A variety of community and external pressures on Indigenous Peoples are leading to increased use of food that is available through industrialization and market economics; food in traditional food systems derived from local, natural environments is declining in use. This report focusses on dietary intake of Arctic men. While nutrient density of Arctic traditional food systems is superior to that of the composite of market food consumed in the North, the percentage of men's daily energy derived from market food is more than double that from traditional food in some communities. Older members of communities consume more traditional food than younger members; men consume more traditional food than do women. In addition to providing excellent nutrition and opportunities for physical exercise. Indigenous Peoples identify many sociocultural benefits to the harvest and use of traditional food. Evaluation of environmental accumulation of organochlorines in wildlife animal food species shows that risk of organochlorine consumption is higher in food systems containing sea mammals, and that tolerance levels for some organochlorines may be exceeded.  相似文献

Brown midrib sorghum silage was compared with alfalfa, corn, and normal sorghum silages for its effect on performance, ruminal metabolism, and digestive kinetics of Holstein dairy cows in midlactation. Twelve cows averaging 90 +/- 5 DIM were assigned to one of four diets in replicated 4 x 4 Latin squares with 4-wk periods. Additionally, 3 ruminally fistulated cows (95 +/- 20 DIM) were assigned to the same diets in a 3 x 4 Youden square for measurement of ruminal characteristics. Diets were fed as isonitrogenous TMR that contained 65% silage (DM basis). The DMI was greater for the corn and brown midrib sorghum (4% of BW/d) than for the alfalfa and normal sorghum diets (3.4% of BW/d). The brown midrib sorghum supported FCM production that was similar to that of cows on corn and alfalfa diets (25.8 kg/d), but cows fed normal sorghum produced less milk and fewer milk components. Source of silage had no effect on eating time, but rumination was least for the alfalfa diet. Ruminal pH and ammonia concentrations were similar for all diets. Total VFA concentrations were greatest for the corn and brown midrib sorghum diets. The brown midrib sorghum had greater in situ extent of ruminal NDF digestion than did the normal sorghum, which agreed with in vitro data. The brown midrib sorghum used in this experiment supported FCM production similar to the corn and alfalfa silages commonly fed to dairy cows in midlactation.  相似文献

Tropical corn silage was compared with sorghum silage as a basal forage in the diets of high producing dairy cows. Sorghum and tropical corn silages were each included in place of ground corn at incremental concentrations in the experimental diets. Eight separate diets were fed, four diets containing each silage ranging in forage neutral detergent fiber (NDF) from approximately 25 to 31% and ranging in total NDF from approximately 41 to 45%. Diets were arranged in a 2 x 4 factorial design and were fed to lactating cows (n = 24; pretrial mean milk production = 39 kg/d; body weight = 656 kg; and days in milk = 81). As concentrations of dietary NDF increased, intake and milk production decreased linearly. The impact of dietary NDF on intake was greater for diets based on tropical corn silage than for diets based on sorghum silage. Energy intake and milk production were reduced, but cows consumed more fiber when challenged with higher dietary concentrations of fiber. The in vitro rate and extent of digestion of dietary samples were correlated with intake response. The rate of in vitro fiber digestion was slower for samples that contained tropical corn silage than for samples that contained sorghum silage. In vivo digestibility measurements were influenced by intake and dietary composition. Results of this trial indicated that sorghum silage can have equal or slightly greater nutritional value than tropical corn silage when these forages are fed at equal concentrations of dietary fiber.  相似文献

