The effects of moisture content levels and storage temperature on the lipid oxidation in freeze-dried grouper were studied. Three trends were observed in the changes of PV (peroxide value) depending on the moisture content and storage temperature. An exponential rise of PV was observed (p < 0.05) at lower temperatures (−20 °C and 5 °C for samples at moisture 5 g/100 g; and −20 °C for samples at moisture 20 g/100 g). At temperatures 25 °C for samples at moisture 5 g /100 g, and 5 and 25 °C for samples at 20 g moisture/100 g peaks of PV were observed (p < 0.05). At higher temperatures (40 °C for both moisture content levels) an exponential decay instead of increase were observed (p < 0.05). Moisture content levels had no significant effect (p > 0.05) on PV stored at temperature of −40 °C. The monolayer moisture for freeze-dried grouper was estimated as 6.2 g/100 g dry solids using BET-isotherm. Differential scanning calorimetry (DSC and modulated DSC) thermogram line showed two shifts (i.e. glass transition) and two endothermic peaks, one for melting of oil and another for decomposition. The validity of the water activity and glass transition concepts were evaluated. It is concluded that glass transition concept may be used to explain the process more adequately.  相似文献

Storage conditions determine the safe storage period for any grain. Safe storage guidelines for durum wheat have not been developed, despite the fact that it is more susceptible to spoilage than other wheat classes. The rates of deterioration of durum wheat samples with 15, 16, 17, 18, 19 and 20% initial moisture content (wet basis) stored at 10, 20, 30 and 40 °C for 12 wk were studied. The grain deterioration parameters including seed germination, moisture content, appearance of visible mould, invisible microflora, free fatty acid value (FAV), and ochratoxin production were monitored at regular intervals. From these results, safe storage guidelines for durum wheat were developed with respect to the moisture content and storage temperature. Germination rates of the samples decreased with an increase in moisture content, temperature and storage period. Visible mould was found in all high moisture samples (17, 18, 19 and 20%) stored at high temperatures. FAV of the samples increased with moisture content and storage time.  相似文献

Enterobacter aerogenes was studied for its growth, and promoting the formation of total volatile base nitrogen (TVBN) and histamine in tuna dumpling stuffing stored at various temperatures from −20 °C to 37 °C. The bacterial number rapidly increased in low (2.0 log CFU/g) or high (5.0 log CFU/g) inoculated concentrations at temperature above 15 °C and reached the highest bacterial count at 37 °C. In addition, the low spiked sample stored at 37 °C for 12 h and the high spiked sample stored at 25 and 37 °C for 12 h, formed histamine at above 50 mg/100 g of the potential hazard level in most illness cases. However, bacterial growth was controlled by cold storage of the samples at 4 °C or below, but histamine formation was stopped only by frozen storage. Once the frozen stuffing samples were thawed and stored at 25 °C, histamine started to accumulate rapidly.  相似文献

This study compares the effects of freezing temperature and rate as well as storage temperature and time on the quality of frozen dough. Yeasted bread dough was frozen using four freezing rates (19-69 °C/h), then stored at −10, −20, −30, or −35 °C for up to 180 days. Dough strength diminished with longer storage time and higher storage temperatures. Cryo-SEM showed that dough stored at −30 and −35 °C had the least damaged gluten network. NMR studies showed that more rapidly frozen dough, and that stored at lower temperatures had lower transverse relaxation (T2) times (9-10 ms). However, dough stored at −20 °C displayed the highest yeast activity among samples. Bread loaf volume decreased with storage time, and bread made from dough stored at −20 °C showed the highest loaf volume. Breads produced from −30 and −35 °C stored dough displayed less change in the texture profile during storage as well as less change in T2 values. Response surface analysis showed that optimal properties occurred at freezing rates of around 19-41 °C/h and storage temperatures of −15 to −20 °C.  相似文献

