Intake of plant sterols (4‐desmethyl sterols, phytosterols) reduces cholesterol absorption and lowers serum total and LDL cholesterol levels in humans. The use of dietary plant sterol regimens for lowering elevated serum cholesterol values has recently gained much interest, especially after the commercial introduction of margarines containing plant stanols esterified with fatty acids. The solubility of free, crystalline plant sterols and stanols in edible oils and fats is low, limiting their use especially in fat‐containing food. By esterifying of, e.g., plant stanols with fatty acids derived from a vegetable oil fatty acid ester of plant stanols with fat‐like properties are obtained. These fat‐soluble forms of plant stanols provide a technically feasible way of introducing the adequate daily amount of plant sterol into foods for optimal reduction of the cholesterol absorption, without changing the taste of the finished product. The cholesterol‐lowering effect of plant stanol esters has been extensively studied. Plant stanol esters effectively restrict the absorption of both dietary and biliary cholesterol causing plant stanol specific reductions in serum total and LDL cholesterol levels of up to 10% and 14%, respectively. Serum HDL cholesterol and triglyceride levels are not affected. The cholesterol‐lowering effect of plant stanol esters complements the beneficial effects of a healthy diet and cholesterol medication.  相似文献

The oil from Moringa stenopetala seeds variety Marigat from the island Kokwa was extracted using 3 different procedures including cold press (CP), extraction with n‐hexane and extraction with a mixture of chloroform:methanol (1:1) (CM). The yield of oil was 35.7% (CP) to 44.9% (CM). The density, refractive index, colour, smoke point, viscosity, acidity, saponification value, iodine value, fatty acid methyl esters, sterols, tocopherols (by high‐performance liquid chromatography), peroxide value, Eequation/tex2gif-stack-1.gif at 232 nm and the susceptibility to oxidation measured by the Rancimat method were determined. The oil was found to contain high levels of unsaturated fatty acids, especially oleic (up to 76.40%). The dominant saturated acids were behenic (up to 6.01%) and palmitic (up to 6.21%). The oil was also found to contain high levels of β‐sitosterol (up to 52.19%%of total sterols), stigmasterol (up to 16.53% of total sterols) and campesterol (up to 14.26% of total sterols). α‐, β‐ and δ‐tocopherols were detected up to levels of 98.00, 44.50 and 82.41 mg/kg of oil, respectively. The reduction of the induction period (at 120 °C) of M. stenopetala seed oil ranged from 29.4% to 54.7% after degumming. The M. stenopetala seed oil showed high stability to oxidative rancidity. The results of all the above determinations were compared with those of a commercial virgin olive oil and Moringa oleifera seed oil.  相似文献

The content and composition of fatty acids, sterols, tocopherols, and γ-oryzanol in wild rice (Zizania palustris) grown in North America were compared with those in regular brown rice (Oryza sativa L.). The lipid content of wild rice ranged from 0.7 to 1.1%, compared with 2.7% in regular brown rice. The lipids of wild rice comprised mainly linoleic (35–37%) and linolenic (20–31%) acids. Other fatty acids included palmitic (14.1–18.4%), stearic (1.1–1.3%), and oleic (12.8–16.2%). Wild rice lipids contained very large amounts of sterols, ranging from 70 g/kg for a Saskatchewan sample to 145 g/kg for Minnesota Naturally Grown Lake and River Rice. The main sterols found in an unsaponified fraction were: campesterol (14–52%), β-sitosterol (19–33%), Δ5-avenasterol (5–12%), and cycloartenol (5–12%). Some of sterols, γ-oryzanols, were present as the phenolic acid esters; the amount ranged from 459 to 730 mg/kg in wild rice lipids. The largest amounts of tocopherols and tocotrienols, 3682 and 9378 mg/kg, were observed in North Western Ontario wild rice samples, whereas the lowest were 251 mg/kg in an Athabasca Alberta sample and 224 mg/kg in regular long-grain brown rice. The α isomer was the most abundant among tocopherols and tocotrienols. The results of this study showed that wild rice lipids contain large amounts of nutraceuticals with proven positive health effects.  相似文献