'Mott' dwarf elephantgrass, forage sorghum, 'Tifton 81' bermudagrass, and whole corn plant were stored as silage and fed as the only forage source in diets formulated to 31, 35, and 39% NDF. The 12 diets were fed for ad libitum intake as a TMR to midlactation Holstein cows, primarily to determine the effect of NDF concentration and forage source on DMI and milk production. Increased dietary NDF concentration linearly decreased DMI (3.69 to 3.35%) and OM intake (3.39 to 3.06%) as a percentage of BW and linearly increased NDF intake as a percentage of BW (1.15 to 1.32%). Production of milk (23.0 to 21.7 kg/d) and 4% FCM (20.7 to 19.6 kg/d) and percentage of milk protein (3.16 to 3.07%) decreased linearly as dietary NDF concentration increased. Cows fed dwarf elephantgrass silage or corn silage, which were higher quality forage sources based on greater rates and extents of fiber digestion, consumed more DM and produced more milk than cows fed sorghum silage or bermudagrass silage. Cows fed diets containing sorghum silage had the lowest DMI and milk production. Apparent digestibility of NDF and ADF from corn silage and dwarf elephantgrass silage was greater than that of sorghum silage and bermudagrass silage. The explosive increase of population in almost all the underdeveloped countries--about 1900 it was round a milliard, now it is more than two milliard and at the turn of the century more than four milliard is to be expected--has given rise to serious concern that the Third World is approaching a nutritional catastrophe such as ROBERT MALTHUS has prophesied nearly two hundred years ago for the newly developing industrial countries. The actual development of the industrial countries has proved the opposite of MALTHUS' prognosis. And in the Third World also such pessimistic fears are not appropriate. The natural potential for the production of foodstuffs in most of the developing countries is immensely great. The nutrition of the additional milliard in this century could be kept at the approximately equal per capita level by cultivation of land reserves with traditional primitive methods without an increase of yield. In order to keep from hunger the number of consumers doubling once more in the coming twenty-five years, it is essential to apply the modern methods of food production developed in the industrial countries. This would allow double or threefold and more the yield on the same area of land. The available reserves of food production in all--taking the land reserves and the still more important progress in agricultural methods together--are so great that fear of general hunger through the exhaustion of resources, even with a world population of ten milliards, must be regarded as totally unfounded and misleading. This is so, however, only when all available forces for this great task are activated and put into productive action. In the industrial countries with their at present extremely high level of nutrition, which had never before in history been reached, a great increase of food production has been achieved in comparison with the former primitive and low productive agriculture. It would, however, be an inversion of the cause and effect to believe that the improvement of the nutrition standard was caused primarily by the increase in food production. The initial stimulus derived from the increase in income, purchasing power and demand at first for more, and later for better nutrition, which came with the industrialisation. This gave the impulse to agriculture to make better use of the given great possibilities to produce progressively more food by applying the continually improving agricultural technology and higher investment. Gradually the nutritional standard of the masses in the industrial countries has reached, thanks to the high purchasing power of the masses, many times the level at the beginning of industrialisation and also the level of most developing countries. Food intake patterns of 545 adult Melbourne Chinese were studied in 1988 and 1989 using a 220-item food-frequency questionnaire appropriate for Chinese eating practices. Men and women were compared, adjusting for age, time in Australia and education. Men consumed more rice and alcoholic beverages as energy. In women, the energy intake was derived from foods of traditional Chinese types. There were two types of consumption patterns: in the first group were those who acculturated towards an Australian way of eating by replacing some traditional Chinese foods, such as rice, pork, leafy green and cruciferous vegetables, soups and tea, with 'new foods', such as wheat products, red meats and coffee; in the second were those who limited their intake to a handful of traditional Chinese foods as the major source of energy. The educated, the professional and those with an administrative profession, the Australian-born and those with a longer length of stay fitted into the first group, and were more acculturated towards Australia than those born in the People's Republic of China or Vietnam and who migrated at an older age. The first group may benefit from the best of both worlds, but may risk the diseases of an industrialised society. The second group may be trapped at a cultural crossroads and may be unable to make appropriate food choices. Public health efforts in Australia, where one in every five is overseas-born, should provide for nutrition and health education for new and aged migrants of non-European cultural backgrounds.  相似文献

