Five different varieties of cauliflower (Brassica oleracea L. ssp. botrytis); two white (cv. ‘Aviso’, ‘Dania’), one purple (cv. ‘Grafitti’), one green (cv. ‘Emeraude’) and one romanesco/green pyramidal (cv. ‘Celio’) cultivar have been studied. All samples were thermally processed and the effects on the levels of glucosinolates (GLS), total phenols (TP), total monomeric anthocyanins (TMA), l-ascorbic acid (l-AA) and antioxidant capacities (FRAP and ORAC) were investigated. Processing methods applied were: blanching (3 min), boiling (10 min) and steaming (10 min). Total GLS were significantly (p < 0.05) affected by processing with the highest losses, 55 and 42% on average, occurring for boiled and blanched samples, respectively. Significant effects were also noted for steaming, but to a lesser extent, i.e. 19% average reduction. Antioxidant-related parameters were similarly affected with average losses of 27, 33, 36 and 46% in boiled cauliflower and 16, 21, 22 and 28% in blanched for TP, FRAP, l-AA and ORAC, respectively. Blanching and boiling reduced TMA in purple cauliflower by 38 and 53%, respectively. Steaming affected the antioxidant-related parameters the least for all cultivars. l-AA was significantly reduced by 14% in all cultivars by steaming. Some differences in behaviour between cultivars were noted, especially between white and coloured cultivars for TP, FRAP and l-AA, but also for some GLS. The main losses were caused by leaching into the processing water.  相似文献

Fruit from 42 blueberry (Vaccinium species) cultivars, including 36 rabbiteye cultivars (Vaccinium ashei Reade), 3 V. ashei hybrid derivatives and 3 northern highbush (V. corymbosum L.) standards, were evaluated for antioxidant activities (AA), levels of antioxidant enzymes [catalase (CAT), ascorbate peroxidase (AsA-POD), glutathione reductase (GR), glutathione peroxidase (GSH-POD), superoxide dismutase (SOD), dehydroascorbate reductase (DHAR), monodehydroascorbate reductase (MDAR) and guaiacol peroxidase (G-POD)], and antioxidant nonenzyme components [ascorbic acid (ASA) and glutathione (GSH)]. The results of this study showed that cultivars had varying levels of AA, a wide range of antioxidant enzyme activities and various amounts of nonenzyme components. The correlations between AA and all of the enzyme activities or nonenzyme components were positive and high in the 42 cultivars tested in this study. The correlation (R2) values between AA and CAT, SOD, DHAR, MDAR, GSH-POD, GR, G-POD and AsA-POD were 0.91, 0.91, 0.91, 0.91, 0.90, 0.90, 0.90, and 0.90, respectively. The correlations between AA and ASA and GSH were 0.94 and 0.92, respectively. Among all 42 cultivars, ‘Early May’ had the highest activities of the AA, AsA-POD, G-POD, DHAR and MDAR and the highest amounts of ASA and GSH, whereas ‘Elliott’ had the highest levels of GR, GSH and SOD.  相似文献

Changes in total phenolics, antioxidant activity (AOX), carotenoids, capsaicin and ascorbic acid were monitored during three maturity stages in 10 genotypes of sweet pepper. In an attempt to explain the variations during maturity stages (green, intermediate and red/yellow), the data was expressed both on fresh and dry weight basis. All the antioxidant constituents (phenolics, ascorbic acid and carotenoids) and AOX, when expressed on fresh weight basis in general, showed an overall increasing trend during maturity in all the genotypes studied. On dry weight basis, phenolic content declined in majority of the genotypes during maturity to red stage. This decline was significant (P<0.05) in Parker, Torkel, HA-1038 and Flamingo. Genotype Flamingo and Golden Summer had the highest phenolic content of 852.0 mg 100 g−1 and 720.5 mg 100 g−1, at their final red and yellow maturity stages, respectively. With maturation, most of the cultivars showed a declining trend with regard to capsaicin content while total carotenoids and β-carotene content increased significantly. Anupam was a promising genotype in terms of both total carotenoids and β-carotene content. Ascorbic acid content declined progressively with advancing maturity. Genotype HA-1038 had the maximum content (3030 mg 100 g−1 dwb) at the green stage. AOX in general, increased with maturity and registered a 1.30-1.95fold increase from green to red stage.The study proposes the nutritional significance of consuming sweet peppers at the red maturity stage because of enhanced functional properties. Overall genotype Flamingo and Anupam represent superior genotypes for both nutrition and germplasm improvement.  相似文献

