The main objective of this study was to determine the form in which beet and barley bran fibres reach the colon, and to evaluate the influence of endogeneous compounds on their patterns of fermentation. Raw fibres (RF), corresponding ileal effluents (IE) from pigs, and insoluble fibre residues (IR) extracted from IE, were fermented with human faecal inoculum for 24 h in an in vitro batch system. For beet fibre, rate but not extent of cell wall sugars degradation was increased (+34% at 6 h, P<0·05) after oroileal transit, due to a more porous structure. For barley bran, oroileal conditions degraded endosperm compounds such as β-glucans, leading to a lower extent of cell wall glucose fermentation compared with RF (-22% at 24 h, P<0·05). In the presence of endogeneous substances, degradation of beet fibre polysaccharides was delayed (P<0·05) at each incubation time but that of barley bran fibre was unaltered. Compared to RF, IR and IE significantly exhibited lower acetate production for beet fibre, and higher propionate and lower butyrate production for barley bran after 24 h. Four cows were used in a balanced 4×4 Latin square with 2 week experimental periods to investigate the effects of intraruminal infusions of volatile fatty acids and protein source on milk production and blood metabolites. The four treatments in a 2×2 factorial arrangement were isoenergetic intraruminal infusions of propionate (500 g day−1) or butyrate (417 g day−1) each given with isonitrogenous protein supplementation of fish meal (FM) or barley protein (BP). The cows were fed restrictively with 9 kg dry matter day−1 of formic acid treated grass silage and 8 kg day−1 of concentrate. Propionate infusion increased milk yield (24·9 vs 23·4 kg day−1; P<0·05), milk protein yield (832 vs 778 g day−1; P=0·05) and milk lactose content (44·7 vs 43·5 g kg−1; P<0·05) and yield (1113 vs 1023 g day−1; P<0·01), whereas butyrate infusion was associated with a higher milk fat content (44·7 vs 39·4 g kg−1; P<0·01) and yield (1033 vs 974 g day−1; P<0·01). FM tended (P<0·10) to increase milk yield, but had no significant effects on milk composition or milk component yields compared with BP. Butyrate infusion increased blood ketones, plasma non-esterified fatty acids and glycine relative to propionate infusion. The concentrations of ammonia N in rumen fluid and urea in plasma and milk were similar for both protein supplements. The profile of amino acids in plasma was similar for both protein supplements except for the higher concentrations of phenylalanine, proline and tyrosine with BP. The results show that protein utilisation can be improved by increasing the supply of propionate from rumen fermentation in cows given a grass silage-based diet. © 1998 SCI.  相似文献

The genetic and environmental variability for seed yield (kg ha-1), protein content (g kg-1 DM), lipid content (mg g-1 DM) and essential amino acid composition (g per 16 gN) of cowpea seeds using 15 cultivars grown in three locations (Kano (12°00′ N 8°31′ E), Mokwa (9°17′ N 5°04′ E) and Ago-Iwoye (6°58′ N 4°00′ E)) that differ markedly in climate was studied. The environmental effect accounted largely for the variability observed in yield (93%), protein (71%), lipid (100%), threonine (96%), cystine (80%) and arginine (81%) while the genotypic effect accounted largely for the variability observed in methionine (56%) and lysine (51%) contents. Correlation coefficients (pooled data) from the three locations indicated that yield was negatively correlated to protein content (r=-0·87, P<0·001) and positively correlated to lipid content (r=0·73, P<0·001). Protein content was negatively correlated to lipid content (r=-0·67, P<0·001) and positively correlated to threonine (r=0·66, P<0·01), cystine (r=0·69, P<0·001) and methionine (r=0·88, P<0·001) contents. Similarly, yield was positively correlated to threonine (r=0·22, 0·01<P<0·05), cystine (r=0·38, 0·001<P<0·01) and methionine (r=0·67, 0·001<P<0·01). Yield showed a strong negative correlation with protein content (r=-0·81) and a strong positive correlation with lipid content (r=0·97) at the environmental level. Cystine, methionine and to some extent, threonine were the limiting amino acids in the three environments. This research established the degree of variability for these characters in cowpea and indicated that concurrent selection for yield, lipid content, threonine and sulphur amino acids compositions is feasible. © 1997 SCI.  相似文献