The purpose of this study was to determine the duration of immature development and survivorship of Plodia interpunctella (Hübner) on maize over a range of temperatures and grain moisture contents encountered in maize stored on farms in the southeastern states (USA). Laboratory cultures were established with moths collected from farm-stored maize in South Carolina and maintained on cracked maize at 30 °C and 60% r.h. The incubation period and percentage hatch of eggs was determined at 18 combinations of temperature and r.h. Hatch was <1% at 15 and 40 °C. In the range 20-35 °C, percentage hatch declined as temperature increased, and the mean incubation period ranged from 3.1 to 8.5 d. Neither percentage hatch nor incubation period were affected by r.h. between 43% and 76%. The relationship between mean developmental period (oviposition to adult eclosion) and temperature was well described by a quadratic polynomial that predicted a decline from 67.6 to 30.1 d as temperature increased from 20 to 31.1 °C, followed by an increase to 38.5 d as temperature increased further to 35 °C. The results suggest a lower temperature threshold for development near 15 °C and an upper limit slightly greater than 35 °C. Moisture content had a significant effect on developmental period at all the temperatures studied, but the pattern of variation with moisture depended upon the temperature.  相似文献

This study was conducted to evaluate the effect of storage temperature and duration on oxidation and flavour changes in frozen pork dumpling filler. Freshly prepared dumplings were stored for 0, 30, 60, 90, and 180 d at − 7 °C, − 18 °C, and an oscillation between − 7 °C and − 18 °C. The samples stored at − 7 °C for 180 d had significantly higher levels of TBARS and protein carbonyls than those stored at − 18 °C and the fluctuating − 7 °C/− 18 °C (P < 0.05). The percentage of unsaturated fatty acids in total lipids decreased with extended storage times. The volatile compounds with pleasant odours decreased with time, while the compounds with pungent tastes and smells increased (P < 0.05). The sensory results showed that the dumplings stored at higher frozen temperatures for long periods of time had significantly lower acceptability scores (P < 0.05). The results suggest that oxidation is a primary cause of quality deterioration in pork dumpling filler during frozen storage.  相似文献

Dried valerian (Valeriana officinalis) root powder was stored at 5, 14 and 30 °C under low, moderate and high humidity conditions for 6 months, and the level of the valerenic acids monitored on a monthly basis. From an initial moisture content of 5 g/kg, the moisture level during storage decreased in root powder stored at low humidity and increased during storage at high humidity, with the effect greatest at 30 °C.  相似文献

Sugarcane (Saccharum officinarum L. cv. Badila) was harvested at the mature stage and stored at 2, 10, and 20 °C for 30, 90, and 120 days, respectively. Metabolic changes in the contents of sucrose and reducing sugar in relation to the activities of soluble acid invertase (SAI), neutral invertase (NI) and sucrose-phosphate synthase (SPS), in sugarcane juice, were studied. Extractable juice, sucrose and vitamin C declined significantly with increasing storage temperatures, while respiration rate increased. There was a rapid increase in titratable acidity during storage, with a more rapid rate at higher temperatures. A sharp increase in reducing sugar was observed within 20 days at 20 °C and 70 days at 10 °C, followed by a rapid decrease. Both SAI and NI activities showed a sharp increase within 15 days at 20 °C, followed by a rapid decrease, while a moderate increase occurred within 40–60 days at 10 °C. Slight increases were observed in SPS activity within 20 days at 20 °C and 50 days at 10 °C. Enzyme activities remained steady or underwent a small change in canes stored at 2 °C. Enzyme activities were significantly correlated with reducing sugar content.  相似文献

Pastry wheat flour was extruded under various conditions of feed moisture (20%, 40%, and 60%) and screw speed (150, 200, and 250 rpm), at constant barrel temperature profile (40, 60, 80, 100, and 120 °C, feed port to exit die). The extruded samples were stored at 4 °C for 0, 7, or 14 days, at which times resistant starch (RS) formation was analyzed. Thermal and pasting properties of extruded samples stored for 14 days were analyzed using a differential scanning calorimeter and rapid visco analyzer (RVA), respectively. The RS content increased after extrusion compared to non-extruded pastry wheat flour. High significant positive correlations of feed moisture (P < 0.01) and storage period (P < 0.05) with RS formation were observed. The RS derived from extrusion and storage showed higher thermal stability with decreasing feed moisture and screw speed. Statistically significant differences in pasting properties were observed with feed moisture or screw speed. In particular, the setback value from RVA of the sample was significantly increased with increasing feed moisture. These results indicate that feed moisture and storage time were both important factors for the formation of RS from pastry wheat flour during extrusion.  相似文献

