BACKGROUND: There is a need for frying oils with reduced trans fatty acid content and increased oxidative stability. This study was conducted to measure and compare frying oil quality parameters, namely colour, viscosity, free fatty acid (FFA) content and dielectric property, and to investigate changes in properties of mixtures of fully hydrogenated and non‐hydrogenated canola oils during deep‐fat frying of chicken nuggets. Proportions of hydrogenated oil to non‐hydrogenated oil used in the study were 0, 20, 40, 60, 80 and 100%. Chicken nuggets were fried at 190 °C. The relationships among quality parameters, frying time and oil type were investigated. RESULTS: Frying time and oil type had significant effects on all properties. First‐order kinetic equations were used to represent changes in colour, viscosity and FFA content. The rates of change of viscosity and FFA content were higher in non‐hydrogenated oil, whereas the rates of change of colour were similar in the different oils. Increasing the level of hydrogenated oil in the mixture resulted in only slight changes in quality parameters. CONCLUSION: Quality parameters, namely colour, viscosity, FFA content and dielectric property, of frying oil are significantly affected by frying time and hydrogenation level. The effect of a microwave pretreatment at different time duration on the mass transfer of chicken nuggets during deep-fat frying was studied. Coated chicken nugget samples pretreated in a microwave oven for 1-2 min were fried at 160 °C for times ranging from 0 to 300 s to evaluate the mass transfer as compared to the samples without a microwave pretreatment. Microwave pretreatment had a significant effect on moisture loss and oil uptake of chicken nuggets during deep-fat frying.  相似文献

The main objectives of this work were to study the suitability of using infrared (IR) heating as a dry-blanching pretreatment prior to frying and to investigate its potential to reduce the oil uptake in French fry production. It was observed that by using IR heat complete inactivation of polyphenol oxidase enzyme could be achieved in 3 min with 4.7% moisture loss for 9 mm French fries. Following IR dry-blanching, the samples were fried at 146, 160, and 174 °C for 1, 3, 5, and 7 min. At the end of 7 min frying, compared to unblanched samples, dry-blanched samples had 37.5%, 32% and 30% less total oil at the frying temperatures of 146, 160 and 174 °C, respectively. The final moisture contents of unblanched and dry-blanched samples were between 50% and 60% after 7 min frying. The L*a*b* colour values of both unblanched and dry-blanched samples decreased initially and then increased as the frying progressed. The sensory evaluation revealed that panelists mostly favored the IR dry-blanched French fries in terms of taste, texture, colour and appearance.  相似文献

The effects of soy protein isolate (SPI), whey protein isolate (WPI) and egg albumen (EA) on the quality of deep-fat-fried chicken nuggets were studied. Batter without protein addition was used as a control. Batter pickup and moisture content, oil content, texture, porosity and colour of the nuggets were determined for 3, 6, 9 and 12 min of frying at 180 °C. Additionally, the rheological properties of batters were studied. SPI (3%) provided the highest apparent viscosity and coating pickup. All the batters showed shear-thinning behaviour except EA-added batter. Addition of different proteins to the batter formulation decreased the oil content of the final product. EA reduced the oil content of chicken nuggets significantly but yielded softer products. WPI (3%) was found to be the most effective ingredient on improving quality parameters of deep-fat-fried chicken nuggets. WPI (3%) added batters provided the hardest and crunchiest product with the darkest colour and also significantly reduced the oil content of the fried nuggets.  相似文献

Two important factors affecting the oil uptake in foods during deep fat frying are water content and pressure development. In the past frying studies, the physical pressure has not been measured experimentally but was calculated using computer models, which has resulted in disagreements about its magnitude. The present study tries to explain the complex mass transfer mechanisms taking place during deep fat frying with respect to real time pressure variations inside potato discs and chicken nuggets. Frying experiments were performed at two temperatures of 175 °C and 190 °C for 200 and 240 s for potato discs and chicken nuggets, respectively. The gage pressure increased rapidly above the atmospheric pressure immediately after the samples were introduced into the hot oil. The rise in pressure was greater in potato discs with greater initial moisture content. This was expected due to sudden moisture flash-off. As frying progressed, the temperature inside the samples increased whereas the gage pressure started decreasing and became negative. The onset of negative pressure was observed during initial stages of frying for chicken nuggets, but in the middle of frying for potato discs. The negative pressure values before the product is taken outside the fryer may cause increased oil uptake during frying itself. During the post frying cooling, the pressure further decreased and reached negative values. The negative pressure is expected to have caused rapid absorption of surface oil during both frying and cooling stages.  相似文献

