extra virgin olive oil and other similar food products.  相似文献

将橄榄油和3种常用油脂储存在高温、常温、低温、光照和避光等6种不同的条件下,研究其储藏稳定性。通过分析储藏期间油脂的过氧化值,表明橄榄油的氧化稳定性最好。同时高温光照条件下,橄榄油中生育酚的含量降低最快。常温避光和低温避光下,橄榄油的品质变化不明显,是橄榄油储藏的适宜条件。  相似文献

Rancimat induction time of palm oil (PO), several extra virgin olive oils (EV) and their binary blends have been determined at three different temperatures (120, 130 and 140°C). Analytical composition and oxidation stability of PO/EV blends were found to be a linear combination of the oil partners. Induction time of pure PO was always higher than those of EV oils and blends, in which induction time increased proportionally with the percentage of PO. However, induction time of 80% PO blend was similar to that of pure PO. Fatty acid composition appeared to be the most important factor affecting heat-oxidation stability and a saturated/unsaturated ratio near 1 was the optimally stable composition. Conversely, total phenols had a zero or negative role on the oxidative stability of the blends. Finally, in heat-oxidised oils significant losses of polyunsaturated fatty acids and formation of short-chain fatty acids were recorded.  相似文献

Stability, polyphenol, orthodiphenol, tocopherol, oleic/linoleic ratio, chlorophyll, carotenoid, peroxide and acidity values, K232, K270 and overall sensory score of virgin olive oils from Hojiblanca and Picual cultivars were determined during two consecutive seasons. Changes due to cultivar and season were evaluated, correlations between the changes were studied and their contribution to stability was investigated by multiple regression techniques. Removal of polyphenols from the original samples without altering other antioxidant components has permitted estimating, for the first time, the contribution of these compounds to virgin olive oil. 采用DPPH(1,1-二苯基-2-三硝基苯肼)法、BCB(β-胡萝卜素漂白)法和TBARS(硫代巴比妥酸)法对牛至油、香芹酚、柠檬醛和肉桂醛的抗氧化性能进行研究。结果表明,BHT、牛至油、香芹酚、柠檬醛和肉桂醛的DPPH自由基清除反应速度很快,清除能力随其浓度升高而显著增强,并逐渐趋于稳定,其IC50分别为1.2、4.3、3.7、7.2、3.1g/L;采用BCB法测定抗氧化性能时,BHT、牛至油、香芹酚和肉桂醛均表现出优良的抗氧化性能,并且随着浓度的增大,抗氧化性能增强,其IC50分别为0.1、2.2、3.4、1.9g/L;采用TBARS法测定抗氧化性能时,BHT、牛至油、香芹酚、柠檬醛和肉桂醛也表现出较好的抗氧化性能,并且其抗氧化指数随其浓度的增加而提高。由此可知,牛至油、香芹酚和肉桂醛可以作为天然抗氧化剂应用于食品加工中。   相似文献

为提高对天然植物精油的包埋效果,以海藻酸钠和多孔淀粉为壁材,以牛至精油为芯材,采用锐孔法制备多孔淀粉/海藻酸钠牛至精油微胶囊。通过单因素实验和正交实验对精油微胶囊的制备工艺进行了优化,并通过扫描电镜对精油微胶囊的结构进行了表征。得到精油微胶囊优化的制备条件为:精油淀粉比1∶3,海藻酸钠溶液浓度2.5%,氯化钙浓度1.5%,针头型号9号,在此条件下精油微胶囊包埋率为88.25%,产率为44.27%,粒径为915μm。扫描电镜图像结果表明以多孔淀粉与海藻酸钠为壁材制得的微胶囊外观良好,表面呈交联多孔结构,一定程度上弥补了单一壁材海藻酸钠所制微胶囊外观上的缺陷。   相似文献

Consumers’ concerns about the environment and health have led to the development of new food packaging materials avoiding petroleum-based matrices and synthetic additives. The present study has developed polylactic acid (PLA) films containing different concentrations of essential oil from Origanum vulgare L. virens (OEO). The effectiveness of this new active packaging was checked for use in ready-to-eat salads. A plasticising effect was observed when OEO was incorporated in PLA films. The rest of the mechanical and physical properties of developed films did not show much change when OEO was included in the film. An antioxidant effect was recorded only for films containing the highest percentages of the active agent (5% and 10%). In addition, films exhibited in vitro antibacterial activity against Staphylococcus aureus, Yersinia enterocolitica, Listeria monocytogenes, Enterococcus faecalis and Staphylococcus carnosus. Moreover, in ready-to-eat salads, antimicrobial activity was only observed against yeast and moulds, where 5% and 10% of OEO was the most effective.  相似文献

