An exposure assessment of synthetic food colours was carried out among 1-5- and 6-18-year-old individuals by the food frequency method. Children had an intake of solid food consumption in the range 2-465 g day-1 and liquid food consumption in the range 25-840 ml day-1 with added colours. Among the eight permitted colours in India, six were consumed by the subjects of the study. The intakes of some subjects exceeded the acceptable daily intake for colours such as tartrazine, sunset yellow and erythrosine, which is 7.5, 2.5 and 0.1 mg kg-1 body weight, respectively. Therefore, a uniform permissible limit of 100 mg kg-1 prescribed under the Prevention of Food Adulteration Act in India for all foods is not justified. The limits need to be revised according to the Codex Alimentarius Commission, which permits different maximum levels of additives to various food categories based on both the extent of consumption and the technological justification for its use.  相似文献

Australian survey of acrylamide in carbohydrate-based foods   总被引:2,自引:0,他引:2  
A method was developed and validated for the determination of acrylamide in carbohydrate-based foods. Solid-phase extraction employing a mixed-bed anion and cation exchange cartridge in series with a C18 extraction disk was used to clean-up water extracts of food samples before analysis by liquid chromatography coupled with tandem mass spectrometry detection. The limit of detection was calculated as approximately 25 μg kg-1 and the limit of reporting was 50 μg kg-1. The average method recovery for 84 samples from a range of matrices reporting was 99% with a relative standard deviation of 11.2%. A survey was conducted of 112 samples of carbohydrate-based foods composited from 547 products available in the Australian market. The analytical results were used in conjunction with Australian food consumption data derived from the 1995 National Nutrition Survey (NNS) to prepare preliminary dietary exposure estimates of Australians to acrylamide through only the food groups examined. Mean dietary exposure to acrylamide resulting from consumption of the foods tested, for Australians aged 2 years and above, was estimated as 22-29 µg day-1 (equivalent to 0.4-0.5 µg kg-1 bodyweight day-1) and between 73 and 80 µg day-1 (1.4 and 1.5 µg kg-1 bodyweight day-1) for 95th percentile consumers. Young children (2-6 years) consuming acrylamide-containing foods had a higher acrylamide exposure on a per kilogram bodyweight basis (mean 1.0-1.3 µg kg-1 bodyweight day-1). The estimated exposure of Australians to acrylamide is similar to that estimated for other countries.  相似文献

A generic methodology for the assessment of consumer exposure to substances migrating from packaging materials into foodstuffs during storage is presented. Consumer exposure at the level of individual households is derived from the probabilistic modeling of the contamination of all packed food product units (e.g. yogurt pot, milk bottle, etc.) consumed by a given household over 1 year. Exposure of a given population is estimated by gathering the exposure distributions of individual households to suitable weights (conveniently, household sizes). Calculations are made by combining (i) an efficient resolution of migration models and (ii) a methodology utilizing different sources of uncertainty and variability. The full procedure was applied to the assessment of consumer exposure to styrene from yogurt pots based on yearly purchase data of more than 5400 households in France (about 2 million yogurt pots) and an initial concentration c0 of styrene in yogurt pot walls, which is assumed to be normally distributed with an average value of 500 mg kg-1 and a standard deviation of 150 mg kg-1. Results are discussed regarding both sensitivity of the migration model to boundary conditions and household practices. By assuming a partition coefficient of 1 and a Biot number of 100, the estimated median household exposure to styrene ranged between 1 and 35 µg day-1 person-1 (5th and 95th percentiles) with a likely value of 12 µg day-1 person-1 (50th percentile). It was found that exposure does not vary independently with the average consumption rate and contact times. Thus, falsely assuming a uniform contact time equal to the sell-by-date for all yogurts overestimates significantly the daily exposure (5th and 95th percentiles of 2 and 110 µg day-1 person-1, respectively) since high consumers showed quicker turnover of stock.  相似文献