To develop pasteurization treatments based on radio frequency (RF) or microwave energy, dielectric properties of almond shells were determined using an open-ended coaxial-probe with an impedance analyzer over a frequency range of 10–1800 MHz. Both the dielectric constant and loss factor of almond shells decreased with increasing frequency, but increased with increasing temperature and moisture content. The absolute value of the slopes of log–log plots between loss factor and frequency increased with increasing temperature at low frequencies, especially at high temperatures and moisture contents. The effective electrical conductivity of shell samples was close to zero at the lowest moisture content (6% w.b.) and 3–9 times larger at 90 °C than 20 °C for the highest moisture content (36% w.b.). A good linear relationship was observed between permittivity and density at 1800 MHz. The power penetration depths at RF range (27 and 40 MHz) were about 6–24 times as deep as those for microwave frequencies (915 and 1800 MHz) at each corresponding temperature and moisture content. It is likely that RF energy may provide uniform heating and high throughput treatments for controlling Salmonella in in-shell almonds after washing.  相似文献

Broccoli (Brassica oleracea var. italica) is a vegetable that requires the application of postharvest techniques to extend its marketability. Controlled atmosphere and 1-MCP treatments are most used to extend the shelf life of broccoli and reduce post-harvest deterioration. The aim of this study was to evaluate the visual, physicochemical and functional changes of broccoli head samples stored at 1–2 °C and 85–90% relative humidity (RH) in air (Control samples), under controlled atmospheres (10% O2 and 5% CO2) (CA samples) and treated with 1-MCP (0.6 μL/L). After storage all samples were maintained at 20 °C for 2 and 4 days, in order to assess their shelf life. The most suitable postharvest treatment to extend broccoli quality during storage and shelf life, in terms of maintaining the visual quality and reducing loss of health-promoting compounds, was achieved by storage under controlled atmosphere conditions. The use of 1-MCP reduced the loss of green colour and chlorophyll pigments, but only during cold storage not during shelf life at 20 °C.  相似文献

The objective of this study was to evaluate the shelf life of powdered guavira pulp obtained by a foam mat drying process. The dehydrated guavira pulp was packed into low density polyethylene (LDPE) bags and stored under two controlled conditions: environmental (25 °C, RH 75%) and accelerated (35 °C, RH 90%) for 90 days. The shelf life was accompanied by carrying out the following analyses every 10 days: moisture content, water activity, vitamin C content, pH and titratable acidity. Vitamin C was the quality attribute used to determine the shelf life of the product, by determining its degradation kinetics as a function of storage time. The linear regression data showed that the vitamin C degradation reaction fitted the zero and first order kinetic models. The shelf life of the powdered guavira pulp under environmental conditions was approximately 49 days, and under accelerated conditions (35 °C) 45 days. The Q10 was equal to 1.09, predicting a shelf life similar to that found under environmental conditions. The moisture content for these conditions was 10.0% e 5.4% for 35 °C and 25 °C, respectively. The above demonstrate the efficiency of the accelerated test in predicting the shelf life of the product.  相似文献

Starches from 11 potato cultivars stored at five temperatures (4, 8, 12, 16 and 20 °C) for 120 days were evaluated for physicochemical, thermal and pasting properties. Amylose content and swelling power increased with increase in storage temperatures. The proportion of small size granules was higher in starches from potatoes stored at 4 °C. The starch granules of stored potatoes were slightly rough-surfaced and pitted; the effect was pronounced in those stored at 4 °C. Starches from potatoes stored at 4 °C showed lower onset gelatinization temperature and conclusion temperature than did starches from potatoes stored between 8 and 20 °C. Starches from potatoes stored at higher temperature (20 °C) showed higher peak viscosity, set back, as well as gel hardness, chewiness and gumminess than did starches from those stored between 4 and 16 °C. Amylose content showed significant positive correlation with gumminess and setback while swelling power showed significant positive correlation with peak viscosity and hot-paste viscosity.  相似文献