OBJECTIVE: To evaluate the effect of a nutrition improvement project based on home garden production and nutrition education on morbidity from acute respiratory infection and diarrhoeal disease in preschool children. DESIGN: The morbidity survey comprised five data collections undertaken by trained interviewers to ascertain the incidence and severity of respiratory infections and the incidence of diarrhoeal disease in children in two communes. SETTING: A project commune and a control commune in Vietnam. SUBJECTS: Preschool children to 6 years of age living in the project commune Khai Xuan (average 469 children) and the control commune Ching Cong (average 251 children). MAIN OUTCOME MEASURES: Differences between the two communes over time in the incidence and severity of respiratory infections and the incidence of diarrhoeal disease. RESULTS: In Khai Xuan there was a significant reduction (P < 0.0001) in the incidence of respiratory infections (from 49.5% to 11.2%) and diarrhoeal infections (18.3% to 5.1%); the incidence of pneumonia and severe pneumonia was also significantly reduced (P < 0.0001). In Ching Cong there was no significant change in the incidence and severity of respiratory disease nor in the incidence of diarrhoeal disease. CONCLUSIONS: These findings emphasise the successful health outcome of a nutrition project based on household food production and nutrition education and the value of evaluating nutrition projects by reference to measurable health outcomes.  相似文献

BACKGROUND: The prevalence of obesity in adolescence is increasing. This study determined whether a lack of nutrition knowledge is correlated with obesity in adolescents. METHODS: We distributed a survey at three high schools to 292 9th-through 12th-grade students. The questionnaire examined the students' nutrition knowledge, food-related behaviors, and food preferences. The students' body mass indices (BMI) were calculated from self-reported weights and heights. Obesity was defined as a BMI greater than the 85th percentile, using criteria from the National Health and Nutrition Examination Survey II. RESULTS: Of 292 students contacted, 289 returned the survey. The population had a prevalence of obesity of 26%. There were no significant differences in nutrition knowledge between the obese and non-obese students with the exception that obese students were better able to identify high-fiber foods. In addition, obese students were more likely to report infrequent meals with their family. Otherwise, there were no significant differences in nutrition behaviors or food preferences. CONCLUSIONS: Overall nutrition knowledge did not differ between obese and non-obese adolescents.  相似文献

OBJECTIVE: To examine the self-reported importance of taste, nutrition, cost, convenience, and weight control on personal dietary choices and whether these factors vary across demographic groups, are associated with lifestyle choices related to health (termed health lifestyle), and actually predict eating behavior. DESIGN: Data are based on responses to 2 self-administered cross-sectional surveys. The main outcomes measured were consumption of fruits and vegetables, fast foods, cheese, and breakfast cereals, which were determined on the basis of responses to questions about usual and recent consumption and a food diary. SUBJECTS/SETTING: Respondents were a national sample of 2,967 adults. Response rates were 71% to the first survey and 77% to the second survey (which was sent to people who completed the first survey). STATISTICAL ANALYSES: Univariate analyses were used to describe importance ratings, bivariate analyses (correlations and t tests) were used to examine demographic and lifestyle differences on importance measures, and multivariate analyses (general linear models) were used to predict lifestyle cluster membership and food consumption. RESULTS: Respondents reported that taste is the most important influence on their food choices, followed by cost. Demographic and health lifestyle differences were evident across all 5 importance measures. The importance of nutrition and the importance of weight control were predicted best by subject's membership in a particular health lifestyle cluster. When eating behaviors were examined, demographic measures and membership in a health lifestyle cluster predicted consumption of fruits and vegetables, fast foods, cheese, and breakfast cereal. The importance placed on taste, nutrition, cost, convenience, and weight control also predicted types of foods consumed. APPLICATIONS: Our results suggest that nutritional concerns, per sc, are of less relevance to most people than taste and cost. One implication is that nutrition education programs should attempt to design and promote nutritious diets as being tasty and inexpensive.  相似文献

Fat from meat, dairy, and egg products was extracted by using Microwave-Assisted Process (MAP) technology under atmospheric pressure conditions. Fat content was determined gravimetrically after extraction with microwaves and organic solvents that are transparent to microwaves relative to the sample. (In situ hydrolysis was performed for dairy and egg products.) Fat from the food sample migrated completely to the extractant when samples were irradiated with focused microwave for a total of 3 min for meat products, 1 min for dairy products, and 4 min for egg products. Unlike current methods used for determining fat in meat products, the microwave-assisted method does not require a dry sample, because moisture in the sample (around 75%) enhances the efficiency of extraction. No preprocessing was required for meat samples other than homogenization, which is critical, as it is for other current methods. In addition to speed and ease of use, the features of this technology are low solvent consumption, low energy consumption, reproducibility, and recoveries similar to or even better than those of conventional extraction methods.  相似文献