Six colour-flowering (Scirocco, Alfred, Carola, Condor, Tina and Herz Freya) and six white-flowering (Caspar, Albatros, Gloria, Tyrol, Vasco and Cresta) cultivars of Vicia faba were studied. The crude protein contents of colour- and white-flowering cultivars were 267±13·6 and 283±18·8 g kg−1, respectively, which did not differ significantly at P<0·05. The levels of lipids, crude fibre, starch and ash varied from 14 to 22 g kg−1, 88 to 143 g kg−1, 407 to 485 g kg−1 and 32 to 42 g kg−1, respectively. The calculated organic matter digestibility (OMD) and metabolisable energy (ME) of the white-flowering cultivars were significantly higher (P<0·001) than those of the colour-flowering cultivars (OMD: 889·1±26·6 g kg−1 vs 797·5±17·1 g kg−1; ME: 13·97±0·49 vs 12·30±0·34 MJ kg−1). In all cultivars, sulphur amino acids were lower than adequate concentration when compared with recommended amino acid pattern of FAO/WHO/UNO reference protein for a 2–5-year-old child. The in vitro rumen nitrogen degradability of colour-flowering cultivars was significantly lower (P<0·01) compared to that of white-flowering cultivars (71·4±9·3% vs 88·0±11·1%). Amongst colour-flowering varieties, the contents of total phenols (TP), tannins (T) and condensed tannins (CT) were highest in Alfred (28·3, 21·0 and 35·4 g kg−1, respectively). The contents of TP and T were similar (about 15 and 10 g kg−1, respectively) in Carola, Tina and Herz Freya, and the CT were in the order: Condor>Herz Freya>Carola. The CT were not detected in white-flowering varieties, T were virtually absent and TP were extremely low (4·0–4·9 g kg−1). The activities of other antinutritional factors (white- and colour-flowering cultivars, respectively: trypsin inhibitor activity 3·05±0·34 and 1·85±0·09 mg trypsin inhibited g−1; lectin 27·2±9·4 and 27·1±5·1 mg ml−1 assay medium producing haemagglutination; phytate 15·0±2·7 and 16·6±2·3 g kg−1) were very low. A strong negative correlation (r=-0·92, P<0·001) between tannins and in vitro rumen protein degradability was observed which suggested that tannins have adverse effect on protein degradability. Similarly negative correlations between tannin levels and metabolisable energy (r=-0·89; P<0·001) and organic matter digestibility (r=-0·89; P<0·001) were observed. The correlation coefficient between trypsin inhibitor activity and tannins was negative and highly significant (r=-0·88, P<0·001), whereas between tannins and saponins it was significantly positive (r=0·96, P<0·001). ©1997 SCI  相似文献

Strong correlations were found between some sensory evaluation results and instrumentally (Instron, Model 4301) assessed quality parameters for Japanese white salted noodles made from 32 Australian wheats. The sensory texture parameter, softness, had a strong negative correlation (r=-0·74, P<0·001) with the instrumental texture parameter, cutting force peak area divided by time. Other sensory texture parameters, smoothness and elasticity, showed significant correlations with another instrumental parameter, compression force peak area divided by time (r=-0·58, P<0·001 and r=0·52, P<0·01 respectively). Brightness, yellowness and discolouration of both raw and cooked noodles were measured using a colorimeter (Minolta, Model CR310). Strong correlations were observed between yellowness and discolouration of raw noodles and CIELAB b* (r=-0·79, P<0·001) and L*a* (r=-0·63, P<0·001) values, respectively. Similar relationships were found for cooked noodles (r=-0·74, P<0·001 for yellowness and r=-0·53, P<0·01 for discolouration). Both flour pasting properties including the flour swelling test and mixograph dough properties showed strong correlations with instrumental measures of noodle texture. Protein and ash content significantly affected noodle colour. In an attempt to simplify objective noodle quality measurements instrumental texture tests were carried out on flour gels. Textural measurements of flour gels showed that sensory softness of cooked noodles was correlated with an instrumental parameter, cutting peak force divided by time (r=-0·46, P<0·01). However, in this study no strong correlations were found between the smoothness and elasticity of noodles and any parameters of compression force-time profiles derived from gels. Yellowness of flour gels measured by a colorimeter showed a significant correlation with that of cooked noodles (r=-0·68, P<0·001). © 1997 SCI.  相似文献