Fruit from 42 blueberry (Vaccinium spp.) cultivars, including 36 rabbiteye cultivars (Vaccinium ashei Reade), three V. ashei hybrid derivatives, and three northern highbush (Vaccinium corymbosum L.) standards were evaluated for antioxidant capacity, individual flavonoid content, and the contribution of each identified phenolic compound to total antioxidant activity. Considerable variation was found in flavonoid content, antioxidant activity, and their contribution to total antioxidant activity among cultivars. Among 42 blueberry cultivars, the rabbiteye ‘Early May’ contained the highest amount of chlorogenic acid, myricetin 3-arabinoside, quercetin derivatives, and delphinidin-, cyanidin-, petunidin-, and malvidin-basis anthocyanins. ‘Early May’ cultivar also had the highest antioxidant activity (88.2 μmol TE/g fw). ‘Owen’, ‘Bluegem’, ‘Clara’, Climax’, and ‘Centurion’ were among the other rabbiteye cultivars that also had high levels of flavonoids and antioxidant activities. In contrast, the pink-fruited V. ashei hybrid, ‘Pink Lemonade’, had the lowest content of flavonoids and lowest antioxidant activity. The mean flavonoid content and antioxidant activity of rabbiteye cultivars was higher than those among northern highbush and V. ashei hybrids. The antioxidant activity of V. ashei hybrid derivatives was derived mainly from chlorogenic acid, myricetin, and quercetin, which contributed 62.5% of total antioxidant activity, whereas anthocyanins (malvidin, petunidin, delphinidin, and cyanidin) were the main contributors to the antioxidant activity of rabbiteye cultivars (76.2%) and northern highbush standards (76.8%). Blueberry cultivars identified to have high phenolic content and high antioxidant activity could be used as parents for future blueberry breeding programmes to develop new blueberry cultivars with higher antioxidant activity and further improve human health.  相似文献

Many plants used in Amazonian folk medicine present a high antioxidant activity. In this study, the antioxidant activities of four largely used plants, namely Byrsonima crassifolia, Davilla kunthii, Davilla rugosa and Inga edulis, were evaluated, using methanolic extracts of their leaves, fruits and bark and several different in vitro tests, based either on the capacity to scavenge free radicals (ORAC, TRAP) or on the ability to protect biological structures (LDLs, erythrocytes). The total phenolics (TP), flavanoids (TFA) and flavonols (TFO) were also measured. Almost all extracts performed well in all assays of antioxidative capacity, with best activities found in leaves (compared to fruits and bark). Most antioxidative performance indicators (ORAC, TRAP, LDL protection) correlated well with the TP and TFA content of the extracts. Conversely, correlation was lower between TFO and these indicators, reflecting a lower involvement of these compounds in antioxidant processes. Erythrocyte protection against oxidant-triggered haemolysis showed no correlation with any of the phenolic content indicators, suggesting that most of these compounds have a low ability to protect lipid targets in the erythrocyte membrane. On the other hand, protection of erythrocytes against haemolysis correlated positively with LDL protection. The extract of I. edulis leaves contained average amounts of polyphenols but ranked first in the majority of the tests, indicating the occurrence of particularly efficient compounds with very important antioxidant properties, which could be used for medicinal and other applications.  相似文献

Epigallocatechin (EGC) and gallic acid (GA) were prepared by the degalloylation of an epigallocatechin gallate (EGCG) extract from green tea. EGCG was entirely hydrolyzed using a tannase (from Paecilomyces variotii) at pH 6.0, incubating at 40 °C for 30 min. The antiradical properties and the reducing power of these samples were assessed using the DPPH and FRAP assays, respectively. This work established a relationship between the antioxidant effects of epigallocatechin gallate and the enzymatic reaction products (epigalocatechin and gallic acid). The enzymatic reaction products showed higher scavenging activity and antioxidant capacity when compared to epigallocatechin gallate.  相似文献