Fumonisin B1 (FB1) and aminopentol (AP1) (which is formed by hydrolysis of FB1) are found in corn contaminated with some strains of Fusarium moniliforme. Incubation of HT29 cells (a human colonic cell line) with FB1 or AP1 caused a significant reduction in cell number; AP1 was less potent, with 50 microM AP1 causing the same reduction (ca. 30% after 24 h) as 10 microM FB1. The reduction in cell number reflected increases in DNA fragmentation and the percentage of apoptotic cells. Both FB1 and AP1 caused the accumulation of sphinganine (25- and 35-fold by 10 microM FB1 and 50 microM AP1, respectively); thus, concentrations of FB1 and AP1 that caused comparable reductions in cell number were also similar with respect to elevation of sphinganine, a compound that is growth inhibitory and cytotoxic. Inhibition of the first step of sphingolipid biosynthesis with ISP-1 prevented the elevation in sphinganine, DNA fragmentation, and apoptosis induced by FB1. Therefore, these effects of FB1 on HT29 cells can be attributed to the accumulation of sphinganine. Since consumption of food contaminated with Fusarium moniliforme (Sheldon) exposes colonic cells to these mycotoxins, the possibility that FB1 and AP1 are toxic for intestinal cells in vivo should be evaluated, especially in the light of the recent report (Bhat et al., Clin. Toxicol. 35, 249, 1997) describing intestinal disturbances in humans after consumption of moldy corn and sorghum containing fumonisins.  相似文献

With the purpose of studying trends in nutrition in Greece, data from the Food Balance Sheets about the calorie and nutrient intakes were analysed. During the period 1961-86, the average per capita consumption of calories increased by 26.6%, while the calories obtained exclusively from animal sources increased by 106%. The average protein intake rose by 29.9%. Animal proteins increased by 90.6% and their proportion reached 51.5%. Lipid intake increased by 62.2%; in particular animal fats went up by 114.3%. It is concluded that the most important changes in nutrition in Greece during the study period were (a) the increase in total calorie intake, and (b) the rise in total fat consumption and especially the vertical increase in consumption of animal fats. These developments show a change to the traditional pattern of the Greek diet.  相似文献

Two experiments were conducted with White Leghorn laying hens to study the effects of different cereal grains on production criteria and liver fat content. The results of Experiment 1, in which pullets 21 weeks of age were used for a period of 22 weeks indicated that Gaines wheat or triticale (Trailblazer) were equal to corn in supporting egg production, egg weight and body weight, with comparable feed consumption. Henry wheat(a hard red winter class) was slightly, yet significantly (P less than 0.05) inferior to corn for the above criteria. No significant differences were observed among four treatments in wet liver weight and liver fat content. Hens fed the corn diet had significantly (P less than 0.05) lower carcass fat followed by the hens fed triticale in comparison with those fed Gaines or Henyry wheat. Mortality was very low and not related to dietary treatments. Neither dietary fat nor energy content was related to fat content of liver and carcass of the hens. Body weight and liver fat content were not closely related to each other. Wet liver weight was the only significantly (P less than 0.05) related factor to liver fat content. In the second experiment, in which hens 33 weeks of age were used for an experimental period of 20 weeks, opaque-2 corn was slightly superior to normal corn and triticale was comparable to normal corn in supporting egg production and egg weight. Supplementation of the diets containing the two corns and triticale with lysine failed to improve egg production and egg weight. Hens fed the diets containing either normal corn or opaque-2 corn as the only grain in the diet had significantly (P less than 0.05) higher liver fat content in comparison with hens fed the diet containing triticale as the only grain. Mortality, however, was much higher among hens fed triticale-containing diets in comparison with groups fed corn-containing diets in spite of the fact that they had significantly lower liver fat content. Regardless of dietary treatments or grains used, the hens that died were diagnosed to have fatty liver hemorrhagic syndrome. Dietary fat content was postively and significantly (P less than 0.05) related to liver fat content. Dietary energy or body weight was not closely related to liver content. Liver fat content and mortality were negatively related to each other. The higher for content did not adversely affect laying performance.  相似文献

