人体摄入过多的生物胺时会出现许多不良反应,本实验对乳杆菌(米酒乳杆菌和戊糖乳杆菌)和片球菌(戊糖片球菌和小片球菌)在休闲发酵色拉米中生物胺的生成量进行了测定与分析。结果表明:供试乳杆菌和片球菌均能产生不等量的组胺、尸胺、腐胺、酪胺、亚精胺和精胺,但都不产生色胺,产品中的生物胺生成量表现出明显的菌株效应。采用复配菌种(片球菌+葡萄球菌)发酵可以明显降低香肠中组胺、尸胺、腐胺和酪胺以及总生物胺的含量。  相似文献

以植物乳杆菌、戊糖片球菌和葡萄球菌作为发酵剂接种至川味香肠,采用高效液相色谱法测定川味香肠发酵成熟过程中生物胺含量的变化。结果表明:成熟结束时,除苯乙胺外,A组(接种组)中的色胺、腐胺、尸胺、组胺、酪胺和亚精胺的含量显著低于B组(自然发酵组)(P0.01),说明混合发酵剂能显著抑制川味香肠发酵成熟过程中生物胺的形成(P0.01)。A组香肠在发酵成熟过程中除酪胺含量最高达到103.05 mg/kg外,其余生物胺含量均低于100 mg/kg;B组香肠在发酵成熟过程中腐胺、尸胺、组胺和酪胺含量超过100 mg/kg,因此接种混合发酵剂可以更好地保障川味香肠的安全性。  相似文献

采用高效液相色谱法对传统自然发酵四川香肠加工贮藏过程中生物胺(色胺、苯乙胺、腐胺、尸胺、组胺、酪胺和亚精胺)含量变化进行测定。结果表明:传统自然发酵四川香肠原料肉中只检测出了色胺、苯乙胺和亚精胺,贮藏120天检测出了7种生物胺,除亚精胺外,6种生物胺(色胺、苯乙胺、腐胺、尸胺、组胺和酪胺)的含量在加工过程中均显著增加(P0.01)。传统自然发酵四川香肠中以酪胺、组胺、尸胺和腐胺为主,含量分别达到153.06、127.90、132.46和92.83 mg/kg,4种生物胺占生物胺总量的89.66%。传统自然发酵四川香肠中生物胺(色胺、苯乙胺、组胺和酪胺)含量均低于20 mg/100 g。生物胺总量在加工贮藏过程中变化显著(P0.01),总量低于1 000 mg/kg。  相似文献

探讨了不同酿酒工艺对葡萄酒中生物胺(组胺、苯乙胺、酪胺、色胺、腐胺、尸胺、精胺和亚精胺)含量的影响。结果显示,葡萄酒酿造过程中生物胺主要在酒精发酵和苹果酸-乳酸发酵过程产生。酒精发酵过程生成量较少,主要产生腐胺和精胺,果胶酶的使用、酵母接种量、发酵温度等因素可以调节酒精发酵过程生物胺的生成量;乳酸菌是葡萄酒生物胺最主要来源,在苹果酸-乳酸发酵过程中会产生大量的组胺和色胺。  相似文献

本文采用纳豆芽孢杆菌和戊糖片球菌组成的混合发酵剂对草鱼鱼糜进行发酵,建立了发酵鱼制品中六种生物胺(色胺、腐胺、尸胺、组胺、酪胺、亚精胺)的高效液相色谱分析方法,研究了鱼糜发酵过程中生物胺含量的变化以及微生物数量的变化。结果发现,在30 min内各种生物胺得到很好的分离,且线性关系良好(R20.999),回收率在97.35%~103.00%,精密度、重现性RSD均小于10%。添加混合发酵剂可以明显抑制金黄色葡萄球菌、假单胞菌和大肠杆菌等杂菌的生长,降低发酵过程中腐胺、尸胺、组胺和酪胺含量的积累;利用纳豆芽孢杆菌,戊糖片球菌组成的混合发酵剂以及一系列负控脱羧酶活动能有效抑制鱼糜发酵过程中生物胺的形成,抑制腐败菌和致病菌的生长,提高鱼糜发酵食品的品质。  相似文献

