The content of major (Na, K, Ca, Mg and P) and minor elements (Fe, Cu, Zn, Mn and B) in bananas consumed on the island of Tenerife, Canary Islands, has been determined. Significant differences were observed in the mineral contents of the banana samples, with higher K, Mg, P, Fe, Cu, Zn and B levels in the banana grown in north Tenerife and a higher Ca content in the banana originating in the south of the island. Differences between these mineral contents and the fruit reported in the literature have been established and a comparison has been carried out with diverse food composition tables. The banana is shown to contribute to the recommended daily requirements of K, Mg, Cu and B.  相似文献

The content of macroelements (Na, K, Ca, Mg and P) and microelements (Fe, Cu, Zn, Mn and B) in green and red pepper samples consumed on the island of Tenerife, Canary Islands, has been determined. Analysis has shown the influence of the ripening stage on the mineral content of the pepper. Red pepper presents higher K, Mg, P, Fe, Cu, Zn, Mn and B concentration levels than green pepper. There are differences between the values obtained in this study and the values shown in different food composition tables; our results are higher in Na, Ca and Mg, and lower in K and Fe.  相似文献

In this study we have determined the contents of macroelements (Na, K, Ca, Mg and P) and microelements (Fe, Cu, Zn, Mn and B) in papaya samples (Carica papaya) obtained and consumed on the island of Tenerife, Canary Islands. The analysis shows the existence of significant differences in mineral content in the papaya samples. The papaya coming from MercaTenerife (wholesaler) presents higher K, P and Mn concentration levels than the papaya coming from the South Area of Tenerife. On the other hand, Na concentration levels are higher in the samples coming from the South Area of the island. There are differences between the mineral contents of this fruit shown in some food composition data tables and those analyzed in this work. The former are lower in Na, K, Ca and higher in Fe. In the same way, it is appreciated that the levels of Na concentration found in this work are greater than those found by other authors, and lower in Fe. When we compare the results obtained in this work and the recommended daily intakes or daily estimated demands of mineral elements proposed by different institutions or authors we realize that papaya is an important source of certain mineral elements, mainly K, Mg and B.  相似文献

BACKGROUND: P, Na, K, Ca, Mg, Fe, Cu, Zn, Mn and Se were determined in five traditional onion cultivars (Allium cepa L.) from Tenerife (Guayonje, San Juan de la Rambla, Carrizal Alto, Carrizal Bajo and Masca) and a commercial cultivar (Texas Early Grano 502) grown under the same agronomic, soil and climatic conditions in order to find out differences between these cultivars. RESULTS: Carrizal Alto presented the highest K content and lowest P, Na, Fe, Zn, Mn and Se. Texas cultivar had the highest P, Mg and Se contents, and the lowest contents of Ca, Cu and Mn. There were clear differences in the mineral and trace elements contents between the two seed origins of San Juan de la Rambla cultivar. Many correlations were found between the parameters analyzed, emphasizing the Fe? Zn and Ca? Mn correlations. CONCLUSION: There were differences in the mineral and trace element composition between the onion cultivars. The environment and agronomic practices could affect the genetic information of the seeds, determining changes in the mineral and trace element composition. Linear discriminant analysis is a useful tool for differentiating onion samples according to cultivar and seed origin. Copyright © 2008 Society of Chemical Industry  相似文献

The content in nine mineral elements (P. Ca, Na, K, Mg, Zn, Fe, Cu and Mn) was determined in 153 units of cheese belonging to nine Spanish varieties: two unripe cows milk varieties (Cebreiro and Pasiego), three ripened cows milk varieties (Ahumado de Aliva, Leon and Quesucos), three ripened goats milk varieties (Armada-Sobado, Babia-Laciana and Valdeteja), and one blue-veined cows milk variety (Picón). Using a Kruskal-Wallis one-way analysis of variance, only significant differences were observed in P. K, Mg. Zn, Fe and Mn contents associated to animal milk species used in the manufacture. When the two varieties of unripened cheeses were compared, significant differences in all the elements were observed. The same happened when the three varieties of ripened cows milk cheeses were compared. On comparing the three varieties of ripened goats milk cheeses, only significant differences were observed in P, Ca, Na, K, Mg, Zn and Mn contents. Using stepwise discriminant analysis 76–31% of cases were correctly classified when the cheeses were differentiated according to milk species used in their manufacture. When we differentiated the cheeses according to the variety, 91–66% of cases were correctly classified in the unripe cows milk cheeses, 85% of cases were correctly classified in the ripened cows milk cheeses, and 92–59% of cases were correctly classified in the ripened goats milk cheeses.  相似文献