In a first experiment, ground alfalfa hay and rolled barley grain were incubated in buffered ruminal fluid with and without Yucca schidigera extract (YE, 0 or 10 mg ml−1). Gas and total VFA production from barley grain were increased (P < 0.05) by YE during the first 10 h of incubation; from alfalfa hay, these were reduced (P < 0.001) throughout the 24 h. Yucca extract reduced (P < 0.001) acetate/propionate ratios and ammonia concentrations, irrespective of substrate. In a second experiment, ground barley grain was incubated in a buffered suspension of mixed ruminal microbes obtained by low‐speed centrifugation of ruminal fluid. Steroidal saponins (SAP) isolated from YE were included at 0, 15, 75 or 225 µg ml−1. Microbial incorporation of 15N was increased (P < 0.05) by 15 µg SAP ml−1 but decreased (P < 0.05) by 225 µg SAP ml−1. Gas and VFA production peaked with 75 µg SAP ml−1 and were elevated (P < 0.05) relative to control in the presence of 75 µg SAP ml−1. Microbial protein synthesis was increased (P < 0.05) by SAP at 15 µg ml−1 and reduced (P < 0.05) by the higher concentrations. Acetate/propionate ratios were linearly reduced by SAP from 8 to 24 h incubation (P < 0.01). The effects of SAP on digestive microbes were less pronounced (P < 0.05) with barley grain digestion than with alfalfa. A YE × diet interaction was recorded. The effect of slice thickness and drying time on colour, viscosity, microbial load, moisture, crude fibre, vitamin C and ash contents of okra (Hibiscus esculentus) during solar drying was studied using three slice thicknesses (5·0 mm, 10·0 mm, 15·0 mm) obtained from a survey and five drying times (0, 24, 48, 72 and 96 h). The results showed that slice thickness had a significant effect (P<0·01) on moisture, crude fibre and ash contents but not on vitamin C content, viscosity, colour and microbial load. However, the effect of drying time was highly significant (P<0·01) on all the parameters determined. The combined effects of slice thickness and drying time were observed to be highly significant (P<0·05) on ash, crude fibre and moisture contents, viscosity and microbial load but had no significant effect (P<0·05) on colour and vitamin C content. There was a strong correlation between moisture content and ash (R=-0·926), crude fibre (R=-0·94), vitamin C contents (R=0·928) and viscosity (R=-0·963) in all samples during drying. The study showed that a slice thickness of 10·0 mm and a drying time of 48 h was suitable for the solar drying of okra. © 1997 SCI.  相似文献

The back-scatter of light (400–800 nm) from bovine m longissimus lumborum (n=47) was measured with a fibre-optic probe fitted with crossed polarisers to exclude Fresnel reflectance. Unlike normal fibre-optic spectra (which may be relatively flat), back-scatter was approximately proportional to wavelength, being low at 400 nm and high at 800 nm. The shape of the spectrum was modified by myoglobin absorbance, with a Soret minimum at 430 nm. Connective tissue fluorescence (365 nm excitation, 400–550 nm emission) was measured through a single optical fibre moving down the longitudinal axis of the muscle. Back-scatter at 430 nm was correlated positively with minimum fluorescence (r=0·73, P<0·001), the area under the fluorescence signal cm−1 (r=0·81, P<0·001) and fluorescence peaks cm−1 (r=0·46, P<0·005). Back-scatter at 800 nm was correlated weakly and negatively with minimum fluorescence (r=-0·28, P<0·05) and peaks cm−1 (r=-0·26, P<0·05). Thus, in the probe detection of connective tissue fluorescence in meat, errors caused by differences in myoglobin concentration may exceed those caused by differences in pH-related light scattering. © 1997 SCI.  相似文献

