目的建立大米中黄曲霉毒素、伏马毒素、雪腐镰刀菌烯醇、脱氧雪腐镰刀菌烯醇类毒素、玉米赤霉烯酮、赭曲霉毒素A、T-2毒素、HT-2毒素以及杂色曲霉毒素等16种真菌毒素便捷准确的液相色谱-串联质谱法。方法大米样品经粉碎均质后采用70%甲醇水溶液浸泡提取,通过PriboFastRM226多功能净化柱净化,利用液相色谱串联质谱的多反应监测模式进行测定分析,采用内标法定量。结果 16种真菌毒素均具有良好的线性关系(r0.99),3个加标水平回收率为85.2%~102.8%,相对标准偏差范围为2.05%~4.75%。在61件大米检测中,共有5件样品检出真菌毒素,检测到的真菌毒素有5种,其中雪腐镰刀菌烯醇、伏马毒素B_1、伏马毒素B_2、15-乙酰基脱氧雪腐镰刀菌烯醇各有1件样品检出,黄曲霉毒素B_1有3件检出,检出率为8.33%,检出的5种真菌毒素含量在0.69~71.47μg/kg,均未超过国家食品安全标准规定的真菌毒素限量标准。结论大米中真菌毒素的检出率低,含量符合国家标准要求,该检测方法准确、可靠、便捷,可适用于大米中多种真菌毒素的检测。  相似文献

建立了液质联用法同时测定脱氧雪腐镰刀菌烯醇、3-乙酰基脱氧雪腐镰刀菌烯醇、15-乙酰基脱氧雪腐镰刀菌烯醇、黄曲霉毒素B_1、B_2、G_1、G_2、玉米赤霉烯酮共8种真菌毒素谷物中的含量。样品经乙腈-水溶液提取,通过多功能净化柱净化、Waters Acquity UPLC? BEH C18色谱柱分离、超高效液相色谱串联质谱系统测定,脱氧雪腐镰刀菌烯醇及其衍生物同位素内标法定量,黄曲霉毒素和玉米赤霉烯酮外标法定量。结果表明,8种真菌毒素在线性范围内线性相关性R~2≥0.999,检出限在0.3~1.0μg/kg之间,加标回收率在72.2%~101.7%之间,相对标准偏差在1.22%~9.69%之间。该方法操作简单、灵敏度高、回收率好,适用于谷物及其制品中多种真菌毒素的同时检测。  相似文献

建立了小麦中黄曲霉毒素B_1、黄曲霉毒素B_2、黄曲霉毒素G_1、黄曲霉毒素G_2、脱氧雪腐镰刀菌烯醇、雪腐镰刀菌烯醇、3-乙酰脱氧雪腐镰刀菌烯醇、脱氧雪腐镰刀菌烯醇-3-葡萄糖苷、15-乙酰脱氧雪腐镰刀菌烯醇和玉米赤霉烯酮等10种真菌毒素的超高液相色谱-三重四级杆串联质谱法检测的方法。小麦样品经乙腈-水-乙酸溶液震荡超声提取后,采用多功能净化柱净化。待测物经Kinetex SB-C_(18)色谱柱分离,甲醇-0.1%甲酸为流动相,梯度洗脱,正负模式同时扫描,三重串联四级杆质谱多反应离子监测(MRM)方式检测,基质标准校正,外标法定量。结果表明,在一定的浓度范围内,10种真菌毒素线性关系良好,相关系数均大于0.999,方法的检出限为0.015~1μg/kg,空白样品中添加高中低不同浓度的真菌毒素的回收率为65.12%~89.16%,RSD%(n=6)在4.26%~9.46%之间。该方法分析速度快、重复性好、灵敏度高,适合小麦中多种真菌毒素的高灵敏度快速测定。  相似文献

建立了谷物中黄曲霉毒素B_1、B_2、G_1、G_2、玉米赤霉烯酮、脱氧雪腐镰刀菌烯醇、3–乙酰基脱氧雪腐镰刀菌烯醇、15–乙酰基脱氧雪腐镰刀菌烯醇共8种真菌毒素的测定方法。样品采用改良的Qu ECh ERS方法进行提取,用超高效液相色谱串联质谱仪进行测定。8种毒素的线性相关系数(R2)均不小于0.998,检出限为0.3~1.0μg/kg,加标回收率为76.5%~113.4%,相对标准偏差为0.78%~5.03%。该方法简单快速、准确、灵敏度高,可适用于谷物及其制品中多种真菌素的同时分析。  相似文献