Potatoes are a basic component of human diets worldwide being an excellent source of minerals linked the maintenance of health. Contents of calcium (Ca), magnesium (Mg), potassium (K), sodium (Na), cupper (Cu), iron (Fe), manganese (Mn), zinc (Zn), nickel (Ni) and chromium (Cr) in seventy‐four fresh potato samples from different varieties consumed in Tenerife Island (Canary Islands, Spain) were determined by flame atomic absorption spetrometry (FAAS). The mean concentrations were 60.1 mg kg?1, 222 mg kg?1, 5047 mg kg?1, 125 mg kg?1, 1.69 mg kg?1, 8 mg kg?1, 1.70 mg kg?1, 3.88 mg kg?1, 62.7 μg kg?1 and 19.9 μg kg?1 for Ca, Mg, K, Na, Cu, Fe, Mn, Zn, Ni and Cr, respectively. The varieties of local potatoes presented higher mineral contents than imported potatoes. Potassium presented the highest contents in all varieties of potatoes. Iron was the most abundant microelement. Local potatoes offer greater nutritional contributions to the recommended intakes than imported varieties. Within the macrominerals, the highest contribution to the intakes was observed for K, while Fe was the trace element with the largest contribution to the proposed intake.  相似文献

The aim of this study was to determine the mineral contents of wild edible mushrooms. The phosphorus (P), iron (Fe), calcium (Ca), zinc (Zn), magnesium (Mg), potassium (K), sodium (Na), copper (Cu) and manganese (Mn) contents of thirty wild-grown common edible mushrooms, collected from Erzurum province, Turkey, were analyzed. The minimum and maximum macronutrient contents of mushrooms were determined as mg/g dw for Mg (0.90–4.54), Ca (0.17–8.80), K (12.6–29.1), Na (0.03–4.85) and P (0.64–4.49), while minimum and maximum micronutrient contents of mushrooms were determined as mg/kg dw for Zn (26.7–185), Fe (50.1–842), Cu (9.23–107) and Mn (5.54–135). The potassium content was found to be higher than those of the other minerals in all the mushrooms. The K, P and Cu concentrations were determined to be highest in Suillus granulatus.  相似文献

The contents of macroelements (Ca, Mg, Na, K y P) and trace elements (Cu, Fe, Zn and Mn) of frozen green asparagus were determined by atomic absorption spectrometry to investigate the possible changes during 45 and 90 days frozen storage at –18 °C. A significant decrease of mineral concentrations was observed at 45 days of frozen storage. After 90 days, modifications were not observed, except for Cu and P concentrations. The asparagus thickness factor resulted in significant differences in the Cu, Fe, Zn, Ca and K contents. Frozen storage time involved smaller percentages of mineral retention in the <11 mm spear for Ni, Ca, Mg, K and P, and, for the rest of mineral elements, the frozen storage effect was similar for both thicknesses (<11 mm and >14 mm). The highest mineral concentration was found in the apical portion or tip of green asparagus, except for Mn, Cr and K. Mineral retention percentages after frozen storage time were similar in both portions (apical and basal) of the spear.  相似文献

Mineral nutrition of potassium (K), calcium (Ca), sodium (Na), magnesium (Mg), iron (Fe), zinc (Zn), copper (Cu) and manganese (Mn) are important for human health. The method of inductively coupled plasma mass spectrometry (ICP-MS) was employed to determinate the contents of K, Ca, Na, Mg, Fe, Zn, Cu and Mn in milled rice (Oryza sativa L.) of 274 rice genotypes. The results showed that the visible difference could be found for the contents of eight elements in milled rice among rice genotypes studied. It existed the possibility to select the genotype(s) with abundant of mineral nutrient from the genetic resource. Meanwhile, the contents of mineral elements in brown rice were significantly higher than those in milled rice. The averages of K, Mn and Cu contents of indica rice were significantly lower than those of japonica rice, while no significant difference was found for other five element contents between indica and japonica rice genotypes. The average contents of Na and Cu in non-glutinous rice genotypes were higher than those in glutinous ones, whereas the averages of K and Mn contents in non-glutinous rice genotypes were lower in present experiment. Additionally, the K, Ca and Mg contents of milled rice from white brown rice were significantly higher than those from red brown rice, and Ca content of milled rice from white brown rice was also visibly higher than that from black brown rice. For microelements, significant difference was observed for Zn content between milled rice from red and white brown rice, or between milled rice from red and black brown rice. Some genotypes with abundant mineral nutrient in milled rice had been selected and could be used in rice nutrient breeding.  相似文献