This study determined nitrogen degradability and digestibility of rumen undegradable nitrogen using mobile nylon bag (MNB) and pepsin/pancreatin in vitro technique (IV) of 40 browse species. Thirty Ethiopian highland sheep fitted with rumen cannulae were used in nitrogen (N) degradability studies. Six steers fitted with rumen cannulae were used in preparation of 16-h and 24-h ruminal undegraded residues and four steers fitted with distal abomasal cannulae were used in MNB technique. The browses varied widely in nitrogen solubility (15–468 g kg−1), potential degradability (223–976 g kg−1), rate of degradation (0·13–24% h−1) and effective degradability (135–821 g kg−1). The apparent N digestibility (ND) of the rumen undegraded residues differed significantly (P<0·05) among browse species. No significant difference (P>0·05) was observed in ND of 16-h and 24-h residues. The ND of the 16-h residue varied from -218 to 759 g kg−1 and 169 to 851 g kg−1 for MNB and IV methods, respectively. Browse species with high tannin contents such as Acacia hockii, A horrida, A melanoxylon, A persiciflora, A salicina, A saligna and Flemingia macrophylla had high rumen by-pass and a low ND, while Sesbania spp and A nilotica with low tannin contents underwent rapid and extensive dry matter and nitrogen degradation in the rumen. Acacia sieberiana, Chamaecytisus palmensis, Erythrina spp, Gliricidia sepium, Samanea saman and Enterolobium cyclocarpum had high proportions of protein escaping rumen degradation (BP ) and with a high proportion of the by-pass protein digested in the intestine, therefore these browses had a high potential as protein supplements. The ND measured with the MNB were significantly lower (P<0·001) than by the IV method. The correlation between MNB and IV was high and significant (R2=0·89, P<0·0001) as also indicated by the regression equation (SE in parentheses): MNB=-22·8 (4·55)+1·0 (0·08)IV (RSD=10·56, R2=0·79, n=40, P<0·001). The intercept of the linear relationship obtained was different from zero while the slope was not different from unity. Multiple regression analysis suggested that some of the unexplained variation could be accounted for by either nitrogen, acid detergent fibre, total phenolics or neutral detergent fibre bound tannin levels in browses. The IV method is accurate for estimating digestibility of ruminally undegradable N, and hence its use would considerably reduce the need for delicate surgery and the elaborate procedures involving the MNB technique. © 1998 SCI.  相似文献

Two silages were prepared from the first-cut sward of timothy-meadow fescue and wilted to a dry matter (DM) content of 300 g kg-1. One was ensiled with the addition of a formic-acid-based additive (4 litres formic acid (FA) per tonne) and the other with the addition of a bacterial inoculant (LAB) at a rate of 5×106 colony forming units g-1. Both silages were well preserved, but the extent of fermentation was greater in LAB-silage than in FA-silage as indicated by a lower concentration of water soluble carbohydrates (68 vs 177 g kg-1 DM) and a higher concentration of lactic acid (147 vs 32 g kg-1 DM). Four Ayrshire cows were used in a 4×4 Latin square experiment with 21-day periods to study the effects of silage fermentation and postruminal casein supplementation on silage intake, nutrient supply and milk production. The four treatments were FA-silage without casein (FA-0), LAB-silage without casein (LAB-0), FA-silage with casein (FA-C) and LAB-silage with casein (LAB-C). Both silages were given ad libitum with 8 kg day-1 of barley without or with 400 g day-1 of casein infused into the duodenum. Organic matter digestibility was lower (0·723 vs 0·753; P<0·01) for FA-silage than for LAB-silage. Cows offered FA-silage had a higher molar proportion of acetate and a lower proportion of propionate in ruminal fluid than cows offered LAB-silage. Microbial protein synthesis estimated from the output of purine derivatives in urine was greater (288 vs 260 g N day-1; P<0·05) for cows given FA-silage compared with LAB-silage. Feeding LAB-treated silage tended (P<0·10) to decrease silage DM intake compared with FA-treated silage (10·61 vs 11·77 kg DM day-1). Silage composition did not affect significantly milk yield or milk composition. Casein infusion increased milk yield (25·1 vs 27·1 kg day-1; P<0·05), milk protein content (32·4 vs 33·8 g kg-1; P<0·05) and protein yield (808 vs 905 g day-1; P<0·01). The effect of Saccharomyces cerevisiae yeast culture (YC, Yea-Sacc 1026) as a supplement to the high-roughage diet of buffalo calves on the rumen microbial populations, fermentation pattern and in sacco dry matter disappearance of dietary constituents was examined. A control group was fed a diet consisting of, on a dry matter basis, 2·12 kg bajra (Pennisetum typhoides) hay and 0·45 kg groundnut cake per day per calf, while the treatment group had the same diet plus 5 g YC. After feeding for 6 weeks, inclusion of YC was stopped and both groups were given the control diet for 2 weeks. At week 4 the pH in the rumen fluid (RF) was significantly higher (P<0·05) up to 6 h post-feeding in the treatment group compared with the control group. The concentrations of total, total viable and cellulolytic bacteria were increased by 41·0 (P<0·05), 33·5 and 57·4% (P<0·01), respectively, with YC supplement. The concentration of total volatile fatty acids (P<0·05), particularly at 4 h post-feeding (P<0·01) and acetate (P<0·01) and acetate to propionate ratio (P<0·05) were higher in the treatment compared with the control group. On YC supplementation, the concentration of NH3-N was decreased (P<0·05) while that of TCA-precipitable protein in RF was marginally but non-significantly increased. Withdrawal of YC from the diet reversed these effects and the rumen variables returned to values close to control levels after 2 weeks. The in sacco dry matter disappearance of dietary components was higher in the treatment compared with the control group, particularly during the first 24 h of incubation. © 1997 SCI.  相似文献