4-Hydroxy-2-alkenals are cytotoxic aldehydes generated from the oxidation of n-3 and n-6 polyunsaturated fatty acids. The compounds have shown various biological effects via Schiff base adducts or Michael addition adducts at levels higher than physiological ones. To assess human exposure to 4-hydroxy-2-alkenals in the diet, 4-hydroxy-2-alkenals in vegetable oils, fish and shellfish were monitored using GC/MS/SIM. 2001 National Health and Nutrition Survey (2002) data were employed for the dietary intake pattern. The Korean daily exposure to 4-hydroxy-2-alkenals, excluding a possible one from fried food, was 4.3 µg day-1, constituted of 1.6 µg 4-hydroxy-2-hexenal (HHE) and 2.7 µg 4-hydroxy-2-nonenal (HNE). It was calculated that Koreans could be additionally exposed to more than 11.8 µg day-1 4-hydroxy-2-alkenal from fried foods. Thus, the combined exposure would be 16.1 µg day-1, which corresponds to 0.3 µg kg-1 body weight day-1 for a 60 kg Korean adult. In spite of the biological toxicity of 4-hydroxy-2-alkenals, the risk for human could not be quantified due to the lack of a virtually safe dose of the compounds. However, considering the basal level of 4-hydroxy-2-alkenals in many tissues, the present value from the diet may not pose a significant risk for human health.  相似文献

Commercially available fish oil supplements sourced from retail outlets in the UK, as well as by mail order, were surveyed in 2000-02 for dioxin (PCDD/Fs) and polychlorinated biphenyl (PCB) content. Sampled products were representative of market share. The WHO-TEQ values for these products ranged from 0.18 to 8.4 ng kg-1 for ΣPCDD/F and from 1.1 to 41 ng kg-1 for Σ dioxin-like PCBs. The results suggest a downward trend in the levels of dioxins in fish oil supplements over the last decade, since levels for similar products ranged from 0.3 to 10 ng kg-1 for ΣPCDD/F WHO-TEQ in 1996. Levels of ICES (International Council for the Exploration of the Seas) 7 PCBs in the current study ranged from 8.3 to 267 µg kg-1. Subsequent to this survey, European Union legislation has been introduced that includes a maximum limit of 2 ng kg-1 WHO-TEQ for dioxins in fish oil products for human consumption. Twelve of the 33 products reported here would have exceeded this limit. Negotiations are in progress to incorporate dioxin-like PCBs into the European Union regulations. When manufacturer-recommended doses were applied to the observed levels, the estimated upper bound human exposure to dioxins and dioxin-like PCBs from dietary intake of these products ranged from 0.02 to 7.1 pg WHO-TEQ kg-1 body weight day-1 for adults and from 0.02 to 10 pg WHO-TEQ kg-1 body weight day-1 for schoolchildren. This level rises to 1.8-8.9 pg WHO-TEQ kg-1 body weight day-1 for adults and 1.4-14 pg WHO-TEQ kg-1 body weight day-1 for schoolchildren when combined with the average exposure from the whole diet in 1997. Again, subsequent to this survey, the Committee on Toxicity of Chemicals in Food, Consumer Products and the Environment (COT) revised the UK tolerable daily intake (TDI) for mixtures of dioxins and dioxin-like PCBs from 10 to 2 pg WHO-TEQ kg-1 body weight day-1. This is in line with the tolerable weekly intake (TWI) of 14 pg WHO-TEQ kg-1 body weight set by the Scientific Committee on Food (SCF).  相似文献

The occurrence of deoxynivalenol (DON) in Danish wheat flour was studied during the period 1998-2003 by either capillary gas chromatography with electron capture detection and liquid chromatography coupled to an ion trap mass spectrophotometer. A total of 151 samples were collected from mills and the retail market in Denmark. Contamination levels varied considerably from year-to-year with the highest concentrations occurring in samples from the 2002 harvest with mean and median concentrations of 255 and 300 µg kg-1, respectively. Compared to other harvest years, 2002 had the highest amount of precipitation around flowering time, i.e. from the end of June to the beginning of July covering weeks 25-27. The lowest average levels were found in samples from the 2001 harvest, where weeks 25-27 were dry compared with other harvest years. The highest value (705 µg kg-1) was obtained in a flour sample from the 2002 harvest, but none of the tested samples exceeded the maximum limit of 750 µg kg-1, which has been recently introduced by the European Commission for DON in flour used as raw materials in food products. Calculation of chronic or usual intake by a deterministic approach showed that intake did not exceed the TDI of 1 µg kg-1 bw day-1 either for the whole population or for children. A probabilistic approach also showed that intake in general was below the TDI, but intake for children in the 99% percentile amounted to more than 75% of the TDI. The highest intake is calculated to be 2.5 µg kg-1 bw day-1.  相似文献

