A strategy to maximise the health benefits of wheat-based products enriched with refined flour and selected fractions of kernel, obtained by sequential pearling, has been tested. Five mixtures of refined commercial flour with an increasing replacement of a pearled wheat fraction were used to prepare bread and were compared with a control for the dough rheological properties (Mixolab® parameters), the bioactive compound content, deoxynivalenol (DON) contamination and the physical properties (volume, crust colour, instrumental crunchiness and crumb texture profile analysis parameters). The antioxidant and dietary fibre contents increased linearly as the flour was enriched with the pearled fraction. The dietary fibre, β-glucan, total phenolic, alkylresorcinol content and the antioxidant activity increased significantly at a replacement level of 10%, while the technological properties were not significantly different from those of the control. It has been shown that refined flour could be enriched through the addition of a selected wheat pearled fraction and the bioactive compound content of composite bread could be improved, while few rheological and technological differences could be obtained and the risk for DON contamination could be limited.  相似文献

Flavonoid content and antioxidant activity of vegetables from Indonesia   总被引:1,自引:0,他引:1  
Extracts from 11 vegetables of Indonesian origin were screened for flavonoid content, total phenolics, and antioxidant activity. The flavonols myricetin, quercetin, and kaempferol and flavones luteolin and apigenin were quantified by HPLC. Flavonoid content in mg/100 g fresh weight (fw) was apparently initially reported for Cosmos caudatus H.B.K. (52.19), Polyscias pinnata (52.19), Pluchea indica Less. (6.39), Nothopanax scutellarius (Burm.f.) Merr (5.43), Talinum triangulare (Jacq.) Willd. (3.93), Pilea melastomoides (Poir.) Bl. (2.27), and Etlingera elatior (Jack) R.M.Sm (1.18). The flavonoid content of the vegetables studied were mainly quercetin and kaempferol and ranged from 0.3 to 143 mg/100 g fw, with the highest level found in Sauropus androgynus (L) Merr. C. caudatus H.B.K. had the greatest total phenols among the vegetables analysed, with 1.52 mg GAE/100 g fw. P. indica Less. and C. caudatus H.B.K. had the highest antioxidant activity as measured by ferric cyanide reducing power, DPPH (2,2-diphenyl-1-picrylhydrazyl) and ABTS (2,2′-azino-bis-(3-ethylbenzthiazoline-6-sulphonic acid) scavenging, and inhibition of linoleic acid oxidation. Therefore, S. androgynus (L) Merr, C. caudatus H.B.K., and P. pinnata were identified as potentially rich sources of dietary flavonoids and antioxidants.  相似文献

Food product based on gac fruit (Momordica cochinchinensis Spreng.) arils have a high potential due to the high carotenoids content of this fruit. Drying is a key preparation step for carotenoids extraction from gac fruit in a economically viable process. The impact of different drying technics, temperature, final product moisture content on the carotenoid content, hydrophilic and lipophilic antioxidant activity (evaluated with three methods) and color of the gac arils is discussed based on laboratory scale experimental tests. The results highlight an optimal temperature between 50 °C and 60 °C to conserve the color, the carotenoid content and the antioxidant activity. Also, these properties are better preserved by limiting the drying to dry based moisture content between 15% and 18% while the advantages of drying for further processing and for refrigerated conservation for a few months are achieved.  相似文献

Significant increases in the plasma total antioxidant capacity (TAC) have already been reported after acute intake of strawberries. In addition, antihaemolitic effects of strawberry extracts have been recently demonstrated in vitro, revealing that part of the antioxidant properties of strawberry bioactive compounds could lie in their localisation within cell membranes. However, there is a lack of research evidence from in vivo protracted strawberry consumption studies. We carried out a 16-day pilot study where 12 healthy subjects ingested 500 g of antioxidants-rich strawberries daily, and we evaluated the potential effects of fruit consumption on biomarkers of plasma and cellular antioxidant status. A significant increase in fasting plasma TAC and in serum vitamin C concentrations were progressively observed during the period of strawberry supplementation. An enhanced resistance to haemolysis was also observed in both AAPH-treated and untreated erythrocytes, collected during and after the period of strawberry consumption. The results obtained in this work suggest that regular consumption of antioxidant-rich strawberries may exert an improvement on the plasma antioxidant status and an increase on the antihaemolitic defenses of human erythrocytes.  相似文献

Spine grape (Vitis davidii Foex) is an important wild plant species in South China. To provide sufficient experimental evidence for the strong antioxidant activity of spine grapes, four cultivars from Chongyi County, China, including three red varieties (Junzi #1, Junzi #2, and Liantang) and one white variety (Baiyu) were evaluated. The Junzi #1 had the highest phenolic content (total phenolic, flavonoids, flavanols, and anthocyanins) and the strongest antioxidant capacity (DPPH radical-scavenging capacity, cupric-reducing capacity and hydroxyl radical-scavenging activity) among the four varieties. HPLC analysis of spine grapes revealed that the (+)-catechin was the most abundant phenolics and the hydroxycinnamic acids were the major phenolic acids in the four varieties. Hierarchical cluster analysis showed that the Junzi #1 belongs to the group with high phenolic content and strong antioxidant power. The results suggest the Junzi #1 has the best health promoting properties, and the higher utilization value and potential for development.  相似文献

Crude polyphenol extracts (15 or 100 mg gallic acid equivalents (GAE)/kg meat) from canola meal reduced the formation of 2-thiobarbituric acid-reactive substances (TBARS) in pre-cooked beef (66–92%), pork (43–75%) and chicken (36–70%). The canola extract contained sinapic (99.7%), ferulic (0.28%) and p-hydroxybenzoic acids (0.07%).  相似文献
