The selection of Starmerella bacillaris strains to be used with Saccharomyces cerevisiae as mixed cultures has been recently suggested in order to produce wines containing lower ethanol and higher glycerol concentrations and to promote fructose degradation due to their fructophilic character. However, studies about effects of such mixed starter cultures on phenolic compounds, which are responsible for the colour and health-enhancing properties in red wines, are currently lacking. Therefore, in this work, the influence of sequential inoculated fermentation (SIF) with Starm. bacillaris and S. cerevisiae on phenolic content of monovarietal Sangiovese wine was evaluated by fermentations at laboratory scale. Axenic fermentations (AXFs) with S. cerevisiae were performed as control. S. cerevisiae attained higher cell densities in AXF compared with SIF. The experimental wines obtained by SIF showed significant lower ethanol and higher glycerol concentrations, whereas no significant difference was detected in colour intensity. The total phenol index reached significantly lower values in SIF. Furthermore, the wines produced by SIF contained higher concentrations of vitisin A that has a greater colour stability than the anthocyanin monomer. Finally, a lower content of both free anthocyanins and flavan-3-ols, key compounds for wine quality possessing also health-enhancing properties, was found in wines obtained by SIF. On the contrary, no significant difference was detected on flavonol concentration between SIF and AXF. This study highlighted that the use of sequential inoculum of Starm. bacillaris and S. cerevisiae can contribute to increasing the colour stability of red wines, even if at the expense of compounds with health properties.  相似文献

Red wine has been reported to exert beneficial effects in preventing cardiovascular diseases probably due to their polyphenols constituents. The vasorelaxant capacity and phenolic composition of four monovarietal young red wines Merlot, Tempranillo, Garnacha and Cabernet-Sauvignon obtained from grapes from 2004 vintage, cultivated under the same climatic and agricultural conditions, wine-making technology and storage conditions, were determined using vascular reactivity assay in rat aortic and high-performance liquid chromatography, respectively. Primary cultures of vascular smooth muscle cells from Wistar rats were also used to evaluate their survival prevention activity as well. Every studied wine present vasorelaxation effect, but the higher value corresponds to the analyzed Merlot wine, especially rich in phenolic compounds, mainly catechins and oligomeric proanthocyanidins and anthocyanin glycosides. This study further demonstrated previous investigations about the phenolic composition of wines relation with their vasorelaxation activity.  相似文献

The effect of Graciano (GRA) (Spanish valuable variety of limited production) vs. Cabernet Sauvignon (CS) (world wide known French variety) wines on the anthocyanin, pyranoanthocyanin and non-anthocyanin phenolic composition of wines from Tempranillo (TEM-base wine) (largely cultivated Spanish variety) was studied in wine blends prepared with 25% and 10% (v/v) of each modifier after 4, 6, 9, 16.5 and 23 months of ageing in the bottle. Blending mainly resulted in a higher concentration of peonidin anthocyanins for the TEM-GRA blends, of acetyl-glucoside anthocyanins and anthocyanin-pyruvic acid adducts for the TEM-CS blends, and of flavanols for the blends with both GRA and CS varieties, giving rise to wines with a more balanced anthocyanin/flavanol ratio. Blending also enhanced the changes expected to occur in the phenolic compounds during ageing in the bottle. Particularly, anthocyanins and flavanols in the blends disappeared faster than in the base wine, and this was more pronounced for the 75:25 than for the 90:10 blends. These effects were similar for both modifier wines, independent of the specific changes produced in the anthocyanin profile of the base wine, but coincided with the similar optimization of the anthocyanin/flavanol ratio provided by both Graciano and Cabernet Sauvignon wines.  相似文献

Various analytical methods based on the HPLC-DAD technique were used to determine 38 phenolic compounds in red wines. While anthocyanins and hydroxycinnamic acids were determined by direct injection of wine samples, hydroxybenzoic acids, catechins, procyanidins and flavonols required an analytical pretreatment involving liquid–liquid partitioning with ethyl ether followed by solid-phase extraction on C18 mini-columns. The proposed analytical methods were used to establish the phenol composition of Mencía and Brancellao, two varietal young red wines, and its influence on colour stability during storage in bottles for one year. At the end of malolactic fermentation, Mencía wine was found to contain much greater amounts of anthocyan pigments than was Brancellao wine. This resulted in a higher colour density but a weaker hue in Mencía wine than in Brancellao wine. Phenolic compounds evolved similarly in both wines during storage; changes in such compounds involved a decrease in the levels of monomeric anthocyanins, phenolic acids, epicatechin and flavonols, and an increase in those of procyanidins. The absence of a relationship between the changes in colour density and monomeric anthocyanins in both wines suggests that copigmentation and polymerization with other phenolic compounds (viz. phenolic acids, catechins and/or flavonols) prevail over degradation of the pigments.  相似文献