There are many initiatives in Europe trying to refine the exposure assessment for food packaging migrants. In the USA, the US Food and Drug Administration (US FDA) uses food consumption and food-type distribution factors to aid the exposure assessment process and generate more realistic estimates of exposure. The present study developed food-consumption factors and food-type distribution factors for Irish children aged 5-12 years from data collected as part of a National Children's Food Survey (NCFS) completed in Ireland in 2003-04, combined with data from the 2003-05 Irish Food Packaging Database and from literature data on surface area-to-weight ratios for food packaging. Consumption factors are defined as the fraction of a person's diet likely to contact a specific food-contact material, while food-type distribution factors reflect the fraction of all food contacting each material that is aqueous, acidic, alcoholic or fatty. In this study, it was found that 'total plastics' had the highest consumption factor of 0.83, while 'total paper and board' had a factor of 0.13 and 'total metal and alloys' had a factor of 0.06. Although it is tentative to compare the US FDA factors with the factors derived in the current study, as the US FDA data are for the total US population, the consumption factor for 'total plastics' in the present study (0.83) was similar to that used by the US FDA (0.79). However, a large difference existed for the consumption factor for 'total metal and alloys' in the Irish data (0.06) and the US FDA data (0.2). In terms of the type of materials used for foods, glass was used mainly for acidic foods (0.67), while plastic was uniformly used for all food types. The food-contact area for plastic packaging for all foods consumed by children was 10.67 dm2/child day-1, which is slightly lower than the proposed value for the average European consumer of 12.4 dm2/person day-1. However, this should be expected, as children do not consume as much food as adults. When scenario exposure estimates were made, it was found that when using European Union assumptions, estimates were much larger than when using consumption factors and food-type distribution factors in the exposure assessment, even when conservative assumptions were employed for the consumption factor. This study highlights the potential use of consumption factors and food-type distribution factors in the refinement of the exposure assessment process and how these factors can be calculated using data collected as part of a national food survey.  相似文献

Estimations of ochratoxin A (OTA) and 4-deoxynivalenol (DON) exposure of the Belgian population through beer consumption were made using the results of the recent Belgian food survey and the compiled data set of OTA and DON levels in conventionally and organically produced beers in 2003-05. For the consumers of organic beers, the daily intake of OTA was 0.86 (in 2003), 1.76 (in 2004) and 0.72 (in 2005) ng kg-1 body weight (bw), considering the mean beer consumption (0.638 litres) and the average level of OTA in 2003, 2004 and 2005, respectively. Using the 97.5th percentile of beer consumption (1.972 litres), the corresponding OTA daily intakes were 2.65, 5.44 and 2.24 ng kg-1 bw, which are close or above the tolerable daily intake (TDI) of 5 ng kg-1 bw. For the consumers of conventional beers, the OTA intakes were low: 0.23, 0.23 and 0.11 ng kg-1 bw day-1 for the average beer consumption, in 2003, 2004 and 2005 against 0.72, 0.73 and 0.34 ng kg-1 bw day-1 when the 97.5th percentile level was considered. As for the DON intake, the estimates were quite low for both conventional and organic beer consumers when the provisional maximum TDI (PMTDI) of 1 µg kg-1 bw was considered. Average consumption of organic beer led to daily intakes of 0.05 and 0.04 µg DON kg-1 bw in 2003 and 2004, respectively, whilst for conventional beer, daily intakes were 0.07 and 0.05 µg DON kg-1 bw. At the 97.5th percentile level of beer consumption, daily intakes of 0.15 and 0.13 µg kg-1 bw were obtained for organic beers against 0.23 and 0.17 µg kg-1 bw for conventional ones. The results showed that beer could be an important contributor to OTA exposure in Belgium, even though a declining trend seems to be apparent during the last year of monitoring. Therefore, efforts should be devoted to maintain the OTA levels as low as reasonably achievable, especially for organic beer.  相似文献