粮油食品以及动物源食品(奶、蛋、肉)在生产和储藏过程中易被真菌毒素污染,主要涉及毒素为黄曲霉毒素、玉米赤霉烯酮、脱氧雪腐镰刀菌烯醇、赭曲霉毒素A、伏马毒素和T2毒素等,这些毒素经食品流入食物链,会造成人体脏器损伤、生殖异常、免疫抑制、畸变和癌变等不良影响。因此,国内外针对性开展了风险评估工作,并建立了相关限量及检测技术标准。本文对主要粮油产品中常见真菌毒素的毒性进行了综述,比较分析了近年来国内外相关限量及检测标准的制定修订现状与进展,并对世界范围内相关风险评估工作进展进行了总结,以期为粮油产品的质量安全风险评估工作及有效应对国外贸易壁垒提供综合性的参考。  相似文献

目的:调查分析2022年云南省昭通市新收获玉米真菌毒素污染情况。方法:采集2022年昭通市各县区100份玉米样品,分别采用高效液相色谱-柱后衍生法、免疫亲和层析净化高效液相色谱法、液相色谱法测量黄曲霉毒素B1、脱氧雪腐镰刀菌烯醇、玉米赤霉烯酮。结果:71份玉米样本未检测出真菌毒素,29份样本检测出真菌毒素,所有样本真菌毒素均未超标,脱氧雪腐镰刀菌烯醇总体检出率最高。盐津县有1份检出3种真菌毒素的玉米样本,巧家县有3份检出2种真菌毒素的玉米样本,且脱氧雪腐镰刀菌烯醇与玉米赤霉烯酮检出率最高,巧家县和绥江县所收样本脱氧雪腐镰刀菌烯醇检出率最高,巧家县和水富市所收玉米样本赤霉烯酮检出率最高。结论:昭通市2022年新收获玉米真菌毒素污染情况在合理范围内,盐津县、巧家县新收获玉米易受真菌毒素污染,需加强关注。  相似文献

Hazardous secondary metabolites produced by Fusarium molds were identified in the first step of a risk assessment procedure, the hazard identification. These mycotoxins are excreted, often simultaneously, by the fungus into plant tissue. A literature survey revealed the occurrence of 61 Fusarium species in agricultural produce (cereals, vegetables, fruits) of which 35 species were reported to produce a total of 137 secondary metabolites in laboratory experiments. This literature review shows that 41 (30%) of these secondary metabolites have been tested and found toxic in various assays and should be considered hazardous if present in food. Six of these were reported to be related to human intoxications. Four metabolites belonged to the trichothecenes (T-2 toxin, nivalenol, deoxynivalenol and acetyldeoxynivalenol), the others were zearalenone and fumonisin B1. Twelve metabolites, including the previously mentioned six, were reported to have been tested in feeding trials using vertebrates. These twelve secondary metabolites should be regarded as most important and need to be evaluated in each risk assessment procedure for mycotoxins in food commodities .  相似文献

The mycotoxins that commonly occur in cereal grains and other products are not completely destroyed during food processing operations and can contaminate finished processed foods. The mycotoxins most commonly associated with cereal grains are aflatoxins, ochratoxin A, fumonisins, deoxynivalenol and zearalenone. The various food processes that may have effects on mycotoxins include sorting, trimming, cleaning, milling, brewing, cooking, baking, frying, roasting, canning, flaking, alkaline cooking, nixtamalization, and extrusion. Most of the food processes have variable effects on mycotoxins, with those that utilize the highest temperatures having greatest effects. In general the processes reduce mycotoxin concentrations significantly, but do not eliminate them completely. However, roasting and extrusion processing show promise for lowering mycotoxin concentrations, though very high temperatures are needed to bring about much of a reduction in mycotoxin concentrations. Extrusion processing at temperatures greater than 150 degrees C are needed to give good reduction of zearalenone, moderate reduction of alfatoxins, variable to low reduction of deoxynivalenol and good reduction of fumonisins. The greatest reductions of fumonisins occur at extrusion temperatures of 160 degrees C or higher and in the presence of glucose. Extrusion of fumonisin contaminated corn grits with 10% added glucose resulted in 75-85% reduction in Fumonisin B(1) levels. Some fumonisin degredation products are formed during extrusion, including small amounts of hydrolyzed Fumonisin B(1) and N-(Carboxymethyl) - Fumonisin B(1) and somewhat higher amounts of N-(1-deoxy-d-fructos-1-yl) Fumonisin B(1) in extruded grits containing added glucose. Feeding trial toxicity tests in rats with extruded fumonisin contaminated corn grits show some reduction in toxicity of grits extruded with glucose.  相似文献

