Effect of heat-moisture treatment of germinated brown rice (GBR) on the texture and cooking quality of the noodles containing mixtures of wheat and GBR flours was investigated. With the increase in GBR content, hardness and tensile strength of the composite noodles decreased and cooking loss and water absorption increased. Pasting viscosity of the flour mixtures was significantly decreased by increasing the amount of GBR. Heat-moisture treatment of GBR (17 or 20 g/100 g moisture at 100 °C for 4 h), however, apparently increased the pasting viscosity and improved the texture and cooking quality of the composite noodles. The mixture of wheat and a treated GBR (1:1 weight ratio) showed a pasting viscosity similar to pure wheat flour. The noodle containing the heat-moisture treated GBR flours showed the lower cooking loss, and higher hardness and tensile strength than the noodle containing untreated counterparts. Among the treated GBR flours tested, the GBR treated at 100 °C for 4 h at a moisture level of 17 g/100 g was the most acceptable in terms of cooking quality and textural property, close to those of the noodle of pure wheat flour. Substitution with the heat-moisture treated GBR, however, made the noodle darker because of thermal discoloration of GBR.  相似文献

With the aim to develop functionally and nutritionally improved cookies, the influence of the total or partial replacement of wheat flour by pulses flours on the quality characteristics of cookies was analysed. Blends containing 25, 50, 75 and 100 g/100 g of navy bean, pinto bean, green lentil and commercial yellow pea flours were prepared. Green lentil, navy and pinto bean flours were used at two degrees of milling (fine and coarse). The incorporation of pulse flours significantly affected the physical and chemical parameters of the cookies. Incorporation of fine flours remarkably increased cookies’ hardness and decreased spread while coarse flours marginally reduced both parameters. The greatest impact on the physical characteristics was observed with the incorporation of green lentil flour, where cookies made with coarse flour were of unacceptable structure and were sticky to handle. Cookies baked with pulse flours were higher in protein level and showed increased antioxidant activity compared to the control. Overall analysis indicated that cookies with acceptable physical characteristics and improved nutritional profile could be produced with partial or complete replacement of the wheat flour.  相似文献

Two types of hydrothermal treated rice starches were prepared by annealing and heat-moisture treatment (HMT). Annealing of starch slurry was conducted at 55 °C for 24 h and HMT was applied in starch with 20 g/100 g moisture at 110 °C for 1.5 h, based on the optimization of the treatment conditions. The apparent changes on gelatinization, swelling, RVA paste viscosities and gel hardness of starch were observed. The study on 50% substitution of rice flour with untreated (UR), annealed (AR) or heat-moisture treated (HR) rice starches proved that the cooking and texture quality of rice noodle was substantially affected by the treatments. The composite noodles of flour and hydrothermal treated rice starches exhibited quality parameters which were closer to those of commercial noodles. The results revealed the possibility of utilizing these starches with low quality rice flour so as to produce noodles of acceptable quality. The study also inferred that characterization of RVA paste viscosities and gel texture of flour could become a practical method for predicting the quality of the derived noodle.  相似文献

Abstract: Selected physicochemical properties and consumer acceptance of bread prepared from composite flour (wheat:germinated brown rice:germinated glutinous brown rice flours at 60:30:10 ratio) were evaluated during storage for 0, 3, and 5 d, and compared with wheat bread (0 d, control). During storage, color profiles and water activity (from 0.947 to 0.932) of crumbs of composite flour breads slightly changed, but moisture content drastically decreased along with increasing crumb hardness (from 4.16 N to 10.37 N). Higher retrogradation in bread crumb was observed particularly for 5-d stored bread (ΔH = 2.24 J/g) compared to that of the fresh composite bread and the control (ΔH = 0.70 and 0.51 J/g, respectively). Mean (n = 116) overall liking score of the fresh composite flour bread (0 d) was slightly lower than that of the control (7.1 compared with 7.6 based on a 9-point hedonic scale). At least 76% of consumers would purchase the fresh composite flour bread if commercially available. Breads were differentiated by textural (moistness, smoothness, and softness) acceptability with canonical correlation of 0.84 to 0.87. The signal-to-noise ratio values of the 5-d stored breads were lower than the control, due mainly to the non-JAR (not-enough) intensity responses for moistness, smoothness, and softness; the mean drop of liking scores for these attributes ranged from 2.42 to 2.98. Flavor acceptability and overall liking were factors influencing consumers’ purchase intent of composite flour breads based on logistic regression analysis. This study demonstrated feasibility of incorporating up to 40% germinated brown rice flour in a wheat bread formulation. Practical Application: Our previous study revealed that flours from germinated brown rice have better nutritional properties, particularly gamma-aminobutyric acid (GABA), than the nongerminated one. This study demonstrated feasibility of incorporating up to 40% germinated brown rice flour in a wheat bread formulation. In the current U.S. market, this type of bread may be sold as frozen bread that would have a longer shelf life, or may be supplied as a food-service product that would be made-to-order or made fresh daily as currently practiced in some major grocery stores.  相似文献