Two low energy precision application (LEPA) sprinkler methods (double-ended socks and bubblers) and two spray sprinkler methods (low-elevation spray application and overhead spray) were used to irrigate corn, grain sorghum, and winter wheat in the Southern High Plains. For full or 100% irrigation, sufficient 25-mm applications were applied to maintain soil water at non-yield-limiting levels determined in earlier research with the three crops. Deficit-irrigated treatments were irrigated on the same days as the control treatment in 25 or 33% increments of the fully irrigated amount. Irrigation water was applied to or above alternate furrows with a three-span lateral move irrigation system. Corn and sorghum were grown on beds and furrows with all furrows diked, and wheat was flat-planted without basin tillage. Grain yields increased significantly with irrigation amount (p ≤ 0.05) for all crops during all years. With full irrigation, grain yields varied little among the sprinkler methods, and yields averaged 13.5, 8.9, and 4.6 Mg∕ha for corn, sorghum, and wheat, respectively. With the 25 and 50% deficit irrigation amounts, sorghum yields with LEPA irrigation were 1.1 Mg∕ha larger than with the two spray methods. For 75% irrigation of sorghum and for deficit irrigation of the other two crops, there was little yield difference between the LEPA and spray sprinkler methods. Grain yields were significantly correlated with seasonal water use with regression coefficients of 2.89, 1.84, and 0.915 kg∕m3 for corn, sorghum, and wheat, respectively.  相似文献

Investigated the effects of pro-nutrition TV programming on kindergarten-age children's nutritional knowledge, food preferences, and eating habits using a hierarchy of effects model as a conceptual basis. This model presents 4 levels (recall, information, preference, and behavior) that may be affected by pro-nutrition food advertisements and are sequenced by degree of complexity. A pretest–posttest control-group design was used. 59 children from 6 kindergarten classes (average age 6.2 yrs) were exposed to a series of 10 20-min videotapes over 10 class days. The videotapes were compiled from popular children's programming and public service announcements with themes stressing healthy eating habits and nutritional concepts. 50 control Ss did not view the tapes. Effects were measured using recall, information, preference, and behavioral assessments (i.e., the Behavioral Eating Test and the Pretend Eating Test). Significant results were obtained on the recall and information measures only, indicating that Ss attended to the TV programming and learned the nutrition concepts that were presented in the tapes but failed to change in terms of preference or consumption. Results are discussed in terms of their suggested support for the hierarchy-of-effects model and the implications for further research regarding the effects of pro-nutritional TV programming. Participants in a November 1991 workshop concluded that coordinated strategies for controlling malnutrition due to iodine, iron, vitamin A and other micronutrients deficiencies are technically feasible and should be given consideration in planning control efforts. Coordinated surveys involving clinical, biochemical and dietary assessment of multiple micronutrients are feasible. Multiple fortification is also possible using such vehicles as salt, processed rice or sugar. Supplementation efforts can be integrated with existing health care programs. Food-based strategies are also effective. The best examples have been community-based and have included a strong nutrition and health education component designed to change food consumption patterns, improve food preservation and preparation practices, and link income-generating activities with food production activities. Successful coordinated efforts will require a strong political commitment and a supportive infrastructure. Specific recommendations include the formation of national coordinating bodies for micronutrient deficiency control, establishment of a micronutrient information network and expansion of technical exchange and training.  相似文献