Methanolic extracts of six cultivars of Portulaca oleracea were analyzed for their total phenol content (TPC) using the Folin–Ciocalteu method. The antioxidant activity was measured using the 1,1-diphenyl-2-picrylhydrazyl, ferric-reducing antioxidant power (FRAP) and β-carotene bleaching (BCB) assays. The iodine titration method was used to determine the ascorbic acid content (AAC). The TPC of the cultivars of P. oleracea ranged from 127 ± 13 to 478 ± 45 mg GAE/100 g of fresh weight of plant. There was good correlation between the TPC value and its AEAC, IC50 and FRAP values (r2 > 0.9) for all the cultivars. The AAC for the cultivars ranged from 38.5 ± 0.6 to 73.0 ± 17.5 mg/100 g. The TPC value of the common variety PO1, was the lowest compared to the ornamental cultivars (PO2–PO6). The BCB assay showed that all cultivars were capable of inhibiting lipid peroxidation and the inhibition power did not correlate with TPC value.  相似文献

Methanol extracts of fresh tea leaves from a lowland plantation in Malaysia were screened for total phenolic content (TPC) and antioxidant activity (AOA). AOA evaluation included 1,1-diphenyl-2-picrylhydrazyl (DPPH) free radical-scavenging ability, ferric-reducing antioxidant power (FRAP), and ferrous-ion chelating (FIC) ability. Ranking, based on TPC and AOA, was as follows: shoots > young leaves > mature leaves. TPC and AOA of lowland leaves were comparable to those of highland plants. A green tea produced by drying young leaves in a household microwave oven for 4 min showed significantly higher TPC and AOA than did four commercial brands of green and black tea.  相似文献

There is considerable interest to enhance the nutritional quality of fresh produce especially vegetables. The effects of root treatment of spinach with commercial extracts of the brown macro alga, Ascophyllum nodosum (ANE) on antioxidant level of spinach were studied. At the concentration of 1.0 g/L, ANE treatment significantly increased the total phenolics and flavonoids content, total antioxidant activity (as measured by DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging capacity) and Fe2+ chelating ability in spinach leaves. The 1H NMR and LC-MS analyses of spinach extract suggests that the increased antioxidant activity is largely associated with flavonoids. The biological effect of ANE-enhanced polyphenols was tested using the Caenorhabditis elegans nematode model. The extracts from ANE-treated spinach significantly improved the survival of the animals under oxidative stress by 50% and high temperature stress by 61% as compared to the extracts from untreated plants (0% and 38%, respectively). Taken together, the results suggest that ANE stimulate flavonoid synthesis in spinach leaf thus enhancing its nutritional quality. Furthermore, the increased flavonoid content exerts beneficial effects in C. elegans against oxidative and heat stress.  相似文献

Total phenolic content (TPC) and antioxidant capacity of lettuce were evaluated using the Folin-Ciocalteu method and DPPH assay, respectively, on 25 cultivars of lettuce, including leaf, romaine, crisphead, and butterhead types, cultivated over two harvest periods. Leaf lettuce possessed the highest TPC and highest DPPH scavenging ability, followed by romaine, butterhead and Batavia (crisphead subtype). Within a lettuce type, red pigmented lettuce cultivars had higher TPC and antioxidant capacity than did green cultivars grown under the same conditions. In addition, lettuce harvested in July possessed higher TPC and antioxidant capacity than did lettuce harvested in September, suggesting that environmental conditions could influence the phenolic content and antioxidant activity of lettuce. These results suggest that Colorado grown lettuce may serve as potential dietary sources of natural phenolic antioxidants.  相似文献

Phaseolus vulgaris is a foodstuff that not only supplies nutrients, but also bioactive compounds with antioxidant capacity; however, bad post-harvest storage or processing can diminish the antioxidant capacity. In this work, the effect of storage under extreme conditions, of thermal processing and of fermentation on the content of phenolic compounds and their antioxidant capacity (AA) in beans of just harvested P. vulgaris were evaluated. Combination of temperatures of 30 and 50 °C and relative humidity of 11% and 80% for 150 days were evaluated. Extreme storage conditions drastically decreased the AA, demonstrating that post-harvest storage at low temperature and humidity preserves the antioxidant capacity of the beans. Regarding processing, cooking decreased the scavenging effect and the AA by 63.5% and 56.8%, while fermentation decreased them by only 14% and 22%, respectively. It was concluded that the loss of antioxidant capacity due to heating is less in fermented beans.  相似文献

