A total of 265 pork carcasses representing a broad variation in quality was used to examine the relationship between colour (L-value) and water-holding capacity (WHC) in the longissimus thoracis et lumborum. Thirty-four samples appeared to possess 'normal' reddish pink colour (L-value 52·0-58·0) but had 'unacceptable' WHC (>5·0% drip loss). Conversely, 25 samples were pale in colour (L-value >58·0) but were 'acceptable' in WHC. When muscles were dark (L-value 52·0) the WHC was always acceptable. Some samples were subjected to further analysis. Variations in iron content, haematin content, sarcomere length and degree of soluble protein denaturation failed to explain why brightness and WHC were not more closely related. When L-value and WHC were compared to pH(45) (pH, 45 min post mortem), WHC exhibited a biphasic relationship to pH(45) whereas L-value did not. These results indicate that WHC and brightness are determined by independent pre-rigor biological phenomena, strengthening the argument that brightness is not necessarily a reliable predictor of WHC. Researchers selecting pork for specific investigations, or commercial companies using fresh pork for either further processing or for retail, should not rely on colour brightness alone to insure that other quality properties such as WHC and firmness will also be acceptable.  相似文献

Pinus radiata specimens with moisture content of 8–11% and dimensions of 90×35×200 mm3 were heat-treated in an oil bath of commercial grade raw linseed oil. The effect of oil aging was investigated under treatment condition of 180°C and 3 hours by using oil that had been preheated for 0, 3, 9, 15, 21, and 27 hours, respectively, before the wood treatment. After treatment using oils of varying ages, wood colour change was examined using a Minolta spectrophotometer through CIE 1976 (L * a * b) system. Water repellent efficiency and anti swelling efficiency in high humidity conditions were measured to determine the stability of the treated wood. The results show that stability of the treated wood was improved significantly compared to the matched untreated wood but the treated wood tended to be darker. Oil viscosity increased with the heating age resulting in slight decrease in weight percentage gain. Water repellent efficiency was decreased with an increase in heating age of oil. However no significant difference in total colour variation and wood stability (anti swelling efficiency) was observed between specimens treated with oils of varying heating age.  相似文献

Lipid oxidation and discoloration are two important problems in the storage of pastırma, a meat product. In this research, the usability of lyophilized red beet water extract (LRBWE) in cemen paste and its effects on the pastırma quality (especially colour, protein and lipid oxidation, microbial and sensory properties) were investigated during storage. Two trials were conducted; in trial 1, LRBWE was obtained, its various properties were designated and effects on the cemen paste of these extracts (0.0%, 0.4%, 0.6%, 0.8% 1.0% and 1.2%) were determined. In trial 2, pastırma with cemen paste containing 0.8%, 1.0% and 1.2% LRBWE were produced and stored at 4 ± 1 °C for 150 days. The LRBWE did not influence protein oxidation of pastırma, whereas increasing LRBWE level led to a decrease in lipid oxidation (P < 0.01), and an increase in redness (a1) value (P < 0.01) and sensory properties (P < 0.01) of sliced pastırma compared with control pastırma. These results revealed that the addition of 1.0% or 1.2% LRBWE to cemen paste was effective to improve the colour stability, lipid oxidation, microbial and sensory quality of pastırma during storage.  相似文献

The effect of feeding supra-nutritional levels of α-tocopheryl acetate on its deposition in two porcine muscles of different metabolic rates (m. longissimus dorsi and m. psoas major) and the effect on meat quality (lipid oxidation, colour stability and drip loss) was studied. Pigs were fed a standard diet supplemented with three levels: 100, 200 and 700 mg/kg of α-tocopheryl acetate from the time of weaning to slaughter at 90kg live weight. Muscle α-tocopherol levels were linearly related to the logarithm of dietary α-tocopheryl acetate supplementation and the linear relationship was estimated for the two muscles. The levels of α-tocopherol in the two muscles differed by a parallel displacement with consistently higher α-tocopherol levels in m. psoas major compared to m. longissimus dorsi. Dietary α-tocopheryl acetate supplementation significantly reduced lipid oxidation as measured by thiobarbituric acid reactive substances (TBARS) in both raw and cooked meat during storage at 4 °C for 6 days. Drip loss and colour stability of raw muscles were not affected by dietary α-tocopheryl acetate levels, 100mg α-tocopheryl acetate/ kg feed resulted in sufficient α-tocopherol levels in muscles to ensure minimum drip loss and optimum colour stability.  相似文献

