本研究用发酵法生产沙棘果酒,在沙棘果汁发酵过程中加入糯米糖化醪以弥补沙棘果汁酸度过高、碳源严重不足之缺陷,通过正交试验确定出发酵型沙棘果酒的最佳发酵条件及生产工艺参数,并采用菌种驯化、低温成熟等工艺配制出风味纯正、酒体丰满、营养丰富的发酵型沙棘果酒,为充分利用沙棘资源开辟了一条新途径。  相似文献

本研究基于紫薯糖化液可为树莓发酵果酒提供糖分、紫薯酰基化花色苷可提高果酒花色苷稳定性的特性,以树莓和紫薯为原料,探讨了酶种类、酶添加量、水解时间等因素对紫薯液化糖化液还原糖和总糖含量的影响,以及发酵方式、酵母种类、发酵温度和树莓汁添加量等对复合果酒酒精度、二氧化碳失重、pH值和还原糖、总糖、总酸、花色苷含量等理化指标的影响,比较了复合果酒、树莓酒、紫薯酒贮藏期间花色苷含量的变化。结果表明:紫薯最佳液化、糖化条件:选择耐高温α-淀粉酶,酶添加量为0.9 mL/kg,液化时间为3 h,复合糖化酶添加量为1.2 mL/kg,糖化时间为3.5 h;复合果酒的最佳发酵参数:采用异步糖化发酵,酵母种类为BV818酵母,发酵温度为25℃,树莓汁添加量60%。所得果酒酒精度为11.7%vol,果香、酒香良好,柔和爽口。采用树莓紫薯复合发酵可提高树莓酒贮藏期间花色苷稳定性。  相似文献

以3 种不同酵母发酵的紫薯糯米酒为原料,运用顶空固相微萃取和气相色谱-质谱联用技术对紫薯糯米酒的香气成分进行分析,并研究紫薯醪和糯米糖化醪的比例对酒品质的影响。结果表明,紫薯醪和糯米糖化醪的比例在3∶2~1∶1(m/m)时,酒的品质较好;紫薯糯米酒中的香气成分有酯类、醇类、醛、酮类和烷烃、烯烃类,3 种酵母发酵的酒样中共检测出香气成分73 种。果酒专用干酵母SY、酿酒酵母1383和酿酒酵母1596发酵的紫薯糯米酒中分别检测出55、54、55 种香气成分,其中相同的成分有38种,3 种紫薯糯米酒中相对含量最高的香气成分都是异戊醇,其相对含量分别为17.67%、17.84%和18.63%。  相似文献

以草菇为特色辅料与糯米通过全发酵制得草菇糯米甜酒。研究了不同黄酒高活性干酵母(YWBY)接种量、发酵温度、发酵时间对糯米甜酒发酵的影响。确定草菇糯米甜酒的最佳发酵工艺条件:主发酵工艺条件为在糖化醪中接入0.10%YWBY,料水比1:0.8,25℃下发酵9d;后发酵工艺条件为22℃下发酵18d。结果表明,较低的发酵温度有利于提高产品的总酯和非糖固形物含量,而且酒的色泽和口感更好;草菇糯米甜酒,呈棕黄色、醇厚、甘甜爽口、酒体协调,具有特色的兰花香味,保持了草菇的营养保健与食疗价值。  相似文献

从天然浆果中分离酿酒酵母并进行生理生化分类鉴定,通过红树莓汁的发酵试验从分离到的酿酒酵母中筛选得到适合发酵红树莓果酒的天然酵母。首先通过自然发酵法从不同来源的新鲜树莓、山葡萄、蓝莓中分离得到30株酵母,利用形态及生理生化鉴定方法将30株酵母分成25组;然后在相同条件下接入等量的不同酵母进行发酵,以红树莓果酒的总酸、残糖、乙醇体积分数及感官评价分数为评价指标,从而筛选出适合红树莓果酒酿造的最佳酵母。结果表明,第7组酵母最适于发酵红树莓果酒,所得果酒总酸10.55g/L,残糖4.14g/L,乙醇体积分数为12.2%,果酒具有鲜亮的宝石红色,澄清透亮,果香浓郁,酒体丰满,口味纯正。  相似文献

