ABSTRACT Chlorophylls and carotenoids in dough containing added spinach powder and fried, were determined by high performance liquid chromatography and spectrophotometry, respectively. Sixty-one batches of flour dough were fried for 1 min every 20 min in 160 °C soybean oil. Chlorophyll was not detected in the oil during frying. Carotene contents, however, increased with the number of fryings. Chlorophyll contents in the dough fried in soybean oil decreased with more fryings, while there was little difference in carotenoid contents. The results showed that only carotenoids diffused out of the dough in the previous frying could contribute to the pigment contents in the fried dough of the next batch.  相似文献

ABSTRACT:  Oxidation of corn oil during frying of soy–flour-added dough was studied. Flour dough containing soy flour at 0%, 10%, 20%, and 30% was fried in corn oil at 180 °C for 2.5 min, and a total of 60 fryings were performed every 30 min. The oxidation of oil was determined by contents of free fatty acids (FFA), conjugated dienoic acids (CDA), polar compounds, and p -anisidine values (PAV). Tocopherols and phospholipids (PLs) in the oil were determined by HPLC. Tocopherols were present in corn oil at 1000 ppm before frying and increased after the first frying of dough containing soy flour due to tocopherol transfer from soy–flour-added dough to the oil during frying. However, as the oil repeated frying, tocopherol contents decreased and its degradation rate was higher in the oil that fried soy–flour-added dough than in the oil that fried the dough without soy flour. PL was not detected in corn oil before and after frying. As the oil repeated frying, FFA, CDA, and polar compounds contents, and PAV of frying oil increased due to the oil oxidation. The values were higher in the oil which fried soy–flour-added dough than in the oil fried the dough without soy flour, indicating the acceleration of oil oxidation by soy flour added to dough. Increase in the oil oxidation by soy flour added to the dough was highly correlated with fast decomposition of tocopherol in the oil.  相似文献

ABSTRACT: Lipid oxidation and carotene content changes in fried dough containing carrot powder during storage at 60°C in the dark were studied. Flour dough containing carrot powder at 0%, 10%, 20%, or 30% was fried in 160°C soybean oil and stored in a 60°C incubator in the dark for 12 d. As storage time of the fried dough increased, conjugated dienoic acids and β-anisidine values of the fried dough increased. Addition of carrot to the dough lowered CDA and PAV of fried dough during storage and improved the lipid oxidative stability of the fried dough in the dark. Carotenes in the fried dough containing carrot powder were decomposed during storage, and faster decomposition rate was found in the dough containing less carrot powder.  相似文献

The effects of pretreatment and vacuum frying conditions on the quality of fried carrot chips were studied. The moisture and oil contents of fried carrot chips were significantly (p < 0.05) reduced when blanched carrot slices were pretreated by immersion in fructose solution and freezing prior to vacuum frying. Furthermore, more uniform porosity was observed on the vertical cross‐section of carrot chips when examined by scanning electron microscopy. During vacuum frying, the moisture content, colour and breaking force of carrot chips decreased while the oil content increased with increasing frying temperature and time. However, there was no apparent change in Hunter ΔE with time when the frying temperature was below 100 °C and the frying time was below 25 min. Results of this study suggest that vacuum frying at moderate temperature (90–100 °C) for 20 min can produce carrot chips with lower moisture and oil contents as well as good colour and crispy texture. Effects of egg yolk powder added to the dough on the oxidation of frying oil and lipid of fried products were studied. Flour dough containing egg yolk at 0, 3.53, 6.73, and 9.66/100 g was fried in 180 °C sunflower oil for 1.5 min, and 55 fryings were performed. Lipid damage was determined by free fatty acids (FFA), conjugated dienoic acids (CDA), and polar compounds contents, and p-anisidine values (PAV). Phospholipid (PL) classes were determined by high performance liquid chromatography. PL was not detected in frying oil and fried products without egg yolk, while the first batch of fried products added with egg yolk at 3.53, 6.73, and 9.66 in 100 g of the dough contained total PL at 3.73, 7.93, and 8.98 mg/g, respectively. Contents of PL classes tended to increase in the products fried in the oil performing more fryings. As the number of fryings of oil increased, FFA, CDA, and polar compounds contents and PAV of frying oil increased. Addition of egg yolk to the dough significantly decreased CDA and polar compounds contents and PAV of frying oil, but it increased FFA values. Lipid of fried products showed the same tendency in CDA contents and PAV. The results clearly indicate that egg yolk powder improved the oxidative stability of frying oil during frying, possibly due to PL.  相似文献