The objective of the present study was to determine the effects of dietary vitamin E supplementation and reduced nitrite levels on the colour stability of cooked hams. Large white × Landrace pigs (male n=6, female n=6) were each subdivided into two groups (n=3) and fed an α-tocopheryl acetate supplemented diet (1000 mg/kg feed) and a basal diet (10 mg/kg feed) for a period of 10 weeks. M. semitendinosus were removed from each pig, divided into light and dark pigmented fractions, vacuum packed and stored at 4°C for 24 h. Muscles were cured with input nitrite levels of 25 and 100 mg/kg meat and were tumbled and massaged for 17 h. Samples were cooked, sliced and overwrapped in a high oxygen permeable film for a storage period of 10 days. Surface colour of hams was measured and expressed as Hunter ‘a’ values. Concentrations of α-tocopherol were significantly (P<0.001) greater in supplemented muscles compared to basal muscles for both male and female pigs. Hams manufactured from male and female supplemented pigs resulted in significantly (P<0.001) higher Hunter ‘a’ values than hams manufactured from male and female pigs receiving the basal diet. Muscles cured with 100 mg nitrite/kg meat formed products with significantly (P<0.001) higher ‘a’ values than those cured with the lower (25 mg/kg meat) nitrite level. Hams manufactured from supplemented muscles, treated with 25 mg nitrite/kg meat showed significantly (P<0.05) higher Hunter ‘a’ values than hams manufactured from basal muscles, treated with 100 mg nitrite/kg meat. Hams manufactured from female porcine muscles had significantly (P<0.001) higher ‘a’ values than hams from male muscles during the 10 days of simulated retail display. No such gender differences were observed for TBARS values.  相似文献

Effect of tocols, β-carotene, and chlorophyll on photo-oxidative stability of red palm oil (RPO) were studied. Model systems of triacylglycerols+tocols, triacylglycerols+β-carotene, triacylglycerols +tocols+β-carotene, and triacylglycerols+tocols+β-carotene+chlorophyll were exposed to fluorescent light at intensities of 5,000, 10,000, and 15,000 lux for 7 h at 30±2°C. Changes in concentrations of tocopherols, tocotrienols, β-carotene, chlorophyll, and peroxide values were evaluated every hour. Light intensity accelerated degradation of tocols in the triacylglycerols+tocols system and β-carotene in the triacylglycerols+β-carotene system. Gamma-tocotrienol showed the highest degradation rate and β-carotene was the most sensitive compound to changes in light intensity, indicated by the lowest light intensity coefficient (zi) value. The presence of tocols and β-carotene together showed protective effects for the photo-oxidative stability of RPO. The presence of chlorophyll increased the rate of photo-oxidation at high light intensities. Interactions between tocols and β-carotene contributed to the photo-oxidative stability of RPO.  相似文献

Betalains (mainly betanin, isobetanin, and phyllocactin) extracted from red–purple pitaya were blended with Chinese bayberry juice (rich in anthocyanins) to explore variation trends of two natural pigments in one system. The mixture showed higher anthocyanin contents at pH 4, 4.5, and 5. In this process, redness and colour saturation were also maintained to a greater extent compared to the control. The coexisting betalains and anthocyanins increased colour acceptability of the juice matrix and expanded the pH tolerance range. Interestingly, colour change (ΔE) showed the opposite trend. Besides, betalains showed the function of improving the antioxidant activity of juice matrix at pH 3, 4, and 4.5, which confirmed their biological activity. Betalain-added bayberry juice obtained a satisfactory ABTS (2,2′-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) radical scavenging capacity for 62.52% at pH 5.  相似文献