为探明锥栗种仁中矿质元素含量特征规律,以30?种主要锥栗农家种种仁为试材,采用自动间断分析仪与原子吸收光谱法测定N、P、K、Ca、Mg、Fe、Mn、Zn和Cu?9?种矿质元素指标,运用相关性分析、因子分析和聚类分析对其矿质元素含量进行分析。结果表明,Kolmogorov-Smirnov检验表明9?种矿质元素含量数据服从正态分布,9?种矿质元素平均含量顺序为N(6?873.74?mg/kg)>K(4?402.32?mg/kg)>P(1?619.16?mg/kg)>Ca(471.18?mg/kg)>Mg(394.59?mg/kg)>Mn(115.80?mg/kg)>Fe(16.22?mg/kg)>Zn(8.68?mg/kg)>Cu(7.59?mg/kg),大量元素中N、K、P与Ca、Mg存在显著差异(P<0.05),微量元素中Mn与Fe、Zn、Cu差异显著(P<0.05),变异系数范围为8.29%~54.43%;相关性分析表明各元素之间存在着复杂的关联性;因子分析结果表明,N、P、Mn、K、Cu和Fe是锥栗的特征元素,提取的6?个公因子累计方差贡献率为90.572%,第1公因子方差贡献率为22.400%,主要综合了N、P和Mn?3?种元素的信息,第2公因子方差贡献率为15.572%,主要综合了K和Cu?2?种元素的信息,第3公因子方差贡献率为14.701%,与Fe有关,第4公因子方差贡献率为14.614%,与Mg有关,第5公因子方差贡献率为11.936%,与Ca有关,第6公因子方差贡献率为11.349%,与Zn有关,综合得分排名前5名依次为蔓榛、长芒仔、中尖嘴、材榛和小尖嘴;从元素含量角度进行聚类分析,30?种锥栗农家种可分为6?类。本研究结果可为进一步开展锥栗营养功能评价、锥栗育种亲本选择和锥栗食品开发等提供基本参考数据。  相似文献

目的:分析不同品种辣椒籽中的矿质元素含量,并进行聚类分析,评价其营养价值。方法:采用电感耦合等离子体发射光谱(inductively coupled plasma-atomic emission spectrometry,ICP-AES)法测定Zn、Cu、Fe、Mn、Ca、Mg、Na、K。结果:辣椒籽中富含多种矿质元素,常量元素K/Na、Mg/Na比值高,微量元素Fe含量最为丰富,Zn、Cu含量相对较少,Zn/Cu比值在2.01~1.36之间;从元素含量的角度进行聚类分析,6个辣椒籽品种可以分为两大类。结论:辣椒籽中矿质元素含量高,具有食品开发的价值。  相似文献

建立奇亚籽中K (钾)、Na (钠)、Ca (钙)、Mg (镁)、Fe (铁)、Mn (锰)、Zn (锌)、Cu (铜)、P (磷)、B (硼)、Pb (铅)、Cd (镉)、As (砷)、Cr (铬)、Al (铝)、Ni (镍)16种矿物质元素的方法。样品经微波消解,以电感耦合等离子发射光谱(ICP-OES)测定K、Na、Ca、Mg、Fe、Mn、Zn、Cu、P、B含量,电感耦合等离子质谱(ICP-MS)测定Pb、Cd、As、Cr、Al、Ni含量。结果表明,此方法的ICP-OES检出限范围在0.00850~0.10200 mg/L,定量限范围在0.0283~0.3400 mg/L;ICP-MS检出限范围在0.00471~0.11330 mg/L,定量限范围在0.0157~0.3777 mg/L。线性相关系数均为r>0.999,加标回收率为90.4%~99.8%,相对标准偏差为0~4.1%。同时用国家标准物质大米(GBW10045(GSB-1))和小麦(GBW10011(GSB-2))评价了方法的准确性,测定结果在标准值范围内。奇亚籽中含有丰富的P、K、Ca、Mg,其中P含量最高,为6860 μg/g,Ca含量为4085 μg/g,K含量为2798 μg/g,Mg含量为2515 μg/g;Fe、Zn、Al、Mn、Cu、Na、B含量(由高到低)在5~100 μg/g。同时检测出重金属危害元素Pb、Cd、Cr、Ni,其中Pb含量符合食品安全国家标准GB 2762-2017的限量要求,未能检测出As。该方法污染小、简便、高效、准确度高,适用于奇亚籽等植物类样品中多种化学元素的测定。  相似文献