The effect of various starch types (amylomaize, corn, waxymaize, pregelatinized tapioca) on quality attributes (texture, moisture content, oil content, color, coating pick up, cooking yield, volume and porosity) of deep-fat fried chicken nuggets were studied. Chicken samples, 0.04 m in diameter and 0.015 m in thickness, taken from the breast portion, were coated with batters composed of a 3:5 solid to water ratio by immersion. The solid content of batter formulations contained equal amounts of corn and wheat flour, 5.0% starch, 1.0% salt and 0.5% leavening agent. As control, batter without starch addition, was used. Samples were fried at 180°C for 3, 6, 9 and 12 minutes. Crispness and oil content of chicken nuggets increased, whereas moisture content decreased with increasing frying time. Starch addition to the formulations increased crispness of the product significantly at the last stages of frying. The highest porosity and oil content was obtained when corn starch was used. Pregelatinized tapioca starch was found to provide a product with the lowest oil content, the highest moisture content, coating pick up and volume.  相似文献

主要研究了远红外辅助油炸和普通热传导式油炸两种方式对鸡肉油炸品质的影响。实验选用新鲜市售鸡胸肉,油炸温度为(165±2)℃,考察其在70~110s油炸时间段内色泽、质构、中心温度、水分含量、含油量和失重率的变化规律。结果表明:除鸡肉的硬度值外,不同的油炸方式和油炸时间对鸡肉各项测定指标均影响显著(P<0.05)。以普通热传导式油炸为对照,远红外油炸的鸡肉明度(L*)降低,红度(a*)和黄度(b*)增加;硬度值变化不显著,弹性值略有增加;内部的温度上升均匀、波动小;最高含油量降低33%,最大失重率降低10.21%。因此,远红外油炸促进了鸡肉色泽的变化,使内部受热均匀,降低了含油量,减少油炸损失,对油炸品质的提高起到积极作用。  相似文献

Physico-chemical properties of fried rice crackers were studied as a function of fish powder content, processing conditions, frying temperature and frying time. The results showed that addition of fish powder content at 5, 10 and 15 g/100 g reduced the oil uptake by approximately 10, 14 and 22 g/100 g (db), respectively in comparison to the control without fish powder. The deep fried rice crackers mixed with fish powder tended to be lower in hardness, lower in expansion ratio and higher in bulk density in comparison to the control sample. The color parameter, L of fried rice crackers decreased with increase in fish powder content. In contrast, a and b values increased with increase in fish powder content. The moisture content of deep fried rice crackers decreased with increase in frying temperature and frying time. The oil uptake in fried rice crackers increased with increase in frying time but decreased with increase in frying temperature. With increase in frying temperature and time, the texture of rice crackers became harder, the bulk density increased, and the expansion ratio decreased. The optimum conditions resulting in desirable physico-chemical properties and minimum oil uptake were rice crackers with fish powder content of 9 g/100 g, fried at a temperature of 220 °C for 60 s.  相似文献

Oil uptake in fresh, blanched and, blanched and dried potato slices was studied during frying. Potato slices blanched in hot water (85 °C, 3.5 min) and potato slices blanched (85 °C, 3.5 min) and then dried until to a moisture content of ∼60 g/100 g (wet basis) were deep fried in sunflower oil at 120, 150 and 180 °C. A control treatment consisted of unblanched potato slices without the pre-drying treatment (fresh samples). It was studied applying two empirical kinetic models in order to fit the oil uptake during frying: (i) a first order model; (ii) a proposed model, with a linear time behavior for short times, while time independent for long times. Oil uptake was high even for short frying times at the different temperatures tested suggesting that oil wetting is an important mechanism of oil uptake during frying. For control slices, oil uptake increased approximately by 32% as the frying temperature decreased from 180 to 120 °C at moisture contents ?1 g water/g dry solid. No apparent effect of frying temperature in oil uptake was observed at moisture contents ?0.5 g water/g dry solid in fried slices previously blanched and dried. The two kinetic models studied fitted properly the values of oil uptake during frying, with similar correlation coefficient r2.  相似文献

