通过汇总分析国家市场监督管理总局发布的食用油、油脂及其制品监督抽检结果,探讨2016—2018年我国食用油、油脂及其制品的安全现状、存在的风险及对策。结果显示:我国食用油、油脂及其制品的安全形势良好,2016—2018年整体合格率为99.14%,但仍存在质量指标不合格、黄曲霉毒素污染、重金属污染等食品安全风险,监管部门与生产经营企业应共管、共治、共建,共同营造良好的食品安全环境。 相似文献

AbstractFats and oils are essential food components. Their quality and safety pose major concerns for consumers and food producers because of factors such as oxidation and rancidity, excessive levels of trans fatty acid (TFA), and widespread adulteration. Thus, a rapid and easy-to-use technique must be exploited for quality parameter evaluation and monitoring to ensure the edibility, safety, and quality of fats and oils. In the last decades, Fourier transform infrared (FTIR) spectroscopy has shown great potential in analyzing fats and oils given its speed and simplicity. FTIR-based analytical techniques for common intrinsic quality parameters, including peroxide value, free fatty acid, moisture, TFA, iodine value, as well as oxidation stability, adulteration, and classification of various fats and oils, are summarized in this review. The advantages and disadvantages of selected infrared spectral accessories and sample preparation and spectral processing methods are highlighted. The prospects and reformative aspects for future application of the FTIR technique in the field of fats and oils are also discussed. This review may serve as a basis for applying FTIR not only in future research but also in the fat and oil industries. 相似文献

向油脂中添加合成抗氧化剂是防止食用油脂在使用过程中发生氧化酸败的最有效方法之一,国家规定油脂中合成抗氧化剂添加的最大限量标准为200 mg/kg,因此建立准确、快速和高效的分析方法检测食用油脂中合成抗氧化剂的含量保证油脂以及含油食品的质量安全具有十分重要的意义。食用油脂中抗氧化剂的检测方法较多,最常用的有高效液相色谱法、气相色谱法、高效液相色谱-串联质谱法、气相色谱-串联质谱法等。本文主要综述了近年来食用油脂中合成抗氧化剂检测分析方法的研究进展,总结了不同分析方法之间的差异,并对今后的发展趋势加以展望。 相似文献

The chromatographic, spectrophotometric, and spectroscopic methods usually used for the analysis of oils and fats are reviewed, with special attention to the detection, identification, and quantitation of the triacylglycerol species present in the most common edible vegetable oils. Also, a review of the methods used for the identification of the regiospecific types of the triacylcglycerol species of oils and fats is presented. Methods of high-performance liquid chromatography in the normal, reversed, silver ion, size exclusion, and chiral modes of thin layer chromatography in the normal, reversed, and silver ion modes of supercritical fluid chromatography with capillary glass or stainless steel columns of capillary gas chromatography and of mass spectrometry in different modes are presented and evaluated. The different sample pretreatment methods, the chromatographic columns, the elution systems, and the detectors and detection modes that have been combined with the above methods are also reviewed. Other spectroscopic methods used for the characterization of the status of an oil or fat, such as ultraviolet, fluorescence, chemiluminescence, infrared, and nuclear magnetic resonance are also reported, selectively. The majority of the triacylglycerol species present in an oil or fat could be analyzed and identified by a particular technique of the reviewed methods, but a complete separation in one single run requires a combination of two or more of the existing techniques, especially for samples with high triacylglycerol species variability. 相似文献

建立了食用油脂中特丁基对苯二酚(TBHQ)的气相色谱测定方法.根据TBHQ溶解于乙醇的性质,利用80%乙醇溶液将油脂中TBHQ提取出来,采用气相色谱法对其进行测定.TBHQ在0~250μg/mL浓度范围内线性良好,相关系数0.9999,最低检出限为0.001g/kg,按0.05、0.10和0.20g/kg三个添加水平测定回收率在91.9%~98.0%之间, 7次重复测定的变异系数在3.9%~5.9 %之间,与液相色谱法相比较,采用F检验法对实际样品进行了检验,结果表明两方法没有显著性差异. 相似文献

目的 建立液相色谱法测定油脂及其制品中苯并(a)芘的方法。方法 试样经过正己烷提取, 中性氧化铝或分子印迹小柱净化, C18色谱柱分离, 荧光检测器检测。结果 方法的线性范围为0.5~20 μg/L, 线性相关系数为0.9999, 最低定量浓度(the limit of quantity, LOQ)为0.5 μg/kg, 在0.5、5、15 μg/kg 3个添加水平下平均回收率为75.5%~93.8%, 相对标准偏差(relative standard deviation, RSD)为3.0%~9.6%。结论 该方法准确度与精密度满足GB/T 27404规定, 定量限满足GB 2762实施要求, 被用于修订GB/T 5009.27-2003为 GB 5009.27-2016。 相似文献
