The objective of this study was to determine the effects of roasting time on volatile components of Pistacia terebinthus L., a fruit growing wild in Turkey. The whole fruit samples were pan roasted for 0, 5, 10, 15, 20 and 25 min at 200 °C. Volatile compounds were isolated and identified using the direct thermal desorption (DTD) method coupled with comprehensive gas chromatography – time of flight mass spectrometry (GCxGC–TOF/MS). The major components of the fresh hull of P. terebinthus were α-pinene (10.37%), limonene (8.93%), β-pinene (5.53%), 2-carene (4.47%) and γ-muurolene (4.29%). Eighty-three constituents were characterised from the volatiles of fresh whole P. terebinthus fruits obtained by direct thermal desorption with α-pinene (9.62%), limonene (5.54%), γ-cadinane (5.48%), β-pinene (5.46%), β-caryophyllene (5.24%) being the major constituents. The type and the number of constituents characterised were observed to change with differing roasting times. Limonene (5.56%), α-pinene (4.84%), 5-methylfurfural (4.78%), 5-hydroxymethylfurfural (5-HMF, 3.89%), dimethylmetoxyfuranone (3.67%) and 3-methyl-2(5H)furanone (3.12%) were identified as the major components among the 104 compounds characterised in the volatiles of P. terebinthus, roasted for 25 min. In addition, volatiles of fully roasted P. terebinthus fruits contained furans and furanones (15.42%), pyridines (4.45%) and benzene derivatives (3.81%) as the major groups.  相似文献

The article presents an attempt to use an electronic nose together with a new three-parameter method for generation of a digital smellprint in order to specify the mode of processing of rapeseed based on the analysis of volatile compounds contained in cold-pressed rapeseed oil. Prior to the pressing process, the seeds were roasted or improperly stored to obtain oil samples with varied technological quality. The quality of pressed oils was evaluated by determination of the acid value. Furthermore, changes in oil colour were assessed with the use of an imaging colorimeter. Volatile compounds were determined with the use of gas chromatography and an electronic nose with a metal oxide semiconductor (MOS) sensor matrix. It was found that the mode of seed pre-treatment before pressing did not change the colour of the oil significantly. However, it influenced the profile of volatile organic compounds and changed their proportions. Ketones represented the largest proportion of volatile compounds determined for roasted samples and those pressed from seeds moistened up to 25% (w.b.). Alcohols dominated in samples moistened up to 10 and 12%, terpenes were the dominant volatile compounds in samples roasted at 140 °C, and other volatile compounds dominated in samples moistened up to 10 and 20% (w.b.). In turn, esters and aromatic compounds accounted for the lowest proportion in the analysed samples. The results shown by the electronic nose were correlated with the presence of particular groups of volatile compounds in rapeseed oil.  相似文献

The effect of roasting on oxidative stability, antioxidant capacity and the content of antioxidant phytochemicals in Pistacia terebinthus oil was investigated. Oils were extracted from P. terebinthus fruits roasted at 180 °C for 0–40 min. Roasting was found to cause an increase in the passage of phenolic compounds to the oil whereas the level of tocopherols, lutein and β-carotene was decreased. Antioxidant capacity and oxidative stability of P. terebinthus oil increased with roasting. As an indicator of the presence of Maillard reaction products in oil, hydroxymethylfurfural (HMF) level and colour intensity was measured and found to increase with increasing roasting time. Fatty acid composition was not affected significantly by roasting.  相似文献

Kumquats (Fortunella margarita Swingle) cultivated in Taiwan are eaten raw or made into candied fruit or fruit tea. For the experiments described in this paper, essential oils were obtained from kumquat peels or whole fruit by cold pressing, steam distillation or heating in water at 90 °C for 15 min followed by steam distillation. The volatile components contained in the essential oils were identified by direct injection (DI) or headspace-solid phase microextraction (HS-SPME) coupled with gas chromatography (GC). A total of 43 compounds were identified, of which 37 were verified by DI/GC and 31 by HS-SPME/GC. Hot water heating increased the yields of essential oils from both peels and whole fruit. The principal constituents of the oils were similar except for the minor compounds, including linalool, terpinen-4-ol and α-terpineol, the levels of which increased after steam distillation. The whole fruit also contained higher levels of terpene alcohols.  相似文献