Abstract: Brown rice has been reported to be more nutritious after germination. Germinated brown rice flours (GBRFs) from different steeping conditions (in distilled water [DI, pH 6.8] or in a buffer solution [pH 3] for either 24 or 48 h at 35 °C) were evaluated in this study. GBRF obtained from brown rice steeped at pH 3 for 48 h contained the highest amount of free gamma aminobutyric acid (GABA; 67 mg/100 g flour). The composite flour (wheat-GBRF) at a ratio of 70 : 30 exhibited significantly lower peak viscosity (PV) (56.99 – 132.45 RVU) with higher alpha-amylase activity (SN = 696 – 1826) compared with those of wheat flour (control) (PV = 136.46 RVU and SN = 1976). Bread formulations, containing 30% GBRF, had lower loaf volume and greater hardness (P < 0.05) than the wheat bread. However, the hardness of bread containing 30% GBRF (except at pH 6.8 and 24 h) was significantly lower than that of bread containing 30% nongerminated brown rice flour (BRF). Acceptability scores for aroma, taste, and flavor of breads prepared with or without GBRFs (30% substitution) were not significantly different, with the mean score ranging from 6.1 (like slightly) to 7 (like moderately). Among the bread formulations containing GBRF, the one with GBRF prepared after 24 h steeping at pH 3 had a slightly higher (though not significant) overall liking score (6.8). This study demonstrated that it is feasible to substitute wheat flour with up to 30% GBRF in bread formulation without negatively affecting sensory acceptance. Practical Application: Our previous study revealed that flours from germinated brown rice have better nutritional properties, particularly gamma-aminobutyric acid (GABA), than the nongerminated one. This study demonstrated feasibility of incorporating up to 30% germinated brown rice flour in a wheat bread formulation without negatively affecting sensory acceptance. Selected physicochemical properties of composite [wheat/germinated brown rice (GBRF)/germinated glutinous brown rice (GGNBRF)] flours at 100:0:0 (control), 70:30:0, 60:30:10, 60:40:0 and 50:40:10 (%) were evaluated. Germination (steeping at pH 3 for 24 h at 35 °C) increased free gamma‐aminobutyric acid from 2.11 to 32.7 and 2.41 to 30.69 mg per 100 g flour for GBRF and GGNBRF, respectively. The 60:30:10 and 50:40:10 composite flours exhibited the lower peak viscosity (70.42 and 68.54 RVU, respectively). The setback viscosity of composite flours containing GGNBR was significantly lower than other flours. The presence of GBRF and GGNBRF significantly lowered specific volume and expansion ratio of breads. However, all sensory liking scores, except for appearance, were not significantly different among composite flour breads. Overall liking scores of all breads ranged from 6.8 to 7.2 (like moderately). This study demonstrated feasibility of incorporating GBRF and GGNBRF up to 50% by weight in bread formulations without compromising sensory liking.  相似文献

本研究采用超声波技术辅助加工发芽糙米,探究超声波辅助处理对发芽糙米总黄酮、基本营养成分、米糠皮层微观结构及质构等的影响。结果表明,超声波辅助处理工艺顺序对发芽糙米总黄酮的含量有一定影响,其中糙米先浸泡13 h,再用160 W超声处理25 min后发芽,发芽糙米的总黄酮含量达到最大值218.17 mg/100 g。在此工艺条件下,与未超声处理组相比,发芽糙米的发芽势和发芽率分别升高了19.60%(P<0.01)和4.66%(P<0.05);蛋白质、维生素B2及矿物质元素(钾、磷、锰、锌)的含量均显著增加(P<0.05);糙米皮层变得更加疏松多孔;硬度、黏着性、弹性和粘度均下降。热物性方面,发芽糙米淀粉糊化相关热物性参数无显著性变化(P?0.05),可见超声波辅助加工能在一定程度上改善发芽糙米的功能营养特性及食用品质。  相似文献

