The aim of the work was to evaluate the profile of free amino acids (FAA) as the possible precursors of biogenic amines (BAs) in different varieties and hybrid lines of Lupinus luteus and Lupinus angustifolius and its changes during fermentation. Lupins have high amounts of FAA, and therefore, significant contents of BAs by the action of bacterial amino acid decarboxylases can be formed. In view of this, the effect of three Pediococcus pentosaceus strains KTU05‐8, KTU05‐9 and KTU05‐10 on BA formation during lupin fermentation was studied. The formation of BAs was monitored during 48‐h fermentation at solid‐state conditions and compared with that in samples after submerged fermentation and in the control nonfermented samples. The lupin variety, fermentation conditions and the Pediococcus strain were found to have the significant effect on the FAA profile and BA contents in fermented lupin; the interaction between analysed factors was F(5.989) = 1755.321 (< 0.0001) and F(5.660) = 130.736 (< 0.0001), respectively. A weak correlation was found between amino acid His and histamine (r = 0.3709; = 0.0005) and between Phe and phenylethylamine (r = 0.3914, = 0.0002) in lupin samples, but the significant correlations between amino acid Tyr and tyramine and between Lys and cadaverine were not found. By optimising the fermentation technology, it is possible to increase the nutritional value and functionality of lupin.  相似文献

鱼腐乳发酵过程中游离氨基酸含量及抗氧化活性的变化   总被引:3,自引:0,他引:3  
利用总状毛霉(Mucor racemosus)和红曲霉(Monascus)F1对鱼豆腐进行发酵研制鱼腐乳,对鱼腐乳发酵过程中的游离氨基酸及抗氧化活性的变化规律进行分析。结果表明:在发酵过程中,鲜味氨基酸、必需氨基酸、疏水氨基酸、总氨基酸的含量都呈逐渐升高的趋势,在后熟第28天时分别达到了138.57 mg/100 g、491.68 mg/100 g、340.06 mg/100 g、915.77 mg/100 g。在发酵过程中DPPH自由基清除率和羟自由基清除率也呈逐渐升高的趋势,在后熟第28天时分别达到70.30%和63.11%,分别比发酵开始时提高了53.09%和24.14%。  相似文献

以自然发酵酸菜为研究对象,利用氨基酸自动分析仪,对酸菜中游离氨基酸的种类及含量进行了测定。结果表明,酸菜中富含17种呈味氨基酸,总含量达635 mg/L。其中,苏氨酸含量最高,其次是谷氨酸、丙氨酸、丝氨酸、缬氨酸和天门冬氨酸等。酸菜中含有7种为人体必需氨基酸,其含量占氨基酸总含量的41.73%。这些呈味氨基酸对酸菜特有风味的形成,具有重要作用。  相似文献

应用HPLC对我国4个产区多个品种葡萄酒酿造过程样品中氨基酸含量变化趋势进行了研究,结果表明,L-脯氨酸是所有葡萄汁中氨基酸的主体,也是各样品含量差异最大的氨基酸;红葡萄酒中含脯氨酸、苏氨酸、赖氨酸等20种氨基酸,其中以脯氨酸含量最高,发现不同葡萄品种之间游离氨基酸种类和含量有差别,这与葡萄品种、气候、发酵工艺有关。  相似文献

龙眼干白葡萄酒发酵过程中生物胺和氨基酸含量的变化   总被引:1,自引:1,他引:1  
本研究利用高效液相色谱技术分析了龙眼干白葡萄酒酒精发酵和苹乳发酵过程中8种生物胺和22种氨基酸含量的变化。结果表明,在酒精发酵过程中8种生物胺含量均很低,而在苹乳发酵过程中迅速增加。发酵结束时干白葡萄酒中亚精胺和乙醇胺含量最高,其次为组胺和羟色胺。这4种生物胺的前体氨基酸在苹乳发酵阶段含量没有明显变化,而其它大部分氨基酸在酒精发酵过程中含量下降,在苹乳发酵过程中含量呈现不同程度升高。因此,我们认为:葡萄酒发酵过程中氨基酸含量变化与其对应生物胺的变化之间没有相关性,葡萄酒中生物胺的组成比例可能主要取决于乳酸菌中氨基酸脱羧酶的种类和活性。  相似文献

研究了蔬菜腌渍发酵过程中添加乳酸菌纯培养液对亚硝酸盐含量变化的影响。实验结果表明,接种乳酸菌能降低蔬菜腌渍发酵过程中亚硝酸盐含量。4组乳酸菌腌渍发酵实验中,接种混合菌种(干酪乳杆菌∶鼠李糖乳杆菌∶植物乳杆菌=1∶1∶1)对蔬菜湿腌发酵时菜料和菜汤的亚硝酸盐含量降低效果最佳,接种植物乳杆菌对蔬菜干腌发酵时菜料亚硝酸盐含量降低作用最显著。  相似文献