The antioxidative properties of a hot water extract of the leaves of Mallotus japonicus were evaluated. The extract had a high phenolic content and strong antioxidative activity, compared with green tea, rooibos tea, and red wine. Six phenolic compounds were isolated as antioxidative components by HPLC. They were identified as mallotinic acid, mallotusinic acid, corilagin, geraniin, rutin, and ellagic acid. These antioxidative compounds were subjected to DPPH radical-scavenging, superoxide radical-scavenging, and hydroxyl radical-scavenging assays, and compared with other antioxidative compounds. Four of the compounds, mallotinic acid, mallotusinic acid, corilagin and geraniin, exhibited much stronger antioxidative activity than gallic acid, rutin, ellagic acid, quercetin, and chlorogenic acid, and were as active as epigallocatechin gallate (EGCG), a strong antioxidant in green tea. Mallotus japonicus leaves are an excellent source of strong natural antioxidative materials.  相似文献

Fruit juices of pigmented and non-pigmented new citrus hybrids obtained by crossing clementine cv. Oroval with different cultivars of blood oranges were analysed to determine parameters related to fruit quality (total soluble solids titratable acidity, pH), and the content of ascorbic acid, total phenolics, flavanones, anthocyanins and phenolic acids. Antioxidant properties were evaluated by oxygen radical absorbance capacity (ORAC), and inhibition of induced linoleic acid peroxidation (InLAP) assays. The results of this study show that some hybrids with high antioxidant activity owing to considerable polyphenol content may be considered rich sources of phytochemicals. The OTA 9 hybrid was shown to be richest in polyphenols, suggesting that consumption of OTA 9 fruit or juice could be useful in health promotion and a disease-preventing diet. Moreover, the juice of this hybrid could be used as raw material to produce antioxidant ingredients for dietary, pharmaceutical, or cosmetic purposes.  相似文献

Aqueous extracts were prepared from green, yellow fallen and red fallen leaves of Terminalia catappa L. (Combretaceae) and their antioxidant activity, scavenging and chelating abilities were evaluated. Aqueous extracts from three different leaves showed high antioxidant activities and moderate scavenging abilities on hydroxyl radicals at 1 mg/ml. EC50 values in antioxidant activity were 0.549-0.557 mg/ml whereas those in scavenging ability on hydroxyl radicals were 0.631-0.686 mg/ml for aqueous extracts prepared from three leaves with boiling water for 3 min. EC50 values in reducing power were 0.15-0.23 mg/ml. EC50 values in scavenging abilities on superoxide anion and 1,1-diphenyl-2-picrylhydryl radicals were 0.36-0.44 and 10.4-35.3 mg/ml, respectively. EC50 values in chelating abilities on ferrous and cupric ions were 0.41-2.50 and 8.96-9.89 mg/ml, respectively. Based on the results obtained, the aqueous extracts displayed higher antioxidant properties. Six phenolic compounds identified in the aqueous were p-hydroxybenzoic acid, 4-hydroxyphenylpropionic acid, m-coumaric acid, 3,4-dihydroxybenzoic acid, p-coumaric acid and gallic acid. Therefore, the aqueous extracts from three different leaves of T. catappa might be a potential antioxidant supplement for application in food products or as a drink.  相似文献

Arils from six pomegranate (Punica granatum L.) cultivars obtained from various sites from the Mediterranean region of Turkey were evaluated for their chemical and antioxidant properties. These properties included total phenolics (TP), total monomeric anthocyanins (TMA), soluble solids (TSS), titratable acidity (TA), individual sugars and organic acids. Antioxidant capacities of arils were determined by both the ferric reducing antioxidant power (FRAP) and trolox equivalent antioxidant capacity (TEAC) assays. The antioxidant capacities averaged 5.60 and 7.35 mmol TE/l by the TEAC and FRAP methods. Variability among cultivars was greatest for TMA content (CV 132%); individuals ranged from 6.1 to 219 mg cy3-Gluc l−1. TP means averaged 1507 mg GAE/l. Levels of FRAP, TEAC, TP, and TMA were strongly correlated (r = 0.82–0.96). The major sugars were fructose (6.4 g/100 ml) and glucose (6.8 g/100 ml), the major acids were citric (1.78 g/100 ml) and malic (0.12 g/100 ml).  相似文献