Changes in physicochemical properties of germinated brown rice (GBR) and parboiled germinated brown rice (PGBR) dried in a fluidized bed dryer at 110–150 °C were investigated. Results indicated that parboiling altered the properties of GBR owing to starch gelatinisation. The moisture content, yellowness, peak viscosity and hardness of PGBR increased, but internal fissured kernel, cooking time, water absorption and total solids loss decreased when compared to GBR. γ‐aminobutyric acid (GABA) content in GBR was 23.31 mg per 100 g and was reduced to 17.91 mg per 100 g in PGBR. The drying times required to reduce the moisture content of GBR and PGBR to 16% d.b. were 4.01–7.65 min and 5.11–9.50 min, respectively. Final moisture content, which is optimum to prevent internal fissures of dried GBR and PGBR, was 27–29% and 25–28% d.b., respectively. The same trend was observed in the physicochemical properties of GBR and PGBR when increasing drying temperature and time.  相似文献

Effect of heat-moisture treatment (HMT) of brown rice flour on the quality and digestibility of Korean rice cake (jeolpyeon) was investigated. Brown rice flour with 20% moisture content was heat-moisture treated at 100–110 °C for 1–2 h, and subsequently cooled to 4 °C for 1–2 h. The lightness of HMT rice cake decreased as HMT temperature and time increased, whereas redness and yellowness increased. The hardness, springiness, and cohesiveness of HMT rice cake were much lower than those of brown rice cake. HMT of rice cake caused an increase in the resistant starch content and a decrease in the rapidly digestible starch content. In sensory evaluation, hardness of HMT rice cake was substantially lower than that of rice cake made with untreated brown rice due to retardation of retrogradation. However, the overall acceptability of HMT rice cake was lower than that of white rice cake or brown rice cake.  相似文献

Germinated and untreated ancient (Einkorn and Emmer) and modern (Esperia) wheat flours (0, 5, 10, 15 and 20%) were used in bread dough to improve functional and nutritional properties of bread according to (3 × 2 × 5) x 2 factorial design. Utilization of wheat varieties in the germinated form increased the ash, total dietary fiber (TDF), total yellow pigment (TYP), total phenolic content (TPC), antioxidant activities, Ca, Fe and Mg content of bread, and also the most increments in those values (except TYP) were observed in Emmer flour usage. Germinated wheat flour decreased the mean phytic acid contents of bread samples from 313.32 mg/100 g to 291.81 mg/100 g compared to untreated wheat flour. The use of ancient wheat flour (einkorn and emmer) gave lower bread volume compared to modern bread wheat flour. The use of germinated wheat flour decreased the crust and crumb L* values of the breads but increased the a* and b* values. As a result, increasing ratios of germinated ancient wheat flour increased the functional component and nutritional value of the bread, and at the same time, its usage at low ratio contributed positively to the technological quality of the bread.  相似文献

The aim of this study was to evaluate the chemical properties of the flours prepared with residues from organic king palm processing, and also to determine the cookie-making performance of residue blends from organic king palm processing and wheat flour, as well as the effect of the blends on the consumers' acceptance and purchase intent of high-fibre cookies. The king palm flours (PFs) contained high contents of total dietary fibre and total ash. Blends containing 0%, 10%, 15%, 20% and 25% of either PF or sieved king-palm flour (SPF) replacing wheat flour were prepared. The total dietary fibre content of the cookies ranged from 4 to 7 g (100 g)−1 on a dry-matter basis. The level of these components improved with increased amounts of PF and SPF in the blends. All the cookies were acceptable and approved in relation to purchase intent.  相似文献

