Trans-10, cis-12 conjugated linoleic acid (CLA) reduces milk fat synthesis in sheep in a manner similar to that seen in dairy cows, but its effects on cheese yield and flavor are unknown. Additionally, when dietary energy supply is restricted, CLA can increase milk and milk protein yield, which may alter cheese yield and eating quality. The objectives of the study were to examine the effects of supplementing ewe diets with a rumen-protected source of CLA at a high and low dietary energy intake on milk fat and protein synthesis and on cheese yield and eating quality. Sixteen multiparous ewes were randomly allocated to 1 of 4 dietary treatments: a high (6.7 Mcal of metabolizable energy/d) or low (5.0 Mcal of metabolizable energy/d) feeding level that was either unsupplemented or supplemented with 25 g/d of a lipid-encapsulated CLA (to provide 2.4 g/d of CLA) in each of 4 periods of 21 d duration in a 4 × 4 Latin square design. There was no effect of treatment on milk yield (g/d), but milk fat percentage and milk fat yield were reduced by 23 and 20%, respectively, in ewes supplemented with CLA. Milk fatty acid concentration (g/100 g) of chain length <C16 was decreased and >C16 was increased in milk and cheese following CLA supplementation, whereas decreasing the feeding level increased fatty acids ≥C16. Milk fat contents of CLA were 0.01 and 0.12 g/100 g of fatty acids for the unsupplemented and CLA-supplemented treatments, respectively, whereas cis-9, trans-11 CLA was unaffected by CLA supplementation. There was no main effect of treatment on cheese yield, which was 0.11 ± 0.001 kg of cheese/kg of milk, but cheese yield was highest, at 0.12 ± 0.001 kg/kg, when made from milk of ewes fed the high feeding level + unsupplemented treatment. Cheese made from the milk of ewes supplemented with CLA, compared with the unsupplemented diet, was rated (scale 0 to 10) higher in the creaminess (2.1 vs. 1.4; SEM 0.15) and less oily (0.8 vs. 1.3; SEM 0.17) attributes, and was preferred overall (4.5 vs. 3.9; SEM 0.21). Cheese produced from sheep on the high vs. low feed level was rated less yellow (2.8 vs. 4.2; SEM 0.11), less salty (1.9 vs. 2.3; SEM 0.15), and more sour (1.5 vs. 1.1; SEM 0.13). We concluded that the effect of feeding level on animal performance and cheese characteristics was small, whereas supplementing the diets of ewes with a ruminally protected CLA source reduced milk fat yield, did not affect cheese yield, and beneficially altered the flavor characteristics of the cheese.  相似文献

The adverse health effects of dietary sodium demand the production of cheese with reduced salt content. The study was aimed to assess the effect of reducing the level of sodium chloride on the texture, flavor, and sensory qualities of Cheddar cheese. Cheddar cheese was manufactured from buffalo milk standardized at 4% fat level by adding sodium chloride at 2.5, 2.0, 1.5, 1.0, and 0.5% (wt/wt of the curd obtained). Cheese samples were ripened at 6 to 8°C for 180 d and analyzed for chemical composition after 1 wk; for texture and proteolysis after 1, 60, 120, and 180 d; and for volatile flavor compounds and sensory quality after 180 d of ripening. Decreasing the salt level significantly reduced the salt-in-moisture and pH and increased the moisture-in-nonfat-substances and water activity. Cheese hardness, toughness, and crumbliness decreased but proteolysis increased considerably on reducing the sodium content and during cheese ripening. Lowering the salt levels appreciably enhanced the concentration of volatile compounds associated with flavor but negatively affected the sensory perception. We concluded that salt level in cheese can be successfully reduced to a great extent if proteolysis and development of off-flavors resulted by the growth of starter and nonstarter bacteria can be controlled.  相似文献