The contamination of foods and feed with mycotoxins is a commonly known problem. Intense investigations have been conducted to study the occurrence, toxicity, and recently also the prevention and detoxification strategies of mycotoxins in human and animal food chains. Most of the studies have emphasized on "traditional" mycotoxins, such as aflatoxins, ochratoxin A, and trichothecenes. However, one of the most common grain-contaminating genus of fungi, Fusarium spp., is also capable of producing other toxic secondary metabolites - the so-called emerging mycotoxins such as fusaproliferin, beauvericin, enniatins, and moniliformin. So far, only limited data is available on these metabolites. This is not only due to their late recognition but especially the late understanding of their role as mycotoxins. This paper summarizes the existing data on the chemistry, analytical techniques, biosynthesis, production, toxicity, and occurrence data on fusaproliferin, beauvericin, enniatins, and moniliformin. Based on the available studies, attention should be paid to the studies on the distinct significance of these compounds in the human and animal food chains.  相似文献

小麦是全球第二大粮食作物,每年因病害造成小麦严重减产,品质下降。一些病原菌还能够产生真菌毒素,进一步危害小麦及其制品的质量安全,对人畜健康造成巨大危害。由镰刀菌引起的小麦赤霉病是我国最主要的小麦病害之一,由交链孢引起的小麦黑胚病也备受关注。这2种真菌既能引起小麦病害,又能产生真菌毒素,故称之为产毒病害。镰刀菌产生的脱氧雪腐镰刀菌烯醇(deoxynivalenol,DON)、玉米赤霉烯酮(zearalenone,ZEN)、伏马菌素等和交链孢产生的交链孢酚(alternariol,AOH)、交链孢酚单甲醚(alternariol monomethyl ether,AME)和细交链格孢酮酸(tenuazonic acid,Te A)等是2类病原菌产生的主要真菌毒素。本文综述了能引起小麦产毒病害的镰刀菌和交链孢的特点、真菌毒素以及病害和毒素的防控技术,尤其是2类病原菌引起的小麦病害和真菌毒素的防控。这将为后期防治小麦产毒病害及控制毒素产生的研究提供有利参考。  相似文献

An overview is presented covering the occurrence of Fusarium species in raw food and feed materials and the mycotoxins produced by these molds. A study of the literature (reported from 1969 until now) revealed the occurrence of over 60 Fusarium species in these raw materials. It appears that the most reported species occur worldwide and in a large variety of raw food products, such as cereals, vegetables and fruits. These Fusarium species occurring in samples are producers of toxigenic secondary metabolites of which more than 100 have been described. Most of them are referred to as mycotoxins of which trichothecencs (e.g., deoxynivalenol, nivalenol, T-2 toxin, diacetoxyscirpenol), fumonisins and zearalenones are most frequently reported .  相似文献

Mycotoxins contamination in cereal‐based food is ubiquitous according to systematic review of the scientific documentation of worldwide mycotoxin contamination in cereal and their products between 2008 and 2018, thus representing food safety issue especially in developing tropical countries. Food processing plays a vital role to prevent mycotoxin contamination in food. Therefore, it is with great urgency to develop strategies to inhibit fungi growth and mycotoxin production during food processing. This review begins by discussing physicochemical properties of five most common mycotoxins (aflatoxins, fumonisins, ochratoxins, deoxynivalenol, and zearalenone) found in cereal grains, regulation for mycotoxins in food, and their potential negative impact on human health. The fate of mycotoxins during major cereal‐based food processing including milling, breadmaking, extrusion, malting, and brewing was then summarized. In the end, traditional mitigation strategies including physical and chemical and potential application of biocontrol agent and essential oil nanoemulsions that can be applied during food processing were discussed. It indicated that no single method is currently available to completely prevent mycotoxin contamination in cereal foods.  相似文献