Purified mashua extracts (PME) from four different coloured mashua genotypes were assayed for oxidative damage prevention. Three in vitro assays for oxidative damage to biological structures rich in polyunsaturated fatty acids (PUFA), such as LDL and erythrocytes, were tested: AAPH-induced TBARS assay and Cu2+-induced conjugated dienes assay for LDL oxidation and AAPH-induced oxidative hemolysis of erythrocytes. Additionally, ORAC antioxidant capacity, total phenolics (TP), total flavanoids (TFA) and total anthocyanins (TA) were evaluated. In the presence of 5 μM of gallic acid equivalents (GAE), inhibitions of LDL oxidation for the PME ranged from 29.1% to 34.8% and from 51.8% to 58.1% when the TBARS and conjugated dienes assays were performed, respectively. PME inhibited the hemolysis of erythrocytes within the range 20.8–25.1%. Thus, mashua phenolic extracts are capable of scavenging peroxyl radicals, as well as chelating redox metal ions in vitro. ORAC and LDL protection (TBARS and conjugated dienes assays) showed good correlations with the TP and TFA, suggesting that these compounds have a good ability to protect LDL molecules under the employed conditions. In contrast, inhibition of hemolysis did not show any correlation with the evaluated phenolic assays (TP, TA, TFA) or with any of the evaluated oxidative LDL assays, suggesting a specific action of some non-evaluated compounds present in the PME. The results of this study indicate that the mashua polyphenol extracts displayed good antioxidant properties against oxidative damage in biological structures rich in PUFA. The displayed antioxidant properties could be applied in the field of food or cosmetic industry.  相似文献

3-O-caffeoylquinic acid, 5-O-caffeoylquinic acid (chlorogenic acid), and 5-O-caffeoylquinic acid methyl ester, as elucidated by 1H and 13C NMR, were isolated from leaves of Etlingera elatior. This is the first report of caffeoylquinic acids (CQA) including chlorogenic acid (CGA) in Zingiberaceae. Leaves of Etlingera species were rich in total phenols and CQA, and non-cytotoxic to normal human liver and African green monkey kidney cells. Content of CQA of E. elatior, Etlingera fulgens, and Etlingera rubrostriata leaves was significantly higher than leaves of Ipomoea batatas, and comparable to flowers of Lonicera japonica. CGA found only in leaves of E. elatior and E. fulgens was significantly higher in content than flowers of L. japonica, the commercial source.  相似文献

Blanching and one year freezer storage were performed on one purple, two white and two green varieties of cauliflower (Brassica oleracea L. ssp. botrytis) to assess the effects on several health-related phytochemicals. Blanching, prior to freezing, reduced total aliphatic and indole glucosinolates (GLS) by 31% and 37%, respectively. l-ascorbic acid (L-AA), total phenols (TP), anthocyanins, FRAP and ORAC were on average reduced by 19, 15, 38, 16 and 28%, respectively. The colour measured as CIELAB parameters was partly affected by blanching: lightness was significantly reduced in the white cultivars and in a romanesco type cultivar. Chromaticity was reduced in the coloured cultivars with a twice-as-large reduction in the purple cultivars. Hue increased for all samples, except for the purple cultivar where a decrease was found. Long-term freezer storage did not affect total aliphatic and indole GLS in cauliflower in a major way. Freezer storage did result in an average L-AA decrease of 24% for all but the purple cultivar. Some reductions in the TP levels were also found but not to the extent found for L-AA. When an effect was found in the FRAP and ORAC values, the reductions occurred towards the end of the storage period and were 15% and 37%, on average, respectively. Long-term freezer storage did not affect the anthocyanin content and only minor effects were found for the colour parameters.  相似文献

The aim of the present work was to evaluate the chemical composition and the radical-scavenging and antioxidant activities of hot pepper fruits (Capsicum annuum L. var. acuminatum) at three maturity stages (small green, green and red). GC–MS analysis of n-hexane and chloroform fractions showed a different composition between the three stages of ripening. The first stage of maturation (small green) showed the highest radical-scavenging activity (IC50 of 129 μg/ml). Using the bovine brain peroxidation assay, the methanolic extract of green pepper showed significant antioxidant activity (IC50 of 522 μg/ml). Addition of methanolic extract of red and green pepper inhibited oxidation of linoleic acid. Methanolic extract of red pepper showed greater antioxidative potency than the others (IC50 of 3 μg/ml). The different composition of lipophilic compounds and the various amount of phenolics, showed in the three stage of ripening of C. annuum var. acuminatum fruits, modifies the antioxidant activity.  相似文献