The objective of this study was to describe the proteolysis and lipolysis profiles in goat cheese made in the Canary Islands (Spain) using raw milk with 3 different fat contents (0.5, 1.5, and 5%) and ripened for 1, 7, 14, and 28 d. β-Casein was the most abundant protein in all cheeses and at all ripening times. Quantitative analysis showed a general decrease in caseins as ripening progressed, and degradation rates were higher for αS1-casein than for β-casein and αS2-casein. Furthermore, the degradation rate during the experimental time decreased with lower fat contents. The αS2-casein and αS1-casein levels that remained in full-fat and reduced-fat cheeses were less than those in low-fat cheese. In contrast, β-casein also showed degradation along with ripening, but differences in degradation among the 3 cheese types were not significant at 28 d. The degradation products increased with the ripening time in all cheeses, but they were higher in full-fat cheese than in reduced-fat and low-fat cheeses. The free fatty acid concentration per 100 g of cheese was higher in full-fat cheese than in reduced- and low-fat cheese; however, when the results were expressed as milligrams of free fatty acids per gram of fat in cheese, then lipolysis occurred more rapidly in low-fat cheese than in reduced- and full-fat cheeses. These results may explain the atypical texture and off-flavors found in low-fat goat cheeses, likely the main causes of non-acceptance.  相似文献

Reconstituted creamed retentates of ultrafiltration were converted to ripened cheese by Cheddar manufacturing principles. Initially, the fresh cheeses resembled normal Cheddar but during ripening were transformed into Gouda-Swiss types with pH rising rapidly from 5.2 to approximately 6.0.Cheese composition was affected by amount of full fat retentate in reconstituted mixtures. As total milk solids increased in reconstituted retentates, cheese moisture decreased and cheese volume rose to high yields. Cheese yield efficiency showed 1.21 to 1.32 kg cheese per kg total solids. Rennet curd of higher total solids retentates formed more rapidly than normal, and curds were harder. Whey from retentate reconstituted cheeses showed relatively low ash and fat even from cheeses made with high retentate. Soluble protein in 2-mo-old cheeses held at 10° C was lower in cheese from retentates of high solids.  相似文献

Texture, proteolysis and flavour development in Ras cheeses made from raw or pasteurised milk with two different thermophilic lactic cultures were monitored during ripening. Results showed that at day 1 of manufacture, the moisture content and pH were lower in raw milk cheese than in pasteurised milk cheeses. Levels of water-soluble nitrogen, casein breakdown, free amino groups and free fatty acids were higher in cheese made from raw milk than in that made from pasteurised milk. Textural characteristics, such as hardness, cohesiveness and chewines, increased in all treatments during the first 60 days of ripening due to the reduction in the moisture level during the second stage of salting (dry salting during the first 60 days of ripening). Cheese made from raw milk received the highest texture and flavour scores by panellists.  相似文献

在牛乳中添加不同的黑豆豆乳,研究不同的黑豆豆乳添加量对Mozzarella奶酪在成熟0 d、30 d、60 d、90 d时的水分活度、pH、质构、色泽、蛋白质降解等品质指标变化的影响。结果显示,随着黑豆豆乳添加量在2%~6%范围内的增大,奶酪的水分活度不断增大,pH不断降低,奶酪的硬度、弹性、粘附性、咀嚼性增加,奶酪的明亮度(L*值)下降,红度(a*值)和黄度(b*值)增加,而加入黑豆豆乳的奶酪在成熟过程中蛋白质降解与对照奶酪相似。综合各个指标,在牛乳中加入4%黑豆豆乳条件下制作的黑豆豆乳牛乳奶酪,既有独特的风味,同时奶酪具有较好的色度、质构、蛋白降解等指标特性。  相似文献

Bulk tank milk was standardised to six levels of fat (3·0, 3·2, 3·4, 3·6, 3·8, 4·0%) and similarly to six levels of protein, thus giving a total of 36 combinations in composition. Milk was analyzed for total solids, fat, protein, casein, lactose and somatic cell count and was used to make laboratory-scale cheese. Cheese samples from each batch were assayed for total solids, fat, protein and salt. Losses of milk components in the whey were also determined. Least squares analysis of data indicated that higher protein level in milk was associated with higher protein and lower fat contents in cheese. This was accompanied by lower total solids (higher moisture) in cheese. Inversely, higher fat level in milk gave higher fat and lower protein and moisture contents in cheese. Higher fat level in milk resulted in lower retention of fat in cheese and more fat losses in the whey. Higher protein level in milk gave higher fat retention in cheese and less fat losses in the whey. Regression analysis showed that cheese fat increased by 4·22%, while cheese protein decreased by 2·61% for every percentage increase in milk fat. Cheese protein increased by 2·35%, while cheese fat decreased by 6·14% per percentage increase in milk protein. Milk with protein to fat ratio close to 0·9 would produce a minimum of 50% fat in the dry matter of cheese.  相似文献

