The aim of this study was to evaluate the degree of knowledge on food and nutrition in students graduating from Basic Education in the Metropolitan Area of Santiago, Chile. A random sample of 249 students of both sexes (1:1) from public and non-public schools (1:1) and from high, medium and low socioeconomic level (SEL), was selected. SEL was measured through the Graffar Modified Scale, and the degree of knowledge on food and nutrition was evaluated through a standardized test of 29 multiple choice items, based on the objectives of the curriculum program. The test was divided in two areas: Area 1, which contemplated Food and Requirements and Area 2, Food, Personal and Environmental Hygiene. Data were analyzed by chi-square procedure, comparing students who obtained sufficient knowledge (greater than or equal to 50% of correct answers) with those who obtained insufficient knowledge (less than 50% of correct answers). Results of the study indicated that 39.8% of students registered sufficient knowledge, 31.3% and 65.9% in Area 1 and 2, respectively. According to SEL, 62.1% and 12.3% of students from high and low SEL, respectively, registered sufficient knowledge (p less than 0.001), and the same effect was observed in Areas 1 and 2. In relation to sex, 46.3% of females and 33.3% of males registered sufficient knowledge (p less than 0.05), fact which was confirmed in both areas of the test. No significant differences were registered in the degree of knowledge on food and nutrition of students from public and non-public schools. It is therefore concluded that the degree of knowledge on food and nutrition in students graduating from Basic Education differs significantly according to SEL and, sex. This study represents a basic contribution to the better understanding of factors affecting the degree of knowledge on food and nutrition in students graduating from Basic Education in Santiago, Chile, and may serve as base-line for further studies on the subject.  相似文献

An anthropometric assessment of the nutritional status and growth of students graduating from Basic (8th grade) and Secondary (4th grade) Education was carried out. A group sample of 522 students from the Metropolitan Area of Santiago, Chile, was randomly selected. The same number of students by sex, dependency (public and private schools) from high, medium and low socioeconomic levels (SEL) was chosen. SEL was measured through the Graffar Modified Scale, and the percentage of weight for age (% W/A), height/age (% H/A) and weight/height (% W/H) were evaluated in accordance with the National Center for Health Statistics (NCHS) reference pattern. The % adequacy of head circumference/age (% HC/A) was determined by the Tanner Tables, and the % of upper to lower segment ratio (% US/LS), by the Tables of Muzzo et al. Results revealed that the % of W/A and of H/A were diminished in students of both sexes, while the % of UP/LS, was increased in males of low SEL, from Basic Education; this impact is lost in males graduating from Secondary Education and persists only in the LSE females. No differences in the nutritional status (% W/H) of students according to SEL, were found. Females registered values over 110% of the WHO standard, a finding suggesting a high prevalence of overweight and obesity. We conclude that there is a growth retardation in students graduating from 8th Basic Grade, which persists only in females from 4th grade of Secondary Education. This finding indicates that, in addition to possible environmental factors, other factors, probably of genetic order, also influence the latter. Overweight and obesity, therefore, constitute an important problem that merits measures of preventive nature directed to avoid future consequences.  相似文献

The purpose of this study was to determine the degree of knowledge on food and nutrition in students graduating from high school in the Metropolitan Area of Santiago. The sample included 272 students of both sexes and type of school (public and private) and from high, medium and low socioeconomic level (SEL), measured through the Graffar Modified Scale. The degree of knowledge on food and nutrition was measured through a test of 48 items based on curriculum program objectives. The test covered three areas: Area 1, Food and Requirements; Area 2, Food, Personal and Environmental Hygiene, and Area 3, Nutritional Physiology. Students showed a good achievement of the food and nutrition objectives that are considered essential for obtaining and adequate nutrition and health status. Students from high SEL registered a significantly higher degree of knowledge on food and nutrition than students from other strata (p less than 0.001). However, sex and type of school had no effect on the degree of food and nutrition knowledge. This study is a contribution to the better understanding of factors affecting the food and nutrition knowledge, and provides good foundations for further studies.  相似文献