Strawberries (Fragaria ananassa), raspberries (Rubus idaeus) and red currants (Ribes rubrum), as well as two drupes, cherries (Prunus avium), and sour cherries (Prunus cerasus), were subjected to two storage temperatures (4 °C and 25 °C) and phytochemicals concentrations (total phenols, flavonoids and anthocyanins) as well as antioxidant capacity (DPPH, ABTS and FRAP assays) were monitored until the fruit visually spoiled. Red currants and strawberries exhibited the highest initial total phenol (TP) contents (322.40 ± 5.56 and 335.47 ± 6.12 mg GAE/100 g FW, respectively) and maintained the highest TP contents throughout storage at both temperatures. Storage of at 25 °C as opposed to 4 °C, facilitated faster spoilage of analyzed fruits. In addition, most fruits stored at 4 °C, exhibited slightly higher antioxidant activity values at the end of storage according to all three antioxidant activity assays as opposed to fruits stored at 25 °C. The dynamic evolution of antioxidant capacity at both temperatures reflected the transient changes in phytochemical composition of small fruits in storage.  相似文献

Banana fruit quality and maturity stages were studied at three different temperatures, viz., 20, 25, and 30 °C by using hyperspectral imaging technique in the visible and near infrared (400-1000 nm) regions. The quality parameters like moisture content, firmness and total soluble solids were determined and correlated with the spectral data. The spectral data were analyzed using the partial least square analysis. The optimal wavelengths were selected using predicted residual error sum of squares. The principal component analysis was also used to test the variability of the observed data. By using multiple linear regressions (MLR), models were established based on the optimal wave lengths to predict the quality attributes. The coefficient of determination was found to be 0.85, 0.87, and 0.91 for total soluble solids, moisture and firmness of the banana fruits, respectively. The change in TSS and firmness of banana fruits stored at different temperatures, viz., 20, 25, and 30 °C during the ripening process followed the polynomial relationships and the change in moisture content followed a linear relationship at different maturity stages.  相似文献

Selected physical and chemical characteristics of faba beans (Vicia faba L.) cv. Fiesta were studied after 12 months storage at 5, 15, 25, 37, 45 or 50 °C (±2 °C) in relation to the hard-to-cook phenomenon. In comparison with control (seeds stored at 5 °C), seeds stored at 15 and 25 °C demonstrated non-significant (p?0.05) changes in most of the physical and chemical characteristics including hydration and swelling coefficients, acid detergent fibre, lignin and tannin contents, whereas seeds stored at ?37 °C demonstrated significant changes (p?0.05). Solutes and electrolytes leaching after 18 h soaking substantially increased with increased temperature. Faba bean hardness tested by the hard-to-cook test also increased substantially with increased storage temperature. After 8 h soaking followed by 2 h cooking, the puncture force required for seeds stored at 5 °C was 3.3 N seed−1 whereas seeds stored at 50 °C required a much higher puncture force of 15.2 N seed−1. There was a high negative correlation (r2=0.98) between storage temperature and cooking ability of faba bean. Substantial increases in acid detergent fibre and lignin contents occurred with increased storage temperatures. There was a three-fold increase in lignin content of faba bean stored at 50 °C compared to those stored at 5 °C and it was correlated with bean hardness (r2=0.98). Storage at high temperatures for 12 months led to a substantial reduction in total free phenolics especially in the testa and there was a greater reduction with increasing storage temperature. Reduction in free phenolics was negatively correlated (r2=0.75) with bean hardness.  相似文献

Dielectric properties data are important in developing thermal treatments using radio frequency (RF) and microwave (MW) energy and are essential in estimating heating uniformity in electromagnetic fields. Dielectric properties of flour samples from four legumes (chickpea, green pea, lentil, and soybean) at four different moisture contents were measured with an open-ended coaxial probe and impedance analyzer at frequencies of 10-1800 MHz and temperatures of 20-90 °C. The dielectric constant and loss factor of the legume samples decreased with increasing frequency but increased with increasing temperature and moisture content. At low frequencies and high temperatures and moisture contents, negative linear correlations were observed between the loss factor and frequency on a log-log plot, which was mainly caused by the ionic conductance. At 1800 MHz, the dielectric properties data could be used to estimate the legume sample density judging from high linear correlations. Loss factors for the four legume samples were similar at 27 MHz, 20 °C and low moisture contents (e.g. <15 g/100 g). At the highest moisture content (e.g. 20 g/100 g) soybean had the highest loss factor at 27 MHz and 20 °C, followed by lentil, green pea, and chickpea. The difference in loss factor among the four legumes did not show clear patterns at 915 MHz. Deep penetration depths at 27 MHz could help in developing large-scale industrial RF treatments for postharvest insect control or other applications that require bulk heating in legumes with acceptable heating uniformity and throughputs.  相似文献