基于牛至精油具有较强的刺激性气味、白藜芦醇溶解性低,以及二者稳定性差的应用缺陷,构建以酪蛋白酸钠为乳化剂,菊粉和阿拉伯胶为稳定剂,牛至精油为油相并包埋白藜芦醇的乳液;以鼠伤寒沙门氏菌为目标微生物,探讨牛至精油、白藜芦醇、牛至精油-白藜芦醇及其乳液的抑菌效果,以及4,25℃储藏期间抑菌效果的变化,并在鲜切卷心菜中初步应用。结果表明:牛至精油和白藜芦醇对鼠伤寒沙门氏菌有很好的协同抑菌作用;2.0%菊粉/阿拉伯胶可以提高牛至精油-白藜芦醇的抑菌效果;乳液可降低二者的氧化降解速率并保护其生物活性,乳液4℃贮藏20d,25℃贮藏12d后仍有较好的抑制作用。接种鼠伤寒沙门氏菌的鲜切卷心菜在牛至精油-白藜芦醇及其酪蛋白酸钠、酪蛋白酸钠-菊粉/阿拉伯胶乳液中处理1min,8℃储藏4d后菌落数分别降低了1.52,2.04,2.67,2.98lg CFU/g。  相似文献

该文探讨植物精油和包装方式对冷鲜羊肉货架期及其品质的影响。研究采用2×2双因子试验设计,利用牛至精油和不同包装方式结合的保鲜方法研究羊肉在4℃下贮藏0、3、6、9、12 d的质构特性、肉色、pH、过氧化值(peroxide value,POV)、丙二醛(malondialdehyde,MDA)、挥发性盐基氮(total volatile base-nitrogen,TVB-N)及菌落总数(total bacteria count,TBC)的变化。结果表明,冷鲜羊肉贮存至第12天时,牛至精油与真空包装结合组中肉的红度(a*值)、硬度、弹性、回复性均极显著高于牛至精油和普通包装结合组(P <0. 01),且其黏附性、POV、MDA、TVB-N和TBC在第12天时均极显著低于牛至精油和普通包装结合组中冷鲜羊肉该指标(P <0. 01)。牛至精油与真空包装结合的保鲜方法可使冷鲜羊肉贮藏时间延长至12 d。  相似文献

Virgin olive oil (VOO) enriched with phospholipids (soy lecithin) up to the levels present in seed oils (from 2.5 to 10.0 g/kg) was studied as a potential functional food. Lecithin addition slightly increased the concentration of tocopherols and considerably increased K270 values. In the fatty acid composition, an increase of linoleic and a slight decrease of oleic acid were observed, as the decrease of monounsaturated/polyunsaturated fatty acid ratio. The radical-scavenging activity was evaluated by two methods: electron spin resonance spectroscopy using galvinoxyl free radical and VIS spectroscopy measurement of the disappearance of 1,1-diphenyl-2-picryl-hydrazyl (DPPH) radical. Results indicate that lecithin addition retards the scavenging activity of VOO that is ascribed to the bipolar character of lecithin and its ability to entrap hydrophilic antioxidants. The effect of lecithin addition on the oxidative stability of VOO was evaluated by the Rancimat method, and a positive linear correlation (r = 0.9849) with induction time was found.  相似文献

The purpose of this work was to determine chemical composition and antioxidant activity of essential oil of different oregano species from Argentina: ‘Cordobes’, ‘Criollo’, ‘Mendocino’ and ‘Compacto’. The essential oil composition was determined by gas–liquid chromatography and mass spectrometry. Scavenging activity was analysed by DPPH test. The antioxidant activity of the essential oils was determined by an accelerated oxidation test in canola oil. Thirty‐nine compounds were identified in the oregano essential oils. The oregano species showed differences in their chemical composition, radical scavenging activity and antioxidant activity. The main compounds in the studied oregano species were thymol and trans‐sabinene hydrate followed by γ‐terpinene, terpinen‐4‐ol and α‐terpinene. The oregano, ‘Criollo’, was rich in γ‐terpinene and had lower thymol and trans‐sabinene hydrate and higher α‐terpinene and carvacrol contents than the other oregano species. ‘Mendocino’ had higher trans‐sabinene hydrate and limonene than the other oregano species. ‘Cordobes’ and ‘Compacto’ had higher thymol content, radical scavenging activity and antioxidant activity in canola oil.  相似文献