研究了不同菌种发酵制作冬虫夏草酒的特性,得出以果酒酵母作为发酵菌种效果最佳;正交设计试验了此条件下强化型虫草-枸杞酒的生产工艺及相关的生产参数,得出冬虫夏草酒的最佳前发酵条件为:发酵型虫草酒的生产条件为果酒酵母0.8%、发酵醪浆30%、麦芽汁30%、柠檬酸0.5%,发酵温度26℃,发酵时间5d;虫草酒的最佳成熟条件为:18℃,15d.在该条件下发酵进程较快,且有较好的澄清度,产品色泽亮红色、口味纯正、酒体丰满、营养丰富、风格明快.  相似文献

以白首乌、糯米为原料,经糖化、发酵生产出具有保健功能的首乌黄酒。对首乌醪液液化及发酵工艺条件进行探讨。结果表明:最佳液化条件为耐高温α-淀粉酶添加量为20 U/g,液化时间为25 min,液化温度为95℃。最佳发酵条件为发酵温度为28℃,发酵时间为5 d,首乌汁添加量为15%。  相似文献

以玉米、大米、小米、黑米、糯米、糯玉米6种米为原料,以米根霉和酿酒活性干酵母为糖化发酵剂,通过单因素试验对6种淀粉质原料米酒酿造用麸曲和酒曲的种类、比例及接种量、发酵温度、发酵时间等进行研究,再采用正交试验优选出六粮风味米酒发酵的最佳工艺参数。结果表明:麸曲与酒曲最佳质量比为1∶1,加曲量为0.6%,30℃条件下发酵48 h;玉米∶大米∶小米∶黑米∶糯米∶糯玉米的质量比为1∶1∶1∶2∶2∶2。此时的米酒质量最佳,酒质地均匀、酒醪清澈、醇香浓郁,柔和爽口,具有独特的甜米酒风味。  相似文献

红曲是一种天然产品,含有多种有益于人体健康生理活性成分。以糯米为原料,采用红曲、糖化曲以及活性干酵母为糖化发酵剂生产红曲酒。结果表明,生产红曲酒的最佳发酵工艺条件为:糯米200g,糖化曲0.4g、红曲26g、酵母菌液5ml,初始pH值为5.5,发酵温度为28℃,发酵时间为14d。所得红曲酒,营养丰富,并具有一定的保健功能。  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

An internet website (http://cpf.jrc.it/smt/) has been produced as a means of dissemination of methods of analysis and supporting spectroscopic information on monomers and additives used for food contact materials (principally packaging). The site which is aimed primarily at assisting food control laboratories in the European Union contains analytical information on monomers, starting substances and additives used in the manufacture of plastics materials. A searchable index is provided giving PM and CAS numbers for each of 255 substances. For each substance a data sheet gives regulatory information, chemical structures, physico-chemical information and background information on the use of the substance in particular plastics, and the food packaging applications. For monomers and starting substances (155 compounds) the infra-red and mass spectra are provided, and for additives (100 compounds); additionally proton NMR are available for about 50% of the entries. Where analytical methods have been developed for determining these substances as residual amounts in plastics or as trace amounts in food simulants these methods are also on the website. All information is provided in portable document file (PDF) format which means that high quality copies can be readily printed, using freely available Adobe Acrobat Reader software. The website will in future be maintained and up-dated by the European Commission's Joint Research Centre (JRC) as new substances are authorized for use by the European Commission (DG-ENTR formerly DGIII). Where analytical laboratories (food control or other) require reference substances these can be obtained free-ofcharge from a reference collection housed at the JRC and maintained in conjunction with this website compendium.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