利用红酸汤为原料,以总酸、亚硝酸盐、pH、还原糖、可溶性固形物、水分、抗坏血酸为检测指标,分析不同发酵时间自然与乳酸菌强化发酵的红酸汤品质变化规律。结果表明,在整个发酵过程中,自然与乳酸菌强化发酵的红酸汤中还原糖、抗坏血酸、可溶性固形物均呈逐渐下降的趋势;总酸含量和pH均在第6天达到峰值,分别为10.11 g/kg和3.04与10.26 g/kg和2.84;水分含量在第6天达到最低,分别为84.83%与84.18%;亚硝酸盐含量最高分别为0.052 2 mg/kg与0.030 4 mg/kg,未超标。因此,与自然发酵相比,乳酸菌强化发酵明显减少亚硝酸盐含量,缩短了红酸汤发酵周期,但自然发酵红酸汤品质更好。  相似文献

利用优选的复合菌群对米饭和蚕蛹水解液的混合物进行发酵试验,通过单因素试验和正交试验发现,在米饭发酵12h时添加水解度为20%,添加量为饭重20%的蚕蛹水解液进行混合发酵,最终发酵产品的氨基氮含量可提高11倍,且有效地保留蚕蛹水解液的营养成分,具有发酵饮料的独特风味,可得到一种新型的氨基酸增强型发酵饮料。  相似文献

Cucumbers are preserved commercially by natural fermentations in 5% to 8% sodium chloride (NaCl) brines. Occasionally, fermented cucumbers spoil after the primary fermentation is complete. This spoilage has been characterized by decreases in lactic acid and a rise in brine pH caused by microbial instability. Objectives of this study were to determine the combined effects of NaCl and pH on fermented cucumber spoilage and to determine the ability of lactic acid bacteria (LAB) spoilage isolates to initiate lactic acid degradation in fermented cucumbers. Cucumbers fermented with 0%, 2%, 4%, and 6% NaCl were blended into slurries (FCS) and adjusted to pH 3.2, 3.8, 4.3, and 5.0 prior to centrifugation, sterile-filtration, and inoculation with spoilage organisms. Organic acids and pH were measured initially and after 3 wk, 2, 6, 12, and 18 mo anaerobic incubation at 25 °C. Anaerobic lactic acid degradation occurred in FCS at pH 3.8, 4.3, and 5.0 regardless of NaCl concentration. At pH 3.2, reduced NaCl concentrations resulted in increased susceptibility to spoilage, indicating that the pH limit for lactic acid utilization in reduced NaCl fermented cucumbers is 3.2 or lower. Over 18 mo incubation, only cucumbers fermented with 6% NaCl to pH 3.2 prevented anaerobic lactic acid degradation by spoilage bacteria. Among several LAB species isolated from fermented cucumber spoilage, Lactobacillus buchneri was unique in its ability to metabolize lactic acid in FCS with concurrent increases in acetic acid and 1,2-propanediol. Therefore, L. buchneri may be one of multiple organisms that contribute to development of fermented cucumber spoilage. PRACTICAL APPLICATION: Microbial spoilage of fermented cucumbers during bulk storage causes economic losses for producers. Current knowledge is insufficient to predict or control these losses. This study demonstrated that in the absence of oxygen, cucumbers fermented with 6% sodium chloride to pH 3.2 were not subject to spoilage. However, lactic acid was degraded by spoilage microorganisms in reduced salt, even with pH as low as 3.2. Efforts to reduce salt in commercial brining operations will need to include control measures for this increased susceptibility to spoilage. Lactobacillus buchneri was identified as a potential causative agent and could be used as a target in development of such control measures.  相似文献

以宣威火腿为研究对象,利用氨基酸自动分析仪检测宣威火腿不同加工阶段(鲜肉、腌制后90d、210d、270d与360d)的股二头肌肌肉中游离氨基酸含量的变化。结果显示:在腌制过程中,肌肉中游离氨基酸的含量呈现持续上升趋势。其中,腌制360d的肌肉中游离氨基酸的含量最高,此阶段含量较高的游离氨基酸分别为谷氨酸、赖氨酸、丙氨酸和亮氨酸,较低的分别为组氨酸、蛋氨酸、苏氨酸和酪氨酸。  相似文献

以黄瓜和奶粉为原料,研究了黄瓜酸奶的发酵工艺条件。通过单因素试验考察了黄瓜浆添加量、蔗糖添加量、奶粉添加量、发酵时间、发酵温度和接种量对黄瓜酸奶的感官评价的影响,选出对黄瓜酸奶感官评价影响较大的因素和水平,进行正交实验,最后获得了黄瓜酸奶发酵的最佳工艺条件。结果表明,黄瓜酸奶发酵的最佳的工艺条件:黄瓜浆添加量9%(体积分数),蔗糖添加量80 g/L(质量浓度),奶粉添加量110 g/L(质量浓度),接种量4%(体积分数),发酵时间4 h。利用本工艺得到了一种具有黄瓜特有清爽口味的黄瓜酸奶。  相似文献