BACKGROUND: Home parenteral nutrition has become routine for management of intestinal failure in patients. In Poland the main obstacle to widespread use of home parenteral nutrition is the lack of interest of commercial companies in delivering feedings and ancillaries to patients. METHODS: Twenty-five home parenteral nutrition patients aged from 4 months to more than 13 years were reviewed. The mother or both parents were trained in home parenteral nutrition techniques for 4 to 6 weeks and compounded the nutrients themselves at home. RESULTS: The mean duration of home parenteral nutrition was 10,117 patient days. Hospital stays of patients receiving parenteral feedings were significantly shorter than the duration of administration of home parenteral nutrition (p < 0.001). Eleven children are continuing the home parenteral nutrition program. Eighty-three catheters were used in these patients. The rate of catheter occlusion decreased within the observation period, and in 1997 not one case of occlusion was observed. In 1997 only three catheters were removed during 7.8 patient years, and the overall incidence of catheter-related complications was 0.38 per patient year. The overall occurrence of septicemia was one case in 516 days and of catheter infection was one in 459 days. In 1997 a catheter was infected on average of once every 1419 days. There was significant improvement in the z score for weight during therapy. The average monthly cost of nutrients and ancillary items was approximately $1200 (4200 Polish zlotys [PLN]). These costs are 1.6 to 3 times lower than those recorded in other studies. CONCLUSION: Home parenteral nutrition in children with nutrients mixed by caregivers in the home setting is a safe and appropriate method of treatment that can be used in countries where home parenteral nutrition solutions are not manufactured or where commercial home parenteral nutrition is not economically feasible.  相似文献

A method has been developed for determining sterigmatocystin in yellow and white corn, barley, oats, rye, sorghum, brown and wild rice, and soybeans. A partition column packed with activated magnesium silicate was used for cleanup. Averaged recoveries are 104% in white corn, 114% in rye, 100% in oats, 134% in brown rice, 96% in barley, 105% in sorghum and wild rice, and 92% in soybeans. The limit of sensitivity is 50 mug/kg for any of these commodities.  相似文献

It has been proposed that several nongenotoxic compounds act as hepatocarcinogens by suppressing the apoptosis that would normally act to remove damaged or potentially initiated cells from the liver. During our investigations of this hypothesis using a widely applied protocol, we have found that the stress induced by the process of gavage dosing can induce massive apoptosis in livers uniquely primed by withdrawal of the hepatomitogen cyproterone acetate from the hyperplastic rat liver. This effect of gavage dosing was not seen in livers of naive animals. Apoptosis was measured by both in situ end labeling (ISEL) of the DNA damage associated with programmed cell death and conventional hematoxylin and eosin (H&E) staining of apoptotic morphology. Apoptotic rates measured by H&E increased significantly from 0.005 +/- 0.010% on Day 11 to 0.657 +/- 0.315% of hepatocytes on Day 15, 4 days after cessation of 10 days dosing with CPA (120 mg/kg). The readministration of CPA suppressed > 89% of this Day 15 apoptosis. However, the readministration of vehicle alone (corn oil) caused a 390% increase in apoptosis to 2.56 +/- 1.31% of hepatocytes. Similar results were obtained using ISEL. Measurements of liver to body weight ratios and total DNA per liver reflected these changes in cell loss by apoptosis. In a second experiment, CPA was administered for 10 days as before then animals were subjected to readministration of CPA in corn oil, CPA in saline, corn oil, saline, or sham dosed. Again, apoptosis was dramatically suppressed by the readministration of CPA in either vehicle but was dramatically increased to around 2% of hepatocytes in all other groups, including the sham dosed group. Data on food consumption provided no evidence for a reduction in food intake as a causative agent but rather pointed to a less efficient usage of food in the stressed animals. The ability of stress to induce liver apoptosis should be borne in mind in the design and interpretation of future toxicological studies aimed at understanding the putative suppression of apoptosis by liver nongenotoxic carcinogens and other toxicants.  相似文献

This study assessed psychological and social factors predicting 12-month changes in fruit and vegetable consumption achieved by 271 men and women from a low-income population randomized to brief behavioral and nutrition education counseling. Greater increases in fruit and vegetable intake were achieved in the behavioral than in the nutrition education condition (1.49 vs. 0.87 portions per day, p=.021). Increases were predicted by baseline social support for dietary change but not by baseline psychological measures. However, short-term (8-week) changes in dietary self-efficacy, encouragement, anticipated regret, perceived benefits, and knowledge of recommended intake predicted 12-month changes in fruit and vegetable consumption independently of gender, age, ethnicity, income, and baseline intake.