This study evaluates the effects of acid and oxidative modifications on the development of the expansive properties of rice flours with varying levels of amylose. Rice grains of the cultivars Embrapa-7 Taim (high amylose), BRS Firmeza (medium amylose) and Motti (low amylose) were used. The rice flours were modified with lactic acid and oxidised with hydrogen peroxide at concentrations of 4 g H2O2/100 g flour and 8 g H2O2/100 g flour in 5 h, 21 h and 27 h reactions. The rice flours were evaluated for chemical composition, pasting properties, carbonyl and carboxyl contents and expansion properties. The effects of modification with lactic acid and oxidation with hydrogen peroxide were more intense in the flour with the lowest amylose content. The modification of rice flour with lactic acid promoted a reduction in amylose content and in pasting viscosity; the exception to this finding was the peak viscosity of Motti rice flour. The acid and oxidative modifications not changed the specific volume of biscuits made with Taim (1.33 mL/g) and Firmeza (1.88 mL/g) rice flours, however for the Motti rice flour promoted the development of baking expansion. The specific volume increased of 6.53 mL/g in biscuits with native Motti rice flour to 15.80 mL/g in biscuits made with Motti rice flour oxidised with 8 g/100 g of hydrogen peroxide for 27 h.  相似文献

In this study, physicochemical and sensory characteristics of wheat chips enriched with different legume flours were investigated. Wheat chips formulations were composed with the mixture of wheat flour and the mixture of three different legume flours (wheat–legume ratio 80:20). Mixture design approach was used to determine the effect of interactions between pea, chickpea and soy flour on the physicochemical and sensory properties of chips produced with wheat–legume flour mixture. In addition, product optimization was carried out by using ridge analysis to determine the optimum legume flour mixture proportions based on sensory properties of chips samples. Chickpea flour was found to be highest desired component depending on the general acceptability scores of chips. Protein content of chips increased significantly with the addition of soy flour. Optimum limit values of chickpea, pea and soy flour in the legume flour mixture used for the enrichment of the wheat chips were found to be 50–100 g/100 g, 0–60 g/100 g and 0–45 g/100 g legume flour, respectively, with respect to sensory properties. Additionally, ridge analysis results showed that the wheat chips should include only chickpea flour in the legume flour fraction to obtain maximum overall preference score (6.08).  相似文献

Germinated brown rice (GBR) is a gluten-free food raw material. Its tissue structure, physicochemical properties and functional properties depend on the germination time. In this study, rapid viscosity analyses, differential scanning calorimetry and X-ray diffraction et al were used to analyse the structural, physicochemical and functional changes in brown rice (BR) during germination. Gamma-aminobutyric acid (GABA), total phenolic compound, glutathione (GSH) and amino acid contents increased during germination. GBR exhibited the highest GSH (22.70 mg per 100 g) and amino acid (8.02 mg per 100 g) contents at 24 h and the highest GABA content (253.35 mg per 100 g) at 36 h. Furthermore, BR germinated for 36 h showed greater enthalpy (ΔH) than ungerminated BR. Although GBR showed less crystallinity than ungerminated BR, germination did not change the crystalline structure type of starch (A-type). These results inform choices of the appropriate applications of GBR to promote its utilisation in the food industry.  相似文献

Quality of the cookies substituted with germinated mung bean flour (GMF) to rice flour (RF) to produce gluten-free cookies were investigated in this study. The GMF was used to formulate with the RF to obtain the composite flours with different total protein contents of 6, 9, 12, 15, 18 and 21 (%, d.b). The increase in the substituted amounts of GMF contributed to the lower baking loss, diameter and spread ratio, but the higher thickness and hardness of the cookies as compared to the RF-based cookie. The cookies with more GMF substitution expressed lower lightness (L*) values, but higher redness (a*) and yellowness (b*) values than the others. The cookies substituted with 60% of the GMF (60-GMFC) exhibited similar baking loss, thickness, diameter, spread ratio and lightness values to the wheat flour (WF)-based cookies. The total amounts of essential amino acids and the sum of histidine, lysine and methionine of the composite flour-based cookies were 3.90% and 1.64%, significantly higher than those of the RF-based cookie (1.93% and 0.66%, respectively) or the WF-based cookie (1.70% and 0.58%, respectively). As a result, healthy gluten-free cookies could be prepared using the RF with the substitution of the germinated mung bean flour.  相似文献