以亚洲咖啡豆为研究对象,分别选取浅、中、深3 种烘焙度的中国云南和印度尼西亚苏门答腊产的卡蒂姆种咖啡豆,比较分析冷萃与热萃方式对萃取浓度、萃取率、可滴定酸、总酚、总糖、咖啡因、葫芦巴碱、绿原酸、抗氧化活性与挥发性成分的差异,并进行主成分分析,从而探究烘焙度对冷萃咖啡理化指标与风味成分的影响规律。结果表明,随着烘焙度增加,冷萃咖啡的萃取浓度、萃取率均显著上升,可滴定酸、总酚、葫芦巴碱、绿原酸、抗氧化活性均显著下降(P<0.05)。冷萃咖啡较热萃咖啡拥有更高的萃取浓度、萃取率与总糖含量(P<0.05),而可滴定酸、总酚含量、抗氧化活性较热萃显著偏低(P<0.05)。经顶空固相微萃取-气相色谱-质谱检测分析发现,浅烘咖啡豆萃取液中的挥发性成分含量显著低于烘焙度高的咖啡萃取液,深烘咖啡豆萃取液中挥发性成分种类与总含量最多。进一步通过主成分分析能较好区分冷萃和热萃咖啡,两者挥发性成分贡献率具有较大差异。2-丁酮、2-丁烯醛等花香类物质对浅烘冷萃咖啡贡献率更高,而2-甲基吡嗪、糠醇等呈现烘焙坚果类香气物质对浅烘热萃咖啡贡献率更高;2,6-二乙基吡嗪、川芎嗪等烘焙坚果类香气物质对中烘冷萃和热萃咖啡具有较高的贡献率;2-乙烯基呋喃、甲基糠硫醇、2,5-二乙基吡嗪、糠基甲基硫醚等物质对深烘冷萃咖啡有较高贡献率,二甲基二硫、对甲酚、1-甲基吡咯等物质对深烘热萃咖啡贡献率更高。相对于热萃咖啡,烘焙度对冷萃咖啡抗氧化能力与挥发性成分的影响更大。  相似文献

研究对比了4种烹制方法(煮制、烤制、微波及油炸制(大豆油、花生油和葵花油))对猪肉脂质氧化及挥发性风味成分的影响。结果表明:烹制能够促进猪肉的脂质氧化,经不同方式烹制后,熟制猪肉的过氧化值(POV)和硫代巴比妥酸值(TBA)显著增加(P0.05)。不同熟制猪肉之间脂质氧化程度存在显著性差异(P0.05),其中烤制猪肉的脂质氧化程度最高,其次为微波和水煮,而炸制猪肉的氧化程度最低。气相色谱-质谱(GC-MS)联用技术从熟制猪肉中共分离鉴定出68种挥发性风味成分,主要包括醛类、脂肪烃类、醇类、酮类、酯类等,总挥发性风味化合物含量在221.09(大豆油炸制猪肉)-1084.61 AU×106/g(煮制猪肉)之间。醛类是主要的化合物,占总挥发性风味成分的73.78(葵花油炸制猪肉)-78.79%(烤制猪肉),而己醛是最主要的醛类物质。TBA值与醛类、醇类及总挥发性风味物质呈显著正相关(p0.05),而POV值与挥发性风味物质的相关性不显著(p0.05)。主成分分析法(PCA)能够很好地区分经不同烹制方法得到的熟猪肉。  相似文献

The effects of different processing methods on the amino acid contents of four marine fishes commonly consumed in Nigeria: Clupea harengus, Scomber scombrus, Trachurus trachurus and Urophycis tenuis were investigated. The samples were boiled, roasted over hot charcoal, or fried in any of four different oil types (palm oil, soybean oil, vegetable oil and groundnut oil). The total amino acids for all the fish samples ranged from 76.72 to 98.01 g/100 g protein and the total essential amino acids from 28.95 to 44.73 g/100 g protein. Frying reduced the total amino acid contents, with the lowest values obtained in samples fried in palm oil. Boiling and roasting increased the total amino acid contents, with the values higher in roasted than boiled samples. The percentage of essential amino acids reduced with processing in almost all samples, but the reduction was more pronounced in the fried samples. The raw, boiled and roasted samples had amino acid scores greater than 100%, while for the fried samples, the limiting amino acids were either leucine or threonine. The results showed that roasting and boiling had more desirable effects on the amino acid content of the fish samples.  相似文献