The quality of red wines is given by phenolic compounds and anthocyanins and is associated with colour, taste and therapeutic effects on human health. This work aims to provide a detailed profile of phenolic compounds and anthocyanins that are found in five red wine samples from Dealu Mare-Valea Calugareasca region. The phenolic and anthocyanin profiles of the red wine samples were determined by high-performance liquid chromatography-photodiode array-mass spectrometry and matrix-assisted laser desorption/ionisation–time of flight, respectively. The results obtained showed that Feteasca Neagra had the highest content of phenolic compounds followed by Pinot Noir while the preponderant compound was gallic acid. Amongst anthocyanins, malvidin was found to be the major compound and the highest anthocyanin content was found also for Feteasca Neagra wine. A simple high-performance liquid chromatography-photodiode array-mass spectrometry method was developed, optimised and applied for the quantification of phenolic compounds in red wine samples from Dealu Mare-Valea Calugareasca region. In the same time, a rapid matrix-assisted laser desorption/ionisation–time of flight method that does not need sample preparation was applied for the identification of anthocyanins. Moreover, the phenolic and anthocyanin composition of red wines from Dealu Mare-Valea Calugareasca region is reported for the first time. The phenolic and anthocyanin profile determination will be beneficial for the Romanian winemakers to produce high-quality red wines.  相似文献

Red wine was made from the same batch of Cabernet Sauvignon grapes but with two different yeasts, Saccharomyces cerevisiae (SC) or Saccharomyces bayanus (SB). The colour properties and pigment profiles of SC and SB wines were compared at 8 days and 387 days after yeast inoculation. Grape anthocyanin concentration was found to be lower in SB wines than in SC wines at day 8 and 387, but SB wine exhibited greater wine colour density, a* and b*. The anthocyanin concentration did not correlate with wine colour density. The levels of pigmented polymers and SO2 non-bleachable pigments were found to be higher in SB wine at day 387, demonstrating that the formation of stable pyranoanthocyanins and pigmented polymers was enhanced by SB yeast. Electrospray mass spectrometry was used for the compositional analysis of pyranoanthocyanins, and direct and ethyl-bridged linked condensation dimers of malvidin 3- O -glucoside (MvG) with flavanols (catechin or epicatechin). The data demonstrated that the formation of acetaldehyde-mediated pigments was enhanced by the use of the SB yeast. The compositional analysis suggested that the differences in colour properties and pigment profiles of SC and SB wines were largely due to the greater production of acetaldehyde-mediated pigments by the use of SB yeast.  相似文献

Phenolic compounds from red wines exert a strong influence on wine quality. Abscisic acid (ABA) is essential for the physiological and biochemical function of plants, but few investigators have thoroughly researched its effects on phenolic compounds in dyer grape varieties. The effects of exogenous ABA treatment on the phenolic composition and individual anthocyanin and non-anthocyanin phenolic contents of Yan 73 and Cabernet Sauvignon wines from the ABA-treated grapes, including anthocyanins, flavan-3-ols, flavonols, phenolic acids, and stilbenes were compared. The phenolic compounds in the Yan 73 wine were different from those in the Cabernet Sauvignon wine. The phenolic content (anthocyanins and non-anthocyanins) of the Yan 73 wine was significantly higher than that of the Cabernet Sauvignon wine. The concentrations of the individual phenolic compounds were enhanced by the ABA treatment for the two different wine varieties. The effects on the compositions varied, a similar trend was observed for the ratios of Cy-derivative and Dp-derivative pigments from the two wine varieties, and all non-acylated pigments were enhanced. The stilbene content was enhanced, the ratios of flavan-3-ol dimers and dimer-glucosides were reduced, and the effects on the composition of other compounds varied between the two grape varieties.  相似文献