Antioxidant properties of mono‐ and dihydroxyphenolic acids and their alkyl esters were examined, with emphasis on the relationship between their molecular structure and antioxidant activity. Test media with different tocopherol level were used for determining the oxidative stability: original refined sunflower oil (total tocopherols 149.0 mg/kg), partially tocopherol‐stripped sunflower oil (total tocopherols 8.7 mg/kg) and distilled fatty acid methyl esters (FAME) as a tocopherol‐free medium. The chemical reaction of tocopherols with diazomethane tested for the purpose to eliminate their antioxidant activity failed due to the negligible degree of methylation of hydroxyl group in the tocopherol molecule. Caffeic acid and protocatechuic acid (3,4‐dihydroxyphenolic acids) and their alkyl esters were found to be more active antioxidants than monohydroxyphenolic acid (p‐hydroxybenzoic acid), 2,5‐dihydroxyphenolic acid (gentisic acid), 3‐methoxy‐4‐hydroxyphenolic acids (vanillic and ferulic acids) and their corresponding alkyl esters. Naturally present tocopherols in refined sunflower oil proved to have a synergistic effect on gentisic acid but not on its alkyl esters. In contrast, tocopherols showed an antagonistic effect on alkyl esters of caffeic acid, because their protection factors decreased with increasing level of tocopherols in the test medium. Moreover, the antioxidant activity of these alkyl esters decreased with increasing length of their alkyl chain in conformity with the polar paradox hypothesis. Practical applications: Tocopherols as naturally present antioxidants influence considerably the antioxidant activity of other antioxidants added to plant oils used as a test medium. Distilled fatty acid methyl esters prepared from refined sunflower oil may serve as an optimal tocopherol‐free test medium. Some alkyl esters of phenolic acids were evaluated to be applicable as natural more lipophilic antioxidants in comparison with phenolic acids.  相似文献

Currently the most common microalgae used for commercial production of omega‐3 fatty acids are marine derived, particularly from family members of Thraustochytriaceae and Crypthecodiniaceae. Thraustochytrids are marine heterotrophic fungi like microorganisms known to produce several commercially interesting biotechnological compounds including omega‐3 fatty acids such as docosahexaenoic acid (DHA), docosapentaenoic acid (DPA) and eicosapentaenoic acid (EPA), carotenoids, sterols, exopolysaccharides and enzymes. Therefore, exploring the potential of thraustochytrids has much to offer to the commercial production of bioactive compounds. In response to growing demand for omega‐3 fatty acids, various isolation, fermentation and lipid recovery strategies have been developed in recent years.  相似文献

Enzymatic esterification and supercritical fluid extraction was used to produce phytosterol esters from soybean oil deodorizer distillates. The raw material was first subjected to a two‐step enzymatic reaction; the product obtained mainly comprised fatty acid ethyl esters, tocopherols and phytosterol esters, together with minor amounts of squalene, free fatty acids, free sterols and triacylglycerols. The phytosterol esters were then purified from this mixture using supercritical carbon dioxide. Experimental extractions were carried out in an isothermal countercurrent column (without reflux), with pressures ranging from 200 to 280 bar, temperatures of 45–55 °C and solvent‐to‐feed ratios from 15 to 35 kg/kg. Using these extraction conditions, the fatty acid esters were completely extracted and, thus, the fractionation of tocopherols and phytosterol esters was studied. At 250 bar, 55 °C and a solvent‐to‐feed ratio of 35, the phytosterol esters were concentrated in the raffinate up to 82.4 wt‐% with satisfactory yield (72%).  相似文献

