The capacities of 15 vitamins in reducing the formation of acrylamide were examined. Inhibitory activities of the water-soluble vitamins were tested in both chemical models containing acrylamide precursors (asparagines and glucose) and a food model system (fried snack products), while activities of fat-soluble vitamins were examined only in the latter model. Biotin, pyridoxine, pyridoxamine, and l-ascorbic acid exerted a potent inhibitory effect (>50%) on acrylamide formation in the chemical model system. Using the food model, it was shown that water-soluble vitamins are good inhibitors of acrylamide formation. On the other hand, only weak inhibitory effects were observed with fat-soluble vitamins. Effects of pyridoxal, nicotinic acid, and l-ascorbic acid were further examined using fried potato strips. Nicotinic acid and pyridoxal inhibited acrylamide formation in fried potato strips by 51% and 34%, respectively. Thus, certain vitamins at reasonable concentrations can inhibit the formation of acrylamide.  相似文献

Effects of eight hydrocolloids on acrylamide (AA) formation were compared. At 2% (w/w), pectin, alginic acid (>50% reduction) and xanthan gum (∼20%) significantly (P < 0.05) reduced acrylamide formation in chemical models. In the fried snack model, effective inhibition of acrylamide formation (∼30%) by most of the hydrocolloids was observed only when the concentration was increased to 5%. Immersing potato strips for 1 h in a 1% alginic acid solution before frying produced inhibition of acrylamide formation similar to that in a 5% solution, and immersing for 5 h led to a significantly lower AA content (∼60% versus ∼30% reduction) compared with immersing for 1 h in a 1% or 5% immersion solution. Similar phenomena were also observed for pectin. The findings suggest alginic acid and pectin are promising inhibitors of acrylamide formation, and immersion time is an important determinant for their effects against acrylamide formation in fried potato products.  相似文献

A central composite design was used to study the effect of blanching time and temperature on the extraction of reducing sugars from potato strips and slices. After frying, the impact of both factors on the acrylamide content in French fries and potato crisps was evaluated. Acrylamide could be lowered more efficiently in potato crisps compared to French fries, due to a more pronounced extraction of sugars from potato slices upon blanching. In both products, blanching temperature was the main influencing factor for sugar extraction and subsequent acrylamide mitigation. Blanching at temperatures of about 70 °C for a short period of time (about 10 min) was more efficient compared to blanching at lower temperatures, which appeared more time-consuming. However, the extraction efficiency of reducing sugars was over 10% lower when the potato cuts were blanched in water which was previously used for blanching, leading to over 10% less reduction in the final acrylamide content.  相似文献

The effects of mono- and divalent cations on the formation of acrylamide were studied in a fructose-asparagine model system at 150 and 180 °C. At amounts equivalent to those of asparagine and fructose, added divalent cations, such as Ca2+, were found to prevent acrylamide formation completely, whereas monovalent cations, such as Na+, almost halved the acrylamide formed in the model system. It was confirmed by mass spectrometric analyses of pyrolyzates that the formation of the Schiff base of asparagines, which is the key intermediate leading to acrylamide, was prevented by the cations. Meanwhile, the reaction proceeded to form brown coloured products. Dipping potatoes into calcium chloride solution inhibited the formation of acrylamide by up to 95% during frying. The sensory quality of fried potato strips, in terms of golden yellow colour and crispy texture, was not adversely affected by this treatment.  相似文献

油炸食品因其独特的风味和诱人色泽,深受消费者喜爱。但高温油炸过程产生的2A级致癌物丙烯酰胺(Acrylamide,AA ),受到人们的广泛关注。油炸食品是一种深受消费者喜爱的食品,在食品产业中具有重要地位,而AA在富含淀粉的油炸食品中含量较高,在生产加工过程中伴随美拉德反应途径或丙烯醛途径生成,不同的食品原料、食品预处理方法、加工工艺条件都会对其生产有影响。由于消费者和食品工业对丙烯酰胺关注度的增加,关于丙烯酰胺检测方法的相关研究引发了广泛的讨论。除了使用常用的方法检测油炸食品中的丙烯酰胺外,近年来还出现了许多新型检测方法。本文从油炸食品中的丙烯酰胺生成途径与机制出发,总结探究其系列毒性,归纳近年来油炸食品中丙烯酰胺检测的传统与新兴方法,以期为油炸食品的生产加工提供科学依据,为控制油炸食品中的丙烯酰胺形成提供一定的理论支撑和参考。  相似文献