Changes in amino acids and ammonium were monitored during the alcoholic fermentation of strawberry and persimmon purees. Fermentations were carried out either by autochthonous or by commercial yeasts. The amino acid content in strawberry and persimmon was lower than that of grapes but enough to successfully perform the alcoholic fermentation, showing a different consumption pattern. Arginine, although is not present in the most strawberry substrates, appears in strawberry wines (2.75–3.36 mg L?1). Additionally, as opposed to grape wine, an exceptional high consumption of proline was observed during the alcoholic fermentation of strawberry purees. The consumption of amino acids was highly influenced by the substrate and the S. cerevisiae strain used for the fermentation process. These results were confirmed by principal component analysis, which was able to group the samples based on substrate, harvest or yeast strain, considering the amino acids as variables.  相似文献

对四川传统发酵肉中乳酸菌进行分离鉴定,并对其发酵特性进行研究。以四川腊肉为研究对象,采用平板划线法对乳酸菌进行分离纯化,利用16S r DNA的序列测定技术对其鉴定,并对分离菌株在不同温度、p H、Na Cl浓度、亚硝酸盐浓度条件下的生长代谢、产酸能力进行研究,并对发酵产物中游离氨基酸进行测定分析。结果表明:筛选出的一株优势乳酸菌经分子生物学鉴定为戊糖片球菌(Pediococcus pentosaceus)。分离菌株对数生长期为6~18 h;最适发酵温度30℃,发酵p H5.5;对Na Cl及Na NO2耐受能力分别高达10%和150 mg/L;其代谢产物中共测出16种游离氨基酸,共包含5种人体必需氨基酸。   相似文献

该研究对酿酒酵母(Saccharomyces cerevisiae)QY-1发酵过程中的OD600 nm值、pH值、葡萄糖消耗量、乙醇生成量、有机酸及游离氨基酸种类及生成量进行监控和分析。结果表明,随着发酵时间的延长,发酵液的pH值与OD600 nm值呈负向耦合;乙醇的生成量与葡萄糖消耗量呈负向耦合,发酵36 h时,乙醇含量最高,为(26.87±2.76) g/L;有机酸含量呈现先升高后稳定的趋势,最高达(3.242±0.213) g/L,其中乙酸含量最高;游离氨基酸含量呈现先升高后降低的趋势,最高达(5.57±0.08) mg/L,其中谷氨酸含量最高。S. cerevisiae QY-1具有较强的产酸和氨基酸能力。  相似文献

The objective of this research was to improve the volatile flavour profile of a pork trimming hydrolysate by lactic acid bacteria (LAB) fermentation. Five probiotic strains and one dairy strain were used. The dominant aliphatic aldehydes (80.90%) in the unfermented hydrolysate were greatly reduced to <15% by converting into respective carboxylic acids and alcohols after fermentation. Strain GG was the only LAB that produced a significant level of succinic acid (1.62 mg mL−1) and ketones (14.92%) (mainly diacetyl and acetoin) in the hydrolysate. Strains 299V and GG showed moderate proteolytic activities as their amino acid content reduced to 126.05 and 219.14 mg per 10 mL compared to the control (316.45 mg per 10 mL) after fermentation, respectively. However, little amino acid-derived volatiles were found in all fermented samples. These findings indicate that LAB fermentation modulates the flavour compounds of pork hydrolysates, which has the potential to be developed to novel flavouring materials.  相似文献

采用碱提法最优条件提取并酸沉得到腰果蛋白,研究了p H和温度对腰果蛋白的溶解性、起泡性及起泡稳定性、乳化性及乳化稳定性、持油性等功能特性的影响,并分析了腰果蛋白的氨基酸组成。结果表明:腰果蛋白的溶解性随p H的增加呈先降低后升高的趋势,在p H4附近溶解度最低,仅为15.90%。起泡性和乳化性随p H的变化曲线与溶解度曲线一致,在p H10时起泡性和乳化性最好,分别为13.92%、24.70 m2/g。腰果蛋白的起泡稳定性随p H的增加而逐渐增加,在p H8时达到最大为9.42%,而后趋于稳定。在碱性环境中,腰果蛋白会表现出较好的乳化稳定性,并且在80℃时其持油性最佳,为2.84 g/g。氨基酸分析表明,腰果蛋白中含有17种氨基酸,其中7种是人体必需氨基酸,含量皆高于FAO/WHO/UNO成人推荐标准,赖氨酸为第一限制性氨基酸,谷氨酸和精氨酸含量最高,分别为22.46%和9.02%。   相似文献

为了评价腌制加工对麻竹笋氨基酸含量的影响,以大叶麻竹笋为实验原料,研究了麻竹笋氨基酸含量在腌制加工前后的变化,并比较了不同腌制盐浓度之间的差异。结果表明:与鲜样相比,腌制加工以后麻竹笋中的总氨基酸含量明显下降,在3%、11%和19%盐浓度的腌制样品中总氨基酸含量分别降低了58.1%、54.8%和53.1%,同时,腌制加工后麻竹笋中呈味氨基酸的含量和组成比例发生了变化。此外,麻竹笋鲜样中7种必需氨基酸的含量占氨基酸总量的36.8%,而3种腌制样品中这一比例分别为42.7%、41.8%和42.7%。所得研究结果将为麻竹笋腌制加工过程中食用品质的评价提供理论依据。   相似文献