The effect of the hygienic quality of milk on changes in microbial counts and biogenic amine content was evaluated during ripening of goat cheeses manufactured from pasteurized and raw milks at 1, 14, 30, 60 and 90 d. The original milk, rennet, curd and whey were also included in the study. The pH, salt content and extent of proteolysis in the cheese were also evaluated. Spermidine and spermine were the main amines in raw milk, while they were minor amines in cheeses. Other amines increased markedly during ripening, tyramine being the main amine in cheese made from raw milk and cadaverine and putrescine in those produced from pasteurized milk. Enterobacteriaceae counts decreased during ripening whereas those of lactic acid bacteria increased, especially lactobacilli and enterococci. Cheese made from raw milk showed higher microbial counts during ripening than those made from pasteurized milk, especially for Enterobacteriaceae and enterococci, counts being 2 or 3 log units higher. Raw milk cheese showed remarkably higher biogenic amines compared with pasteurized milk cheeses. Therefore, pasteurization of milk causes a decrease in final biogenic amine content of cheese as a result of the reduction of its microbial counts.  相似文献

Production and ripening of Halitzia cheese was examined by conventional physicochemical and microbiological analyses along with state-of-the art metagenomics. Cheese was made from (A) raw goat milk without the addition of starters; (B) pasteurised goat milk without the addition of starters; (C) pasteurised milk with the addition of starters. The type and counts of microorganisms were mainly influenced by ripening time; microbial counts for lactic acid bacteria were predominant and remained stable with little or no variation throughout ripening. Coliforms and coagulase positive staphylococci declined during ripening and at the end of ripening the staphylococci were not detected. Yeasts were detected at low counts but in great diversity throughout ripening. Metagenomics analysis confirmed the results obtained by the classical microbiological analysis. The physicochemical parameters during ripening were also determined; at 60 days the pH value and moisture, fat, protein, ash, and salt contents did not significantly differ amongst cheese types.  相似文献

Pizza cheese was manufactured with milk (12.1% total solids, 3.1% casein, 3.1% fat) standardized with microfiltered (MF) and diafiltered retentates. Polymeric, spiral-wound MF membranes were used to process cold (<7°C) skim milk, and diafiltration of MF retentates resulted in at least 36% removal of serum protein on a true protein basis. Cheese milks were obtained by blending the MF retentate (16.4% total solids, 11.0% casein, 0.4% fat) with whole milk (12.1% total solids, 2.4% casein, 3.4% fat). Control cheese was made with part-skim milk (10.9% total solids, 2.4% casein, 2.4% fat). Initial trials with MF standardized milk resulted in cheese with approximately 2 to 3% lower moisture (45%) than control cheese (∼47 to 48%). Cheese-making procedures (cutting conditions) were then altered to obtain a similar moisture content in all cheeses by using a lower setting temperature, increasing the curd size, and lowering the wash water temperature during manufacture of the MF cheeses. Two types of MF standardized cheeses were produced, one with preacidification of milk to pH 6.4 (pH6.4MF) and another made from milk preacidified to pH 6.3 (pH6.3MF). Cheese functionality was assessed by dynamic low-amplitude oscillatory rheology, University of Wisconsin MeltProfiler, and performance on pizza. Nitrogen recoveries were significantly higher in MF standardized cheeses. Fat recoveries were higher in the pH6.3MF cheese than the control or pH6.4MF cheese. Moisture-adjusted cheese yield was significantly higher in the 2 MF-fortified cheeses compared with the control cheese. Maximum loss tangent (LTmax) values were not significantly different among the 3 cheeses, suggesting that these cheeses had similar meltability. The LTmax values increased during ripening. The temperature at which the LTmax was observed was highest in control cheese and was lower in the pH6.3MF cheese than in the pH6.4MF cheese. The temperature of the LTmax decreased with age for all 3 cheeses. Values of 12% trichloroacetic acid soluble nitrogen levels were similar in all cheeses. Performance on pizza was similar for all cheeses. The use of MF retentates derived with polymeric membranes was successful in increasing cheese yield, and cheese quality was similar in the control and MF standardized cheeses.  相似文献