The seeds of the evergreen Buxus‐tree, Buxus sempervirens, contain a yellowish oil which represents up to 42% of the dry weight. The oil consists, in comparison to the lipids of jojoba fruits (Simmondsia chinensis), of only 3.6% wax esters. 95% of the oil consist of triglycerides, the typical storage substances of oil fruits. Phospholipids occur with 0.4% and glycolipids with 0.13%. The fatty acid patterns of these lipids correspond to the typical fatty acid compositions of the respective lipid classes. In the wax esters monoenoic fatty acids and saturated fatty acids with 16 and 18 carbon atoms prevail. The glycolipid and phospholipid fractions are characterized by a high portion of dienoic and monoenoic as well as saturated fatty acids having 16 and 18 carbon acids.  相似文献

Degras contains a complex mixture of lipids comprised of branched and normal chain fatty acids, hydroxy acids, sterols, sterol esters and long chain wax esters. There are no glycerides in degras. This paper is a report on the composition of the branched and normal chain fatty acids. Preparative techniques of thin-layer chromatography were used to isolate the fatty acids from the other lipid classes. Gas chromatography was used on three different stationary phase separations of the fatty acid methyl esters. Identifications of the composition were based on a combination of techniques and known standards. The fatty acid composition of the lipids from the sponge Verongia aerophoba was investigated and 60 acids were identified. Two of them were new and their structures were elucidated by gas chromatography‐mass spectrometry. These acids were identified as 20‐methylhexacosanoic and Δ5, 9, 22‐nonacosatrienoic. Only 13 sterols were present, and aplysterol predominated. In the volatile fraction 13 compounds were identified, mainly fatty acids, their esters and hydrocarbons, while in the n‐butanol fraction we found mainly free fatty acids and free amino acids.  相似文献

The skin surface lipid of the dog has been reported to contain a high proportion of diol diesters having a lower mobility on thin layer chromatography than diesters from other species in spite of containing similar fatty acid and diol components. In the present study, dog skin surface lipid was separated by preparative thin layer chromatography into sterol esters (42%), wax diesters (32%), free sterols (9%), polar lipids (7%), and unidentified components (10%). The diesters contained 1,2-diols, each esterified with one long chain fatty acid and one isovaleric acid moiety. The diols were principally branched chain C21 and C22 compounds while the long chain fatty acids esterified with them were mainly C20 and C21 branched compounds. The fatty acids from the sterol esters were mostly saturated, branched chain C19 to C23, together with 7% of straight chain monoenoic acids, principally C21 and C22. There were only trace amounts of free sterols other than cholesterol, while the esterified sterols contained 96% cholesterol and 4% lathosterol.  相似文献

The China-chestnuts (Sterculia monosperma, Ventenat) were examined for their fatty acid composition by gas liquid chromatography, infrared and nuclear magnetic resonance spectroscopy. The oil in nuts contained cyclopropene fatty acids (CPFA) determined as silver nitrate derivatives of their esters. The values (area %) for the major fatty acids as methyl esters were 23.47% C16:0, 1.25% C16:1, 2.56% C18:0, 24.89% C18:1, 18.24% C18:2, 5.40% dihydrosterculic, 3.21% C18:3 + C20:0 and 19.15% sterculic. The proportion of CPFA in the oil did not decrease upon cooking the nuts.  相似文献

The reversible endogenous hyperlipemia in dogs, elicited by the detergent Triton which was given intravenously, was used to study the interrelations of serum lipids. In the cholesterol ester fraction an increase occurs in both monounsaturated and in saturated fatty acids, excepting myristic; while a decrease occurs in polyunsaturated fatty acids. The fatty acids of cholesterol esters of normal dogs contain 22% oleic acid, and only 24% when serum lipids are increased to almost double their normal value (TC=400–500 mg/100 ml). However there is a critical level above which a rapid rise in oleic acid occurs and, in severe hyperlipemia (TC=1500 ±430 mg/100 ml), this acid constitutes almost half of the esterified fatty acid component. Since there is no evidence that Triton directly regulates fatty acid synthesis, the lipid fraction-fatty acid interrelationship may be secondary to lipid mobilization from endogenous sources. This concept is supported by the fact that the increased serum fatty acids are only those which can be synthesized by animals. It is suggested, on the basis of a marked increased of endogenously produced fatty acids, that, at critical lipid levels, shortage of polyunsaturated fatty acids from exogenous sources occurs. This might be of sufficient degree to accelerate fatty acid synthesis to meet the need for fatty acids for energy requirements. There may also be need of fatty acid for esterification of chiefly the accumulated free cholesterol split from lipoprotein by Triton. Triton-induced changes in cholesterol ester fatty acids result in patterns which closely resemble those in the adipose tissue of dog and man and in the serum of human endogenous hyperlipemia.  相似文献