In this research, we explored various immobilized enzyme support materials, including the novel nylon-6 fiber membrane (NFM), and evaluated the increase in surface area and its effect on enzyme binding potential. We also manipulated incubation and reaction conditions and assessed the subsequent effects on activity and stability of β-galactosidase, with comparisons between various solid support materials and free (dissolved) enzyme. Nylon-6 fiber membranes were created by electrospinning and were compared with other materials as solid supports for enzyme binding. The other materials included polyvinylidene fluoride 5-kDa nanofiltration dairy membranes, nylon-6 pellets, and silica glass beads. Scanning electron microscopy revealed the large surface area of NFM, which correlated with greater enzyme activity compared with the relatively flatter surfaces of the other solid support materials. Enzyme activity was measured spectrophotometrically with the color-changing substrate o-nitrophenyl-β-d-galactopyranoside. Compared with the other solid supports, NFM had greater maximum enzyme binding potential. Across pH conditions ranging from 3.5 to 6.0 (including the optimal pH of 4.0–5.0), enzyme activity was maintained on the membrane-immobilized samples, whereas free enzyme did not maintain activity. Altering the storage temperature (4, 22, and 50°C) affected enzyme stability (i.e., the ability of the enzyme to maintain activity over time) of free and polyvinylidene fluoride membrane samples. However, NFM samples maintained stability across the varying storage temperatures. Increasing the immobilization solution enzyme concentration above the maximum enzyme binding capacity had no significant effect on enzyme stability for membrane-immobilized samples; however, both had lower mean stability than free enzyme by approximately 74%. With further development, β-galactosidase immobilized on NFM or other membranes could be used in continuous processing in the dairy industry for a combination of filtration and lactose hydrolysis—creating products that are reduced in lactose and increased in sweetness, with no requirement for “added sugars” on the nutrition label and no enzyme listed as final product ingredient.  相似文献

Kavurma is a cooked meat product and is consumed sliced. The amount of animal fat in kavurma (30-40%) is higher than in other meat products; therefore, lipid oxidation and colour defects are a major problem during storage and in the market place. To preserve the quality characteristics of kavurma in markets antioxidants must be added and the product must be packaged and stored at low temperature. In this study, the effects of α-tocopherol and butylated hydroxyanisole (BHA) levels on lipid oxidation and colour deterioration of sliced and vacuum-packaged kavurma were investigated. Kavurma was made from beef meat and melted beef fat in 5 groups: No-added antioxidant, 50mg/kg BHA, 100mg/kg BHA, 50mg/kg α-tocopherol and 100mg/kg α-tocopherol. The kavurma produced was sliced (3-4-cm thick) and vacuum packed and stored at 4°C for 300 days, and thiobarbituric acid reactive substance, pH, moisture, lightness, redness and yellowness values of sliced product were determined during storage. The use of antioxidants in kavurma production caused a significant (P<0.01) decrease in the thiobarbituric acid reactive substances (TBARS) values. The lipid oxidative stability effect of the antioxidants was in following order: 100mg/kg BHA>100mg/kg α-tocopherol>50mg/kg BHA=50mg/kg α-tocopherol>no-added antioxidant group. Also, TBARS values did not differ significantly (P>0.05) between 0 and 300 days in the 100mg/kg BHA and 100mg/kg α-tocopherol groups. In addition, the no-added antioxidant group had lower lightness and yellowness values than all the antioxidant groups. Sliced and vacuum-packaged kavurma with added antioxidant showed greater colour and lipid oxidative stability during storage than kavurma to which no antioxidant was added.  相似文献

