对宋河中温酒曲中的乳酸菌进行分离鉴定并研究产酸特性。共分离得到19株乳酸菌,初步鉴定了4个属8个种的16株乳酸菌,4个属分别为微球菌属、片球菌属、链球菌属和乳杆菌属,8个种分别为藤黄微球菌(M.Luteus)、皱褶微球菌(M.Colpogenes)、变异微球菌(M.Varians)、乳酸片球菌((P.Acidilactici)、戊糖片球菌(P.Pentosaceus)、乳链球菌(S.Lactis)、乳酸乳杆菌(L.Lactis)和短乳杆菌(L.Brevis)。微球菌和片球菌是宋河中温大曲中的优势乳酸菌。14株乳酸菌的产酸特性可分为两种类型:一类是乳酸菌在37℃发酵12h时,pH值可达到最小值,此后逐渐上升;另一类是乳酸菌37℃发酵12h,pH值迅速下降,24h可达到最小值,此后逐渐趋于平缓。  相似文献

从经过自然发酵的大头菜中分离出菌株若干,经形态特征、生理生化特征鉴定表明有4株属于乳酸菌,其中植物乳杆菌2株(编号A1、A2),耐酸乳杆菌1株(编号C),短乳杆菌1株(编号D)。发酵实验表明A1、A2发酵风味较好且有较高的产酸能力,具有用于纯种发酵生产大头菜的潜力。  相似文献

对内蒙古地区传统发酵乳中乳酸菌进行分离并鉴定。以蒙古族传统发酵乳为材料,采用传统的细菌纯培养分离方法分离乳酸菌株,通过形态学特征及生理生化试验初步确定乳酸菌的基础上,进一步利用细菌16S r DNA基因序列分析和系统发育进化树构建,对其种属进行分析鉴定。分析鉴定结果显示,分离得到的29株乳酸菌共鉴定为2个属,6个种。2个属分别为乳酸杆菌属(Lactobacillus)和肠球菌属(Entercoccus),6个种分别为短乳杆菌(Levilaccillus brevis,4株)、植物乳杆菌(Lactiplantibacillus plantarum,8株)、粪肠球菌(Enterococcus faecalis,9株)、鸡肠球菌(Enterococcus gallinarum,3株)、蒙氏肠球菌(Enterococcus mundtii,1株)、耐久肠球菌(Enterococcus durans,4株)。该研究采集的发酵乳样品中乳酸菌资源丰富,代表着内蒙古蒙古族传统发酵乳制品中优势性乳酸菌菌种,为优良发酵剂的研发奠定了微生物资源基础。  相似文献

从12个传统腌腊肉制品中分离得到52株乳酸菌,通过形态学初步鉴定,选出具有代表性的J2株乳酸菌进行生化鉴定,初步确定1-31、L94、LS76、LS81、LS101为戊糖乳杆菌(Lactobacillus pentosus),LSSI为食品乳杆菌(L.alimentarius),LSl4为干酪乳杆菌(L.casei),LS21、LS33为弯曲乳杆菌(L.CUrvatus),LS41为清酒乳杆菌(L.sake),L22、LS92为乳酸球菌,其它未能鉴定种类。  相似文献

从发酵酸菜汁中分离乳酸茵菌株并进行鉴定,同时研究其发酵性能和降胆固醇的能力.通过对乳酸菌的菌落特征、形态特征和生理生化特性进行鉴定,初步确定分离得到的L1、L2和L3等3株乳酸菌申L1为植物乳杆菌,L2为发酵乳杆菌,L3为短乳杆菌;L1和L2在培养15 h后进入生长稳定期,产酸速度快,L3在21 h后进入生长稳定期,产酸速度相对较慢,菌株产酸能力由大到小的顺序为:L1> L3> L2;L1,L2和L3三株菌的降胆固醇降解率分别为34.28%,22.86%和54.29%,L3的降胆固醇的能力最高.  相似文献

该研究选用2株非酿酒酵母(粘红酵母(Rhodotorula glutinis)(RG)、美极梅奇酵母(Metschnikowia pulcherrima)(MP))和2株乳酸菌(植物乳杆菌(Lactobacillus plantarum)(LP)、干酪乳杆菌(Lactobacillus casei)(LC))发酵模拟芒果汁,考察益生菌在模拟芒果汁中的生长、发酵特性和产香能力。结果表明,4株益生菌在模拟芒果汁中均能良好生长,发酵模拟芒果汁72 h后,乳酸菌的产酸能力较好,且植物乳杆菌产酸能力最强,发酵模拟芒果汁的pH和有机酸含量分别为3.63、18.04 g/L;非酿酒酵母的糖利用能力较好,且粘红酵母的糖利用能力最好,发酵模拟芒果汁的糖含量为23.73 g/L;4株益生菌均能降解类胡萝卜素,其中植物乳杆菌的降解率最高,为21.22%;植物乳杆菌和粘红酵母的产香能力较好,从发酵模拟芒果汁均鉴定出19种挥发性香气成分,且降异戊二烯香气含量较高,分别为2.42 mg/L、2.57 mg/L。  相似文献