利用花生油、大豆油、调和油、棕榈油4种食用植物油作为煎炸油对豆腐、裹粉鸡柳、油条3种食材进行煎炸,研究煎炸时间对煎炸油极性组分含量及羰基值的影响,确定煎炸油时间预警点,同时研究了不同煎炸油品种、不同食材对煎炸油极性组分含量的影响。结果表明:极性组分含量、羰基值均与煎炸时间呈正相关(r_(极性组分)=0.809,r_(羰基值)=0.859,P=0.000);煎炸6~11 h煎炸油极性组分含量均值从初始的11.85%增至20.96%,最大值为34.10%,可作为煎炸油质量不达标的时间预警点;煎炸12 h,极性组分含量从低到高依次为花生油、棕榈油、调和油、大豆油,含量分别为21.1%、24.1%、26.8%、27.8%,豆腐、裹粉鸡柳、油条煎炸油中极性组分含量分别为17.7%、25.0%、32.2%;煎炸18 h,极性组分含量增大程度由低到高为棕榈油/调和油、大豆油、花生油,煎炸食材用油为豆腐煎炸油、裹粉鸡柳煎炸油、油条煎炸油。  相似文献

为了探究栀子果油煎炸过程中的品质变化,本文选择薯条和油条两种代表性煎炸食材,将栀子果油在煎炸20h内每隔2h的酸价、羰基价、过氧化值和极性组分与大豆油、棕榈油在同等条件下煎炸的理化指标进行比较,结果表明:棕榈油煎炸后的品质较高,栀子果油和大豆油比较相似,栀子果油可以作为煎炸油。但栀子果油连续煎炸12 h时极性组分超过国家现有煎炸油的卫生标准,因此其连续煎炸时间不能超过12 h。同时对1、10、20h煎炸出来的油条和薯条进行感官评价,结果表明:煎炸食材相同时,三种食用油的感官评分无显著性差异(P>0.05),说明栀子果油对油条和薯条的品质无不良影响,适合作为煎炸油。  相似文献

ABSTRACT: Effects of sesame oil addition to soybean oil during frying on the lipid oxidative stability and antioxidants contents of fried products during storage in the dark were studied. Flour dough pieces (2 cm × 2 cm × 0.1 cm) were fried at 160 °C for 1 min in sesame oil-added soybean oil. Concentrations of sesame oil in the frying oil were 0%, 10%, and 20% by volume. Fried products were put into a glass bottle, and the bottles were tightly sealed and stored at 60 °C in the dark for 18 d. Lipid oxidation of fried products was determined by fatty acid composition changes and conjugated dienoic acid (CDA) and p -anisidine (PA) values. Tocopherols and lignan compounds in the fried products were determined by high-performance liquid chromatography. Relative content of linolenic acid decreased, and CDA and PA values increased during storage of the fried products in the dark. Fatty acid composition change and CDA and PA values during storage were lower in the products fried in sesame oil-added soybean oil than in the products fried in soybean oil without sesame oil. The results clearly showed that addition of roasted sesame oil to soybean oil at 10% and 20% during frying decreased the lipid oxidation of fried products during storage in the dark for 18 d by extension of induction period and decrease in decomposition of oxidized lipids. Fried products contained 134 to 267 ppm tocopherols and 0 to 148 ppm lignans before storage; however, their contents decreased during storage in the dark. Lignan compounds were more stable than tocopherols, and the rate of tocopherols degradation was lower in the products fried in sesame oil-added soybean oil than in the products fried in soybean oil without sesame oil, which could be because of protection of tocopherols from degradation by lignan compounds.  相似文献

Consumers look for products that contribute to their wellness and health, however, even health-conscious consumers are not willing to sacrifice organoleptic properties, and intense full-flavor snacks remain an important trend. The objective of this study was to examine most important quality parameters of vacuum (1.92 inHg) and atmospheric-fried carrot, potato, and apple slices to determine specific advantages of vacuum technology. Slices were fried using equivalent thermal driving forces, maintaining a constant difference between oil temperature and the boiling point of water at the working pressure (ΔT = 60 and 80 °C). This resulted in frying temperatures of 160 and 180 °C, and 98 and 118 °C, for atmospheric and vacuum frying, respectively. Vacuum-fried carrot and potato chips absorbed about 50% less oil than atmospheric-fried chips, whereas vacuum-fried apple chips reduced oil absorption by 25%. Total carotenoids and ascorbic acid (AA) were greatly preserved during vacuum frying. Carrot chips vacuum fried at 98 °C retained about 90% of total carotenoids, whereas potato and apple slices vacuum fried at 98 °C, preserved around 95% of their initial AA content. Interestingly, results showed that the antioxidant capacity of chips may be related to both the presence of natural antioxidants and brown pigments developed at elevated temperatures. PRACTICAL APPLICATION: A way to reduce detrimental effects of deep-fat frying is through operating-pressure reduction, the essence behind vacuum deep-fat frying. In this way, it is possible to remove product moisture at a low temperature in a low-oxygen environment. The objective of this research was to study the effect of oil temperature reduction when vacuum frying traditional (potatoes) and nontraditional products (carrots and apples) on most important quality attributes (vitamins, color, and oil uptake). Results are promising and show that vacuum frying can be an alternative to produce nutritious and novel snacks with desired quality attributes, since vitamins and color were greatly preserved and oil absorption could be substantially reduced.  相似文献