Dietary unsaturated fatty acids, such as oleic acid, have been shown to be covalently incorporated into a small subset of proteins, but the generality and diversity of this protein modification has not been studied. We synthesized unsaturated fatty‐acid chemical reporters and determined their protein targets in mammalian cells. The reporters can induce the formation of lipid droplets and be incorporated site‐specifically onto known fatty‐acylated proteins and label many proteins in mammalian cells. Quantitative proteomics analysis revealed that unsaturated fatty acids modify similar protein targets to saturated fatty acids, including several immunity‐associated proteins. This demonstrates that unsaturated fatty acids can directly modify many proteins to exert their unique and often beneficial physiological effects in vivo.  相似文献

Total lipids in medium and low erucic acid cul-tivars of rapeseed(Brassica napus var. Sinus and Janpol, resp.) were fractionated into polar and non-polar constituents. Triglycerides, diglycerides, mono-glycerides, free fatty acids, sterol esters, sterols, phos-pholipids and glycolipids were quantitated and their fatty acid compositions determined. Triglycerides and phospholipids constituted 92 and 3.4%, resp., of the total lipid from each cultivar. Triglycerides were lower in saturated fatty acids but higher in monoun-saturated acids and linolenic acid than other lipid fractions. Phospholipids and glycolipids were higher in linoleic acid content than other lipid classes. Generally, the reduction in long chain, monoenoic, fatty acids was associated with a corresponding increase in oleic acid in most low erucic acid frac-tions.  相似文献

Free and Bound Sterols in Raw and Refined Palm Oils, Part II: Sterol Containing Lipoproteins Twelve lipid fractions were isolated from raw palm oil which contain beside sterols, fatty acids and pigments also low amounts of phospholipids and proteins. The very stable complexes can only be decomposed by acid hydrolysis. The composition of sterols and fatty acids in the hydrolysate and the phosphor and nitrogen content in the purified lipid fractions were determined. According to composition and chemical behaviour of these lipid complexes they are sterol containing lipoproteins with strong lipophilic character. In some of these fractions the extremely high cholesterol content is striking which is partly more than 50% of the total sterols. The release of sterols from these complexes during refining might be the reason for the high cholesterol content in some refined palm oils.  相似文献