The interrelationships between educational achievement (EA) and nutrient intake were investigated in 550 Chilean adolescent schoolers graduating from elementary and high school. The random sample included schoolers from both educational levels (1:1), from public and private schools (1:1), and from high, medium, and low socioeconomic status (SES) (1:1:1). Standard procedures for 24-hour dietary recall interviews were used to collect data, and adequacy of intake was assessed by the FAO/WHO Pattern. EA was measured by means of the Achievement Evaluation Program (AEP) and Academic Aptitude Test (AAT) in elementary and high school, respectively. In elementary school graduates, results showed a significant and positive correlation between EA (AEP) and energy, protein, riboflavin, ascorbic acid, calcium and vitamin A intake (Multiple r = 0.456 p less than 0.01; r2 = 0.208). The School Feeding Program beneficiaries who belonged to the low SES presented the lowest EA (AEP) together with a deficient nutrient intake, especially for energy, riboflavin, niacin, vitamin A and calcium, at the same time that they registered the lowest values for those anthropometric parameters, indicators of past nutrition, that is to say height-for-age, weight-for-age, head circumference-for-age and a higher upper-to-lower segment ratio, as compared with non-beneficiaries from the same SES and with those from the higher strata. In high-school graduates, EA (AAT) was found to be significantly and positively correlated with protein, calcium, riboflavin and iron intake (Multiple r = 0.438 p less than 0.001; r2 = 0.192). Nevertheless, these interrelationship are strongly related to SES and sex. Results showed that educational achievement (EA) is significantly and positively associated with nutrient intake, this fact being important for educational planning related to the School Feeding Program.  相似文献

ABSTRACT: BACKGROUND: Food Frequency Questionnaires (FFQs) are commonly used in epidemiologic studies to assess long-term nutritional exposure. Because of wide variations in dietary habits in different countries, a FFQ must be developed to suit the specific population. Sri Lanka is undergoing nutritional transition and diet-related chronic diseases are emerging as an important health problem. Currently, no FFQ has been developed for Sri Lankan adults. In this study, we developed a FFQ to assess the regular dietary intake of Sri Lankan adults. METHODS: A nationally representative sample of 600 adults was selected by a multi-stage random cluster sampling technique and dietary intake was assessed by random 24-h dietary recall. Nutrient analysis of the FFQ required the selection of foods, development of recipes and application of these to cooked foods to develop a nutrient database. We constructed a comprehensive food list with the units of measurement. A stepwise regression method was used to identify foods contributing to a cumulative 90% of variance to total energy and macronutrients. In addition, a series of photographs were included. RESULTS: We obtained dietary data from 482 participants and 312 different food items were recorded. Nutritionists grouped similar food items which resulted in a total of 178 items. After performing step-wise multiple regression, 93 foods explained 90% of the variance for total energy intake, carbohydrates, protein, total fat and dietary fibre. Finally, 90 food items and 12 photographs were selected. CONCLUSION: We developed a FFQ and the related nutrient composition database for Sri Lankan adults. Culturally specific dietary tools are central to capturing the role of diet in risk for chronic disease in Sri Lanka. The next step will involve the verification of FFQ reproducibility and validity.  相似文献

Obesity increased in recent years at different rates among socioeconomic levels (SEL). The purpose of this study was to analyze the association between SEL and nutritional status in schoolchildren attending elementary schools in the six counties that show the highest prevalence of obesity in Santiago, Chile. Within the counties schools were stratified according to obesity and children were randomly selected from each school. Anthropometric assessment was performed in children whilst a socio-demographic survey and a 24 hour recall of food intake were applied to their mothers. We classified the sample according to SEL in two categories (higher and a lower vulnerability). The prevalence of excess weight was 51.1% (24.7% overweight and 26,4% obese) without significant differences among SEL. The most vulnerable group had lower values of body mass index, skinfold thickness, arm circumference and food intake however, these differences were not statistically significant. At the same time, these children were physically more active, showing higher use of community places to play [OR 1.91; 95% CI 1.05-3.48] and walked larger distances from houses to schools OR 6.6; CI 2.5-16.7). Thus, albeit non significant association was detected between SEL and anthropometric indicators nor with food intake, the highest vulnerable group showed a tendency to have lower values and more physical activity.  相似文献

