BACKGROUND: Minolta and machine vision are two different instrumental techniques used for measuring the colour of muscle food products. Between these two techniques, machine vision has many advantages, such as its ability to determine L*, a*, b* values for each pixel of a sample's image and to analyse the entire surface of a food regardless of surface uniformity and colour variation. The objective of this study was to measure the colour of irradiated Atlantic salmon fillets using a hand‐held Minolta colorimeter and a machine vision system and to compare their performance. RESULTS: The L*, a*, b* values of Atlantic salmon fillets subjected to different electron beam doses (0, 1, 1.5, 2 and 3 kGy) were measured using a Minolta CR‐200 Chroma Meter and a machine vision system. For both Minolta and machine vision the L* value increased and the a* and b* values decreased with increasing irradiation dose. However, the machine vision system showed significantly higher readings for L*, a*, b* values than the Minolta colorimeter. Because of this difference, colours that were actually measured by the two instruments were illustrated for visual comparison. Minolta readings resulted in a purplish colour based on average L*, a*, b* values, while machine vision readings resulted in an orange colour, which was expected for Atlantic salmon fillets. CONCLUSION: The Minolta colorimeter and the machine vision system were very close in reading the standard red plate with known L*, a*, b* values. Hence some caution is recommended in reporting colour values measured by Minolta, even when the ‘reference’ tiles are measured correctly. The reason for this discrepancy in colour readings for salmon is not known and needs further investigation. Copyright © 2009 Society of Chemical Industry  相似文献

The colour of subjectively-chosen tomato fruit of three contrasting cultivars at each of five stages of ripeness were measured on a tri-stimulus colour difference meter. The values were introduced into a formula previously developed for calculating objective limits for each ripening stage, but satisfactory separations were not achieved. When the colour components for areas on the side-walls of tomatoes were introduced into a revised formula, good discrimination was achieved between classes of fruit from fairly ripe to fully ripe. Similar measurements carried out on areas near the stylar scar and used with an alternative formula led to efficient separation of less ripe fruit into distinct classes. It is suggested that the revised formula can be applied to any cultivated tomato line except colour mutants.  相似文献

The colour of the hair of 65 subjects was measured using a Minolta Chromameter model CR200. Readings were taken by holding the unit against the back of the subject's head, and recorded using the L*a*b* system of colour co-ordinates.
All subjects had hair in which yellow and red (rather than blue or green) dominated. The lightness (L*) of all hair fell in the range 17–67, the redness (a*) in the range 0–6 and the yellowness (b*) 0–20. These limits can be seen as effectively outlining the range of colours which can be said to be natural.
The chromameter gave rapid and reproducible results on hair in situ and was easy to use. The method should be of use to those who wish to quantify the effects brought about by bleaching or dyeing formulations.  相似文献

ABSTRACT

This study investigated the effect of chemical substances, such as Mg2+ (as magnesium sulphate), Zn2+ (as zinc sulphate), Fe2+ (as iron sulphate), ascorbic acid, and citric acid, on the formation of 4-methylimidazole (4-MI) and colour stability of caramel colour. The 4-MI concentration in the caramel colour without chemical substances was 963.10 μg/g, and this decreased the most (67.7%) with the addition of 0.1 molar ratio of citric acid. Colour stability was evaluated by measuring the total colour change (ΔE) after storage, and heating in pH 2, 4, and 7 solutions and 50% solution in ethyl alcohol. Among the chemical substances added to reduce 4-MI in the caramel colour, Mg2+ (0.1 molar ratio) and ascorbic acid improved the colour stability more than the others.  相似文献
