The aim of this study was to determine whether supplemental addition of coenzyme Q10 and ascorbic acid or α-tocopherol, either alone or together, can prevent oxidative damage in chicken liver pâté, as reflected by reduced formation of cholesterol oxidation products (COPs) and by preservation of sensorial quality. Separate groups of chicken liver pâtés had no supplements (control) or were supplemented with coenzyme Q10 (0.2 g/kg) and either ascorbic acid (2 g/kg) or α-tocopherol (0.2 g/kg), or both. All products were pasteurised (82 °C) or sterilised (121 °C). Four COPs were found: 7α-, 7β-, 20α- and 25-hydroxycholesterol. The COP radical scavenger function of coenzyme Q10 (control, 5.16 mg/kg; plus Q10, 3.94 mg/kg) and the synchronous actions of coenzyme Q10 and α-tocopherol (2.6 mg/kg) were confirmed in sterilised pâtés. Generally, in pasteurised and sterilised pâtés, the most efficient scavenger function was with ascorbic acid either alone or together with α-tocopherol, where the formation of COPs was below the limit of detection. An increase of 1.9 mg/kg in COP production during heating was also seen in samples without added antioxidants. There was a weak interdependence between the content of COPs and the sensory parameters of the pâté. For addition of antioxidants, in the pasteurised pâté, colour and smell were slightly improved, but flavour deteriorated; in the sterilised pâté, colour was slightly worse, with a more tender texture. Overall, instrumentally measured colour and sensory properties (except texture) showed no significant differences between pasteurisation and sterilisation.  相似文献

Antimicrobial activity is an attractive property for packaging materials which can extend the shelf life of products and provide microbial safety for consumers. The study aimed to analyze the physicochemical and antimicrobial properties of gelatin-based edible films containing trans-anethole as the active additive. Encapsulation with β-cyclodextrin was used as an effective way to introduce trans-anethole into gelatin matrix. The results showed that the trans-anethole/β-cyclodextrin inclusion complex could be evenly dispersed in the gelatin-based edible films with appropriate addition. The incorporation of trans-anethole conferred the edible films with good antimicrobial activity as expected, which increased with the content of trans-anethole increasing. Moreover, the addition of inclusion complex improved the tensile strength and surface hydrophobicity and reduced the moisture content of the edible films. It was interesting that the edible films presented great UV light barrier property and it was increased by the addition of inclusion complex. Overall, the antimicrobial gelatin-based edible films showed great potential as bioactive packaging materials to extend food shelf life.  相似文献

Lycopene and β-carotene were extracted from freeze-dried tomatoes (skin + pulp) with pure SC CO2 and SC CO2 + 5% w/w co-solvent at 40 °C, 400 bar and flow rates of 0.5 and 1.2 L/min. The apparent solubility of lycopene and β-carotene in the multicomponent complex system was determined from dynamic extraction experiments using a laboratory-scale supercritical extraction system. Solubility of pure lycopene and β-carotene in SC CO2 (binary system) was reported in the literature to be of the order of 10−6 mole fraction. The apparent solubility of lycopene extracted from tomatoes with SC CO2 (multicomponent complex system) under the same conditions was almost one order of magnitude smaller. The apparent solubility obtained using oil as a co-solvent was higher than that obtained with ethanol as a co-solvent or pure SC CO2. The differences in solubility are mainly due to the polarity of the co-solvent and the impact of the tomato matrix in the multicomponent complex system.  相似文献

The effects of divalent metal ions (Ca2+, Mg2+, Fe2+, and Cu2+) on the growth, β-oxidation system, and thioesterase activity of Lactococcus lactis were investigated. Different metal ions significantly influenced the growth of L. lactis: Ca2+ and Fe2+ accelerated growth, whereas Cu2+ inhibited growth. Furthermore, Mg2+ inhibited growth of L. lactis at a low concentration but stimulated growth of L. lactis at a high concentration. The divalent metal ions had significant effects on activity of the 4 key enzymes of the β-oxidation system (acyl-CoA dehydrogenase, enoyl-CoA hydratase, L-3-hydroxyacyl-CoA dehydrogenase, and thiolase) and thioesterase of L. lactis. The activity of acyl-CoA dehydrogenases increased markedly in the presence of Ca2+ and Mg2+, whereas it decreased with 1 mmol/L Fe2+ or 12 mmol/L Mg2+. All the metal ions could induce activity of enoyl-CoA hydratase. In addition, 12 mmol/L Mg2+ significantly stimulated activity of L-3-hydroxyacyl-CoA dehydrogenase, and all metal ions could induce activity of thiolase, although thiolase activity decreased significantly when 0.05 mmol/L Cu2+ was added into M17 broth. Inhibition of thioesterase activity by all 4 metal ions could be reversed by 2 mmol/L Ca2+. These results help us understand the effect of metal ions on the β-oxidation system and thioesterase activity of Lactococcus lactis.  相似文献

The aim of this study was to develop, characterize and evaluate in vitro the efficacy of active films, based on an inclusion complex formed by β-cyclodextrin, 2-nonanone and two polymer matrices (polylactic acid and low density polyethylene). The different films were characterized by scanning electronic microscopy (SEM), differential scanning calorimetry (DSC), themogravimetric analysis (TGA), optical properties and antimicrobial activity against B. cinerea. The results showed important differences in the parameters evaluated where the level of agglomerates of additives was a key to explain these changes. Finally, microbiological analysis showed high effectiveness in reducing the Botrytis cinerea growth. The active films developed in this study were able to inhibit the growth of phytopathogenic fungus B. cinerea at different experimental conditions. The studied films have potential use for packaging fresh fruit susceptible to biological attack by this fungus.  相似文献