The purpose of this study was to determine the food habits of Chilean high-school graduates, and measure the effect that socioeconomic level (SEL), type of school (public and private school), sex and age exerts on those habits. A random and stratified sample of 283 schoolers, according to type of school, sex and SEL, measured through the Graffar Modified Scale was selected for the study. Food habits were defined by the frequency of consumption of food, expressed as days per week and were compared with the Model Allowance established by the Ministry of Health of Chile. A food habits questionnaire was administered to students by duly trained interviewers, and were defined by the frequency of consumption of food groups. Data were analyzed by the chi-square procedure, analysis of variance and Student's "t" test. In accordance with the results, the most consumed foods (over 90% of students) were meat, poultry, eggs, potatoes, apples, bread, rice, oil and butter or margarine. On the other hand, the most disliked foods (40% and more of students) were fresh cheese, viscera, radish and chickpeas. The high SEL students showed a significantly greater frequency of consumption of dairy products, and of meat products and eggs (p less than 0.001). No differences were found according to type of school, sex and age of students. We conclude, therefore, that SEL exerts a significant effect on food habits, in spite of which they were adequate according to the Model Allowance.  相似文献

The nutritional status of 101 institutionalized students aged 6 to 13 was assessed from the dietary and biochemical points of view. The children were pupils of a Youth Care Boarding School. The dietary survey revealed an adequate nutrient intake which met the Recommended Dietary Allowances (RDA) in most cases as well as a high protein intake (250% of RDA). A slight deficiency in energy, zinc, magnesium and vitamins B2 and C was found in some cases in the eldest group. Blood parameters (erythrocyte counts, hematocrit, hemoglobin, mean corpuscular values, serum proteins, albumin, globulins, albumin/globulin ratio, urea and cholesterol) showed slightly lower values, mainly on hemoglobin, than those obtained from other similar groups. Nevertheless, urine parameters (nitrogen, urea, uric acid and creatinine) were higher, may be due to the high protein intake, energy deficiency and non-dietary factors such as lack of affection, socioeconomic problems, etc. All of these factors cause a rise in the students' catabolism. Correlations between dietary and biochemical data seem to corroborate that there is a shortage of energy, zinc, riboflavin, magnesium and vitamin C intakes in some cases, which limits the build up of several blood elements.  相似文献

Because of efforts to decrease trans fatty acids (TFA) in the food supply, intake should be assessed in the population to establish a baseline TFA intake. The 1999?C2002 National Health and Nutrition Examination Survey (NHANES) was used to identify a benchmark for TFA intake. TFA was estimated by mean, median, and quintile of intake, TFA intake data were weighted using the NHANES 4-year sample weights. The main outcome measures included TFA intake in grams per day and percentage of energy in the top 25 food sources of TFA. Data are reported for 16,669 individuals ??3 years of age. Median TFA intake was 2.3?% of calories (5?g/day) with 0.9?C4.5?% of energy (1.5?C13.1?g/day) over different quintiles of intake. Mean TFA intake was 2.5?% of energy (6.1?g/day). The range of TFA intake in the fifth quintile was very large, i.e., 3.5?C12.5?% of energy or 8.8?C92.4?g/day. Increasing quintiles of TFA intake were associated with increases in total fat (26.7?C37.6?% of energy), saturated fat (7.6?C10.5?% of energy), and calories (for those >20?years of age: 2,416?C2,583 for men and 1,679?C1,886 for women). Major food sources of dietary TFA were cakes, cookies, pies, and pastries. Based on current dietary guidance to consume as little industrial TFA as possible, much progress is needed to attain this goal, including food industry efforts to remove TFA from the food supply and educating the public about making healthy food choices.  相似文献