The influence of four different cooking methods (roasting, grilling, microwaving baking and frying with olive oil) on volatile compounds profile (using solid phase microextraction coupled to GC–MS), lipid oxidation (by TBARs measurement) and cooking loss of foal meat was studied. Cooking losses were significantly (P < 0.001) affected by thermal treatment, being higher (29.9%) after microwaving and lower after grilling (19.1%) treatments. As expected, all the cooking methods increased TBARs content, since high temperature during cooking seems to cause an increase of the oxidation processes in foal steaks, being this increment significantly (P < 0.001) higher when foal steaks were roasted or microwaved.  相似文献

The essential oil and fatty acid composition of Myrtus communis var. italica fruit during its ripening was determined. The effect of the harvesting time on some physical properties of Myrtus fruits, fruit weight and moisture content, were significant. The increase of fruit weight (from 2.54 to 8.79 g% fruits) during ripeness was correlated positively with that of moisture content (from 28% to 72%). Fruit essential oil yields varied from 0.003% to 0.01% and showed a remarkable increase at 60 days after flowering to reach a maximum of 0.11%. Forty-seven volatile compounds were identified in fruit essential oils; 1,8-cineole (7.31–40.99%), geranyl acetate (1.83–20.54%), linalool (0.74–18.92%) and α-pinene (1.24–12.64%) were the main monoterpene compounds. Total fatty acid contents varied from 0.81% to 3.10% during fruit maturation and the predominant fatty acids were linoleic (12.21–71.34%), palmitic (13.58–37.07%) and oleic (6.49–21.89%) acids. The linoleic acid proportions correlated inversely with palmitic and oleic acids during all the stages of ripening.  相似文献

为了研究焙炒对植物油品质的影响,以油菜籽、亚麻籽、花生、葵花籽和芝麻为原料,经焙炒处理后采用液压压榨法制油(热榨油),分析植物油的理化指标(酸值、过氧化值、水分及挥发物、色泽)、主体组分(脂肪酸组成及含量、甘三酯组成及含量、挥发性组分)和总酚含量,并与未焙炒处理直接压榨制取的油(冷榨油)作对比。结果表明:热榨油酸值和过氧化值显著高于冷榨油(p<0.05),其中,热榨亚麻籽油酸值(KOH)最高(0.96 mg/g),热榨菜籽油过氧化值最高(1.02 mmol/kg);冷榨油水分及挥发物含量显著高于热榨油(p<0.05),其中冷榨花生油水分及挥发物含量最高(0.16%);热榨油的色泽较冷榨油深,其中热榨菜籽油的色泽最深(R1.1,Y31);焙炒对植物油脂肪酸和甘三酯组成及含量无显著影响(p>0.05);热榨油中醇类、醛类和酸类等挥发性组分较少,但杂环类物质较多;热榨菜籽油、亚麻籽油、花生油、葵花籽油和芝麻油总酚含量分别是其冷榨油的1.38、1.57、1.51、1.80倍和1.27倍。因此,焙炒对植物油品质影响较大,应根据生产需要选择合适的预处理方式。  相似文献

Robusta coffee beans were roasted by three methods, i.e. convectively at 230 °C, by microwaves at 700 W, and by the coupled convective–microwave (CMR) method (the simultaneous convective heating at 230 °C and microwaving at 700 W) for 590, 670, and 370 s, respectively. The ultimate temperature of roasted beans was 238, 207, and 228 °C, respectively. Volatile compounds were determined in the headspace by GC-SPME both in samples of roasted coffee and in green beans to find effects of roasting methods on their formation and retention. Eighty-two and 148 odorants were identified in green and roasted coffee, respectively. The highest contents of the latter were found in coffee roasted by the coupled method because both the relatively short time of roasting and moderately high final temperature of beans favored retention of volatile aroma compounds. Because of these reasons, the contents of odorants were the lowest in convectively roasted coffee.  相似文献

本文主要研究焙炒时间对芝麻油挥发性风味成分及芝麻中氨基酸含量(以芝麻脱脂粕中氨基酸含量为依据)的影响。经过不同时间焙炒的芝麻,用水代法提油,然后采用顶空固相微萃取(HS-SPME)结合GC/MS技术,检测芝麻油中的挥发性风味成分。随着焙炒时间的延长,吡嗪类、吡咯类、吡啶和嘧啶类、含硫类、呋喃类、酚类物质的相对含量逐渐增多,醛类、醇类、烃类和环氧烃类等物质的含量逐渐减少。对芝麻脱脂粕中18种氨基酸含量的检测数据显示,随着焙炒程度加深,氨基酸含量呈总体下降趋势,其中精氨酸、丝氨酸、赖氨酸和胱氨酸的含量减少明显,这4种氨基酸对芝麻油香味的形成可能起到了重要的作用。  相似文献