Metabolite profiling of the total ethanolic extract of Prunus amygdalus stem and leaves was carried out for the first time using LC-DAD-ESI-MS in the negative ion mode to investigate its chemical composition. Results revealed the identification of 33 phenolic compounds. Fifteen compounds were investigated in P. amygdalus for the first time and identified as; veratic acid, rosmarinicacid, protocatechuic acid-hexoside, 3-O-caffeoylquinic acid (neochlorogenic acid), dihydroquercetin- hexoside, coumaroyl-quinic acid, vanillic acid glucoside, cis piceid, hesperidin, dihydrokaempferol, acteoside, quercetin acetyl hexoside, homovanillic acid, fisetin-deoxyhexoside. The antioxidant potential of the total ethanolic extract (EE) and the fractions: petroleum ether (PE), chloroform (CE), ethyl acetate (EtE), methanol eluted diaion (DME) and diaion eluted with 50% methanol (D 50%E) was performed using DPPH assay. The most potent antioxidant EE, EtE and D50%E extracts (compared with vitamin C) were selected for further hepatoprotective assessment against hepatotoxicity induced by thioacetamide in a dose of 200 mg/kg compared with silymarin (50 mg/kg) as a standard drug. Results revealed the significant reversal of the deleterious effects of thioacetamide on serum ALT, AST and total protein in the order: EtE >?(Silymarin?=?EE)?>?D50% E. The biochemical results were corroborated with the histological studies of liver.  相似文献

To understand effects of milling, scented rice ‘Cheonjihyang-1-se’ was milled from 10 to 140 s and changes in volatiles, phytonutrients, and fatty acids were evaluated. Among 43 identified odor-active compounds, four volatiles, including hexan-3-one, exhibited decreases of up to 78%, while four others including (E)-non-2-enal, increased following milling. Levels of 2-acetyl-1-pyrroline, the most distinctive popcorn-flavoring compound in scented rice, were not affected by the degree of milling (DM). Partial least squares discriminant analyses of volatiles were able to differentiate white rice according to the DM. Benzene and 2-pentylfuran showed the highest variable importance in projection scores, which could be applied in estimating the DM of rice. Milling significantly decreased tocopherols, tocotrienols, squalene, phytosterols contents and oleic acid composition, while palmitic acid composition was increased. These results suggest milling-dependent variations in phytonutrient levels and lipid composition, as well as changes in aroma and subsequent market quality, in ‘Cheonjihyang-1-se’ rice.  相似文献

The objective of this study was to determine the possibility of using Mixolab® to predict the cake baking quality of different wheat flours. Mixolab® data were also compared with various flour quality characteristics. The correlations between Alveoconsistograph data and the cake quality characteristics were not significant. Therefore, Alveoconsistograph test does not seem to be useful to predict the cake quality of the flour samples. Mixolab® characteristics C2, C3, C4 and C5 were found to be significantly correlated with volume index while C5 was correlated with hardness of cakes. The parameters C2 to C5 represent the end point of the corresponding mixing stages. The flour samples which gave higher cake hardness values had higher C5 values and the samples with lower cake volumes had higher C2, C3, C4 and C5 values. It seems to be possible to estimate the texture and volume of cakes by these values. Therefore, Mixolab® seems to be a useful tool to predict the cake making quality of flour samples.  相似文献

The solution properties of β-glucan isolated from whole grains of oats and barley were studied by viscosity and oscillatory measurements both in water and in aqueous cuoxam, an ammoniacal Cu(OH)2/CuCl-solution. The viscosity measurements of water solutions show stronger shear thinning for oat than for barley β-glucans. The crossover points of the moduli G′ and G″ in cuoxam solutions were different for the two β-glucans, i.e. 10 Hz for oat β-glucan and 1.5 Hz for barley β-glucan. The molecular weights of the β-glucans were similar. Therefore, the difference in solution properties seems to be related to the difference in structure. This difference is revealed by the ratio DP3:DP4 of the main building blocks of β-glucans, which was higher for barley than for oat β-glucan.  相似文献

This paper reports the production of a novel magnetic nanocomposite based on multi-walled carbon nanotubes (MWCNTs) decorated with magnetic core–shell Fe3O4@SiO2 nanoparticles which were used to fabricate a modified carbon paste electrode (Fe3O4@SiO2/MWCNT-CPE). The Fe3O4@SiO2/MWCNT-CPE was investigated for the simultaneous determination of sunset yellow (SY) and tartrazine (TT) in 0.1 mol/L phosphate buffer solution (pH 6.0) using square wave voltammetry (SWV). The synthesized nanocomposite was characterized by transmission electron microscopy, scanning electron microscopy, energy dispersive spectroscopy and Fourier transform infrared spectroscopy. The proposed electrode exhibits linear ranges of 0.5–100 μmol/L SY and TT with detection limits of 0.05 and 0.04 μmol/L for SY and TT, respectively. The novel proposed voltammetric method was successfully applied in the simultaneous determination of SY and TT in food products, with results similar to those obtained using a HPLC method at 95 % confidence level.