Acrylamide formation in French fries was investigated in relation to blanching and asparaginase soaking treatments before final frying. Par-fried potatoes of Bintje variety were prepared by cutting strips (0.8 × 0.8 × 5 cm) which were blanched at 75 °C for 10 min. Unblanched strips were used as the control. Control or blanched strips were then dried at 85 °C for 10 min and immediately partially fried at 175 °C for 1 min. Finally, frozen par-fried potatoes were fried at 175 °C for 3 min to obtain French fries. Pre-drying of raw or blanched potato strips did not generate acrylamide formation as expected. Partial frying of pre-dried control potato strips generated 370 μg/kg of acrylamide and the final frying determined French fries with 2075 μg/kg of acrylamide. When control potato strips were treated with a 10000 ASNU/l asparaginase solution at 40 °C for 20 min, the acrylamide formation in French fries was reduced by 30%. When blanched potato strips were treated in the same way, the produced French fries have 60% less acrylamide content than blanched strips without the enzyme treatment. Soaking of blanched potato strips (75 °C, 10 min) in an 10000 ASNU/l asparaginase solution at 40 °C for 20 min is an effective way to reduce acrylamide formation after frying by reducing the amount of one of its important precursors such as asparagine.  相似文献

Reducing sugars, free amino acids, and the potential for acrylamide formation were determined in more than 50 potato samples from the 2003 harvest in Switzerland. The reducing sugar content strongly correlated with acrylamide, whereas no correlation was found between acrylamide and free asparagine or the pool of free amino acids. The reducing sugar contents and the acrylamide potentials were higher in most of the cultivars tested than in the samples from 2002. This was probably due to the hot and dry summer of 2003. Monitoring sugars and amino acids during heating at 120 °C and 180 °C showed that glucose and fructose reacted much faster than sucrose and the amino acids. Glutamine was consumed to a larger extent than any of the other amino acids. During prolonged storage, the reducing sugars decreased considerably while only moderate changes in the free amino acids were observed. Altogether, glucose and fructose remain the critical factors for acrylamide formation in potatoes and represent the most feasible way of reducing the formation of acrylamide in potato products.  相似文献

Potato crisps are a popular snack food which have been implicated as a potential source of acrylamide. This study develops a farm-to-fork human exposure assessment model for acrylamide in fried potato crisps for Irish consumers. The model used Monte Carlo simulation techniques to model the various stages from on farm production of potatoes, storage, processing, crisp production and final human consumption of potato crisps. A baseline model is created and a number of scenarios are subsequently created to look at the impact of different model assumptions and input parameters. The baseline model found that the mean level of acrylamide in potato crisps in Ireland was 720 μg/kg. Irish consumer exposure to acrylamide in potato crisps was estimated to be 0.052 and 0.064 μg/kg bw/day for males and females, respectively. A sensitivity analysis revealed the important parameters influencing the model predictions. The initial level of reducing sugars was found to be the most important parameter (correlation coefficient 0.58 and 0.57 for glucose and fructose, respectively), highlighting the importance of selecting cultivars with low reducing sugar levels for crisp production. The cooking regime had a significant impact on model predictions, highlighting the need for further research into the impact of different time and temperature combinations. Blanching and soaking of potatoes were also identified as important risk reduction processes.  相似文献

In this work the effect of standard phenolic compounds such as trolox, phenolic acids (ferulic, gallic, protocatechuic and caffeic acid) and secoiridoids, extracted from virgin olive oil (VOO), on acrylamide formation in an emulsion system was investigated. The emulsion system was heated in an oil bath at different temperatures and for different periods of time. At 105 and 115 °C the generated amounts of acrylamide were negligible during the monitoring time. At 125 °C addition of standard phenolic compounds reduced acrylamide formation which was more pronounced at initial time of heating (20 min) reaching up to 70%. Protocatechuic and gallic acid were more effective than trolox, caffeic and ferulic acid in acrylamide reduction at the final time intervals of heating (30–60 min). On the contrary, addition of VOO extract in the emulsion system resulted in a remarkable increase of acrylamide level, which was ascribed to secoiridoids’ structure containing aldehydic groups.  相似文献

This work was addressed to study the influence of radiofrequency (RF) heating on acrylamide (AA) formation in bakery products. To this purpose, leavened cakes and short dough biscuits were baked to a final moisture of 3.5 and 3.0%, respectively, by means of conventional convection heating or different combinations of conventional and RF heating. Results showed that, with respect to the baking process entirely carried out in an air-circulating oven, the RF-assisted baking process, i.e. the application of RF heating in the last stages of the baking process, resulted to be a promising strategy to keep low the AA levels in the bakery products. In particular, the best results were obtained for products which were moved from the hot-air baking to the RF heating when their residual moisture was still fairly high (around 10%). Results also suggested that, when very low values of residual moisture are required, this technological intervention is more suitable to thin bakery products, such as biscuits, than to thick products, such as leavened cakes, because of excessive browning in the internal portion as a consequence of the RF heating.  相似文献