采用气相色谱-离子迁移谱(gas chromatography-ion mobility spectrometry,GC-IMS)结合主成分分析(principal component analysis,PCA)的方法,分析不同焙炒程度留胚米挥发性风味物质,旨在比较不同焙炒程度留胚米挥发性风味物质的差异,建立不同焙炒程度留胚米挥发性成分指纹图谱。结果显示:不同焙炒程度留胚米样品的挥发性物质可通过GC-IMS技术实现较好分离,在留胚米所有焙炒阶段的4个样品中共检测出61种风味化合物。醛类物质、酯类物质和杂环类化合物对焙炒留胚米的特征性风味贡献较大,醇类和酮类化合物对焙炒留胚米的特征性香气成分也有一定贡献。不同焙炒程度的留胚米香气种类与含量都具有明显差异。PCA表明,留胚米不同焙炒程度挥发性风味成分GC-IMS呈现出一定差异,两个PC累计贡献率达到94%,说明基于GC-IMS技术可以成功建立不同焙炒程度留胚米样品的风味指纹图谱。  相似文献

The volatile compounds in raw, conventionally roasted and microwave roasted black cumin (Nigella sativa L.) seeds at 0.45 kW for 2, 4, and 8 min, were analyzed by headspace-SPME gas chromatography-mass spectrometry. Among the 38 volatile compounds identified, the major compounds were thymoquinone and p-cymene in all samples. The levels of these compounds decreased with roasting. However, concentrations of pyrazines and furans increased significantly as a result of roasting and these compounds may affect the flavor of roasted black cumin seeds. Methyl pyrazine and 2,5-dimethylpyrazine were major pyrazines, formed at high concentration in seeds roasted for 8 min and in conventional roasting.  相似文献

The volatile oil composition of various parts of bitter fennel (Foeniculum vulgare var. vulgare) growing as wild Turkish plants was investigated by gas-liquid chromatography. The major component of all oil samples was trans-anethole (29·70, 37·07, 54·22, 61·08, 64·71% in leaf, stem, flowering umbel, flower, fruit, respectively). The other main components were -pinene in leaf, stem, flowering umbel, flower: -phellandrene in leaf, stem, flowering umbel; fenchone in fruit oil. The volatile oils of flowering umbel, flower and fruit contained high amounts of oxygenated compounds, in gradually increasing percentages.  相似文献

Constituents of essential oils from fruit samples of the turpentine tree (Pistacia terebinthus L.) collected from fifteen different localities of Turkey on August 2001 were identified by GC–MS. Twenty-eight compounds representing 92.3–100.0% of turpentine fruit oils were identified. The oil yields varied between 0.06% and 0.16%. The highest yield of oil was obtained from fruits of Antalya origin (Akba?-Serik) (0.16%). α-Pinene (51.3%), limonene (39.0%), p-cymen-8-ol (40.0%) and caryophyllene oxide (51.0%) were found as major components for different localities in Turkey. The predominant constituents in most samples were α-pinene (9.5–51.3%), limonene (tr-39.0%) and caryophyllene oxide (tr-51.5). Except for one collection (Manavgat-Antalya), which contained spathulenol (20.7%) and p-cymen-8-ol (40.0%), all the other samples yielded oils rich in α-pinene and limonene. β-Caryophyllene oxide is the most abundant compound in Hisarönü (?zmir), Alanya (Antalya) and Yaylada? (Hatay) oils. Results confirm the effect of locality on the oil content and composition.  相似文献

为探究高温长时辉干工艺对炒青绿茶香气品质的影响,采用顶空固相微萃取结合气相色谱-质谱联用技术,借助香气感官审评及多元统计分析,研究不同辉干参数下所制绿茶样品的香气特征和挥发性有机化合物。结果表明,8 组样品可根据香气特征分为4 类,且此差异与辉干温度及时间参数相关。在所有样品组中,共鉴定出58 种挥发性有机化合物,其中45 种化合物为共有香气组分。基于挥发性有机化合物开展无监督分析,所获聚类结果与感官审评分类情况相似。利用单因素方差分析和偏最小二乘法判别分析,筛选获得对炒青绿茶香气特征变化具有重要影响的32 种香气成分。为进一步了解辉干温度和时间对32 种挥发性有机化合物含量的影响,基于该2 种因素实施了双因素方差分析,发现17 种关键香气成分的含量受到温度因素、时间因素和温度-时间交互因素的显著影响(P<0.05),12 种关键香气成分的含量受到温度因素和时间因素的显著影响(P<0.05),α-荜澄茄油烯和δ-杜松烯含量受到时间因素和温度-时间交互因素的显著影响(P<0.05),α-甜旗烯含量仅受到温度因素的显著影响(P<0.05)。  相似文献