Fumonisins constitute a family of toxic and carcinogenic mycotoxins produced by Fusarium verticillioides (formerly F. moniliforme), a common fungal contaminant of corn. Contamination with fumonisin B(1) (FB(1)) is of concern as this mycotoxin causes various animal diseases. The gastrointestinal tract represents the first barrier against ingested chemicals, food contaminants, and natural toxins. Following ingestion of fumonisin-contaminated food or feed, intestinal epithelial cells could be exposed to a high concentration of toxin. In this review, we have summarized the data dealing with the impact of FB(1) on the intestine. Although FB(1 )is poorly absorbed and metabolized in the intestine, it induces intestinal disturbances (abdominal pain or diarrhea) and causes extra-intestinal organ pathologies (pulmonary edema, leukoencephalomalacia, or neural tube defects). The main toxicological effect of FB(1) reported in vivo and in vitro is the accumulation of sphingoid bases associated with the depletion of complex sphingolipids. This disturbance of the sphingolipid biosynthesis pathway could explain the other observed toxicological effects such as an alteration in intestinal epithelial cell viability and proliferation, a modification of cytokine production, and a modulation of intestinal physical barrier function.  相似文献

This paper presents a literature review of the occurrence of several mycotoxins in bovine milk and dairy products, because it is the main type of milk produced and marketed worldwide. Mycotoxins are produced by different genera of filamentous fungi and present serious health hazards such as carcinogenicity and mutagenicity. Under favorable growth conditions, toxigenic fungi produce mycotoxins which contaminate the lactating cow's feedstuff. During metabolism, these mycotoxins undergo biotransformation and are secreted in milk. Data show that there is a seasonal trend in the levels of mycotoxins in milk, with these being higher in the cold months probably due to the prolonged storage required for the cattle feeds providing favorable conditions for fungal growth. Good agricultural and storage practices are therefore of fundamental importance in the control of toxigenic species and mycotoxins. Although aflatoxins (especially aflatoxin M1) are the mycotoxins of greater incidence in milk and dairy products, this review shows that other mycotoxins, such as fumonisin, ochratoxin A, trichothecenes, zearalenone, T‐2 toxin, and deoxynivalenol, can also be found in these products. Given that milk is widely consumed and is a source of nutrients, especially in childhood, a thorough investigation of the occurrence of mycotoxins as well the adoption of measures to minimize their contamination of milk is essential.  相似文献

The present study was conducted to explore the occurrence of mycotoxins in commercial baby foods in Doha-Qatar. LCMS/MS- and HPLC-based analysis of baby food (n = 67) for 12 mycotoxins confirmed the presence of aflatoxin M1 (AFM1, 33%), ochratoxin A (OTA, 31%), deoxynivalenol (DON, 27%), aflatoxin B1 (AFB1, 22%), fumonisin B2 (FB2, 10%), zearalenone (ZEN, 4%) and T-2 toxin (2%). Noodles exhibited the maximum contamination percentage, with 33% of the samples being contaminated above the EU maximum limits, for at least one mycotoxin. Among the multi-grain flake samples, up to 28% and for the milk and milk-based-cereal samples, 14% contained at least one mycotoxin above the EU maximum limits. From all cereal-based food samples, 22%, 5%, 2% and 2% were concurrently contaminated with 2, 3, 4 and 5 mycotoxins, respectively. The occurrence of toxicological important mycotoxins in Qatari market warrants the implementation of strict regulatory limits to protect human health.  相似文献

Most recent information on the occurrence of Fusarium Head Blight species and related mycotoxins in wheat grown in the Netherlands dates from 2001. This aim of this study was to investigate the incidence and levels of Fusarium Head Blight species and Fusarium mycotoxins, as well as their possible relationships, in winter wheat cultivated in the Netherlands in 2009. Samples were collected from individual fields of 88 commercial wheat growers. Samples were collected at harvest from 86 fields, and 2 weeks before the expected harvest date from 21 fields. In all, 128 samples, the levels of each of seven Fusarium Head Blight species and of 12 related mycotoxins were quantified. The results showed that F. graminearum was the most frequently observed species at harvest, followed by F. avenaceum and M. nivale. In the pre-harvest samples, only F. graminearum and M. nivale were relevant. The highest incidence and concentrations of mycotoxins were found for deoxynivalenol, followed by zearalenone and beauvericin, both pre-harvest and at harvest. Other toxins frequently found - for the first time in the Netherlands - included T-2 toxin, HT-2 toxin, and moniliformin. The levels of deoxynivalenol were positively related to F. graminearum levels, as well as to zearalenone levels. Other relationships could not be established. The current approach taken in collecting wheat samples and quantifying the presence of Fusarium Head Blight species and related mycotoxins is an efficient method to obtain insight into the occurrence of these species and toxins in wheat grown under natural environmental conditions. It is recommended that this survey be repeated for several years to establish inter-annual variability in both species composition and mycotoxin occurrence.  相似文献