为获得具有益生功效的乳酸菌,采用钙溶圈法从自然发酵五彩椒发酵液中分离纯化乳酸菌,测定其耐酸能力,并对耐酸能力较强的菌株进行鉴定。结果表明,分离得到32株疑似乳酸菌,其中5株菌(编号为CA1-1,CA1-4,CA3-4,CA4-2,CA6-2)具有较强的耐酸能力。根据16S r RNA测序结果,菌株CA1-1、CA3-4、CA6-2分别被鉴定为发酵乳杆菌(Lactobacillus fermentum)、类肠膜魏斯氏菌(Weissella paramesenteroides)、嗜酸乳杆菌(Lactobacillus acidophilus),菌株CA1-4、CA4-2被鉴定为植物乳杆菌(Lactobacillus plantarum)。菌株CA1-1和CA4-2的产酸量(9.43 g/L和9.86 g/L)和胆盐处理4 h后的存活率(108.1%和96.51%)均高于其余菌株。此外,菌株CA1-1和CA4-2的耐胃肠道消化能力(胃液处理3 h后的存活率分别为82.4%和88.89%,肠液处理3 h后的存活率分别为38.4%和41.88%)、抗氧化能力(DPPH自由基清除率分别为46.84...  相似文献

利用植物乳植杆菌(Lactiplantibacillus plantarum)、发酵粘液乳杆菌(Limosilactobacillus fermentum)和瑞士乳杆菌(Lactobacillus helveticus)混合菌种进行枸杞果汁发酵。该研究对乳酸菌亚致死修复液的组成和修复温度进行优化,分别针对3株乳酸菌设计特异性引物,利用叠氮溴化丙锭(PMA)-荧光定量聚合酶链式反应(fqPCR)的方法,实时荧光定量检测枸杞果汁发酵过程中乳酸菌活菌数。结果表明,优化修复液的组成为蛋白胨1 g/L、牛肉浸出粉0.3 g/L、氯化钠0.5 g/L、吐温80 0.10 g/L、丙酮酸钠0.09 g/L、过氧化氢酶0.04 g/L、MgCl2 3 mmol/L、Na2HPO4 1 mmol/L、MnCl2 2 mmol/L和FeCl2 2 mmol/L。在27 ℃条件下培养15 min,乳酸菌亚致死细胞修复率达到97%。利用该方法实现了枸杞果汁发酵过程不同乳酸菌的实时定量检测,为今后枸杞果汁发酵生产过程中的微生物动态监测提供了方法。  相似文献

从甘南牧区采集的犏牛酸奶中分离得到76 株乳酸菌。筛选得到3 株凝乳快速、产酸力强、凝乳质地优良的乳酸菌菌株,包括1 株球菌和2 株杆菌。采用16S rRNA基因序列比对分析,鉴定3 株乳酸菌分别是屎肠球菌(Enterococcus faecium)、德氏乳杆菌(Lactobacillus delbrueckii)和发酵乳杆菌(Lactobacillus fermentum)。通过球杆菌混合发酵实验,结果表明混合菌株发酵的产酸速率比单菌株发酵明显加快,且后酸化程度较弱,其感官质量也明显优于单菌发酵。  相似文献

探究六堡茶渥堆发酵过程中乳酸菌多样性并筛选具有降胆固醇活性菌株,旨在评价其作为潜在益生菌的体外降胆固醇能力,预防人体因饮食不均衡导致的高血脂症。采用高通量测序、纯培养法分析不同渥堆发酵时期六堡茶中乳酸菌多样性,并对其体外降胆固醇能力、胃肠耐受性进行研究。结果表明,从25 个样品中共检测到乳酸菌4 个属(乳杆菌属(Lactobacillus)、魏斯氏菌属(Weissella)、乳球菌属(Lactococcus)和肠球菌属(Enterococcus))5 个种,其中乳杆菌属为优势菌。共分离得到76 株乳酸菌,包括55 株戊糖乳杆菌(Lactobacillus pentosus)、3 株铅黄肠球菌(Enterococcus casseliflavus)、5 株类肠膜魏斯氏菌(Weissella paramesenteroides)、8 株希腊魏斯氏菌(Weissella hellenica)、5 株台湾乳球菌(Lactococcus taiwanensis)。通过乳酸菌体外降胆固醇实验,发现胆固醇去除率为0%~30%,其中戊糖乳杆菌L131的去除胆固醇率最高,为(29.56±0.37)%;在pH值分别约为3.0、8.0的人工胃液、人工胰液中,L131有最高存活率,分别为(92.70±0.71)%和(77.54±4.81)%,显著高于其他菌株(P<0.05)。本研究探明六堡茶渥堆发酵过程中乳酸菌的多样性,且发现具有降胆固醇特性的优良乳酸菌株,为健康黑茶产品和茶源益生菌的开发提供理论基础。  相似文献