Thirty commercially available Italian carbonic macerated young red wines, have been analysed by HPLC–DAD–MS with the aim to characterise their pigment composition and find possible correlations with the colour features evaluated by means of spectrophotometric measurements. The composition in anthocyanin monoglucosides, acetates, p-coumarates as well as that in pyranoanthocyanins and direct and ethyl-bridged adducts with flavanols, was studied. Because of the peculiar maceration process, carbonic macerated wines demonstrated to be qualitatively rich in pyranoanthocyanins and pigment adducts. A number of ethyl-bridged anthocyanin isomers was found, together with significant contents of vitisin A and vitisin B (up to 15.5 mg/L as a sum). Malvidin-3-glc-4-vinylphenol was the main pyranoanthocyanin-vinylphenol adduct (up to 1.10 mg/L). The colour features of the wines were broadly distributed as a consequence of the percentage of carbonic macerated wine present in the marketed product. The statistical treatment of the entire data set revealed that pyranoanthocyanins are positively correlated with colour density (while no correlation was found for monoglucosides) and that direct adducts and/or ethyl-bridged compounds can play a role for what concerns the hue of carbonic macerated wines.  相似文献

A red Rioja wine was aged in barrels made of Spanish oak wood for 21 months. The evolutions of colour percentage intensity, families of phenolic compounds and low molecular weight phenolic compounds were studied in these wines and compared with those of the same wine aged in barrels made of French and American oak. The analysis of chromatic parameters and total anthocyanins indicates that the wines aged in Spanish and French oak wood barrels have similar chromatic characteristics, but are significantly different to those of wines aged in barrels made of American oak wood, indicating a different degree of modification of the colour. The ageing process also had an important influence on the low molecular weight polyphenols composition of wine. The evolution of these components allowed the production of wines with different characteristics, in relation to the type of wood used in barrel making process. On the other hand, Spanish oak wood can be considered suitable for barrel production for quality wines, since a wine aged in barrels made of Spanish oak wood showed similar and intermediate characteristics to those of the same wine aged in French and American oak woods.  相似文献

The present study is the first effort to a comprehensive evaluation of the antioxidant and antimicrobial activities of fractionated red wines from Morocco. The results obtained revealed that the wine samples were characterized by a higher phytochemical concentration than the same variety of wines with a different geographical origin and other more consumed red wines, confirming what was reported in a previous authors' work. The most phenolic-rich fractions were the ones containing phenolic acids and quercetin glucoronides from Syrah and Merlot wine samples while Cabernet Sauvignon exhibited the highest monomeric anthocyanin content. The antioxidant activity of wine extracts was tested by ferric reducing antioxidant power and 1,1-diphenyl-2-picrilhydrazyl assays. Samples revealed a higher reducing capacity than radical scavenging property and a good correlation between antioxidant activity and polyphenolic content values. As regards the antimicrobial properties, each fraction exhibited activity against a broad spectrum of food-borne microorganisms, revealing not only a moderate to high natural preserving capacity, but also potentially beneficial influence on human health. PRACTICAL APPLICATION: In consideration of the scarcity of data regarding composition and biological properties of Moroccan red wines, the present study may represent a valuable reference for wine consumers and producers.  相似文献

The effect of Graciano (GRA) (Spanish valuable variety of limited production) vs. Cabernet Sauvignon (CS) (world-wide known French variety) on the colour of wines from Tempranillo (TEM-base wine) (largely cultivated Spanish variety), was studied in wine blends prepared with 25% and 10% (v/v) of each modifier after 4, 6, 9, 16.5 and 23 months of ageing in the bottle. Although possessing pH values very similar to the base wine, the blends of TEM with GRA or CS wines showed chromatic changes (higher a*, C*, CI, %red and %dA, and lower h, %yellow, tint and L*) that were perceptible by the human eye, even when using as little as 10% of modifier wine. However, no differences in colour parameters were found between the TEM-GRA (90:10) and the TEM-CS (90:10) blends, and between the TEM-GRA (75:25) and the TEM-CS (75:25) ones, this being consistent with the results relating to the temporal evolution of anthocyanins and flavanols (Part I). Moreover, the results of the principal component analysis indicated that the degree of interrelation existing between the colour parameters and the phenolic components during ageing in the bottle was similar for the TEM-GRA and TEM-CS blends. From a practical point of view, the ANOVA analysis also demonstrated that for any of the modifier wines used, certain colour parameters and phenolic components allowed differentiation between the base wine and the 75:25 blends, whereas others allowed differentiation between the base wine and both the 90:10 and 75:25 blends, during the ageing period studied. Some similarities between GRA and CS as modifier wines of TEM blends were also found in terms of their organoleptic characteristics, also demonstrating that both varieties could render blended wines with better overall quality attributes than the base wine after 23 months of ageing in the bottle.  相似文献

