Bioactive milk peptides are protein fragments with potential biological activities. Over the past decades, studies have mainly focused on the health benefits of these bioactive peptides; however, only a few studies have evaluated their safety. In this review, we describe the scientific literature regarding their effects on both cell lines and on animal and human models, in terms of allergenicity, cytotoxicity, genotoxicity and mutagenicity.  相似文献

In this study we evaluated the short‐term oral antihypertensive effect of several peptide sequences isolated from casein fractions, previously characterized as in vitro angiotensin‐converting enzyme‐inhibitors, in spontaneously hypertensive rats (SHR). Systolic blood pressure (SBP) and the diastolic blood pressure (DBP) of the rats were measured by the tail cuff method before administration and also 2, 4, 6, 8 and 24 h post‐administration. The sequences LVYPFTGPIPN, HLPLP, IAK, YAKPVA and WQVLPNAVPAK showed a clear decrease in SBP and DBP in SHR. HPHPHLSF caused a significant decrease of the DBP in the SHR, but this sequence did not modify the SBP of these animals in a significant manner. KKYNVPQL did not modify SBP in the SHR, and caused a slight, but significant and maintained, decrease in DBP in these animals. SBP and DBP returned to baseline values 24 h post‐administration of all peptides. In conclusion, these peptides are bioactive ingredients with potential benefit in the prevention and treatment of hypertension or other associated disorders.  相似文献

The present work analysed the rheological properties, water‐holding capacity (WHC) and syneresis of instant puddings prepared with the emulsifying salt‐containing milk powders (ESMPs), which contained different proportions of disodium phosphate (DSP) and tetrasodium pyrophosphate (TSPP). Rheological measurements revealed that increasing the proportion of TSPP in the ESMPs increased gel stiffness (indicated by high values of G?, G* and consistency index) and WHC, and decreased the tan δ and syneresis of the instant puddings. It was concluded that different interactions can be assumed dependent on the proportion of DSP and TSPP in the ESMPs added to the pudding system, and a mechanism was proposed for observed changes.  相似文献

Milk permeate was obtained from microfiltration (MF) and concentrated to produce milk‐derived whey protein concentrate (MWPC); MF at low temperatures yielded permeate with caseins (MWPC‐HC), and at higher MF temperatures, low concentrations of caseins were present (MWPC‐LC). MWPC samples were compared to whey protein concentrates (WPCs). Solutions of MWPC were less turbid and produced larger foam overruns and more stable foams than WPC. MWPC‐HC solutions produced the most stable foams. MWPC contained fewer types and lower relative quantities of volatile compounds than WPC before and after storage. Compared with WPC, MWPC have superior sensory, foaming and storage properties.  相似文献

本研究利用陕西省西安市草滩牛场第五奶牛场62头泌乳牛2003年8个月的DHI记录资料,对泌乳月份及部分乳成分与牛乳中体细胞数的关系进行了研究.结果表明,体细胞数与日产奶量,日产奶量与乳蛋白率、乳脂率呈极显著的负相关(P<0.01),体细胞数与乳蛋白率与乳脂率之间无显著相关关系(P>0.05),乳蛋白率与乳脂率呈极显著的正相关(P<0.01).5、7和10月份样品平均体细胞数较高,分别为789×103mL-1,696×103mL-1、1031×103mL-1,3月份样品平均体细胞数最低为390×103mL-1.  相似文献

The present study investigated milk quality through changing physicochemical properties by using high‐energy emulsification (microfluidisation, MF; and ultrasonication, US). The results will aid in making better quality dairy products. MF was more effective in changing the physicochemical properties of milk; compared to US, MF resulted in smaller, monodispersed particles, and MF better inactivated protease activity without changing the pH, lipid oxidation and thermal denaturation of protein during storage periods.  相似文献

The objective of this study was to better understand the gelation behaviour of a mixed soya milk–cow's milk system, by forming different reactive protein particles using rennet and glucono‐δ‐lactone. The formation of the structure of these mixed gels was followed, for the first time, using diffusing wave spectroscopy and rheology. When only one protein source was induced to gel, protein aggregation was hindered, as shown by the slower increase in apparent radius after the gel point. Confocal microscopy analysis of the gel networks suggested that while milk gels exhibited large pores with interconnecting strands of protein, soya gels appeared as densely packed protein aggregates, and mixed soya milk gels appeared as a network of aggregated proteins. This study demonstrated that by modulating the reactivity of the building blocks, it is possible to fine‐tune structure formation of these mixed protein gels.  相似文献

