葡萄果醋饮料的工艺研究   总被引:3,自引:0,他引:3  
以玉米、麸皮为主要原料,经酒精发酵后加入葡萄皮渣进行醋酸发酵而制得葡萄果醋,再经调配,制成风味独特的葡萄果醋饮料。通过单因素实验、正交试验,优化了工艺条件和配方。结果表明,以玉米、麸皮汁为发酵基料,基料的糖含量为16°Brix,pH 3.5,酵母接种量为10%,发酵温度30℃,经酒精发酵6 d,酒精体积分数达到6%~7%时进入醋酸发酵,糖含量4°Bx,醋酸菌接种量10%,发酵温度30℃,醋酸发酵6 d。风味配方为:葡萄果醋10%,柠檬酸0.1%,蔗糖9%。  相似文献

为开发牛蒡葡萄保健醋酸饮料,通过单因素试验、正交试验,对醋酸饮料的发酵工艺参数和口味调配进行系统的研究.结果表明:以牛蒡、玉米、麸皮按1:1:1配制发酵基料,基料含糖量为16°Bx~17°Bx,pH3.5~4.0,酒精发酵的最适条件为发酵温度30℃,酵母接种量10%,发酵时间4d;醋酸发酵的最适条件为温度34℃,接种量10%,时间5d;成品果醋的最佳配比为原醋:蔗糖:柠檬酸=12%:9%;0.1%.  相似文献

以葡萄皮为主要原料,经酒精发酵和醋酸发酵而制得葡萄醋,再经葡萄汁调配而得到葡萄果醋饮料。结果表明以葡萄皮为发酵原料,在含糖量为18%时,酵母接种量为10%,发酵温度22℃~25℃,经酒精发酵14 d,酒精体积分数达到8%~9%,此时醋酸菌接种量10%,间歇振荡进入醋酸发酵,发酵温度18℃~20℃,发酵14 d,其总酸可达3.53%。通过正交试验获得最佳的葡萄果醋饮料配方为每100克葡萄醋向其中加入葡萄果汁200 g并添加总重8%的白砂糖,制得的葡萄醋饮料稳定性好、色泽佳、口感均优良。  相似文献

以玉米、杏浓缩浆渣为主要原料,研制风味独特的杏果醋饮料.通过单因素试验、正交试验确定出果胶酶处理最优工艺条件和果醋饮料最佳配方.结果表明,果胶酶添加量为0.06%,pH值为4.0,50℃处理10h,再加入摹料4倍的水、10%白砂糖、6%檬酸,将糖度调至16°Bx,酸度至pH3.5,得发酵基料,经酒精发酵、醋酸发酵制得纯果醋.果醋饮料最佳配方为杏果醋用量为50mL,柠檬酸用量为80mg,蔗糖用量为9g,乳酸钙用量0.02g.  相似文献

对甜柚皮果醋的生产工艺条件进行了探讨,以甜柚皮渣和加工下脚料为主要原料,采用液体发酵法,经水解、酒精发酵及醋酸发酵等工序酿制果醋,通过单因素预试验、酒精发酵正交试验、醋酸发酵正交试验,优化了工艺条件和配方。结果表明,以甜柚皮渣和白砂糖为发酵基料的最佳酒精发酵条件为:安琪酵母接种量0.107 g/m L、含糖量18°Bx、发酵温度30℃,经酒精发酵4 d,酒精度达到12.0%~13.5%vol时进入醋酸发酵;最佳醋酸发酵条件为:酒精度12.5%vol、醋酸菌接种量6%、发酵温度36℃、发酵时间9d。  相似文献

以柠檬为原料,采用液态发酵工艺,经酒精发酵和醋酸发酵而制成的风味独特的柠檬果醋.结果表明:在酒精发酵试验中,通过单因素和正交试验得出的最佳生产工艺为:柠檬汁液中糖含量18 °Bx,pH 3.5,酵母菌接种量为10%,30 ℃发酵6 d,酒精体积分数为6%~8%.醋酸发酵时,糖含量为5 °Bx, 醋酸菌的接种量为10%,32 ℃发酵7 d.  相似文献

以甘蔗汁为原料,探索了液态发酵甘蔗果醋的生产工艺条件和甘蔗果醋饮料研制方法。通过单因素和正交试验,优化了工艺条件和配方。结果表明,酒精发酵的工艺参数为温度30 ℃、初始pH值为4.5、接种量12%、发酵时间6 d。醋酸发酵最佳工艺条件为酒精度8%vol、糖度7 °Bx、pH值为5.0、接种量10%。在控制温度32 ℃、转速150 r/min条件下发酵7 d得到平均酸度约6.37 g/100 mL、残糖4.2 g/100 mL甘蔗果醋。甘蔗果醋饮料最佳配方为甘蔗原醋15%、鲜甘蔗汁40%、蔗糖2%、柠檬酸0.14%、DL-苹果酸0.05%。  相似文献

以库尔勒香梨果渣为主要原料,经原料处理、成分调整、高压灭菌、酒精发酵、醋酸发酵、过滤、灭菌、灌装等工艺得到果醋成品.通过单因素和正交试验确定了酒精及醋酸发酵的最佳工艺条件,即初始含糖量12°Bx,接种量8%,发酵温度33%,发酵时间3d,得到酒精度为4%vol的香梨果酒;初始酒精度4%vol,温度32℃,接种量为15%,发酵时间10d,获得酸度为4.00g/100mL,具有浓郁香梨风味的香梨果渣果醋.  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