Increased demand for determinations of nitrogen (N), and hence crude protein (CP), has led to wider use of the Dumas method in place of the traditional Kjeldahl methods. Although Kjeldahl N (KN) and Dumas N (DN) represent different N fractions, published studies on infant formula, animal feed and meat products have indicated that DN could replace KN with little practical impact on the reliability of the N values obtained. This study was conducted to establish whether DN determination could replace that of KN in a broader range of foods for CP calculation. Statistical analysis was performed on in-house assayed KN and DN values together with published KN and DN values for selected food products. In the range 0·05–6·8% N, KN may be estimated from DN with the equation: KN=1·00(P<0·01)×DN-0·09(P=0·50) (n=101, R2=0·98, P-regression<0·01). Because N levels in individual groups of food did not span the entire range of N contents, KN: DN ratios were calculated for each food group. KN: DN ratios differed significantly (R2=0·25, P<0·01) from group to group. Ratios of 1·01 for dairy, 1·00 for oilseeds, 0·99 for feed, 0·98 for infant formulas, 0·95 for cereals, 0·94 for meats, 0·89 for vegetables, 0·80 for fish and 0·73 for fruits were valid for the estimation of KN and CP using DN data. CP was independently calculated as CP1=H×KN or CP2=H×KN: DN×DN, where H is the nitrogen to protein conversion factor for the food group. Mean differences between CP1 and CP2 values were 0% for dairy, oilseeds, feed, infant formulas and baby foods, cereals, meat and meat products, vegetables and vegetable products and fruit, and 1% for fish. These results suggest that DN may replace KN for the determination of N and CP in selected food groups when appropriate coefficients are used. © 1997 SCI.  相似文献

The use of different types of phenolic binding agents (PBA) in conjunction with the in vitro gas production technique for the assessment of phenolic related antinutritive factors in browse were compared. During a grazing trial by goats, three fractions, grazed leaves (GL), ungrazed leaves (UL) or stems of ungrazed leaves (US) of Robinia pseudoacacia, together with three harvests of leaves of Cistus incanus and a summer harvest of Fraxinus ornus or Carpinus duinensis were analysed for total extractable phenols (TEPH), total extractable tannins (TETa), condensed tannins (vanillin–HCl) (TECTa) and extractable and total proanthocyanidins (TEPAs and TOPAs). Gas production from the samples with or without adding insoluble polyvinylpolypyrrolidone (IPVP), soluble PVP or polyethylene glycol of different molecular weights was measured. The kinetics of gas production were determined using the equation p=a+b (1-ect). The effects of addition of the PBAs were assessed as percentage changes in the rate and volume of gas production or concentration of volatile fatty acids (VFA). Levels (mg g−1 DM) of TEPH varied from 4·9 to 100·4, TETa from 0·6 to 58·0, TECTa from 1·0 to 64·6, and TEPas or TOPAs from 5·7 to 283·0 and from 12·4 to 331·4. Except for PVP360 which depressed fermentation, addition of 200–500 mg of the other PBAs to rumen liquor/buffer or a tannin free hay, did not affect (P>0·05) fermentation. The highest increase in gas production was achieved with PEG4, PEG8 and PEG10 followed by PVP10, PVP40 and IPVP after 12–24 h incubation. The percentage increase in gas production as a result of adding the PEGs was best associated (r=0·83–0·96; P<0·01) with the higher concentrations of total VFAs after 96 h incubation and was also best related (r=0·89–0·91; P<0.01) to the levels of extractable condensed tannins (TECTa and TEPAs) in the browse. It was concluded that PEGs were more effective than PVPs in eliminating phenolic related antinutritive factors and would be preferred for use in conjunction with the gas technique for the assessment of phenolic related antinutritive factors in feeds.  相似文献