The main objective of this study was to increase the folate content in Egyptian baladi bread using germinated wheat flour (GWF). The effect of germination temperature and drying conditions on the folate content of wheat grains was studied. Wheat flour was substituted with unsieved and sieved GWF at different levels and the effects on folate content and the rheological properties of dough were determined. Germination of wheat grains resulted in a 3- to 4-fold higher folate content depending on the germination temperature. Maximum folate content (61 μg/100 g dry matter (DM)) occurred at 30 °C. Drying did not affect folate content in germinated grains. After replacement with GWF, folate content in both flour and bread increased 1.5- to 4-fold depending on the level of replacement. Rheological properties of dough were adversely affected by increasing replacement level (as determined by farinograph). While the folate content in bread was as high as 66 μg/100 g DM at complete replacement of flour with sieved GWF, the bread was dark and layers were not separated. After replacement of half of the flour with sieved GWF (50 g/100 g), the baladi bread was acceptable with respect to colour and layer separation. The folate content in this bread was 50 μg/100 g DM, compared with 30 μg/100 g DM in bread without GWF (0 g/100 g).  相似文献

Replacement of wheat flour with defatted wheat germ (DFWG) at levels of 0–25% was investigated for its effect on functional and nutritional properties of cookies. The crude protein content of DFWG was as high as 27.8% with a highly valuable amino acid profile, rich in essential amino acids, especially lysine (2.32 g/100 g). The physicochemical and sensory evaluation of cookies, revealed that up to 15% substitution of wheat flour with DFWG produced acceptable cookies similar to the control (100% wheat flour) cookies. The protein quality of the cookies was assessed through weanling albino rats by feeding a diet of cookies for 10 days, which was formulated to supply 10% protein, with a casein diet as a control. The cookies containing 15% DFWG, were best regarding protein bioavailability in rats. The protein efficiency ratio (PER), net protein utilization (NPU), biological value (BV) and true digestibility (TD) differed significantly among diets containing cookies with 0–10% DFWG, and casein diet when fed to rats. Diets containing 15% DFWG have values, of these parameters, similar to the casein diet.  相似文献

Germination of brown rice can be completed by full soaking and partial soaking methods. This study aimed to analyse the influence of germination methods on the bioactive accumulations in germinated brown rice (GBR). Germination was conducted in four treatments: (i) membrane reactor with full (RFS) and (ii) partial soaking method soaking (RAG), (iii) manual soaking for complete germination (MFS) and (iv) partial manual soaking in combination with atmospheric germination (MAG). The results showed that soaking BR in membrane reactor accelerated the shoots' growth and increased GABA (γ-aminobutyric acid) content compared with the manual soaking method. The RAG treatment achieved higher GABA content (up to 125 mg/100 g), total phenolic and flavonoid content, and antioxidant activity than other germination methods. The main finding of this research indicates that membrane reactor effectively enhances the growth of sprouts. The combination of partial soaking in membrane reactor and atmospheric germination (RAG) is a suited method to increase GABA accumulation in GBR.  相似文献

Pulse flours offer nutritional alternatives to wheat flour in the production of baked snacks due to their high protein and fibre levels and low glycaemic index. In this study, broad‐bean (Vicia faba), yellow‐pea and green‐pea (Pisum sativum) flours were each blended with wheat flour at 40% in the formulation of chemically leavened crackers. The effects of flour type and baking time on the physiochemical properties, sensory acceptability, nutritional composition and antioxidant activity of the crackers were observed in comparison with 100% wheat crackers. Broad‐bean crackers had the highest protein content and antioxidant activity (13 g per 100 g DM and 38.8 mgAAE per 100 g DM, respectively). Yellow‐pea crackers had the highest fibre content (12 g per 100 g DM). Physical dimensions and colour attributes were significantly affected by pulse‐flour substitution. Yellow‐pea and broad‐bean crackers were significantly preferred by consumers compared to the control, demonstrating the potential application of these flours to improve the eating quality and nutritional profile of crackers.  相似文献

Cookies (soft type biscuits) were produced from blends of wheat flour containing graded levels (0–25%) of protein concentrates prepared from ungerminated and germinated fluted pumpkin (Telfairia occidentalis Hook) seeds and evaluated for nutritional, baking and sensory properties. Protein quality was investigated using weanling albino rats fed diets that were formulated to supply 10% protein using cookie samples, with casein as a control. Cookies produced from blends containing protein concentrates from germinated seeds had higher contents of crude protein and lower levels of polyphenol and phytic acid, compared with cookies supplemented with concentrates from ungerminated seeds. The use of up to 15% concentrate from ungerminated seeds in the blends produced cookies with spread ratio, hardness, colour and flavour similar to the 100% wheat flour (control) cookies. Cookies supplemented with concentrates from germinated seeds at 15–25% levels were nutritionally comparable to diets based on casein, but at the expense of acceptability.