The synergistic effect of dietary linolenic acid and vitamin E on the oxidative stability and nutritional and eating characteristics of fresh and stored rabbit meat was studied. One-hundred hybrid male rabbits were divided into two homogenous groups and fed ad libitum two diets differing in the amount of sunflower and flaxseed and in the level of α-tocopherol, as follows: control diet: 0.08 kg kg(-1) sunflower, 50 mg kg(-1) α-tocopheryl-acetate and LNA-VE diet: 0.08 kg kg(-1) flaxseed, 200 mg kg(-1) α-tocopheryl-acetate. At 85 days, 20 rabbits per group were slaughtered and the thiobarbituric-acid reactive substances (TBA-RS), chemical composition, fatty acid profile and sensory quality were assessed on the longissimus dorsi muscles (fresh and stored for 8 days at 4?°C). The proximate composition of the fresh muscle was not significantly affected by the dietary treatment. Rabbits fed the LNA-VE diet showed a good capability to elongate and desaturate linolenic acid and this diet enriched the n-3 PUFA content of the meat without affecting its peroxidative stability. The sensory quality of the fresh and stored muscle was slightly affected by the dietary treatment, even though final tenderness (fresh meat) and overall acceptability (stored meat) of the LNA-VE rabbits showed significantly higher scores.  相似文献

The trial was carried out to investigate the effects of adding to the diet of rabbits vitamin E (40; 300; 500 ppm) and C (0; 500 ppm), on vitamin E deposition in the muscles and organs, on the oxidative stability of muscular lipids, and on various meat quality characteristics. The α-tocopherol content in muscles and organs was roughly doubled by feeding the highest levels of vitamin E; it was also increased by giving 500 ppm of vitamin C, but only in those muscles of rabbits receiving 40 ppm of vitamin E. The α-tocopherol content in tissues was negatively correlated with TBARS values of the longissimus dorsi (LD) at days 6 and 8 post mortem (p.m.). Five hundred parts per million (ppm) of vitamin C increased lipid stability of the LD at both 6 and 8 days p.m., though its effect was significant only with 40 ppm of vitamin E. Moreover, 500 ppm of vitamin C resulted in the lowest L(*) and highest pH values at all p.m. times, when the dietary vitamin E was equal to 40 ppm, and in the highest L(*) and lowest pH values when the vitamin E was equal to 300 ppm. Conversely, weight losses of the LD were the lowest, at days 6 and 8 p.m., in the group fed the highest levels of both vitamins.  相似文献

The objective of this study was to evaluate the effects of seven single nucleotide polymorphisms (SNPs) in Calpain 1 and Calpastatin genes previously associated with meat tenderness attributes in other cattle breeds in Korean Hanwoo cattle. The Hanwoo resource population was used to study association of 7 SNPs with beef tenderness, flavor, juiciness, intramuscular fat and shear force. In this association study, CAST:c.182A > G (+ 0.14, P = 0.04) and CAST:c.1985G > C (− 0.12, P = 0.02) had significant effects on juiciness, but no effects on other traits. In contrast, CAPN1:c.1589G > A was associated with meat tenderness (P = 0.01) and juiciness (P = 0.04). The CAPN1:c.1589G > A (Val530Ile) SNP marker displayed significant effect on the meat tenderness score which is strongly supported by molecular modeling of the CAPN1:c.1589G > A (Val530Ile) variant that inhibits CAST protein from binding more strongly than the wild-type protein, which may explain its effect on meat tenderness.  相似文献