The objective of this research was to evaluate the effect of 2 levels of somatic cell counts (SCC) in raw milk on Prato cheese composition, protein and fat recovery, cheese yield, and ripening. A 2 × 6 factorial design with 3 replications was performed in this study: 2 levels of SCC and 6 levels of storage time. Initially, 2 groups of dairy cows were selected to obtain low (<200,000 cells/ mL) and high (>600,000 cells/mL) SCC in milks that were used to manufacture 2 vats of cheese: 1) low SCC and 2) high SCC. Milk, whey, and cheese compositions were evaluated; clotting time was measured; and cheese yield, protein recovery, and fat recovery were calculated. The cheeses were evaluated after 5, 12, 19, 26, 33, and 40 d of ripening according to pH, moisture, pH 4.6 soluble nitrogen, 12% trichloroacetic acid soluble nitrogen as a percentage of total nitrogen, and firmness. High-SCC milk presented significantly higher total protein and nonprotein nitrogen and lower true protein and casein concentrations than did low-SCC milk, indicating an increased whey protein content and a higher level of proteolysis. Although the pH of the milk was not affected by the somatic cell level, the cheese obtained from high-SCC milk presented significantly higher pH values during manufacture and a higher clotting time. No significant differences in cheese yield and protein recovery were observed for these levels of milk somatic cells. The cheese from high-SCC milk was higher in moisture and had a higher level of proteolysis during ripening, which could compromise the typical sensory quality of the product.  相似文献

The aim of the study was to investigate whether the addition of extruded flaxseed (EF) in dairy cow diets had an effect on milk fat and individual fatty acids (FA) recovery in cheese after 90 d of ripening. Eighteen Holstein-Friesian cows, divided into 3 experimental groups (6 cows/group), were fed 3 isonitrogenous and isoenergetic diets with 0 (CTR), 500 (EF500), or 1,000 g/d (EF1000) of EF in 3 subsequent periods (2 wk/each), following a 3 × 3 Latin square design. Dry matter intake (DMI) and milk yield were recorded daily. Individual milk samples were collected on d 7 and 13 of each period to determine proximate and FA composition. Eighteen cheese-making sessions (2 for each group and period) were carried out, using a representative pooled milk sample obtained from the 6 cows of each group (10 L). At 90 d of ripening, cheeses were analyzed for proximate and FA composition. Cheese yield was computed as the ratio between the weights of ripened cheese and processed milk. Recoveries of fat, individual FA, and grouped FA were computed as the ratio between the corresponding weights in cheese and in milk. Inclusion of EF did not affect DMI, milk yield, or milk composition. Compared with CTR, the 2 diets containing EF increased the proportion of C18:3n-3 and total n-3 FA, in both milk and cheese. Cheese yield and cheese fat percentage did not differ among diets. Likewise, milk fat recovery in cheese was comparable in the 3 treatments and averaged 0.85. The recoveries of individual FA were, for the most part, not dissimilar from fat recovery, except for short-chain saturated FA (from 0.38 for C4:0 to 0.80 for C13:0), some long-chain saturated FA (0.56 and 0.62 for C20:0 and C21:0, respectively), and for C18:3n-6 (1.65). The recovery of saturated FA was lower than that of monounsaturated FA, whereas recovery of polyunsaturated FA was intermediate. Compared with medium- and long-chain FA, short-chain FA were recovered to a smaller extent in cheese. No differences in recovery were found between n-6 and n-3 FA. In conclusion, FA have different recoveries during cheese-making, with lower values for the short-chain compared with long-chain FA, and for saturated FA compared with unsaturated FA. The addition of EF in dairy cow diets did not influence cheese yield or fat recovery in cheese, irrespective of the inclusion level. The experiment confirmed that feeding cows with EF represents a successful strategy for improving the FA profile of dairy products, through an increase of n-3 FA.  相似文献