为全面了解绿豆皮、红小豆皮和黑豆皮的18 种元素含量,充分开发利用豆皮资源,提高豆类加工产品
的附加值,用元素分析(elemental analyzer,EA)仪和电感耦合等离子体发射光谱(inductively coupled plasmaatomic
emission spectrometer,ICP-AES)仪测定了3 种豆皮的N、C、S、Ca、Mg、K、P、Na、B、Ba、Co、
Cr、Cu、Fe、Mn、Ni、Zn和Sr元素含量。结果表明,EA仪测定豆皮中N、C和S方法检出限为32~96 μg/g,回收
率为97%~115%,相对标准偏差为0.20%~2.63%(n=5);ICP-AES测定豆皮中Ca、Mg、K、P、Na、B、Ba、
Co、Cr、Cu、Fe、Mn、Ni、Zn和Sr元素方法检出限为0.02~152 μg/g,回收率为84%~118%,相对标准偏差为
0.44%~4.46%(n=5)。黄豆标准物N、Mg、P、B、Ba、Co、Cr、Mn、Ni、Zn和Sr元素测定值在推荐范围内,
S、Ca、K、Na、Cu和Fe元素测定值接近推荐值。分析方法快速、简便,达到了应用的要求。  相似文献

The concentrations of minerals (P, Na, K, Ca and Mg) and trace elements (Fe, Cu, Zn and Mn) were determined in 167 tomato samples belonging to five cultivars (Dorothy, Boludo, Dunkan, Dominique and Thomas) produced on the island of Tenerife. The contribution to the intake of minerals and trace elements was in general low, with special emphasis on the contributions of K and Mg. The cultivar, cultivation method, period of sampling and region of production in the island influenced the concentrations of minerals and trace elements of the tomatoes. Trace elements seemed more influenced by the cultivar than the minerals, and the cultivation method affected mineral contents more than trace element contents. The period of sampling had an important influence on the mineral and trace elements. Many correlations were observed between the minerals and trace elements studied. Applying discriminant analysis, the tomato samples tended to be classified according to the cultivation method, period of sampling and region of cultivation.  相似文献

Chestnuts like other foodstuffs may be characterized by their chemical composition. The chemical composition of ascorbic acid, total acidity, pH, starch, refraction index (°Brix), moisture, ashes, insoluble fibre, soluble fibre, total dietary fibre, total proteins, cations (Na, K, Ca, Fe, Cu, Zn, Mn, Mg) and phosphorous was determined in 19 local chestnut varieties from three areas of production in the island of Tenerife. Significant differences were found between the mean values of moisture, starch, total phenols contents, total soluble and non-soluble fibre, Ca, Cu, K, Mg and Zn, obtained according to the area of production. Distribution patterns of the samples were established for correlating the chemical composition of the chestnuts and varieties, using different chemometrics tools such as cluster analysis, principal component analysis, factor analysis and linear discriminant analysis (LDA). Initially, cluster analysis made it possible to establish a primary relationship between the variables. When applying stepwise LDA the chestnut samples were well classified within their area of production. Also, when the stepwise LDA was used on the chestnut samples from area of production 2, 100% of the chestnut samples were also correctly classified within their variety.  相似文献

Abstract The mineral composition of medlar fruit collected (June 15 - October 8) in Turkey at five stages of development was studied. In the fruit, 32 minerals were analyzed and 16 minerals (Al, Ba, Ca, Cu, Co, Fe, K, Li, Mg, Mn, Na, Ni, P, Sr, Ti and Zn) were present at detectable levels. The ripe medlar fruit was richest in potassium (7370 μg/g dry wt), calcium (1780 μg/g dry wt), phosphorus (1080 μg/g dry wt), magnesium (661 μg/g dry wt) and sodium (183 μg/g dry wt). During the fruit development, Al, Ba, Fe, Mn, P, Sr, and Zn were highest in August (unripe fruits) while the concentrations of K, Ca, Mg and Cu gradually decreased throughout development. The ripe medlar fruit is an important source of nutritionally needed minerals and trace elements, in particular Ca, Cu, Fe, K, Mg, Mn, Na and Zn, for human populations in southeastern Europe, Turkey and Iran.  相似文献