In 15 young Beaujolais red wines from the 1974 and 1975 vintages statistically significant linear correlations were found between overall quality and the contents of total pigments, total anthocyanins, coloured anthocyanins and tasters' mean colour scores; and also between flavour and the contents of total pigments and total anthocyanins. In 1974 additional significant correlations were found between (a) overall quality and wine colour density; non-coloured anthocyanins and pH, (b) flavour and colour scores and coloured anthocyanins, (c) aroma and total pigments, total anthocyanins, coloured and non-coloured anthocyanins and pH and (d) the chemical parameters of pH and total pigments and total anthocyanins. In 1975 flavour was correlated also with non-coloured anthocyanins and pH. The results demonstrate the desirable effects of anthocyanins on wine flavour and quality, whereas the polymeric pigments formed on ageing of Beaujolais appear to be indifferent features of quality. Thus, the negative correlations found between quality factors and wine ?chemical age’? tend to support the opinion that most Beaujolais should be drunk young. Comparison of the results with data on Australian and Swiss red wines suggests that sulphur dioxide affects not only quality itself but also the nature of the quality correlation found. Simple colour measurement of acidified wine provides a useful indication of quality in young red wines of the same grape cultivar and age, having minimal sulphur dioxide content.  相似文献

Nowadays, consumers demand red wines with deep colour, soft tannins and fruit scents, but these wines can only be obtained from grapes with complete phenolic maturity. Diverse methods have been proposed for measuring phenolic maturity. However, all these methods only provide the average value and do not consider any possible heterogeneity. Throughout ripening, grapes were separated according to their density, which revealed the existence of a large heterogeneity. Grapes at harvest were also separated by density in three groups. The higher the density of the grapes the higher ethanol content, pH, colour intensity, total phenolic index and anthocyanin and proanthocyanidin concentrations, and the lower the titratable acidity and bitterness of the wines. When the grapes were denser the wines were also better balanced in flavour and mouthfeel sensation. These results suggest that grape heterogeneity may influence the final wine composition and quality and therefore it should be considered at harvest.  相似文献

Several winemaking techniques have been developed to eliminate seeds to prevent the release of high amounts of very astringent proanthocyanidins, especially when the grapes are unripe. However, there is no scientific information on the effects of this practice. The aim of this paper is to study how the elimination and addition of seeds influence the colour, phenolic composition and astringency of red wine. The elimination of around 80% of the seeds led to a significant decrease of colour intensity and anthocyanin concentration. The addition of seeds originated wines with a greater concentration of total anthocyanin, but did not significantly affect the wine colour. These wines also presented significantly higher levels of proanthocyanidins, a greater proportion of epicatechin-3-gallate, a lower mean degree of polymerization, and, in particular, a drastic increase in astringency. Wines obtained with the elimination of seeds, on the other hand, had exactly the opposite characteristics.  相似文献

Following an exhibition of 32 current vintage red wines of two varieties from the Southern Vales district of South Australia, a correlation was observed between colour densities and the order of ranking previously assigned by a panel of experienced judges. There was no relation between wine colour density and anthocyanin content. Amongst many wines having comparable levels of anthocyanins, the variation in colour density was as much as 3.6-fold, and the degree of ionisation of the anthocyanin component of wine colour was found to range from 6 to 25%. These latter values were also correlated with the quality ratings. The data support the opinion that measurement of colour density and of the degree of ionisation of anthocyanins can provide an objective guide to organoleptic properties in young wines of the same variety and region. Confirmation for this view was obtained from other data concerning the subsequent vintage of Cabernet Sauvignon in the same district. Factors likely to be responsible for the varying states of anthocyanin equilibria in these wines are discussed in terms of wine composition and oenological practice.  相似文献

In this paper, the effects of micro-oxygenation before malolactic fermentation and oak chip treatments on Petit Verdot red wines have been evaluated. Our attention was focused on the colour characteristics, the phenolic compounds related to the colour of red wine, the volatile compounds, and the sensory characteristics of the wines. The micro-oxygenation treatment promoted the stabilisation of red wine colour by increasing the formation of colour-related phenolic compounds (higher concentrations of pyranoanthocyanins and anthocyanin-ethyl-flavan-3-ol adducts). Red wine aroma quality was improved with the addition of oak chips (eugenol and 4-vinyl-guaiacol concentration increased). Micro-oxygenation treatment resulted in higher scores for the plum/currant and spicy attributes, as well as the appearance of tobacco and nutty notes which were absent in the non-treated wines. Nevertheless, the typical oak chip aromas (vanilla and woody) were observed to a lesser extent in wines obtained by micro-oxygenation.  相似文献