It is nowadays well known that heating, which is carried out to improve the hygienic, sensory and nutritional properties of foods, can be also responsible for the development of acrylamide. Acrylamide levels between a few ppb and in excess of 1000 ppb have been found in many heated foods. As acrylamide is classified as a probable human carcinogen, the knowledge of critical processing variables leading to its formation is needed to ensure safety requirements.  相似文献

This work studied the effects of various pre-treatments (blanching, freezing, air drying, osmotic dehydration and control) on the shrinkage and textural properties of fried sweet potatoes. Sweet potato discs were pre-treated and fried in pure canola oil at 170 °C for 0.5-5 min. Bulk density of the fried samples decreased while porosity increased with frying time. Effect of pre-treatment though not significant on bulk density but was significant (P<0.05) on product porosity. Control samples exhibited less shrinkage than pre-treated samples. Maximum change in diameter of samples ranged between 6.7% and 10.2% depending on pre-treatment. Maximum change in sample thickness was observed by 120 s of frying and the highest value was 18.3%. Pre-treated samples had higher difference in thickness compared to the control samples. Change in sample volume increased with frying time reaching a maximum at 120 s after which it either decreased or levelled off. Generally, pre-treatment improved the textural properties of fried samples in product hardness, springiness, chewiness, cohesiveness and adhesiveness.  相似文献

杂环胺常见于如禽肉、鱼肉等富含蛋白质的热加工肉制品中,是一类杂环芳香族化合物。杂环胺具有极强的致癌致突变性,通常在肉制品于100℃及以上的高温烹制过程中产生。长期摄入具有高含量杂环胺的肉制品,会增加消费者患肿瘤患癌的风险。天然抗氧化物质具有抗氧化活性,且毒性小,安全性高,现已普遍应用于肉制品加工领域。通过添加天然抗氧化物质抑制肉制品中杂环胺的生成是当前研究热点。本文简要介绍了杂环胺的分类、形成等,并重点综述了近10年天然抗氧化物质对肉制品杂环胺形成的影响研究进展,其中,重点围绕多酚类化合物、黄酮类化合物、香辛料3类具有代表性的天然抗氧化物质对肉制品中杂环胺形成的影响进行了详尽的阐述。最后对未来的研究提出了展望。  相似文献

Reducing sugars (glucose and fructose) and asparagine levels in three varieties of Irish ware potatoes (Rooster, Record and Oilean) on sale in a local supermarket were monitored over an 11-month period. Samples were processed into French fries using conditions similar to those used for home preparation of fries and acrylamide levels in a selection of samples were measured. A wide range of total reducing sugar levels (fructose+glucose) were observed over the course of the study with values ranging from 152-12,286, 301-8812 and 279-7881 μg/g FW for the Rooster, Record and Oilean varieties, respectively. This resulted in high levels of acrylamide in some samples (up to 2970 μg/kg). In comparison to reducing sugars, asparagine contents were relatively constant for the three varieties and no particular trend in asparagine levels was noted. Both fructose and glucose contents of the tubers were positively correlated with acrylamide content (r=0.809, 0.776, respectively, P<0.001). A negative relationship between Hunter L values and acrylamide content of the French fries was observed (r=−0.712, P<0.001) indicating that L values could serve as a convenient and reliable indicator of acrylamide levels in French fries.  相似文献

Freeze-dried potato samples were obtained from the varieties Saturna and Peik that had been subjected to different agronomic conditions and storage. Powdered samples originating from the same growth year were mixed with oil and heated simultaneously in a stone oven in order to study the potential for acrylamide (AA) formation in a fixed time and temperature situation. For baked samples originating from unstored potato a linear relationship was found between asparagine (Asn) and reducing sugar (RS) content and AA formation. For these samples the AA content varied linearly with a* except from samples that originally were high or low in Asn. Upon storage the correlation between the quantity of the common precursors, Asn and RS, and AA were smaller. Results of the baking experiments suggest that the AA potential for stored potato cannot be predicted from RSs and Asn alone, and that other factors that might change during storage are of importance. Due to north European conditions the RSs might not always be the limiting substrate for AA formation. Additional information for the precursor content in 2004 and 2005 are included. No systematic effect on precursor contents related to chemical vine killing was observed. Precursor contents varied among and between varieties, different cultivation years and growth sites.  相似文献