选择8头泌乳时间为(84±17)d,体重为(569±47)kg的经产中国荷斯坦奶牛作为试验动物,研究了日粮中不同比例小麦替代玉米对奶牛乳脂合成和乳脂脂肪酸(FA)组成的影响。采用重复4×4拉丁方设计,分别饲喂含不同比例粉碎小麦(GW)和粉碎玉米(GC)的日粮,4个处理组分别为(DM基础):W0组(0%GW+27.9%GC),W9.6组(9.6%GW+19.2%GC),W19.2组(19.2%GW+9.6%GC)和W28.8组(28.8%GW+0%GC)。结果表明:随着日粮中小麦比例的增加,瘤胃p H值线性降低(P=0.01);产奶量未受显著影响,平均为27.1 kg/d;乳脂率(P=0.02)、乳脂产量(P=0.02)和3.5%乳脂校正乳(FCM)(P=0.05)产量呈线性降低趋势;乳脂FA(g/100 g总FA)中C16∶0呈线性(P0.01)和二次曲线增加(P0.01),而C18∶0和FAC16呈线性(P0.01)和二次(P=0.03和0.01)曲线降低;C8∶0(P=0.01)、C15∶0(P=0.06)、C16∶1(P=0.01)和C18∶1n9t(P=0.10)呈线性增加趋势,而C14∶0(P=0.09)和C18∶2n6c(P=0.08)呈线性降低趋势;与W0和W9.6组相比,W19.2和W28.8组乳脂C16∶0、C16∶1及C16∶0与C16∶1之和显著增加(P0.01),而C18∶0显著降低(P0.01)。结果提示:奶牛日粮中可用适当比例的粉碎小麦来替代玉米,替代比例不宜超过日粮DM的19.2%;高比例小麦日粮饲喂奶牛(W28.8组)可引起瘤胃p H值和乳脂率下降,进一步引起乳脂FA组成发生变化。  相似文献

The renneting properties of whey protein‐free, UHT‐heated (140 °C/10 s) casein dispersions were investigated as a function of casein and NaCl concentration. It was found that the rennet coagulation time and gel firmness can be optimised when the whey protein‐free casein concentration is increased, while the added NaCl concentration is kept low. The strongest gel firmness occurs at 0.05 and 0.08 m NaCl addition and at a micellar casein concentration between 6.0 and 6.6 g/100 mL. Weak rennet gels were formed at 3.0–3.6 g/100 mL casein at all NaCl concentrations tested.  相似文献

The purpose of this research was to evaluate the texture of regular (12%), low fat (6%), and fat-free vanilla (0.5%) ice creams by sensory and instrumental analyses. The low fat and fat free ice cream were prepared using a whey protein based fat replacer (Simplesse ® 100) as the fat replacement ingredient. Two processing trials with continuous commercial-like process conditions were undertaken. Sensory analyses disclosed that ice creams containing 6% of fat replacer in place of or with milk fat had no demonstrable effect on vanillin flavour. While the sensory attributes of the low fat samples were comparable to the regular vanilla ice cream, the trained sensory panel rated the fat free ice cream to have lower viscosity, smoothness and mouth coating properties. Instrumentally determined apparent viscosity data supported the sensory data. Compared with the fat replacer, milk fat significantly increased the fresh milk and cream flavours of the ice cream. Results emphasized the importance of fat as a flavour modifier and the improvement of texture by addition of Simplesse ® 100.  相似文献

Skimmed milk used for set‐style yoghurt production was treated with lactase at 0.1 g/kg for 30 min to give partial lactose hydrolysis and then treated with horseradish peroxidase and glucose oxidase at 200 and 6 kU/kg protein to result in protein cross‐linking. Two treatments conferred higher apparent viscosity on the milk, but led to the yoghurt prepared from it with insignificantly different chemical compositions to the counterparts (> 0.05). The prepared yoghurt also showed decreased syneresis (about 17.7%), higher apparent viscosity and viscoelastic modulus, firmer texture and finer microstructure. This ternary enzyme system is a potential approach to improving the quality of set‐style yoghurt.  相似文献

A multiplex PCR procedure based on genes iap (coding for the invasion‐associated 60 kDa protein or p60) and hly (coding for listeriolysin O) of Listeria monocytogenes was to used to investigate the status of its contamination along the major milk‐processing environments. Duplex PCR amplified fragments of the iap gene at about 1.45 kb from all strains of major Listeria spp. tested and a 420 bp fragment of hly from L. monocytogenes reference strains. With triplex PCR, all L. monocytogenes strains exhibited a 420 bp fragment of hly as well as a 700 bp fragment of iap instead of its 1.45kb PCR product. The tentative L. monocytogenes isolates (n = 27) out of 566 samples of milk and milk‐processing environments in the PALCAM agar from cultures of buffered listeria enrichment broth were further subjected to both API and triplex PCR identification. Both methods identified the same 20 isolates as L. monocytogenes. The triplex PCR procedure detected as low as 3.2 × 101 cfu mL?1 of listerial cells even in the presence of L. innocua (108 cfu mL?1). It could detect 1.4 × 102 listerial cells mL?1 directly from milk artificially contaminated with the bacteria. Lower levels of L. monocytogenes cells in milk (1.45 × 101 to 1.45 × 100 cfu mL?1) could be detectable if the inoculated milk samples were cultured for 3–6 h. The partial replacement of cocoa butter (CB) with milk fat (MF) strongly influences micro-scale topographic evolution and fat phase crystallisation in milk chocolate. Adding MF reduces the incidence of large surface crystals and the number and diameter of amorphous, welled CB deposits (‘cones’), with a concurrent decrease in initial surface roughness (p < 0.05) and rate of surface coarsening. Presence of MF also slows the solidification of the cones into disorganised crystalline masses. Finally, MF reduces the initial solid fat content, and slows the rate of change in whiteness index, as well as the form V to VI polymorphic transition. Fat crystal growth is accelerated by repeated temperature-cycling (26–29 °C) compared to isothermal conditioning (26 °C). However, cone hardening occurs more rapidly when isothermally-stored. Irrespective of fat composition and storage conditions, fat crystal growth, welling and ultimately fat bloom begin only at specific locations on the chocolate surface, suggesting that chocolate’s microstructural heterogeneity is responsible for distinct surface fat crystallisation pathways.  相似文献