The purpose of the present investigation was to study the influence of the degree of degradation of different kinds of oils used as a frying medium on fat uptake and texture of frozen pre‐fried French fries. As has been found, the degradation degree of the frying medium depends on the kind of oil and processing time. Liquid hydrogenated rapeseed oil exhibited the best thermo‐oxidative stability among the oils under investigation. The kind of oil influenced fat uptake and the texture of French fries. The lowest fat uptake was observed with French fries fried in solid oil. Some correlations between fat uptake and changes in fatty acid content were found in the frying medium during frying. Fat absorption increased with increasing unsaturated fatty acids and decreasing saturated fatty acid content. The texture of French fries fried in hydrogenated oils was harder than that exhibited by French fries fried in liquid rapeseed oil. The hardness of French fries fried in liquid oils decreased during frying while the hardness of French fries fried in solid oil increased. Some correlations between the texture of French fries and iodine value and fatty acids content of frying media were found. The hardness of French fries increased with increasing content of saturated fatty acids and decreasing unsaturated fatty acids and trans isomer fatty acid content. To assess an impact of heated edible oils on intake of trans fat, the formations of trans fatty acids (TFAs) in cooking conditions was estimated by a frying and heating model system. For the frying model, sliced raw potatoes (10% of the frying oil (w/w)) were fried in commercially available canola oil at 160, 180 and 200 °C, and the 10 frying cycles were performed. The TFAs contained both in fried potatoes and in frying oils were measured by gas chromatography (GC). Lipids content of raw potatoes was about 0.1% (w/w) and TFAs in the raw potatoes were negligible. On the other hand, fried potatoes contained lipids at the level of 8.8%–9.2% and their fatty acid composition was mostly in correspondence with that of the frying oil. The TFAs amount of potatoes fried by the tenth frying operation was at the level of 0.99–1.05 g/100 g lipids. When 100 g potatoes fried in this process were consumed, the TFAs intake was estimated at less than 0.1 g. After 10 frying operations, TFAs content, acid values and peroxide values of the frying oils were measured and compared with those of corresponding heated canola oils without food. The amounts of trans 18:1 FAs contained both in the frying oil and in heated oil were less than the quantitative limit (0.047 g/100 g oil). The increases of trans 18:2 FAs and trans 18:3 FAs of the used frying oil were 0.02 g/100 and 0.05 g/100 g, respectively, compared with those of the fresh oil. trans 18:2 FAs accumulation in the heated oil was slightly less than that in the frying oil. To elucidate TFAs accumulation in various edible oils during cooking, six kinds of commercially available edible vegetable oils were heated to 180 °C in glass test tubes. Small changes in TFAs amounts were observed after four hours heating. These results suggested that an ordinary frying process using unhydrogenated edible oils has little impact on TFAs intake from edible oils.  相似文献

The effect of processing conditions such as frying time and temperature, and batter formulation on pore development in deep‐fat fried chicken nuggets coatings were studied using helium pycnometer method. Chicken nuggets with preformed and laboratory prepared batter coatings were fried at temperatures between 170 and 190 °C for a time range between 0 and 240 s. There was significant (P < 0.05) effect of frying temperature and batter formulation on porosity. Porosity increased with frying time and temperature, and ranged between 2.15 and 47.92% for the preformed batter and 9.96 and 54.76% for the formulated batters. Apparent and bulk densities of the preformed batters increased and decreased with frying time, respectively, but both declined gradually with increasing frying temperature. As the level of rice flour in the formulation increased, apparent and bulk densities also increased. Batter formulation and frying temperature significantly (P < 0.05) influenced the variation in moisture and fat content of the fried batter. Porosity demonstrated positive and negative correlation with fat uptake and moisture loss, respectively, for all the batter coatings.  相似文献

The effects of pretreatment and vacuum frying conditions on the quality of fried carrot chips were studied. The moisture and oil contents of fried carrot chips were significantly (p < 0.05) reduced when blanched carrot slices were pretreated by immersion in fructose solution and freezing prior to vacuum frying. Furthermore, more uniform porosity was observed on the vertical cross‐section of carrot chips when examined by scanning electron microscopy. During vacuum frying, the moisture content, colour and breaking force of carrot chips decreased while the oil content increased with increasing frying temperature and time. However, there was no apparent change in Hunter ΔE with time when the frying temperature was below 100 °C and the frying time was below 25 min. Results of this study suggest that vacuum frying at moderate temperature (90–100 °C) for 20 min can produce carrot chips with lower moisture and oil contents as well as good colour and crispy texture. Effects of egg yolk powder added to the dough on the oxidation of frying oil and lipid of fried products were studied. Flour dough containing egg yolk at 0, 3.53, 6.73, and 9.66/100 g was fried in 180 °C sunflower oil for 1.5 min, and 55 fryings were performed. Lipid damage was determined by free fatty acids (FFA), conjugated dienoic acids (CDA), and polar compounds contents, and p-anisidine values (PAV). Phospholipid (PL) classes were determined by high performance liquid chromatography. PL was not detected in frying oil and fried products without egg yolk, while the first batch of fried products added with egg yolk at 3.53, 6.73, and 9.66 in 100 g of the dough contained total PL at 3.73, 7.93, and 8.98 mg/g, respectively. Contents of PL classes tended to increase in the products fried in the oil performing more fryings. As the number of fryings of oil increased, FFA, CDA, and polar compounds contents and PAV of frying oil increased. Addition of egg yolk to the dough significantly decreased CDA and polar compounds contents and PAV of frying oil, but it increased FFA values. Lipid of fried products showed the same tendency in CDA contents and PAV. The results clearly indicate that egg yolk powder improved the oxidative stability of frying oil during frying, possibly due to PL.  相似文献

