The amino acid composition of groundnut (Apios americana Medikus) was analyzed using ion-exchange column chromatography. Aspartic and glutamic acids were the predominant amino acids in both seeds and tubers. Other amino acids present in significant quantities were leucine, histidine and proline. The most abundant free amino acids, other than aspartic and glutamic acids, were arginine and leucine in the seeds and histidine and serine in the tubers. 相似文献

油脂及其脂肪酸组成一直是营养学家关注的话题,许多证据显示,反式脂肪酸与冠心病、心肌梗塞、糖尿病的发生、发展呈正相关,各国民众越来越关注反式脂肪酸对人体的负面影响。2003年7月,FDA正式宣布,从2006年1月1日起,食品标签中必须注明反式脂肪酸含量。2006年12月,纽约市通过一项法案,决定从2007年起逐步禁用直至全面封杀纽约餐饮业使用的反式脂肪。在国内,反式脂肪酸的安全问题也不断引起人们的疑虑。本文旨在普及和提高公众对食品安全问题的认识,以利于对反式脂肪酸安全问题开展冷静的讨论。 相似文献

Various parts of the winged bean plant, Psophocarpus tetragonolobus were analyzed for sterols and fatty acids. The major sterols were sitosterol, stigmasterol and campesterol. Sitosterol occurred in greatest amounts except in roots where stigmasterol was the predominant sterol. In seeds, behenic acid (22:0) comprised 13.5% of the total fatty acids, whereas, in the other plant parts it varied from 0.1–6.9%. Leaves contained the highest level of fatty acids, but only 22% of these fatty acids were saturated. 相似文献

Milk and fractions therefrom were lyophilized and the powder was mixed with silicic acid, acidified, and extracted with ethyl ether in a Soxhlet extractor. The free fatty acids (FFA) extracted in this manner were isolated on an anionic exchange resin, converted to methyl esters, and analyzed by gas-liquid chromatography. The data were quantitated by use of internal standards.Most of the FFA of milk were distributed in the fat and the fat globule membrane fraction. Milk serum free of lipid material contained less than 10% of the FFA. Hence, milks with higher fat content contain more FFA, and milks standardized with skimmilk contain less than the original.Heating of milk had a pronounced effect upon the quantity of FFA; as heat treatments increased, the FFA decreased. Induced lipolysis caused a marked increase in FFA. In general, the FFA composition of milk, regardless of treatment, was comparable to the fatty acid composition of milk glycerides. 相似文献

Omega-3 Fatty Acids in Lake Superior Fish 总被引:2,自引:0,他引:2
Proximate analysis and fatty acid composition of eight commercially important species of Lake Superior fish were determined. Palmitic acid (C16:0) was the predominant saturated fatty acid, accounting for 68–79% of total saturated acids. Oleic acid (C18:1) was the most abundant monounsaturated fatty acid. Linoleic acid (C18:2), linolenic acid (C18:3), eicosapentaenoic acid (C20:5) and docosahexaenoic acid (C22:6) were the predominant polyunsaturated fatty acids. Brining, smoking and refrigerated storage caused a reduction in total lipid, but only a small loss in n-3 fatty acids. The data revealed that most Lake Superior fish examined were excellent sources of polyunsaturated fatty acids with very high levels of omega-3 (n-3) fatty acids, especially eicosapentaenoic and docosahexaenoic acids. 相似文献

目的分析刺梨果中多元酸和高级脂肪酸的组成。方法采用硫酸甲酯化处理刺梨果样品,用气相色谱-质谱联用(GC-MS)分析其多元酸和高级脂肪酸含量,用面积归一化法得出各有机酸的相对含量。结果共分离、鉴定22种酸性组分,占总峰面积的97.04%。结论刺梨果中高级脂肪酸和多元酸成分为:亚油酸(37.75%)、亚麻酸(19.51%)、油酸(15.15%)、棕榈酸(8.53%)、硬脂酸(4.12%)、枸橼酸(3.74%)和苹果酸(1.49%)等。 相似文献