Dietary control is known to influence diabetic processes. Therefore, the purpose of this work was to determine possible effects brought about by two different dietary protein levels on the nutritional diet utilization in alloxan-diabetic rats. Rats were divided in two groups: 1) One fed on 12% and 2) one a 4% protein diet. Each group was then divided into two subgroups: A) non diabetic and B) diabetic. Weight parameters, food intake, food efficiency (FE), digestive efficiency (DE), metabolic utilization (MU), retained N/ingested N ratio as well as initial and final glycemia were evaluated at the beginning and at the end of the experiment. A decrease in body weight, FE, DE and MU was observed in the control rats of group 2A, in comparison with the group 1A. Experimental diabetes led to increased FE in 1B group in relation to those of group 1A. Also decreased body weight and FE as well as increased food intake and DE were found in the control animals of 2B group. Glycemia increased in diabetic rats as compared with non-diabetic rats, in both groups, 1 and 2. The data suggest that under the experimental conditions cited, both the nutritional utilization of the diet and the diabetogenic status might be modulated by the dietary protein ingested level.  相似文献

ABSTRACT: BACKGROUND: In the 1970s, men in northern Sweden had among the highest prevalences of cardiovascular diseases (CVD) worldwide. An intervention program combining population- and individual-oriented activities was initiated in 1985. Concurrently, collection of information on medical risk factors, lifestyle and anthropometry started. Today, these data make up one of the largest databases in the world on diet intake in a population-based sample, both in terms of sample size and follow-up period. The study examines trends in food and nutrient intake, serum cholesterol and body mass index (BMI) from 1986 to 2010 in northern Sweden. METHODS: Cross-sectional information on self-reported food and nutrient intake and measured body weight, height, and serum cholesterol were compiled for over 140,000 observations. Trends and trend breaks over the 25-year period were evaluated for energy- providing nutrients, foods contributing to fat intake, serum cholesterol and BMI. RESULTS: Reported intake of fat exhibited two significant trend breaks in both sexes: a decrease between 1986 and 1992 and an increase from 2002 (women) or 2004 (men). A reverse trend was noted for carbohydrates, whereas protein intake remained unchanged during the 25-year period. Significant trend breaks in intake of foods contributing to total fat intake were seen. Reported intake of wine increased sharply for both sexes (more so for women) and export beer increased for men. BMI increased continuously for both sexes, whereas serum cholesterol levels decreased during 1986 - 2004, remained unchanged until 2007 and then began to rise. The increase in serum cholesterol coincided with the increase in fat intake, especially with intake of saturated fat and fats for spreading on bread and cooking. CONCLUSIONS: Men and women in northern Sweden decreased their reported fat intake in the first 7 years (1986-1992) of an intervention program. After 2004 fat intake increased sharply for both genders, which coincided with introduction of a positive media support for low carbohydrate-high-fat (LCHF) diet. The decrease and following increase in cholesterol levels occurred simultaneously with the time trends in food selection, whereas a constant increase in BMI remained unaltered. These changes in risk factors may have important effects on primary and secondary prevention of cardiovascular disease (CVD).  相似文献

In this study, the relationships between dietary fat [as measured by serum cholesterol ester fatty acids (CE-FA)], age, smoking, body mass index, and serum lipids were analyzed in 151 subsistence horticulturalists, aged 20–86 yr, from Kitava, Trobriand Islands, Papua New Guinea. Their diet consists of tubers, fruit, coconut, fish, and vegetables with a negligible influence of western food and alcohol. Total fat intake is low [21% of energy (en%)], while saturated fat intake from coconuts is high (17 en%, mainly lauric and myristic acid). In multivariate analysis, 11–43% of the variation of the serum lipoprotein composition was explained by CE-FA, age, and smoking habits. The proportion of CE20∶5n-3 explained much of the variation of triglycerides (TG, negative relation) and high density lipoprotein-cholesterol (HDL-C, positive) in both sexes and serum apolipoprotein A1 (ApoA1, positive) in the males. CE16∶0 was positively related to TG and negatively related to HDL-C and ApoA1 in both sexes, and in males it related negatively to total cholesterol (TC) and low density lipoprotein-cholesterol (LDI-C). In males, negative relationships were present between CE18∶2n-6 and TC and between CE14∶0 and serum lipoprotein(a). Smoking was independently associated with lower ApoA1 in both sexes and with lower HDL-C and higher TG, TC, LDL-C, and apolipoprotein B in males. In conclusion, marine n-3 fatty acids and linoleic acid showed the same potentially beneficial relationships with lipoproteins and apolipoproteins as in western populations. The relations of palmitic acid to serum lipids may be explained in terms of endogenous fat synthesis at a low-fat intake, rather than reflecting its relative intake.  相似文献