Microwave frying of osmotically dehydrated potatoes was optimized by using response surface methodology. Osmotic dehydration was applied prior to microwave frying in order to reduce oil uptake and to evaluate the effect of osmotic dehydration on quality of microwave fried potatoes. Moisture content, oil content, hardness and color of the fried potatoes were used as quality parameters. Microwave power level (400, 550, 700 W), frying time (1.5, 2.0, 2.5 min) and osmotic dehydration time (15, 30, 45 min) were the independent variables in the study. Osmotic dehydration treatment was conducted using 20% (w/w) sodium chloride solution at 30 °C. Moisture content of the fried potatoes decreased whereas oil content, hardness and ΔE value of potatoes increased with increasing frying time and microwave power level. The increase in osmotic dehydration time reduced moisture content and oil content and increased hardness of fried potatoes. The optimum condition was found as frying at 400 W microwave power level for 1.5 min after 39 min of osmotic dehydration time.  相似文献

研究了胡萝卜脆片真空油炸过程中干燥特性和产品品质的变化,结果表明:真空油炸过程属于传统的降速干燥过程,其水分和脂肪的变化符合一级反应动力学规律,利用非线性回归法求解得到了胡萝卜脆片水分和脂肪含量、干燥速率随油炸时间变化的方程;随着油炸时间的延长,胡萝卜脆片直径不断减小,厚度不断增加,油炸20min后,其直径和厚度皱缩度分别达到6%和4.5%;真空油炸胡萝卜脆片气孔数量不断增加,细胞结构变形程度增强。真空油炸过程中胡萝卜脆片脂肪主要分布于脆片的表面,冷却过程中脂肪逐渐向中心渗透,中心脂肪含量可达到60%。  相似文献

真空油炸技术可用于生产高品质的果蔬脆片.主要研究了油炸温度和真空度对胡萝卜片水分质量分数、脂肪质量分数、色泽及质构的影响.试验表明:随着油炸温度和真空度的升高,其干燥和脂肪吸收速度相应提高,且两者呈一定的相关性.统计分析可知:油炸温度和真空度并不显著性影响脆片的白度(L)、红度(a)、黄度(b)值(P〉0.05);对于脆片的破碎力而言,真空度具有显著性影响(P〈O.05),而油炸温度不具有显著性影响(P〉0.05).  相似文献

以小麦面粉和胡萝卜为原料,探究胡萝卜添加量及面团饧发时间、油炸温度和油炸时间工艺条件对胡萝卜油炸方便面感官品质的影响。并以过氧化值(POV)、酸价(AV)和硫代巴比妥酸值(TBA)为指标探究不同胡萝卜添加量对油炸方便面抗氧化的影响。结果表明,当胡萝卜添加量为4%时,油炸方便面的感官评分最高,为(51.38±2.34)分;胡萝卜油炸方便面最佳工艺条件为:面团饧发时间20 min,油炸温度150 ℃,油炸时间90 s。抗氧化试验结果表明,在10 d的贮藏过程中,添加4%以上的胡萝卜,可有效控制油炸方便面的过氧化值和酸价在标准范围之内,添加胡萝卜的油炸方便面的硫代巴比妥酸值均明显低于空白组。因此,将胡萝卜添加到油炸方便面中,在改善风味的同时还起到一定的抗氧化作用。  相似文献

Response surface methodology was used to investigate the effects of frying temperature, time and maltodextrin (MD) levels on the moisture, oil and beta‐carotene contents of the vacuum‐fried apricot slices. Based on the results, the moisture content of vacuum‐fried apricot slices decreases with increasing frying temperature and frying time. Generally, the oil content of vacuum‐fried apricot slices decreases with decreasing frying temperature and frying time. The beta‐carotene content of vacuum‐fried apricot slices increases with increasing frying temperature. But the trend of increase in the beta‐carotene content of the product with frying temperature was higher at lower MD level. When processing vacuum‐fried apricot slices, a frying temperature of 100 °C, frying time of 72.5 min and an MD level of 70% must be used to achieve a product of acceptable moisture, oil and beta‐carotene contents.  相似文献