Triacylglycerol (TAG) composition by carbon number in 2 protected designation of origin cheeses, Mahón (cheese from cow milk) and Manchego (cheese from ewe milk) that were manufactured by 3 different producers was analyzed during cheese ripening using gas chromatography with a short capillary column. The TAG composition at different times during cheese ripening was also analyzed in cheeses from different batches produced at the same plant. Lipolysis levels in the Mahón and Manchego cheeses during ripening were low; free fatty acid values ranged from 2,500 to 4,000 ppm at the end of ripening. The TAG composition did not change significantly during ripening. The TAG values obtained from each cheese sample were substituted into the multiple regression equations that have been proposed to detect foreign fats in milk fat. The values obtained using the equations for bovine (proposed by the European Union) and ovine milk (proposed by our laboratory) were within the normal range. Accordingly, these equations can be considered useful for detecting foreign fat in these cheeses during the ripening period contemplated during this study.  相似文献

Pizza cheese was manufactured from two types of Ultrafiltration (UF)-fortified milks: high solids (UFHS; 15.2% TS) and medium solids (UFMS; 13.5%). Cheese milks were obtained by blending cold processed UF retentate with partially skimmed milk and UF (skim milk) retentate. Cheese functionality was assessed using oscillatory rheology and by baking on a pizza. Gels made from UF-fortified milks had similar clotting times and they clotted faster than control milk. Shear stress values of gels from UF-fortified milks were higher than control. Fat recoveries in the cheeses increased in the order UFHS<control<UFMS. Nitrogen recoveries were lower in control than UF-fortified cheeses. During heating loss tangent curves shifted higher during the first month of ripening and the temperature for the maximum loss tangent decreased. Crossover temperature also decreased during ripening. Trichloroacetic acid-soluble nitrogen levels were similar in all cheeses. Standardization of cheese milk with cold UF retentates increased yield without adversely affecting functionality.  相似文献

The aim of this study was to evaluate the milk properties and the yield and sensory properties of Cantal cheese made with milk from Holstein or Montbéliarde cows milked once or twice daily. Sixty-four grazing cows [32 Holstein (H) and 32 Montbéliarde (M) cows] in the declining phase of lactation (157 d in milk) were allocated to 1 of 2 equivalent groups milked once daily (ODM) or twice daily (TDM) for 7 wk. The full-fat raw milk collected during 24 h from the 4 groups of cows (M-TDM, M-ODM, H-TDM, and H-ODM) was pooled and processed into Cantal cheese 4 times during the last 4 wk of the experimental period. In all, 16 cheeses were made (2 milking frequencies × 2 breeds × 4 replicates) and analyzed after a ripening period of 15 and 28 wk. The results showed that for both breeds, the pooled milk content of fat, whey protein, casein, total protein, and phosphorus as well as rennet clotting time and curd firming time were significantly higher with ODM cows, whereas the casein-to-total protein ratio was lower, and lactose, urea, calcium, and free fatty acids contents of milk remained unchanged. The acidification and draining kinetics of the cheese as well as cheese yields and the chemical and rheological properties of the ripened cheese were not significantly modified by milking frequency. For both breeds, the cheeses derived from ODM cows had a slightly yellower coloration but the other sensory attributes, except for pepper odor, were not significantly affected by milking frequency, thereby demonstrating that ODM does not have an adverse effect on the sensory properties of Cantal cheese. Compared with that of Holstein cows, milk from Montbéliarde cows resulted in a higher cheese yield (+1.250 kg/100 kg of milk) and ripened cheeses with lower pH, dry matter, calcium, sodium chloride, and water-soluble nitrogen concentrations. These cheeses had also a less firm and more elastic texture, a more acidic taste, and a yogurt/whey aroma.  相似文献

为探究解淀粉芽孢杆菌GSBa-1凝乳酶制备的羊奶干酪(干酪B)成熟特性的变化,以采用商业凝乳酶和同批次羊奶制作的干酪(干酪A)为对照组,比较两组干酪在60d成熟期主要组分、质构特性、微生物指标及风味物质的变化。结果表明,两组干酪得率相差不大。成熟期间干酪的水分、蛋白质及脂肪含量呈先上升后下降趋势,干酪B始终高于干酪A;干酪游离氨基酸总量在成熟期间呈先下降后上升趋势,且干酪B中苯丙氨酸、天冬氨酸、异亮氨酸、甲硫氨酸、丝氨酸含量高于干酪A。成熟前期干酪B质构特性优于干酪A。干酪A成熟后乳酸乳球菌数量增加了(5.22±0.02)%,干酪B无显著变化(P>0.05)。成熟期内,两组干酪中挥发性风味物质种类和含量均增加,但干酪B中的壬酸、辛醇、2-庚酮、2-壬酮、二甲基砜使羊奶干酪风味独特、浓郁。因此,GSBa-1凝乳酶具备替代商业凝乳酶用于羊奶干酪生产的潜力,可对干酪风味的形成和品质的提升起到一定促进作用。  相似文献