ABSTRACT: BACKGROUND: Weight loss is often difficult to achieve in individuals with type 2 diabetes and anti-obesity drugs are often advocated to support dietary intervention. Despite the extensive use of centrally acting anti-obesity drugs, there is little evidence of how they affect dietary composition. We investigated changes in energy intake and dietary composition of macro- and micronutrients following therapy with the endocannabinoid receptor blocker, rimonabant. METHODS: 20 obese patients with type 2 diabetes were studied before and after 6 months dietary intervention with rimonabant. Dietary intervention was supervised by a diabetes dietician. Five-day food diaries were completed at baseline and at 6 months and dietary analysis was performed using computer software (Dietplan 6). RESULTS: After 6 months, (compared with baseline) there were reductions in weight (107+/-21Kg versus 112+/-21, p<0.001, 4% body weight reduction), and improvements in HbA1c (7.4+/-1.7 versus 8.0+/-1.6%, p<0.05) and HDL cholesterol. Intake of energy (1589+/-384 versus 2225+/-1109kcal, p<0.01), carbohydrate (199+/-74 versus 273+/-194g, p<0.05), protein (78+/-23 versus 98+/-36g, p<0.05), fats (55+/-18 versus 84+/-39g, p<0.01) and several micronutrients were reduced. However, relative macronutrient composition of the diet was unchanged. Improvement in blood glucose was strongly correlated with a reduction in carbohydrate intake (r = 0.76, p<0.001). CONCLUSIONS: In obese patients with type 2 diabetes, rimonabant in combination with dietary intervention led to reduced intake of energy and most macronutrients. Despite this, macronutrient composition of the diet was unaltered. These dietary changes (especially carbohydrate restriction) were associated with weight loss and favourable metabolic effects.  相似文献

The objectives were to assess total dietary fiber intake, identify the major sources of dietary fiber, and examine its association with socio-economic factors among Flemish preschoolers. Three-day estimated dietary records were collected from a representative sample of preschoolers 2.5-6.5 years old (n = 661; 338 boys, 323 girls). The mean dietary fiber intake (13.4 g/d) was lower than the intake level recommended by the Belgian Superior Health Council (70% boys and 81% girls below the guidelines). The most important contributor was the group of bread and cereals (29.5%), followed by fruits (17.8%), potatoes and grains (16.0%), energy-dense, low-nutritious foods (12.4%), and vegetables (11.8%). Multiple linear regression analyses showed that total fiber intake was associated with maternal education and parents' employment. Overall, fiber intakes from high-nutritious foods (vegetables and fruits) were higher in preschoolers of higher educated mothers and those with one or both parents being employed. In conclusion, the majority of the preschoolers had dietary fiber intakes below the recommended level. Hence, dietary fiber should be promoted among parents of preschoolers and low socio-economic status families should be addressed in particular.  相似文献

In order to analyze the interrelationships between free erythrocyte protoporphyrins and the usual iron intake in adult students, biochemical, and hematological values, and dietary daily intake, obtained using the recall method during seven days, were studied. Hematocrit (Hto.), hemoglobin (Hb) and free erythrocyte protoporphyrins (FEP) were determined in a group of 145 female university students, healthy according to the standard parameters of the Buenos Aires University Health Department. Mean iron intake was 23.0 +/- 1.5 mg per day, about 44% being provided by animal sources; 74.5% of the population was within the recommended daily intake according to FAO/WHO; only 0.7% of the population did not cover protein requirements while 35% did not cover energy needs. Hto. and Hb were below normal levels in 7.8% of the population when compared with standards according to ICNND. To obtain information about normal values to FEP, expressed as microgram/100 ml red cells (FEP% r.c.) and FEP/Hb ratio, the group of students with adequate intake of energy and proteins who had normal values for Hb and Hto. was selected. This group, including 94 women, had a mean FEP% r.c. of 15.71 +/- 7.26 and a mean FEP/Hb ratio of 0.44 +/- 0.21. There was observed an inverse correlation between FEP% r.c. and FEP/Hb with total iron intake (r = 0.80 and r = 0.78, respectively) and between FEP% r.c. and Hb concentration (r = 0.81). These results confirm the usefulness of the free erythrocyte protoporphyrins determination as a good index of iron stores and usual intake of this population.  相似文献