Acrylamide, a probable human carcinogen, is found to be formed in a wide range of fried foods. In this study, the effects of microwave frying on acrylamide formation in the coating part of chicken were investigated. It was also aimed to determine the effects of various flour types (soy, chickpea and rice flour) in batter formulations on the acrylamide formation and on the color of fried chicken. Usage of all flour types except soy flour resulted in approximately the same moisture content and color development after 1.5 min of microwave frying. Acrylamide contents of batter parts of 1.5 min microwave fried samples having different flours were similar. Microwave frying provided lower acrylamide content and lighter color as compared to those fried conventionally for 5 min for all types of flours. This reduction in acrylamide level was the highest (34.5%) for rice flour containing batter.  相似文献

以大豆油、棉籽油、棕榈液油和氢化油作为煎炸油,分别进行薯条和鸡翅的煎炸实验。结果表明:在煎炸过程中,各种煎炸油的脂肪酸含量均会发生一定的变化。采用C18:2/C16:0比值变化作为研究煎炸油脂肪劣变的指标,氢化油煎炸过程中C18:2/C16:0比值减少的程度最小(P<0.05),证明其煎炸过程中脂肪酸的稳定性最好。但对于反式脂肪酸含量变化来说,均没有显著增加(P>0.05),其中氢化油的反式脂肪酸含量从煎炸前的10.39%降低到煎炸后的6.66%,变化显著(P<0.05),不过高反式脂肪酸含量的煎炸油在煎炸后其反式脂肪酸含量还保持在较高水平。  相似文献

The effects of various gum types [hydroxypropylmethylcellulose (HPMC), guar gum, xanthan gum, gum arabic] on the quality of deep‐fat fried chicken nuggets were studied. Chicken samples, 0.04 m in diameter and 0.015 m in thickness taken from the breast portion, were coated with batters composed of a 3:5 solid to water ratio by immersion. The solid content of batter formulations contained equal amounts of corn and wheat flours, 1.0% gum, 1.0% salt and 0.5% leavening agent. As control, batter without gum addition was used. Samples were fried at 180 °C for 3, 6, 9 and 12 min. The hardness and oil content of the chicken nuggets increased whereas the moisture content decreased during frying. HPMC and xanthan gums reduced oil absorption significantly compared with other gums and the control. This work studied the effects of various pre-treatments (blanching, freezing, air drying, osmotic dehydration and control) on the shrinkage and textural properties of fried sweet potatoes. Sweet potato discs were pre-treated and fried in pure canola oil at 170 °C for 0.5-5 min. Bulk density of the fried samples decreased while porosity increased with frying time. Effect of pre-treatment though not significant on bulk density but was significant (P<0.05) on product porosity. Control samples exhibited less shrinkage than pre-treated samples. Maximum change in diameter of samples ranged between 6.7% and 10.2% depending on pre-treatment. Maximum change in sample thickness was observed by 120 s of frying and the highest value was 18.3%. Pre-treated samples had higher difference in thickness compared to the control samples. Change in sample volume increased with frying time reaching a maximum at 120 s after which it either decreased or levelled off. Generally, pre-treatment improved the textural properties of fried samples in product hardness, springiness, chewiness, cohesiveness and adhesiveness.  相似文献

Response surface methodology was used to investigate the effects of the level of maltodextrin (MD), frying temperature and time on the moisture, colour and texture properties of the vacuum‐fried gold kiwifruit slices and to determine the optimised conditions for vacuum frying. The moisture content of vacuum‐fried gold kiwifruit slices decreased with increasing frying temperature and frying time. The colour change of the product increased with increasing frying temperature. The browning index of the product increased with increasing frying temperature and frying time. The breaking force of the product gave higher values when processed at middle range of frying temperature and MD level. When processing vacuum‐fried gold kiwifruit slices, there was a need to use frying temperatures of 72.0–76.3 °C, frying times of 35.0–65.0 min and an MD level of 40% to achieve products with acceptable moisture, colour and texture properties.  相似文献

本文研究了三种配方面糊的流变学特性及对油炸鸡肉块品质的影响。鸡肉块分别挂上三种不同的面糊后,测定挂糊量,然后在180±1℃的花生油中炸制3、6、9、12分钟,冷却后测定水分含量、吸油量、脆度和颜色。同时研究了面糊的流变学特性,挂糊的多少与粘度成正比关系。三种面糊都表现出触变特性、剪切稀化特性,是假塑性流体,并符合幂定律。含大豆粉的面糊粘度最大,可提高产品的脆性和颜色。含大豆粉和大米粉的面糊都能减少鸡肉块对油的吸收。  相似文献