该研究以从新疆熏马肠中筛选出来的6株产生物胺氧化酶菌株(鼠李糖乳杆菌、枯草芽孢杆、腐生葡萄球菌、木糖葡萄球菌、戊糖片球菌、植物乳杆菌)作为发酵剂加入熏马肠中,采用PCR-DGGE技术监测菌落动态变化,高效液相色谱法检测熏马肠中生物胺(色胺、腐胺、苯乙胺、组胺、酪胺、尸胺、精胺、亚精胺)含量变化。结果表明,在熏马肠成熟过程中发酵剂对生物胺有一定的抑制作用。其中以腐生葡萄球菌对色胺、腐生葡萄球菌对苯乙胺、木糖葡萄球菌对尸胺、鼠李糖乳杆菌对腐胺、腐生葡萄球菌对组胺和枯草芽孢杆菌对酪胺的抑制作用最为显著,减少程度分别为45.49%、57.54%、40.75%、51.03%、49.28%、64.33%。本研究为熏马肠以及其他发酵肉制品的提高安全性奠定了基础。  相似文献

本文采用RP-HPLC法测定了发酵香肠中的生物胺(苯乙胺、腐胺、尸胺、组胺、酪胺、亚精胺、精胺)的含量。样品经0.4mol/L高氯酸溶液提取,丹磺酰氯衍生,流动相为乙腈和水,采用梯度洗脱,流速为1mL/min,紫外检测波长为254nm。该方法检测限为:腐胺、尸胺、亚精胺、酪胺和精胺为0.1μg/mL,组胺0.5μg/mL,苯乙胺0.05μg/mL。回收率分别为苯乙胺86.71%、腐胺88.88%、尸胺94.55%、组胺87.57%、酪胺83.67%、亚精胺88.55%、精胺94.91%。结果表明发酵香肠中生物胺的种类及含量因香肠的品种而异,7种生物胺平均总量为13.40mg/100g,变异范围为7.83~19.13mg/100g。本法简便、快速、灵敏、可靠。  相似文献

以传统中式香肠成熟过程中生物胺含量的变化为研究对象,重点介绍了色胺、腐胺、尸胺、组胺、酪胺的变化。在香肠加工过程中添加发酵剂和复合植物提取物来控制香肠中生物胺的积累,利用高效液相色谱仪检测成熟过程中生物胺的变化。结果表明,添加发酵剂可有效地抑制色胺、腐胺、尸胺、酪胺的生成;复合植物提取物只是在抑制酪胺含量的增加上有显著效果;同时加入发酵剂和复合植物提取物对色胺、尸胺、组胺和酪胺的抑制效果更显著,特别是组胺,在生产结束时含量为0。发酵剂和复合植物提取物对精胺和亚精胺基本没有影响。  相似文献

接种混合发酵剂并在控温控湿条件下生产低酸度川味香肠,对加工过程中生物胺(色胺、苯乙胺、腐胺、尸胺、组胺、酪胺和亚精胺)含量变化进行研究。结果表明:干燥结束时,低酸度川味香肠中除亚精胺以外,其他生物胺含量均低于人工控温控湿不接种组(B组)、自然条件接种组(C组)、自然条件不接种组(D组),其中色胺、苯乙胺、腐胺、组胺和酪胺的含量均显著低于未接种组(P0.01),说明混合发酵剂在适宜的温湿度条件下能明显抑制低酸度川味香肠中色胺、苯乙胺、腐胺、组胺和酪胺积累(P0.01);混合发酵剂对低酸度川味香肠中尸胺的抑制作用不显著(P0.05)。  相似文献

以四川省10 区域自然发酵香肠及人工接种发酵剂的牦牛肉香肠共21 个样品为研究对象,测定发酵香肠中的生物胺含量。结果发现,21 个发酵香肠样品中均检测到酪胺、亚精胺、精胺、尸胺、腐胺、色胺及组胺,β-苯乙胺均未检出;生物胺总量在57.34~411.12 mg/kg,除采自凉山州西昌的自然发酵牦牛肉香肠和广安的自然发酵猪肉香肠中酪胺含量超过了美国食品及药品管理局(Food and Drug Administration,FDA)规定标准(酪胺含量≤100 mg/kg),其余均不存在生物胺安全问题。  相似文献