BACKGROUND: The study of pro‐ and anti‐oxidant compounds is important for their influence on the shelf‐life and nutritional value of food. The aim of this research was to evaluate the activity of monoacylglycerols (MAG), obtained by partial saponification of a purified olive oil, added in increasing amounts to the same oil and submitted to the Rancimat test and oven test at 60 °C. Besides routine analyses, high‐performance size exclusion chromatography analysis of polar compounds was performed. RESULTS: The addition of MAG led in all cases to a significant slowdown of the oxidative processes. These trends were more evident as the oxidation went on. The purified oil added with 30 g kg?1 of MAG after 9 days of oven test at 60 °C presented a level of oxidative degradation significantly lower than the control after only 4 days. CONCLUSION: The data showed a marked antioxidant effect of MAG in purified olive oil, contrary to what has been observed by other authors, who noticed either a pro‐oxidant or a non‐antioxidant activity of these compounds in soybean oil. A different behaviour of MAG during oxidation could depend on the different fatty acid composition of the oil matter they are added to. Copyright © 2010 Society of Chemical Industry  相似文献

乳化剂因亲水亲油平衡值的不同对油脂乳化效果表现出固有的差异,但这种差异会因加入辅助剂的影响而发生改变。以非离子型表面活性剂单甘酯、蔗糖酯和吐温20为乳化剂,以白果直链淀粉及阿拉伯胶(质量比1∶1)为辅助剂,对橄榄油进行乳化,考察了辅助剂加入前后在不同制备方法(先油后水和先水后油工艺)和乳化剂添加量下乳液的稳定性。结果表明:单独使用乳化剂时,经外观观察,在三种乳化剂添加量相同时,吐温20的橄榄油乳液稳定性较好,其次为蔗糖酯、单甘酯;加入辅助剂后,乳液的乳化状态较单一加入乳化剂的好,乳液黏度、粒径和浑浊度均随着乳化剂添加量的增大呈先减小后增加趋势,且在相同添加量下,由蔗糖酯制备的橄榄油乳液黏度较低,粒径和浑浊度较小,稳定性较好,吐温20及单甘酯次之;辅助剂加入前后,先油后水工艺制备的橄榄油乳液的稳定性总体优于先水后油工艺的。  相似文献

The present study evaluated the effect of oregano essential oil (EO) on fresh salted, packaged (45%CO(2)/5%O(2)/50%N(2)) rainbow trout fillets and stored for a period of 21 d at 4 °C. Treatments included the following: M1 (control without added EO), M2 (EO 0.2%, v/w), and M3 (0.4%, v/w). Populations of lactic acid bacteria (LAB), H(2)S-producing bacteria (including Shewanella putrefaciens), Enterobacteriaceae, and Pseudomonas spp. reached higher final numbers in control (M1) than for M2 and M3 samples. Under treatments M2 and M3, total volatile basic nitrogen (TVBN) and trimethylamine nitrogen (TMAN) values were lower than for M1 samples, whereas lipid oxidation, as judged by determination of thiobarbituric acid values (TBA), did not occur during the refrigerated storage period. Interestingly, treatment M2 resulted in a shelf-life extension of 7 to 8 d for the fresh trout fillets, whereas treatment M3 proved unsuitable (due to strong odor) for trout fillet preservation, as determined by sensory evaluation. PRACTICAL APPLICATION: The use of an essential oil such as oregano oil in fresh fish preservation may be considered an alternative "natural" additive, enhancing the sensory characteristics and extending the shelf life of the product.  相似文献

In order to improve the quality of Chemlali olive oil, characterised by a very low stability (2.09 h), blending with two different monovarietal oils in various proportions: Chétoui and Rekhami (known by their higher stability 7.79 and 13.99 h, respectively) was carried out. Results showed that blended oils had an improved oil composition compared to that of Chemlali. In fact, the highest percentage of Chétoui and Rekhami olive oils (90% of blending) can reduce the acidity up to 68.79% and 79.61%, respectively. At 50% blending, oleic acid increased from 53% to 59.54%, while palmitic acid decreased from 20.97% to 14.89% with Chétoui olive oil. At the lowest percentage (10–20%), chlorophylls in Chemlali olive oil underwent significant increase (from 0.18 to 0.47 and 0.65 mg kg−1, respectively). The amount of carotenoids was higher when Chemlali was blended by 20–40% with Chétoui olive oil (from 2.23 to 4.13 and 4.33 mg kg−1). Blending can be used in industrial applications to provide oils with improved composition related to stability, nutrition and functionality and endowed with the characteristics requested by consumers' preferences.  相似文献