The bioactive composition of coffee, as one of the most popular beverages in the world, has attracted interest as a potential source of beneficial bioactive compounds, especially polyphenols and caffeine. Since the content of these compounds is affected by the processing conditions, the objective of this study was to determine the content of polyphenolic compounds and caffeine in four different coffee varieties: Minas and Cioccolatato (Coffea arabica), and Cherry and Vietnam (Coffea canephora syn. Coffea robusta), roasted by three varying degrees (light, medium and dark). The content of the polyphenolic compounds and the antioxidant capacity of coffees were determined using UV/Vis spectrophotometric methods, while the content of chlorogenic acid derivatives was determined using HPLC analysis. The caffeine content was determined by means of two spectrophotometric methods, as well as HPLC analysis. Additionally, raw caffeine was also obtained by an isolation procedure with chloroform. Cherry coffee, a variety of C. canephora exhibited the highest overall content of total phenols (42.37 mg GAE/g), followed by Minas coffee, while Cioccolatato contained the lowest TPC (33.12 mg GAE/g). Cherry coffee also exhibited the highest content of individual classes of polyphenols (flavan-3-ols, procyanidins and tannins), while the highest content of chlorogenic acid (CQA) derivatives was determined in Minas and Cioccolatato coffees (C. arabica). The highest content of total and individual polyphenolic compounds was determined in coffees roasted in both light and medium roasting conditions, which was also observed for the content of CQA derivatives and antioxidant capacity of roasted coffees. The highest caffeine content in the coffee samples was determined by employing the HPLC analysis (0.06–2.55%). Light roasted Cherry coffee contained the highest overall content of caffeine among all coffees, which exhibited a decrease with intensified roasting.  相似文献

Roasted peanut color and volatiles were evaluated for different time and temperature combinations of roasting. Raw peanuts were oven roasted at 135 to 204 °C, microwave roasted for 1 to 3 min, or combination roasted by microwave and oven roasting for various times and temperatures. Volatiles were measured using selected ion flow tube mass spectrometry. L* values were used to categorize peanuts as under‐roasted, ideally roasted, and over‐roasted. The total roasting time in order to achieve ideal color was not shortened by most of the combination treatments compared to their oven roasted equivalents. Oven before microwave roasting compared to the reverse was found to significantly increase the L* value. Peanuts with the same color had different volatile levels. Hexanal concentrations decreased then increased with roasting. Pyrazine levels increased as roasting time increased, although oven at 177 °C treatments had the highest and microwave treatments had the lowest levels. Volatile levels generally increased as roasting time or temperature increased. Oven 177 °C for 15 min generally had the highest level of volatiles among the roasting treatments tested. Soft independent modeling of class analogies based on volatile levels showed that raw peanuts were the most different, commercial samples were the most similar to each other, and oven, microwave, and combination roasting were all similar in volatile profile.  相似文献

The Štajerska region in north-eastern Slovenia and the Styria region in southern Austria have a long tradition of growing pumpkins (Cucurbita pepo L.) as an oil crop. GC-MS determination of the free and esterified minor compounds in oil of roasted pumpkin seeds from the Slovenian C. pepo L. variety ‘Slovenska golica’ revealed the presence of two previously unreported compounds: alpha-tocomonoenol and gamma-tocomonoenol. Using the GC-MS data, reference samples (Crude Palm Oil) and tocopherol and tocotrienol standards it was possible to assign and quantify alpha-tocomonoenol (17.6 ± 0.6 μg/g) and gamma-tocomonoenol (118.7 ± 1.0 μg/g) compounds in roasted ‘S. golica’ seed oil using HPLC. The concentrations of alpha-tocopherol and gamma-tocopherol were 77.9 ± 1.9 μg/g and 586.0 ± 4.6 μg/g, respectively. Surprisingly the gamma-tocotrienol concentration found was only 6.9 ± 0.2 μg/g. Analysis of the seeds from which the oil was pressed showed the initial gamma-tocotrienol amount was even lower (1.6 ± 0.1 and 2.2 ± 0.1 μg/g in the ground and roasted seeds, respectively) than in the roasted seed oil.  相似文献