The biogenic amine content of beers available in Turkey, both domestic production and imported products, was investigated. A total of 17 domestic and 13 imported beers were evaluated in terms of 8 different biogenic amines (histamine, tyramine, spermine, spermidine, 2‐phenylethylamine, putrescine, tryptamine and cadaverine). HPLC methodology with pre‐column derivatization and photodiode array detection after derivatization with dansyl chloride was used for quantification. In addition, the evolution of important amines such as histamine, tyramine, putrescine and cadaverine were investigated during different storage conditions by response surface methodology. The results indicated that both storage temperature and storage time were important factors affecting biogenic amine content. Histamine and putrescine increased during storage, but then decreased after reaching a maximum level after six weeks. With the biogenic amines tyramine and cadaverine, the amounts increased during the entire storage period. At higher storage temperatures, the formation of biogenic amines increased.  相似文献

本研究基于高效液相色谱(HPLC)技术,测定了不同发酵时长(1~96个月)郫县豆瓣酱中色胺、β-苯乙胺、腐胺、尸胺、组胺、酪胺、亚精胺和精胺8种生物胺的含量。结果显示,HPLC分析中,8种生物胺的检出限在0.17~0.35 mg/L之间,定量限在0.55~0.92 mg/L之间,各生物胺标品在1~60 mg/L的质量浓度范围内线性关系良好,可被准确定量;各生物胺回收率在73.10%~104.13%之间,说明本方法具有较高的重复性和灵敏度。腐胺、尸胺、酪胺和组胺是郫县豆瓣酱中的主要生物胺;随着发酵时间的延长,腐胺含量快速上升,尸胺含量在发酵前54个月迅速上升,之后明显下降,酪胺和组胺在发酵54个月后含量有所增加;其他生物胺含量较低,且发酵期间变化不明显;郫县豆瓣酱中总生物胺含量随发酵时间的延长不断积累,从(37.86±6.69) mg/kg增加到(155.09±8.53) mg/kg,其含量在发酵前54个月快速上升,之后趋于稳定。目前食品中的多数生物胺尚没有限量标准,但参考现有的毒理学数据来看,本研究中郫县豆瓣酱的生物胺含量水平相对安全。  相似文献

Biogenic amines in foods may pose a public health problem. Therefore, histamine, tyramine, putrescine, cadaverine, spermine, and spermidine concentrations were measured in selected food items commonly consumed in Egypt. Foods examined were dairy products (blue cheese and Mesh cheese), meats (fermented and smoked cooked sausage), and fish (smoked and salted fermented fish [Feseekh], salted sardines, and anchovies). Egyptian fermented sausage had the highest concentration of total biogenic amines (2,482 mg/kg), followed by Mesh cheese (2,118 mg/kg) and blue cheese (2,084 mg/kg). The lowest concentration was found in smoked cooked sausage (111 mg/kg). Histamine was found at a high level (521 mg/kg) in Feseekh, and tyramine was highest (2,010 mg/kg) in blue cheese. These results indicate that some traditional Egyptian foods may pose a health risk due to the concentration of biogenic amines, especially histamine.  相似文献

The aim of this study is to explore production of biogenic amines (histamine, tyramine, putrescine, cadaverine, agmatine, spermine and spermidine) by 88 Gram-negative bacteria isolated from poultry skin (41 isolates of family Enterobacteriaceae, 21 isolates of genus Aeromonas, 16 isolates of genus Pseudomonas, and 10 isolates of other Gram-negative rods). Ion-exchange chromatography was employed to analyse the above mentioned amines. Enterobacteria were found to be the largest producers of amines with proved presence of tyramine, agmatine, putrescine, and cadaverine in cultivation broth after incubation of bacteria. Putrescine and cadaverine were the most abundant products. Presence of at least two biogenic amines, i.e. mainly concurrent presence of putrescine and cadaverine, was revealed in 19 enterobacteria strains. Eleven isolates classified into Aeromonas genus produced putrescine and five of them also formed cadaverine. The other observed biogenic amines (histamine, spermine and spermidine) were not found among tested isolates. Production of biogenic amines by any Pseudomonas family isolates was not proved.  相似文献