In Italy, more than 75% of milk is used for cheese making. For this reason, milk composition and coagulation traits and cheese quality represent the most important tools for the economic development of the dairy sector. In particular, cheese quality varies in relation to cheese-making technology and breed of cow. The aim of this study was to investigate the effect of 3 types of milk, originating from Holstein-Friesian (HF), Brown Swiss (BS), and mixed of both breeds, on vat milk characteristics, cheese yield, and quality in 3 different typical Italian cheese-making conditions (Casolet, Vezzena, and Grana Trentino). One hundred forty-four cows (66 HF and 78 BS) were involved, and a total of 24 vats of milk were evaluated. At maturity, 30, 21, and 16 wheels of Casolet, Vezzena, and Grana Trentino cheese were analyzed. Brown Swiss cows yielded 9% less milk per day than HF cows, but milk showed greater contents of protein, casein, titratable acidity, and better rennet coagulation time and curd firmness than HF milk. The chemical composition and cholesterol content of the 3 types of cheese were similar between breeds, whereas the cheese made with BS milk showed greater contents of monounsaturated and polyunsaturated fatty acids. Cheese made with BS milk had greater b* (yellow component) than HF. Cheese yield, recorded at different ripening times, demonstrated that BS milk yielded more cheese than HF. Mixed milk showed values, on average, intermediate to HF and BS milk characteristics, and this trend was confirmed in cheese yield at different ripening times.  相似文献

Feeding high-concentrate diets has the potential to cause milk fat depression, but several studies have suggested that dietary sugar can increase milk fat yield. Two experiments were conducted to evaluate the ability of dietary molasses to prevent milk fat depression in the presence of a 65% concentrate diet. In trial 1, molasses replaced corn grain at 0, 2.5, or 5% of diet dry matter in diets fed to 12 second-lactation Holstein cows (134 ± 37 d in milk) in a 3 × 3 Latin square design. Trial 1 demonstrated that replacing up to 5% of dietary dry matter from corn with molasses had positive effects on de novo fatty acid synthesis, increasing the yield of short- and medium-chain fatty acids during diet-induced milk fat depression. Increasing inclusion rate of molasses increased milk fat concentration, but decreased milk yield and milk protein yield. Trial 2 used 7 ruminally cannulated, multiparous, late-lactation Holstein cows (220 ± 18 d in milk) to evaluate effects of dietary molasses on ruminal parameters and milk composition, and also to assess whether increased metabolizable protein supply would alter these responses. Cows were randomly assigned to a dietary treatment sequence in a crossover split plot design with 0 and 5% molasses diets. Dietary treatments were fed for 28 d, with 16 d for diet adaptation, and the final 12 d for 2 abomasal infusion periods in a crossover arrangement. Abomasal infusions of water or AA (5 g of l-Met/d + 15 g of l-Lys-HCl/d + 5 g of l-His-HCl-H2O/d) were administered 3 times daily for 5 d, with 2 d between infusion periods. Administration of AA had no effect on concentration or yield of any milk components. Addition of molasses increased milk fat concentration (2.71 vs. 2.94 ± 0.21%), but had no effect on yields of milk fat or protein. Dietary molasses decreased total volatile fatty acid concentration (141 vs. 133 ± 4.6 mM), decreased the molar proportion of propionate, and increased the molar proportion of butyrate in ruminal fluid. Molasses also increased ruminal pH (5.73 vs. 5.87 ± 0.06), decreased the yield of trans-10 C18:1, and increased the yield of trans-11 C18:1 in milk fat. 本文主要研究了豆奶干酪成熟过程中蛋白水解的变化,并与纯牛乳干酪进行比较。结果表明:豆奶干酪中pH4.6 SN 和12%TCA SN随着时间的延长逐渐增高,而且pH4.6 SN的增长速度比12%TCA SN快,这与纯牛乳干酪是一致的,但豆奶干酪的可溶性氮低于同一时期的纯牛乳干酪。  相似文献