The flavanol composition and caffeine content of green tea leaf, black tea quality parameters of theaflavins, thearubigins, liquor brightness and total colour varied more among clones than with time of the year. In green leaf, either (-)epicatechin gallate or (-)epigallocatechin gallate was the dominant flavanol present. Regression analysis of tasters' preferences for black teas against green leaf chemical components showed positive and significant correlations for (-)epicatechin gallate (r = 0·498, P ⩽ 0·05 for taster A; r = 0·665, P ⩽ 0·01 for taster B, and r = 0·678, P ⩽ 0·01 for both tasters' overall ranking), (-)epigallocatechin gallate (r = 0·513, P ⩽ 0·05 for taster B; r = 0·532, P ⩽ 0·05 for both tasters' overall ranking and caffeine (r = 0·523, P ⩽ 0·05 for taster A; r = 0·657, P ⩽ 0·01 for taster B; and r = 0·686, P ⩽ 0·01 for both tasters' overall ranking). Similar regressions against black tea theaflavins, thearubigin content, liquor brightness and total colour were not significant. The results suggest that the green leaf chemical components, (-)epicatechin gallate, (-)epigallocatechin gallate and caffeine could be used as quality potential indicators during clonal selection and propagation. © 1997 SCI.  相似文献

Net protein ratio (NPR), predicted-protein efficiency ratio (P-PER), relative NPR (RNPR), and corrected RNPR (CRNPR) of thermally processed red kidney beans were estimated in rats and compared to in vitro protein digestibility-corrected amino acid score (AASIVDP), and computed-protein efficiency ratio (C-PER). Thermal processing had a significant effect on protein intake, NPR, P-PER and CRNPR values of beans. Changes in protein intake suggest that heat processing had an effect on the palatability of the beans. Home-cooked beans and commercially canned beans had higher NPR values than beans autoclaved at 128°C for 20 min, while beans autoclaved at 121°C for 10–90 min had intermediate values. High correlation coefficients between P-PER and C-PER, CRNPR and C-PER, and CRNPR and AASIVDP (r=0·990, 0·992 and 0·960, respectively, P<0·001) were observed.  相似文献

Chemical analysis of commercial oat brans (n=10) collected from five different countries showed wide variations in the contents of starch (40–61%), crude protein (9·6–21%), crude fat (8·2–12%), ash (2·0–4·1%), dietary fibre (10·7–19·4%) and mixed-linkage β-glucan (4·7–8·3%). A significant correlation (r=0·83; P<0·005) between the contents of total and extractable mixed-linkage β-glucan was found. Reproducible increases in viscosity were noted for all samples when the finely ground samples were dispersed in phosphate buffer and viscosity development was followed for 100 min. Addition of mixed-linkage β-glucanase greatly reduced the viscosity. Addition of amyloglucosidase, with no detectable mixed-linkage β-glucanase activity, increased viscosity, which could be related to an increased solubilisation of mixed-linkage β-glucan. Highly significant correlations (r>0·90) were found between the contents of both total and extractable mixed-linkage β-glucan and viscosity after dispersion. © 1998 SCI.  相似文献

Three experiments, the first with rats, the second with young pigs and the third with growing pigs, were carried out to compare the nutritional value of cv Lysimax, a newly developed high-lysine barley, to cv Lami, a conventional barley grown in Denmark. In the diets for rats and growing pigs the barleys were the sole protein source while in the experiment with young pigs the barleys made up to 649 g kg-1 of the respective diets. The lysine content of cv Lysimax was 52·6% higher than that of cv Lami; 4·99 g 16 g N-1 compared to 3·27 g 16 g N-1. The contents of threonine, tryptophane, methionine and cystine of cv Lysimax were 3·80, 1·41, 1·80 and 2·27 g 16 g N-1, respectively; being 18·4, 8·5, 9·8 and 5·1% higher than in cv Lami. Conversely, the contents of glutamic acid and proline in cv Lysimax were 15·79 and 7·40 g 16 g N-1, respectively, being 36·1 and 40·0% lower than in cv Lami. In the experiment with rats, the higher lysine content and the lower content of glutamic acid and proline in cv Lysimax resulted in a 34·8% increase (P<0·05) in biological value (BV); 0·867 for cv Lysimax compared to 0·643 for cv Lami. True protein digestibilities and energy digestibilities in rats fed cv Lysimax were 0·019 and 0·010 units lower (P<0·05) than for cv Lami. For young pigs the increased lysine content and the lower content of glutamic acid and proline of cv Lysimax increased (P<0·05) nitrogen (N) retention from 10·9 to 12·4 g day-1, respectively, and increased (P<0·05) apparent BV from 0·690 to 0·734, respectively. The digestibility of energy was 0·030 units lower (P<0·05) for the diets with cv Lysimax than for the diets with cv Lami. Likewise, with growing pigs the increased lysine content and the lower content of glutamic acid and proline increased (P<0·05) N retention from 6·4 to 10·8 g day-1 and apparent BV from 0·271 to 0·495, respectively. The apparent ileal digestibilities of lysine, threonine, tryptophane, methionine and cystine were similar (P>0·05) between the barleys. It is concluded that the development of high-lysine barley varieties could be beneficial for meeting the requirements of essential amino acids for monogastrics. Moreover, N excretion into the environment was substantially reduced due a reduction in the prolamine fraction which is rich in glutamic acid and proline. © 1997 SCI.  相似文献