Twenty Brochothrix thermosphacta strains tested for biogenic amines (BAs) production, formed histamine (6.6-16.2 mg/kg) and tyramine (18.7-35.4 mg/kg) but neither putrescine nor cadaverine. Six of the twenty strains were also investigated in respect of their influence on the synthesis of BAs by Escherichia coli, Pseudomonas sp., Proteus mirabilis and Lactobacillus sakei. In pure culture Escherichia coli produced all of the studied amines (histamine, tyramine, putrescine and cadaverine) with a total concentration of 167.7 mg/kg, P. mirabilis produced a total of 56.7 mg/kg histamine, tyramine and cadaverine, while Lactobacillus sakei and Pseudomonas sp. produced histamine and tyramine, totaling 37.9 and 35.2 mg/kg respectively. All B. thermosphacta promoted cadaverine production by Escherichia coli which increased by 12-68%, and some of them contributed to the appearance of this amine among the metabolites of Pseudomonas. The presence of B. thermosphacta decreased the potential ability of P. mirabilis to produce BAs.  相似文献

以五花肉为原料,腌制时添加不同含量(100、300、500 mg/kg)的姜辣素进行风干成熟,测定样品理化指标、微生物及生物胺含量变化情况,研究姜辣素对培根风干成熟过程中微生物及生物胺形成的抑制效应。结果表明:与对照组相比,姜辣素能显著抑制菌落总数和肠杆菌(P<0.05);在风干培根样品中共检测到腐胺、尸胺、组胺、酪胺、精胺5 种生物胺;生物胺总量随着风干时间的延长呈显著增加趋势(P<0.05),100、300、500 mg/kg处理组与对照组总生物胺含量存在显著性差异(P<0.05)。300 mg/kg处理组总生物胺含量最低,为94.13 mg/kg,相对于对照组降低了34.56%,且此时腐胺、尸胺、酪胺、组胺和精胺含量也得到了很好的抑制,相对于对照组分别下降了26.60%、40.59%、37.08%、72.19%和23.59%。添加姜辣素能显著降低样品中挥发性盐基氮含量(P<0.05),对于提高培根的品质及安全性具有较好的效果。  相似文献

为了揭示我国商业腐乳中生物胺存在形式和水平,采用丹磺酰氯柱前衍生结合高效液相色谱法(HPLC)对我国市售的20个品牌白方腐乳和20个品牌红方腐乳中的生物胺含量进行了分析。结果表明,我国市售的腐乳中存在的主要生物胺为酪胺、组胺、腐胺、色胺、β-苯乙胺和尸胺,其平均含量分别为73.7 mg/kg、43.7 mg/kg、38.5 mg/kg、27.7 mg/kg、5.4 mg/kg和5.4 mg/kg;每种生物胺在白方腐乳中的含量均显著高于红方腐乳(P<0.05),前者的酪胺、组胺、腐胺、色胺、β-苯乙胺和尸胺的平均含量分别为后者的1.6、1.9、3.4、3.3、2.3和3.0倍;且每种生物胺的水平在同一类型不同品牌腐乳之间均呈现高度差异化。  相似文献

A survey of biogenic amine content of traditional Chinese fermented foods (douchi, sufu, fermented sausage, yulu, and shrimp paste) was carried out. Eight major biogenic amines including putrescine, cadaverine, histamine, phenylethylamine, tyramine, spermine, spermidine and tryptamine were separated by reversed-phase HPLC-DAD on Inertsil ODS-SP column after pre-column derivatisation with dansyl chloride. The results showed that spermine (1.65–3.96 mg 100 g?1), putrescine (0.20–10.89 mg 100 g?1), cadaverine (3.60–12.14 mg 100 g?1), and histamine (0.57–20.24 mg 100 g?1) were the most represented amines. All amines were detected in yulu, while sufu showed a much higher content of most amines. Shrimp paste showed the lowest level of total biogenic amines. Moreover, the composition and content of eight biogenic amines in the selected samples varied among different food types, origins and batches. Although the average content for each amine is within the range that may elicit direct adverse reactions, consumers should be aware of the potential synergistic effect among different amines and limit their consumption at each meal.  相似文献