 Heterocyclic aromatic amines (HAs) are mutagenic compounds that are formed during heating of meat and fish. These substances are reaction products of creatine with amino acids and carbohydrates. It is recommended that exposure to these probable human carcinogens should be minimised. Five heterocyclic aromatic amines which occur in beef were investigated: 2-amino-3-methyl-imidazo[4,5-f]quinoline (IQ), 2-amino-3,4-dimethyl-imidazo[4,5-f]quinoline (MeIQ), 2-amino-3,8-dimethyl-imidazo[4,5-f]quinoxaline (MeIQx), 2-amino-3,4,8-trimethyl-imidazo[4,5-f]quinoxaline (4,8-DiMeIQx), and 2-amino-1-methyl-6-phenyl-imidazo[4,5-b]pyridine (PhIP). Clean-up was done by acid-base partition followed by SPE using blue cotton. HPLC analysis was carried out by using electrochemical detection for IQ- and IQx-type compounds and fluorescence detection for PhIP. The concentrations of the aromatic amines were as follows: IQ, 10.2 μg/kg; MeIQ, 2.46 μg/kg; MeIQx, 13.2 μg/kg; 4,8-DiMeIQx, 2.26 μg/kg; and PhIP, 5.48 μg/kg. The application of spices (rosemary, thyme sage, garlic, brine) reduced the content of the HAs below 60% of the amount found in the control. Received: 23 April 1998  相似文献

The content of reducing sugars and asparagine, responsible for the formation of acrylamide, was determined in eight Indian potato varieties. Among these, Kufri chipsona-2 and Kufri lavkar showed the lowest level of reducing sugar (680.68 ± 56.50 mg/kg) and asparagine (2074.36 ± 122.27 mg/kg), respectively. The acrylamide content in potato chips prepared from Kufri chipsona-2, the variety that is used commercially in India for making potato chips was also the lowest. Irradiation of this variety of potatoes at the sprout inhibition dose of 60 Gy and subsequent storage for six months showed a 10.7% lower content of reducing sugars at both 14 and 4 °C. The acrylamide content was 8.41% and 6.95% lower in chips from irradiated potatoes stored at 14 and 4 °C than the corresponding non-irradiated controls. The colour of the chips was also better in irradiated potatoes as judged from the L∗ and a∗ values.  相似文献

It is well established that high oil temperatures during frying strongly increase acrylamide formation in French fries, but it is less clear, which temperature or rather which part of a temperature profile is relevant and if rules or regulatory measures should be established in respect of frying temperature, on which temperature they should refer. In most fryers, the oil temperature strongly drops on adding the potato sticks and may not fully recover up to the end of the frying process (depending on the amount of potato added in relation to the volume of oil and the heating power of the fryer). Since acrylamide is formed towards the end of frying, the temperature during the second half of the process is more important than that regulated by the thermostat. The profile of the frying temperature was optimized regarding product quality (crispness, flavor) and acrylamide formation. An initial temperature of 170–175 °C dropping to 140–145 °C and a virtually isothermal frying at 160 °C resulted in products of similar quality and acrylamide content. At initial temperatures below 160 °C and with main frying temperatures below 140 °C, crispness and the flavor of the French fries suffered: the sticks dried out and became oily. Isothermal frying at 167–170 °C resulted in approximately doubled acrylamide content compared to conditions that were optimal in respect of culinary quality and low acrylamide formation, showing that rules on the initial temperature alone are inadequate to ensure low acrylamide contents. Optimized fryers should program temperature: allowing an initial temperature drop, but then efficiently heating to prevent the temperature dropping below a given limit; after the end of frying, the initial temperature must be restored before frying the next portion.  相似文献

The influence of asparaginase on acrylamide formation, as well as colour development, in short dough biscuits was studied. In particular, asparaginase concentration, incubation time and temperature were changed according to an experimental design. As acrylamide formation was found to vary significantly between biscuits obtained by using the same ingredients and process, a mixed effect model was used to model variation of acrylamide concentration. By contrast a fixed effect model was used for colour polynomial analysis. Within the range of study, the overall results allowed the best conditions for minimising acrylamide formation to be found. It can be suggested that acrylamide development was at a minimum at intermediate asparaginase concentrations, as well as at the lowest time and temperature of incubation. Asparaginase addition did not significantly affect the colour of the final product, although the quadratic term of the incubation temperature did slightly.  相似文献