The sterol composition of free sterol and steryl ester fractions of the fish parasiteParatenuisentis ambiguus was determined. In addition, the fatty acid composition of various neutral lipid classes, i.e., wax esters, steryl esters, triacylglycerols and free fatty acids, as well as the composition of the 1-O-alkyl moieties of total ether glycerolipids of the parasite, were investigated. The results of these studies were compared with those obtained on the intestinal tract tissue of its host, the eel (Anguilla anguilla). Cholesterol is the major sterol in bothP. ambiguus andA. anguilla. However, the sterols ofP. ambiguus contain high proportions (>20%) of other sterols, such as campesterol and various dehydrosterols. [e.g., 7-dehydrocholesterol and cholesta-5,22(E)-dienol]. The presence of these minor sterols agrees with the known biotransformations of exogenous sterols in various helminths. Considerable differences are found in the fatty acid composition of neutral lipid fractions, as well as the total lipid extract from the endoparasite as compared to the host tissue. In particular, eicosapentaenoic acid (20∶5n−3), other polyunsaturated fatty acids, such as 20∶4n−6, 22∶5n−3 and 22∶6n−3, as well as long-chain saturated fatty acids, such as 20∶0, are generally enriched in the neutral lipid fractions of the parasite as compared to those of infected eel intestine. The analysis of ether glycerolipids revealed that 1-O-hexadecyl (16∶0) and 1-O-hexadecenyl (16∶1) moieties were present in similar proportions in the ether lipids of bothP. ambiguus and eel intestine, whereas 1-O-octadecyl (18∶0) moieties are more prominent in the parasite and 1-O-octadecenyl (18∶1) moieties in the eel. The results of these studies show thatP. ambiguus has specific mechanisms for the regulation of the sterol and fatty acid composition of its neutral lipids. Dedicated to Professor Helmut K. The effect of temperature on the lipid composition ofCephalosporium falciforme andCephalosporium kiliense, causative agents of maduromycosis, was investigated. The fungi were grown at 28.5 C and 37 C in a chemically defined medium. The lipids were solvent extracted, purified on Sephadex, and separated into their component classes by silicic acid column chromatography. Five lipid classes were found: (a) sterol esters, (b) triacylglycerides, (c) free fatty acids, (d) sterols, and (e) phospholipids. Fatty acids were analyzed by gas liquid chromatography and phospholipids by thin layer chromatography. Temperature induced changes of varying degrees occurred in both the fatty acid phospholipid fractions of each organism.  相似文献

Seven methods were used to compare the efficiency of total lipid extraction from 13 samples of eight different food products. The methyl esters of fatty acids and the butyrate esters of sterols were prepared and analyzed by gas liquid chromatography. On the basis of total lipid recovered and amounts of fatty acids and sterols present, a chloroform: methanol procedure was selected as the most effective method.  相似文献

Investigations on the Lipids of Potatoes Gas chromatographic investigations on the fatty acid composition of the total lipids of freeze-dried potato showed that 90% of the fatty acids consist of linolenic, linoleic, palmitic and stearic acids. In all, 31 different fatty acids were detected and identified. Noticeable amounts of odd-chain fatty acids and those having more than 20 C-atoms (up to C30) were found. Eight different varieties of potato were investigated. Difference in the fatty acid composition of the individual varieties was not appreciable. Experiments on the group separation of lipids showed that they contain a large amount of phospholipids (especially lecithin and cephalin). Appreciable amounts of triglycerides were also found, however, the sterol esters, sterols and free fatty acids were present to a lesser extent.  相似文献

We studied the copepod Limnocalanus macrurus for seasonal variation in the composition of fatty acids, wax esters and sterols in large boreal lakes, where it occurs as a glacial‐relict. Vast wax ester reserves of Limnocalanus were accumulated in a period of only two months, and comprised mono‐ and polyunsaturated fatty acids (PUFA) and saturated fatty alcohols. In winter, the mobilization of wax esters was selective, and the proportion of long‐chain polyunsaturated wax esters declined first. PUFA accounted for >50 % of all fatty acids throughout the year reaching up to ca. 65 % during late summer and fall. Long‐chain PUFA 20:5n‐3 and 22:6n‐3 together comprised 17–40 % of all fatty acids. The rarely reported C24 and C26 very‐long‐chain PUFA (VLC‐PUFA) comprised 6.2 ± 3.4 % of all fatty acids in August and 2.1 ± 1.7 % in September. The VLC‐PUFA are presumably synthesized by Limnocalanus from shorter chain‐length precursors because they were not found in the potential food sources. We hypothesize that these VLC‐PUFA help Limnocalanus to maximize lipid reserves when food is abundant. Sterol content of Limnocalanus, consisting ca. 90 % of cholesterol, did not show great seasonal variation. As a lipid‐rich copepod with high abundance of PUFA, Limnocalanus is excellent quality food for fish. The VLC‐PUFA were also detected in planktivorous fish, suggesting that these compounds can be used as a trophic marker indicating feeding on Limnocalanus.  相似文献