以 6 0 %大麦芽和 4 0 %小麦芽为原料 ,经上面酵母和乳酸菌L4混合发酵 ,研制生产出白啤酒。从 4株乳酸菌中筛选出适合白啤酒生产的L4菌 ,通过对发酵方式的选择 ,确定了酵母BLS 1和乳酸菌L4混合发酵方式 ,同时对酒花添加量、接种量及发酵温度和时间进行了讨论 ,制定出工艺路线 ,所得白啤酒质量符合标准。  相似文献

为探究甘南牧区牦牛曲拉中乳酸菌的性能,本研究以甘肃省甘南地区藏族牧民家庭传统手工制作的牦牛乳曲拉样品为研究对象,以纯培养方法对曲拉中的乳酸菌分离鉴定,并研究曲拉中乳酸菌的性能。结果表明:从9份以自然条件发酵的牦牛曲拉中分离出97株乳酸菌,经过初步筛选得到6株乳酸菌菌株,通过16S rDNA分子鉴定,菌株Q1为嗜热链球菌(Streptococcus thermophilus),菌株Q2为耐久肠球菌(Enterococcus durans)、菌株G1、G2、G3、G4为瑞士乳杆菌(Lactobacillus helveticus);对6株乳酸菌进行性能研究表明,这6株菌凝乳时间在4~7 h之间,凝乳时的滴定酸度在73.42~89.38°T之间变化,酸乳冷藏期酸度增加了14.22~20.93 °T,活菌数含量均大于107 CFU/mL,黏度为5.42~7.84 Pa·s。研究结果可为乳酸菌的应用提供理论依据。  相似文献

Lactic acid bacteria are the most frequently encountered beer‐spoilage bacteria, and they may render beer undrinkable due to the production of lactic acid, diacetyl, and turbidity. Microbrewed beer is typically sold unpasteurised, leaving it more susceptible to spoilage by lactic acid bacteria. In this study, the incidence of lactic acid bacteria in bottled microbrewed beer from Victoria, Australia was investigated. A total of 80 beers from 19 breweries were screened for lactic acid bacteria. Almost 30% contained culturable lactic acid bacteria, and many had lactic acid levels well above the flavour threshold. Ethanol, hops, and the pH levels of the beers were not predictors for spoilage in the beers examined, and contamination appeared to be more closely linked to the source brewery. The 45 lactic acid strains isolated from these beers were identified by RAPD‐PCR, with Lactobacillus brevis being the most frequently isolated species. All isolates were capable of spoiling beer and contained putative hop resistance genes. At typical beer levels, pH and ethanol had no effect on the growth of the particular spoilage bacteria isolated in this study.  相似文献

以冬季自然发酵长杆白菜泡菜卤水为分离源,分离得到革兰氏阳性菌7株,经过0~10℃低温筛选、耐酸性和抑菌能力复筛,得到3株耐低温且适合泡菜发酵的优良乳酸菌并进行应用。结果表明:通过低温分离及性能评价的逐步筛选,获得3株细菌均能在0~10℃下增殖、可耐受pH2.5高酸且抑菌能力与0.9~3.5 mg/L氯霉素相当,RPC21在0~10℃的增殖能力最强;RHJ68的耐高酸能力最强,OD600可达0.0262;抑菌能力最强的为RPC21,相当于3.5 g/L氯霉素,其次是RCQ4,相当于2.6 g/L氯霉素;3株菌均在3 h进入对数生长期,培养48 h的总酸可达18.78~20.30 g/L;经16S rDNA鉴定分别为植物乳杆菌Lactobacillus plantarum(RPC21)、鼠李糖乳杆菌Lactobacillus rhamnosus(RCQ4)、戊糖片球菌Pediococcus pentosaceus(RLJ68);以自然发酵和市售菌粉发酵为对照,3株乳酸菌组合应用于泡菜发酵中,风味最优且产酸迅速、总酸最高,达12.51 g/L。本文分离筛选的3株乳酸菌及其组合具有应用于低温泡菜发酵的良好前景。  相似文献