Microbial counts, pH, and titratable acidity were determined in 102 Spanish dry fermented sausages (chorizo and salchichón) made with ostrich, deer, or pork meat. Average microbial counts (log CFU per gram) varied from 5.46 +/- 0.24 to 8.25 +/- 0.80 (total viable counts), from 4.79 +/- 0.36 to 7.99 +/- 0.20 (psychrotrophs), from 0.00 +/- 0.00 to 0.99 +/- 1.10 (undetectable values were assumed to be zero) (Enterobacteriaceae), from 0.00 +/- 0.00 to 4.27 +/- 1.47 (enterococci), from 5.15 +/- 1.15 to 8.46 +/- 0.49 (lactic acid bacteria), from 3.08 +/- 0.44 to 6.59 +/- 1.76 (Micrococcaceae), from 2.27 +/- 1.53 to 5.11 +/- 1.81 (molds and yeasts), from 0.00 +/- 0.00 to 2.25 +/- 0.81 (pseudomonads), and from 0.00 +/- 0.00 to 2.78 +/- 0.46 (Brochothrix thermosphacta). Average pH and titratable acidity varied from 5.07 +/- 0.25 to 5.63 +/- 0.51 (pH units) and from 0.30 +/- 0.01 to 0.86 +/- 0.19 (% lactic acid). Both type of sausage (P < 0.05) and species of meat (P < 0.001) influenced microbial counts. Salchich6n samples showed lower average values than chorizo samples for most microbial groups (significant for Enterobacteriaceae, lactic acid bacteria, and B. thermosphacta) and titratable acidity. Sausages made from pork showed the highest microbial loads for total viable counts, psychrotrophs, Enterobacteriaceae, enterococci, lactic acid bacteria, and yeasts and molds. Higher counts were observed only for pseudomonads in ostrich sausages. B. thermosphacta levels were similar for all species of meat. The highest average pH value was observed in sausages made from ostrich meat, and the lowest titratable acidity level was found in pork sausages.  相似文献

This study was conducted to evaluate the combined effect of heating and γ-irradiation on the microbiological and sensory characteristics of gochujang sauce. Gochujang sauces could be sterilized by heating (HT: 121°C for 15 min) or γ-irradiation (IR: 30 kGy), but their sensory qualities were severely decreased. Otherwise, the combined treatment of heat and γ-irradiation could minimize the change of sensory qualities. Combination treatment of γ-irradiation at 17.5 kGy after heating at 100°C for 30 min (HT-IR) would be optimal. During storage the gochujang sauce samples then were analyzed to enumerate total bacterial populations, to measure pH, and Hunter’s color values, and for sensory evaluation. Any growth of total bacterial populations was not observed in HT, IR, and HT-IR (detection limited 1< log CFU/g). The pH values of gochujang sauce ranged from 4.57 to 4.75 during storage. The Hunter’s (L*, a*, and b*) values of gochujang sauce were gradually decreased during storage, regardless of treatment. Sensory characteristics and acceptance of HT and IR were significantly lower (p<0.05) than those of non-treated control and HT-IR, but there was no difference (p⩾0.05) among non-treated control and HT-IR.  相似文献

The aim of the present study was to assess the influence of pH (3, 7 and 9) as well as ionic strength of NaCl (0mmol/l, 100mmol/l, 200mmol/l and 400mmol/l) on the retention and release characteristics of diacetyl and (-)-α-pinene in oil-in-water (o/w) emulsions prepared with dried egg yolk (DEY) or starch sodium octenylsuccinate (SOE). Increase of pH from 3 to 9 progressively enhanced retention of diacetyl in emulsions prepared with both DEY and SOE. Whereas, in samples flavoured with (-)-α-pinene, the highest and lowest retention time-courses were detected at pH 9 and pH 7 as well as pH 7 and pH 3 regarding emulsions prepared with DEY as well as SOE, respectively. With increasing salt concentration, the retention of diacetyl was decreased, irrespectively of the applied emulsifier type, whereas generally opposite effects were observed in the case of (-)-α-pinene. The parameters of release characteristics i.e., release rate constants (k) and release mechanism factors (n), were calculated using Avrami's equation. ANOVA revealed significant effects (p<0.001) of pH and NaCl concentration on k parameters, whereas relationship between applied environmental conditions and n factors was dependent on hydrophobicity of the odourant. Sensory evaluation revealed higher correlation values between odour intensity and aroma compound concentration in emulsions aromatized with (-)-α-pinene than with diacetyl.  相似文献