The aim of this work was to evaluate the impact of cation exchange resin, on tartrate stabilization, chemical composition, general phenolic composition, individual anthocyanin and different proanthocyanidin fraction content of a red wine made from a mixture of three Portuguese red grape varieties. Additionally, the influence of this tartrate stabilization process on organolpetic properties was another aim of this work. The cation exchanged red wines were mixed in different proportions with the untreated red wine. The results showed that the application of a cation exchange resin used was useful to adjust the pH and total acidity and revealed a good capacity to retain potassium and calcium. In addition, the cation exchange resin treatment caused a significant decrease in the contents of individual anthocyanins well as in the different fractions of proanthocyanidins (especially in monomeric fraction). Finally, considering the organoleptic properties, the most highly evaluated wine, especially considering taste parameters, was the control wine. These results confirm that cation exchange is an interesting in red winemaking to improve tartaric stability, but at same time it is important analyze potential effects on phenolic content and organoleptic properties of red wines.  相似文献

The impact of moderate oxygen exposure after bottling on wine phenolic composition and colour properties has been investigated on four Grenache red wines showing high and low phenolic contents, obtained by flash release (FR) and traditional soaking (Trad), respectively, and processed with (Mox, 4.6 mg l−1 O2) or without (noMox) micro-oxygenation. Four oxygen transfer rate (OTR) conditions (0.8, 1.9, 8.0, and 11.9 μl oxygen/bottle/day) were ensured by using synthetic closures with controlled oxygen permeability and storage under controlled atmosphere. Wine phenolic composition and colour were monitored by triplicate analysis of bottles sampled at bottling (T0) and after 5 and 10 months of ageing. Phenolic composition was determined by reverse-phase HPLC-DAD–MS analysis, performed directly on the wines and after phloroglucinolysis for proanthocyanidins. Colour was evaluated by UV–visible spectrophotometry and tristimulus colorimetry. At T0, FR wines contained larger amounts of catechins, proanthocyanidins and hydroxycinnamic acids and slightly lower amounts of anthocyanins than the Trad wines while the Mox wines showed higher levels of some derived pigments, especially carboxypyranoanthocyanins, resulting from reactions of anthocyanins with pyruvate. During ageing, a progressive decrease of proanthocyanidins and hydroxycinnamic acid concentrations was observed, independently of OTR. In contrast, the loss of free SO2, flavan-3-ol monomers and the conversion rate of anthocyanins to new pigments, especially into sulphite bleaching resistant pigments, increased with OTR levels. Among derived pigments, carboxypyranoanthocyanins levels increased both with micro-oxygenation and with OTR and can be considered as oxidation markers while flavan-3-ol–anthocyanin adducts were formed in larger amounts with lower oxygen exposure.  相似文献

该文以两种湖南刺葡萄品种(米葡萄和甜葡萄)为原料酿造的干红葡萄酒为研究对象,并利用高效液相色谱-质谱联用(HPLC-MS)技术分析在其酿造过程中酚类物质的含量变化。结果显示,在刺葡萄干红葡萄酒样品中共检测到六大类酚类物质共33种,其中包括7种黄酮醇类物质、5种黄烷-3-醇类物质、3种羟基苯甲酸类物质、3种羟基肉桂酸类物质、7种非酰化花色苷类物质、8种酰化花色苷类物质。在整个酿造过程中,两种刺葡萄酚类物质的变化基本一致,苹乳发酵结束后酚类物质均明显上升。其中米葡萄酒的黄酮醇、黄烷醇含量高于甜葡萄酒,而甜葡萄酒的其他四种酚类物质含量比米葡萄酒高。  相似文献

Kalecik karasi is an important red grape cultivar for winemaking in Turkey. The effect of three different maceration times (3, 6 and 12 days) and addition of pectolytic enzyme (2 and 4 g/hL) on the anthocyanin and chemical composition of Kalecik karasi wines were studied. High performance liquid chromatography-mass spectrometry coupled with diode array detection was used for analysis. Fourteen anthocyanin compounds were detected in wines. Major anthocyanins in all wines are malvidin-3-glucoside and its acylated esters. The results showed that increasing maceration time, especially with addition of enzymes, gives significant increases in anthocyanin contents. Moreover, the wines treated with enzymes had higher values in total phenolics, tannins, and color intensity than the control wines.

PRACTICAL APPLICATIONS


Anthocyanins are the most important polyphenols in red grapes and red wines with potential health benefits. Therefore, the first analysis of the anthocyanins contents of wine obtained from important turkish cv. Kalecik karasi using liquid-chromatography-mass spectrometry and the influence of different maceration times and addition of pectolytic enzyme on these important phenolic compounds are of interest for scientific literature, the wine industry as well as for the wine consumer.  相似文献