Sensory and physical characteristics of miondo made with three types of cassava flour (CF) (CF1, shredding of roots and drying; CF2, shredding of roots, 24-h natural fermentation, and drying; CF3, 3-day steeping of roots and drying) containing 0, 5 and 10% of added soybean flour (SF) were evaluated after 0, 1, 2, 3 and 4 h of resting (RT) before cooking to determine the optimum CF and SF levels and RT. Results indicated that miondo made with CF3 were more palatable (P<0·05) and firmer (P<0·05) than those of CF1 and CF2. Upon resting, there was no significant changes in sensory characteristics of cooked miondo, although the instrumental firmness (hardness) of miondo (made with CF3) increased (P<0·05). Upon addition of SF, products became less palatable, more yellow in colour, softer, less sticky; weight loss of raw miondo decreased; water retention ratio (WRR), crude protein contents, and total ashes of CF3 increased. WRR and protein content of CF3–SF blends correlated negatively with hardness of miondo (r=-0·90 and -0·99, respectively). Fifteen cowpea cultivars grown in three locations (Kano (12°00′N 8°31′E), Mokwa (9°17′N 5°04′E) and Ago-Iwoye (6°58′N 4°00′)) between 1993 and 1994 were analysed for genotype, environmental and genotype×environment variability for starch (g kg−1), fatty acids (% of total oil) and mineral nutrients (g kg−1) composition. There were significant environmental as well as genetic effects on these nutritional qualities. The environmental effect accounted largely for the variability observed in starch (60%), palmitic acid (80%), arachidic acid (100%), potassium (100%), phosphorus (81%) and manganese (86%), while the genotypic effect accounted largely for the variability observed in linoleic acid (50%), linolenic acid (50%) and copper (68%) contents. Correlation coefficient (pooled data) from the three locations indicated that starch was positively correlated to palmitic acid (r = 0·21, 0·01< P < 0·05), potassium (r = 0·80, P < 0·001) and phosphorus (r = 0·65, P < 0·001), but negatively correlated to oleic (r = −0·23, 0·01< P < 0·05), linoleic (r = −0·67, P < 0·001) and linolenic acid (r = −0·74, P < 0·001) contents. Starch showed a strong positive correlation with magnesium content (r = 0·75) and a strong negative correlation with copper (r = −0·73) and iron (r = −0·62) at the genetic level. Disappearance of cis-18:1(n-9) from ruminal in vitro cultures supplemented with either oleic acid or oleamide was measured over 48 h to determine if the amide resisted biohydrogenation. Oleamide added to the substrate maintained higher concentrations of cis-18: 1(n-9) in the microbial cultures at 24 and 48 h of incubation compared to substrates with added oleic acid. Disappearance rates of cis-18: 1(n-9) from the cultures, which were calculated as a measure of biohydrogenation, were 0·064 and 0·025 h−1 for the oleic acid and oleamide supplements, respectively. Four sheep were fed four diets (control, 42 g kg−1 oleic acid, 23 g kg−1 oleamide, and 45 g kg−1 oleamide) in a 4×4 Latin square to determine how the amide affected fatty acid digestibility. Total tract digestibilities of protein and fibre were not affected (P>0·05) by either oleic acid or oleamide compared to the control diet. Fatty acid and energy digestibilities were not changed (P>0·05) by oleic acid, but were increased (P<0·05) when oleamide was added to the sheep diets at 45 g kg−1.