The oxidative stability of liver pâté was investigated in relation to different doses of rosemary extract (RE) and sodium nitrite. Colour stability, lipid oxidation (TBARS) and concentrations of ascorbic acid, α-tocopherol, carnosic acid and nitrite were measured on the batters before cooking and on the cooked liver pâté before and after exposure to light and air for 48 h at 4 °C. Results showed that the use of RE significantly reduced lipid oxidation, whereas it had no effect on colour stability. Ascorbic acid and nitrite concentrations were significantly higher and lower respectively when RE was added. RE dose-dependently increased the concentration of carnosic acid. Lower sodium nitrite doses resulted in significantly lower nitrite concentrations and slightly lower TBARS values. It was concluded that in liver pâté sodium nitrite levels may be lowered to 80 mg/kg without negatively affecting colour and lipid stability and that the use of RE may help in maintaining lipid stability.  相似文献

A total of 120 bulls each weighing approximately 500 kg were used to evaluate the effects of withholding feed and water for various intervals pre-slaughter, ante-mortem supplementation with an electrolyte solution, and post-mortem electrical stimulation on the cooking and palatability attributes and consumer acceptance of boneless rib steaks aged for 6 days at 1°C. The results clearly showed the detrimental effects of withholding feed and water pre-slaughter and the beneficial effects of post-mortem electrical stimulation on the eating quality of bull beef aged for 6 days at 1°C. Taste panel ratings of palatability attributes between electrolyte-treated and untreated animals did not differ significantly. However, consumer evaluations indicated a lower overall palatability rating for electrolyte-treated bulls. The results clearly indicate that feed and water deprivation is detrimental to the palatability attributes and consumer acceptance of aged bull beef.  相似文献

ABSTRACT:  Phylloquinone (vitamin K1) is the primary dietary source of vitamin K. Processing effects and stability of phylloquinone were investigated during juice and concentrate production from sea buckthorn ( Hippophaë rhamnoides ) using berries from 2 different growing areas. During industrial juice production the technological processing of the berries caused a loss of about 36% to 54% phylloquinone in the generated juice. The following processing steps leading to the concentrated juice resulted in a complete depletion of phylloquinone. Sea buckthorn berries and juice were stored at 6, 25, and 40 °C for up to 7 d to determine the temperature effects on phylloquinone during storage. Content of vitamin K1 in sea buckthorn berries was affected by storage time and storage temperature. Storage of freshly harvested berries resulted in a significant increase ( P < 0.01) of phylloquinone ranging from 21% up to 186% (wet weight). The juices showed almost identical significant degradation ( P < 0.01) of phylloquinone of about 18% to 32% at 6, 25, and 40 °C indicating that intensity of decomposition is independent of temperature (6 to 40 °C) and storage time in the range of consumer storage conditions.  相似文献

Wine quality is evaluated by sensory attributes and physicochemical properties whose relationship is intensely investigated. This work aimed to analyze the physicochemical properties and sensory attributes of wines from Bordô and Isabel American grapes elaborated by a traditional and two novel winemaking processes: pre-drying and submerged static pomace. It was possible to observe significant differences between the samples in all physicochemical properties (P < 0.001), except in volatile acidity. Bordô and Isabel pre-drying wines presented the highest values of dry extract (43.00 and 33.66 g L?1) in comparison with the other wines which presented dry extract below 30 g L?1. Furthermore, pre-drying wines showed the highest phenolic content (1340.80 and 908.80 mg L?1) in comparison with static pomace (998.02 and 433.46 mg L?1) and traditional treatments (983.96 and 560.26 mg L?1). Sensory analysis showed significant differences between the samples in all attributes, except in appearance acceptance. Cluster analysis and multidimensional scaling was successfully applied and allowed to observe the relationship between physicochemical properties and sensory attributes. Total phenolic content and color indexes were associated with the appearance of wines, as well as alcohol content and acidity on aroma. The results also revealed the connection between dry extract and total and reducing sugars with the body of wines from innovative vinification. The flavor was associated with several physicochemical properties and also influenced the global acceptance of the samples. The innovative wines showed great acceptance in all sensory attributes, and the employment of these treatments on an industrial scale should be considered once providing wines with unique characteristics.  相似文献