Physicochemical changes, such as peel and flesh colours, total anthocyanin content, browning index, firmness, total soluble solid (TSS), titratable acidity (TA), sugar acid ratio (TSS/TA), antioxidant capacity, total phenolic content and ascorbic acid content, in fresh-cut Taaptimjan wax apple fruit stored at 4 ± 2 °C and 12 ± 2 °C for 7 days were investigated. The skin of fresh-cut fruit stored at 4 ± 2 °C showed higher a value, chroma and total anthocyanin content and lower hue angle than those stored at 12 ± 2 °C. Lightness (L value) and whiteness index of the fresh-cut fruit flesh stored at 12 ± 2 °C showed significantly lower than those stored at 4 ± 2 °C which related to an significant increase in browning index. Firmness, total soluble solid, titratable acidity and sugar acid ratio did not significant changes during storage. Antioxidant capacity and total phenolic content increased throughout storage. Ascorbic acid content of the fresh-cut fruit stored at 4 ± 2 °C remained constant throughout storage whilst ascorbic content at 12 ± 2 °C decreased and was lower than that at 4 ± 2 °C. At 4 ± 2 °C antioxidant capacity and ascorbic acid content were higher than that stored at 12 ± 2 °C whilst there was no significant difference in total phenolic content. In conclusion, the reduction of whiteness index and the increase in browning index of fresh-cut wax apple flesh were the key factors affecting its quality and storage at 4 ± 2 °C could reduce the change in the flesh colour and maintained the peel colour and nutritional values of fresh-cut wax apple fruit during storage.  相似文献

The aim of this study was to evaluate the effect of encapsulating material on encapsulation yield, resistance to passage through simulated gastrointestinal conditions, and viability of Lactobacillus acidophilus La-5 during storage. Microparticles were produced from reconstituted sweet whey or skim milk (30% total solids) inoculated with a suspension of L. acidophilus La-5 (1% vol/vol) and subjected to spray-drying at inlet and outlet temperatures of 180°C and 85 to 95°C, respectively. The samples were packed, vacuum-sealed, and stored at 4°C and 25°C. Encapsulation yield, moisture content, and resistance of microencapsulated L. acidophilus La-5 compared with free cells (control) during exposure to in vitro gastrointestinal conditions (pH 2.0 and 7.0) were evaluated. Viability was assessed after 0, 7, 15, 30, 45, 60, and 90 d of storage. The experiments were repeated 3 times and data were analyzed by ANOVA and Tukey test for the comparison between means. The encapsulating material did not significantly affect encapsulation yield, average diameter, or moisture of the particles, which averaged 76.58 ± 4.72%, 12.94 ± 0.78 μm, and 4.53 ± 0.32%, respectively. Both microparticle types were effective in protecting the probiotic during gastrointestinal simulation, and the skim milk microparticles favored an increase in viability of L. acidophilus La-5. Regardless of the encapsulating material and temperature of storage, viability of the microencapsulated L. acidophilus La-5 decreased on average 0.43 log cfu/g at the end of 90 d of storage, remaining higher than 106 cfu/g.  相似文献

The effects of storage temperature on oil quality of various fishes were examined. Fish oils extracted from horse mackerel, shad, garfish and golden mullet were used in oil analyses. Crude fish oils obtained by a solvent extraction method were stored at +4 °C and −18 °C. Chemical quality of the oils was evaluated with various parameters, including iodine, ester, acid, saponification, peroxide, and thio-barbituric acid values and unsaponifiable matter at various time intervals for 150 days of storage. All quality parameters, except iodine and ester values, increased during storage at both of temperatures. Sample oils stored at +4 °C preserved acceptable characteristics for 90 days. Acceptability tolerance was found to be 120 days for shad oil and 150 days for golden mullet, garfish and horse mackerel oils stored at −18 °C. The highest oxidative deterioration was observed in shad oils. Among all samples, garfish oil showed the greatest stability against oxidation.  相似文献