The objective was to assess food consumption among children attending non-profit nurseries in the Federal District, Brazil.A representative sample was obtained and stratified by income. Food intake among 678 children, between 4 and 82 months old, was analyzed in nine nurseries using the 24-h dietary recall and direct food weighing methods. In children under 13 months old mean intake was above AI between 93.6 to 100% for carbohydrates, proteins, vitamins B1, B2, B12, B6, and zinc. In children from 7-12 months 56.5% presented iron consumption below EAR. Calcium intake was above AI for 35.4% of children over 1 year old. For vitamins with EAR values, the prevalence of inadequate consumption was 53.2% for vitamin E, and 90% for folate for children over 12 months old. Iron and zinc intake was above UL for 6.4% and 32.5% of children under 1 year old, and 1.5% and 5.3% for the remaining children, respectively. Lipid percentage distribution range among children between 13 and 47 months old was within the acceptable range for only 16.2%. Nonetheless, children between 36 and 82 months of both genders presented mean intake below energy requirements. Inadequate consumption observed for some nutrients points to the need for improvements in the standard of meals and nutritional assistance offered to children enrolled in charitably run nurseries in the Federal District.  相似文献

Inadequate protein intake is known to be deleterious in animals. Using WHO consensus documents for human nutrient requirements, the protein:energy ratio (P:E) of an adequate diet is > 5%. Cassava has a very low protein content. This study tested the hypothesis that Nigerian and Kenyan children consuming cassava as their staple food are at greater risk for inadequate dietary protein intake than those children who consume less cassava.  相似文献

Evolution of food and nutrient intake patterns in urban San José, Costa Rica, during the last decade, was studied comparing data from the last two national surveys (1978, 1982) and 1987 data obtained from 5 families previously included in the 1982 survey. Total food and nutrient intake was found to be similar to the 1982 results, although the pattern was altered, with a substantial decreased contribution of milk products to both energy and protein intakes. A small but constant decrease in the intake of more than half of the foods registered was also observed. Nevertheless, the nutritional adequacy of energy (from 100 to 78%), retinol (from 83 to 69%), riboflavin (from 94 to 63%), iron (from 106 to 69%) and niacin (from 103 to 81%), were found to be significantly lower than in previous years. The findings herein reported suggest that the effects of the economic crisis initiated in 1980 on food availability, could well be showing a time lag.  相似文献

An experiment was carried out with laying hens in the age of 22—45 weeks to examine the effects of added soy oil (0%, 3.5%, 7%, 10.5%, and 14%) and dietary protein level (13.2% and 16.3%) on laying and reproductive performance, fatty acid composition of yolk fat, and other egg quality parameters. Moreover, digestibility of nutrients and of energy was determined by using a marker technique. Laying intensity and feed intake were not influenced by dietary treatments whereas egg weight and daily egg mass production were significantly improved by soy oil addition in a non‐linear related manner. The feed conversion ratio reached a minimum at soy oil proportions between 3.5% and 10.5%. Reproductive performance in terms of fertilized eggs, hatchability, and mortality of chicks was not affected by dietary treatments. The increase of egg weights due to soy oil addition was accompanied by a simultaneous increase in the proportion of albumen and a decrease of yolk and shell percentage. Palmitic acid (C16:0) and oleic acid (C18:1) proportions in yolk fat decreased as soy oil addition was increased whereas the proportions of linoleic acid (C18:2 n‐6), linolenic acid (C18:3 n‐3), and docosahexaenoic acid (C22:6 n‐3) were increased at the same time. Praecaecal digestibility of crude fat and fatty acids of the diets were non‐linearly improved by soy oil addition. Digestibility of crude protein and amino acids were not affected by either protein content of the diet or by soy oil supplementation. In conclusion, a decrease in dietary protein content from 16.3% to 13.2% did not negatively influence performance of hens and egg quality under the experimental conditions applied. Soy oil addition improved egg quality.  相似文献
