豌豆是我国主要的食用豆类作物之一,营养价值高。豌豆中不但含有丰富的碳水化合物、蛋白质、维生素、矿物质等营养成分,还含有多肽、膳食纤维、胰蛋白酶抑制剂、酚类物质、植物凝集素等多种功效成分,具有抗菌、抗氧化、抗癌、降血压、降血糖、免疫调节等生理活性。目前豌豆主要作为高蛋白低能量的食品供人们食用,工业化生产也主要集中在豌豆淀粉、蛋白质的加工,而忽略掉其他功效成分的开发利用,使得豌豆的经济价值无法得到充分的体现。本文通过对豌豆中功效成分的提取方法、生理活性及其在食品工业中的应用进行较为全面的整理与总结,以期为豌豆在工业中的应用及功能性食品的开发与研究提供科学参考。 相似文献

Monoterpene olefins such as limonene are plant compounds with applications as flavouring and fragrance agents, as solvents and potentially also in polymer and fuel chemistry. We engineered baker's yeast Saccharomyces cerevisiae to express a (?)‐limonene synthase from Perilla frutescens and a (+)‐limonene synthase from Citrus limon. Both proteins were expressed either with their native plastid targeting signal or in a truncated form in which the plastidial sorting signal was removed. The yeast host strain for expression was AE9 K197G, which expresses a mutant Erg20 enzyme. This enzyme catalyses the formation of geranyl diphosphate, which is the precursor for monoterpenes. Several methods were tested to capture limonene produced by the yeast. Extraction from the culture medium by pentane, or by the addition of CaCl2 followed by solid‐phase micro‐extraction, did not lead to detectable limonene, indicating that limonene is rapidly lost from the culture medium. Volatile terpenes such as limonene may also be trapped in a dodecane phase added to the medium during fermentation. This method resulted in recovery of 0.028 mg/l (+)‐limonene and 0.060 mg/l (?)‐limonene in strains using the truncated Citrus and Perilla synthases, respectively. Trapping the headspace during culture of the limonene synthase‐expressing strains resulted in higher titres, at 0.12 mg/l (+)‐limonene and 0.49 mg/l (?)‐limonene. These results show that the volatile properties of the olefins produced require specific methods for efficient recovery of these molecules from biotechnological production systems. The biotransformation of limonene and limonene oxide by the cyanobacterium, Synechococcus sp. PCC 7942, was investigated. (S)-(+)-Limonene was hydroxylated stereo- and regioselectively at its allylic position of the endocyclic C=C double bond by the cyanobacterial cells to its corresponding alcohol. The cells also showed the ability for the enantio- and stereoselective cleavage of the epoxide group of (1S,2R,4R)-limonene oxide to give (1S,2S,4R)-limonene-1,2-diol. The repetitive production of carveol from limonene was achieved using Ca2+-alginate-immobilized cyanobacterial cells. 相似文献

为提高柠檬烯稳定性,增加其水溶性,采用乙醇注入法制备了柠檬烯脂质体。以包封率为指标,考察了影响脂质体制备的一些重要的工艺参数,优化了制备柠檬烯脂质体的工艺条件,得到了最佳的工艺条件为:芯材:胆固醇:吐温80:大豆卵磷脂=0.2:0.1:1:10(质量比),醇水体积比1:10,最大包封率为86.6%。体外释放结果显示,经过25h,脂质体在模拟胃液和模拟肠液中的释放率分别为12%和18%;因而,脂质体改善了柠檬烯的水溶性,增加了其稳定性,对柠檬烯有较好的保护及缓释效果,这有利于提高其生物利用率。 相似文献

目的 探究壳聚糖-柠檬烯涂膜对鲜切哈密瓜贮藏品质的影响。方法 以无菌蒸馏水和2%壳聚糖涂膜处理鲜切哈密瓜作为对照组,用2%壳聚糖复配0.1%柠檬烯涂膜处理鲜切哈密瓜作为实验组,在贮藏第0、1、3、5、7 d对鲜切哈密瓜的感官、硬度、呼吸强度、可溶性固形物含量、色差、维生素C含量、多酚氧化酶(polyphenol oxidase, PPO)活性、过氧化物酶(peroxidase, POD)活性、过氧化氢酶(catalase, CAT)活性、超氧化物歧化酶(superoxide dismutase, SOD)活性及菌落总数进行测定。结果 2%壳聚糖复配0.1%柠檬烯涂膜显著(P<0.05)减缓了鲜切哈密瓜果肉软化,可溶性固形物和维生素C含量的下降及色差值L*、a*、b*的改变;抑制了鲜切哈密瓜的呼吸强度、PPO和POD活性,增强了SOD和CAT活性,并抑制了菌落的生长,有利于鲜切哈密瓜感官品质的维持。结论 2%壳聚糖复配0.1%柠檬烯涂膜处理鲜切哈密瓜可以降低鲜切哈密瓜贮藏期间的营养物质损耗,减缓果肉的衰老变质,较好地... 相似文献

用柠檬烯乳化液浸泡青椒3min,研究柠檬烯对青椒采后生理和贮藏品质的影响。结果表明,供试浓度的柠檬烯乳化液浸泡处理对青椒的腐烂有明显的抑制作用,贮藏期内柠檬烯乳化液处理组腐烂率较对照组低30%(p<0.01);对青椒的细胞膜系统有保护作用,贮藏第6、12d,对照组细胞膜受损程度分别是柠檬烯乳化液处理组的2.103倍和1.329倍(p<0.01);可以减缓青椒中维生素C、叶绿素、可滴定酸的消耗和分解,贮藏期内柠檬烯乳化液处理组含量均极显著地高于对照组(p<0.01);柠檬烯乳化液处理对青椒中的可溶性蛋白质、可溶性固形物也有一定的保留作用,但含量与对照组相比未达到极显著(p>0.01)。柠檬烯乳化液可以有效延缓青椒的采后生理变化,保持青椒的品质,提高其耐贮藏性。 相似文献

以铜绿假单胞菌为供试菌,研究了柠檬烯对铜绿假单胞菌的抑菌活性及机理。利用肉汤稀释法测定了最小抑菌浓度(MIC),评价了柠檬烯抑菌活性,通过细菌生长曲线的测定、扫描电镜观察、细胞膜通透性以及膜电位的测定,诠释柠檬烯对铜绿假单胞菌的抑菌机理。结果表明:柠檬烯能抑制铜绿假单胞菌的正常生长和增殖,最小抑菌浓度为10 mL/L;柠檬烯可以破坏细胞的正常形态,提高菌液的相对电导率,增加细胞膜的通透性;柠檬烯也能降低铜绿假单胞菌菌体的膜电位,干扰细胞正常代谢活动。柠檬烯通过破坏细菌细胞膜的方式,抑制铜绿假单胞菌生长,导致细菌细胞死亡。这说明柠檬烯可以改变铜绿假单胞菌细胞膜的通透性,破坏其正常细胞形态结构及完整性,从而有效地抑制铜绿假单胞菌的正常生长。 相似文献