研究了分离自新疆酸奶疙瘩中6株乳酸菌在37℃下蛋白质降解和产香能力。结果表明,6株乳酸菌稳定期活菌数均在108CFU/mL以上,且凝乳细腻,具有良好的组织状态。各菌株发酵性能有差异,干酪乳杆菌、瑞士乳杆菌、乳脂乳球菌3株菌发酵性能较植物乳杆菌、嗜热链球菌、保加利亚乳杆菌发酵性能优,可用于不同风味和功能的发酵乳制品生产。其中,干酪乳杆菌具有良好的蛋白水解力,发酵15h,酪氨酸含量为594.33μg/mL;乳脂乳球菌产香性能好,发酵24h,丁二酮含量为12.32μg/mL、乙醛含量为59.27μg/mL,与其他菌株具有显著差异;瑞士乳杆菌具有强的产酸、产黏特性,发酵24h,酸度达159.76°T,黏度值1 389mPa·s。  相似文献

Starter cultures of lactic acid bacteria (Lactobacillus brevis, Lactobacillus cellobiosus, Lactobacillus fermentum, Lactobacillus plantarum and Pediococcus pentosaceus) and yeasts (Candida pelliculosa, Candida tropicalis, Issatchenkia orientalis and Saccharomyes cerevisiae) isolated from native togwa were tested singly or in combination for their ability to ferment maize-sorghum gruel to produce togwa. All species of bacteria showed an ability to ferment the gruel as judged by lowering the pH from 5.87 to 3.24-3.49 and increasing the titratable acidity from 0.08% to 0.30-0.44% (w/w, lactic acid) in 24 h. Yeasts used singly showed little activity within 12 h, but lowered the pH to 3.57-4.81 and increased the acidity to 0.11-0.21% in 24 h. Yeasts in co-culture with lactic acid bacteria (LAB) had a modest effect on the final acidity (P<0.05). The number of lactic acid bacteria and yeasts increased while the Enterobacteriaceae decreased with fermentation time. The pH was lowered and lactic acid produced significantly (P<0.05) fastest in natural togwa fermentation and in samples fermented by L. plantarum or L. plantarum in co-culture with I. orientalis. The content of fermentable sugars was reduced during fermentation. Most volatile flavour compounds were produced in samples from fermentation by P. pentosaceus and I. orientalis in co-culture with either L. plantarum or L. brevis.  相似文献

以酸马乳中乳酸菌活菌数为评价指标,研究了不同发酵条件对酸马乳中乳酸菌活菌数的影响,在单因素的基础上采用响应面试验优化酸马乳的发酵工艺条件。结果表明,酸马乳最佳发酵条件为:干酪乳杆菌∶乳酸乳球菌∶酵母菌=1∶1∶2,接种量6%,发酵时间48 h,发酵温度32 ℃,不添加蔗糖。在此最佳条件下,酸马乳中乳酸菌活菌数对数值可达8.673 9,酵母菌活菌数对数值为7.628 4,酸度6.34 g/L,酒精度1.2%vol。  相似文献

将嗜热链球菌、保加利亚乳杆菌、嗜酸乳杆菌按3∶2∶1比例制备乳酸菌冻干发酵剂.比较不同温度冷应激处理对乳酸菌冻干存活率的影响,结果表明,20℃,处理4h时,冻干存活率为96.3%.选择发酵的固定化细胞制作条件:海藻酸钠2.25g/L、CaCl2 4.0g/L.包埋后乳酸菌冻干存活率为95.6%.  相似文献

Three beer‐spoilage strains of lactic acid bacteria (LAB), Lactobacillus brevis ABBC45, L. lindneri DSM 20690T and L. para‐collinoides DSM 15502T, exhibited strong ATP‐yielding ability in beer. To investigate energy sources, these beer‐spoilage strains were inoculated into beer. After the growth of the strains in beer, utilized components were determined by high performance liquid chromatography (HPLC). As a result, it was shown that citrate, pyruvate, malate and arginine were consumed by beer‐spoilage LAB strains examined in this study. The four components induced considerable ATP production even in the presence of hop compounds, accounting for the ATP‐yielding ability of the beer‐spoilage LAB strains observed in beer. We have further examined the ATP‐yielding ability of other strains of bacteria in beer. Beer‐spoilage bacteria, including Pectinatus frisingensis and P. cerevisiiphilus, showed strong ATP‐yielding abilities, whereas species frequently isolated from brewery environments exhibited low ATP‐yielding abilities. Although some of the nonspoilage LAB strains produced substantial amount of ATP in beer, the measurement of ATP‐yielding ability was considered to be useful as a rapid pre‐screening method for potential beer‐spoilage bacteria isolated from brewery environments.  相似文献