Poly-γ-glutamic acid (PGA) was added to doughnut formulations to reduce oil uptake during deep-fat frying. At a frying time of 4 min, oil uptake in control doughnuts reached about 0.7 g/g of dough, while that of doughnuts with PGA was about 0.2 g/g of dough. The extent of oil reduction increased by 5-fold when the concentration of PGA was increased from 0.25 to 1 g/100 g of dough. In scanning electron micrographs, a PGA doughnut showed a less void and denser matrix with improved integrity. Significantly (p<0.05) higher sensory scores for appearance, taste, and overall acceptability were given to the PGA doughnut (1 g/100 g dough). PGA has great potential to be used as a healthy functional oilreducing agent in deep-fat fried products.  相似文献

The effects of pretreatment and processing conditions on the quality of vacuum fried apple chips were studied. As blanched apple slices were pretreated by immersing in fructose solution and freezing prior to vacuum frying, more uniform porosity was observed on the surface (or cross-section) of apple chips as examined by scanning electron microscopy (SEM). During vacuum frying, the moisture content and breaking force of apple chips decreased with increasing frying temperature and time while the oil content increased. The L values of fried apple chips decreased apparently with increasing frying temperature. However, when apple slices were fried at 100°C for up to 20 min, both a and b values increased rapidly. Statistical analysis with the central composite rotatable design showed that the moisture content, oil content, color, and breaking force of apple chips were significantly (P⩽0.05) correlated with concentration of immersing sugar solution, frying temperature and frying time. Based on surface responses and contour plots, optimum conditions were: vacuum frying temperature of 100–110°C, vacuum frying time of 20–25 min, and immersing fructose concentration of 30–40%.  相似文献

以对重庆市消费者的实地调研获得的490份数据为依据,以反复煎炸油为研究对象,深入分析消费者对餐饮业煎炸油安全的认知程度,并通过二元Logistic模型分析了影响消费者对安全煎炸油支付意愿的因素。结果表明,“性别”、“对餐饮业食用油安全重视程度”以及“是否知道煎炸油”等是3个显著影响消费者支付意愿的因素。在490份问卷中,85.7%的被调查者愿意为煎炸油的安全支付溢价。以油条为例,消费者选择的1根油条的合理溢价为0.36元。  相似文献

The purpose of this study was to investigate the effects of contact‐dehydrating sheets on preferences for fried food and the deterioration of frying oil. Mackerel or chicken breast were dehydrated by wrapping with the contact‐dehydrating sheets at 4°C for 1.5 h and subsequently fried at 180°C for 3 min; those were referred to as the dehydrated samples. The same fried materials not wrapped with the contact‐dehydrating sheets were referred to as the control. The frying procedure was repeated 15 times under the above conditions and the amount of frying oil was adjusted to 1000 g by addition of new oil each time. Sensory analysis showed that the dehydrated samples were preferred to the control. Acidic values, anisidine values and ΔE values of the frying oil used for the dehydrated mackerel were significantly lower than for that used for preparing the control. These results indicate that the use of contact‐dehydrating sheets for the dehydration of the frying materials was effective in both significantly increased preference for the fried food and the retardation of the deterioration of the frying oil. Statistical analysis with response surface regression showed that moisture content, fat content and breaking force of carrot chips were significantly (P < 0.05) correlated with frying temperature, vacuum absolute pressure and frying time. The optimum conditions were a vacuum frying temperature of 100–110 °C, a vacuum absolute pressure of 0.010–0.020 MPa and a frying time of 15 min.  相似文献

BACKGROUND: High levels of oil in fried products has been recognized as causing health problems. The formation of microstructure during frying is one factor that influences oil absorption. Above the glass transition temperature (Tg), the physical properties of a polymer influences the formation of structure. The ball‐milling process changes the physicochemical properties of wheat flour constituents. The present study investigated the effects of physicochemical changes in wheat flour by the ball‐milling process on structure formation and oil absorption in wheat flour dough model. RESULTS: Dough samples were made from wheat flour that had been ball‐milled for 0 to 10 h and then fried in frying oil at 150 °C for 1–7 min. Thermal properties of wheat flour, structure alteration, and textural properties of fried samples were evaluated. As compared with samples made of non‐milled flour, samples made from milled flour had smaller pores and higher oil absorption. The fracture force of a fried sample prepared from non‐milled flour was lower than that of a sample prepared from milled flour. CONCLUSION: Ball‐milling affected the microstructure formation in fried wheat flour dough, and subsequently oil absorption. The crispness of a sample prepared from non‐milled wheat flour is higher than that of a sample prepared from ball‐milled wheat flour.