中国烟叶矿质营养及主要化学成分含量特征研究   总被引:67,自引:4,他引:63  
利用2002年抽样调查的220个烤烟样品,对我国烤烟中的氮、钾、磷、钙、镁、锰、铜、锌、硼、钠、铁、氯、烟碱、还原糖等14个指标的含量特征进行了分析。结果表明:1)除钙、钠、锌、硼、还原糖、烟碱外,其余指标在品种之间的差异极显著,但不同指标在品种之间的高低秩序不同。在样本数较多的K326、云烟85、云烟87、NC82、NC89中,K326的钾含量为1.79%,显著地高于云烟85、NC82、NC89,NC82、云烟87的氯含量分别为0.39%、0.32%,显著地高于K326、云烟85、NC89中的氯含量;2)氮、硼、烟碱含量从上部烟叶到下部烟叶显著地依次降低,而钾、铁、还原糖则从上部烟叶到下部烟叶显著地依次升高;3)烟碱含量地域之间的差异不明显,而其余指标在地域之间的差异极显著,但不同指标在品种之间的高低秩序不同。河南烟叶的钾含量显著地低于其他省份,贵州烟叶的氯离子含量显著地高于其他地方,湖南烟叶的还原糖含量显著地低于其他所有地方;4)我国烟叶氮、磷、钾、钙、镁、锰、氯、铜、锌、硼、钠、铁、烟碱、还原糖含量落在巴西烟叶范围之内的理论概率分别为0.525、0.598、0.485、0.338、0.462、0.839、0.449、0.384、0.275、0.586、0.621、0.586、0.739、0.684;还原糖、烟碱、钾、氯含量符合"国际型优质烟叶"质量标准的概   相似文献

The metal content of roasted coffee samples belonging to the arabica and robusta varieties and coffee blends has been analysed. Ba, Ca, Cu, Fe, K, Mg, Mn, Na, P, Sr, Zn have been determined by inductively coupled plasma atomic emission spectrometry. Principal component and cluster analysis have been applied to characterize the coffee varieties. P, Mn and Cu have been found to be the most discriminating variables. Partial least squares regression was applied to determine the relative content of each variety in the coffee blends. This method has been applied to determine the percentage of the robusta variety in some commercial roasted coffee samples.  相似文献

Two rice varieties, a short grain (Giza 175) and a long grain (Giza 181), were parboiled by soaking in water at 80—85 °C for 1.5 h, then dried in the microwave oven for 3, 5, 6 and 8 min. The effect of such parboiling treatment on the chemical composition and mineral content (Zn, Mn, Cu, Fe, Na, K, Ca, Mg and P) of rice bran were studied. The ash and protein contents of parboiled rice bran varieties decreased with microwave time. The oil extraction increased until 5 min, then decreased after 6 and 8 min microwave time, while acid value of the oils decreased gradually. Each of the mineral components of the brans exhibited different magnitudes of loss, but Mg loss was smaller.  相似文献

探讨产地、季节、品种对蛤蜊中金属营养元素含量的影响,解析蛤蜊中金属营养元素含量与养殖地淤泥和海水中相关元素含量间的关系。于2014年5月和9月在青岛市、南通市和大连市海岸采集花蛤、文蛤及养殖地淤泥和海水样品,测定样品中金属营养元素含量,分别进行方差分析和Pearson相关分析。结果显示,蛤蜊中Mg、K、Ca、Mn、Fe、Cu、Zn含量受产地的影响,Ca、Cu、Zn含量受季节的影响,Mg、Ca、Mn、Fe、Cu、Zn含量与品种有关;Na、Mg、Ca、Co、Cu含量与淤泥中相关元素的含量密切相关,而10 种金属营养元素含量与海水中相关元素含量相关性均不显著。本研究表明,蛤蜊中金属营养元素含量受产地、季节、品种的影响,其来源除淤泥、海水外,还有其他途径。  相似文献