The study reported herein was initiated to examine dietary tin intake (Sn-D) in Japan to elucidate the possible effects of consumption of canned food (including beverages) on Sn-D, and to compare the intake among regions and between the two sexes in reference to the current provisional tolerable weekly intake and intake in other countries. Urinary tin levels (Sn-U) were also studied. Duplicate diet samples (24 h) together with records of food intake were collected in 1999-2004 from 111 adult residents in four areas of Japan. After exclusion of incomplete samples, 95 valid samples were subjected to determination of tin by inductively coupled plasma mass spectrometry (ICP-MS) after acid digestion. Among the 95 cases, 37 women additionally provided urine samples. Distribution of Sn-D was markedly skewed. Median Sn-D was 5.6 µg day-1 for total subjects, which was about one-tenth of the values previously reported for the Japanese population; the difference was most probably attributable to the difference in the methods of determination. Consumption of canned foods led to a substantial increase in Sn-D. Thus, the median Sn-D for canned food consumers of 35.7 µg day-1, was eight-fold higher than the median Sn-D for non-consumers of 4.5 µg day-1. Sn-U (as corrected for creatinine concentration) distributed log-normally with a geometric mean of 2.0 µg (g cr)-1. No effect of canned food consumption was evident on Sn-U. When compared internationally, Sn-D for the Japanese population was substantially lower than Sn-D for populations in other industrialized countries.  相似文献

Arsenic contamination of rice plants by arsenic-polluted irrigation groundwater could result in high arsenic concentrations in cooked rice. The main objective of the study was to estimate the total and inorganic arsenic intakes in a rural population of West Bengal, India, through both drinking water and cooked rice. Simulated cooking of rice with different levels of arsenic species in the cooking water was carried out. The presence of arsenic in the cooking water was provided by four arsenic species (arsenite, arsenate, methylarsonate or dimethylarsinate) and at three total arsenic concentrations (50, 250 or 500 µg l-1). The results show that the arsenic concentration in cooked rice is always higher than that in raw rice and range from 227 to 1642 µg kg-1. The cooking process did not change the arsenic speciation in rice. Cooked rice contributed a mean of 41% to the daily intake of inorganic arsenic. The daily inorganic arsenic intakes for water plus rice were 229, 1024 and 2000 µg day-1 for initial arsenic concentrations in the cooking water of 50, 250 and 500 µg arsenic l-1, respectively, compared with the tolerable daily intake which is 150 µg day-1.  相似文献

The content of nitrates were determined in 1349 samples of vegetables and ready-made food in 2003-2004 as a part of the Estonian food safety monitoring programme and the Estonian Science Foundation grant research activities. The results of manufacturers' analyses carried out for internal monitoring were included in the study. The highest mean values of nitrates were detected in dill, spinach, lettuce and beetroot. The mean concentrations were 2936, 2508, 2167 and 1446 mg kg-1, respectively. The content of nitrites in samples was lower than 5 mg kg-1. In total, the mean intake of nitrates by the Estonian population was 58 mg day-1. The mean content of nitrates in vegetable-based infant foods of Estonian origin was 88 mg kg-1. The average daily intake of nitrates by children in the age group of 4-6 years was 30 mg. The infants' average daily intake of nitrates from consumption of vegetable-based foods was 7.8 mg.  相似文献

The results are reported of a European survey of the contamination of baby food with epoxidized soyabean oil (ESBO). Fat from the sample was extracted, transmethylated and derivatized for analysis by gas chromatography/mass spectrometry (GC/MS). Analysis was carried out of 248 samples of various types of foodstuffs from the 15 European Union Member States as well as Switzerland. ESBO was found in 95 of 248 samples analysed at levels from 1.5 to 135.2 mg kg-1. The highest concentrations were found in main dish mixed foods such as vegetables and meat or carbohydrate- and vegetable-based mixes. Levels exceeded 30 mg kg-1 in 15% of the samples, and 4% exceeded the overall migration limit fixed for plastics in the European Union of 60 mg kg-1. This level of contamination is significant, confirming results from previous surveys and indicating a risk for the tolerable daily intake to be exceeded. These results suggest that an emphasis must be placed for more systematic research with a focus on the parameters for migration.  相似文献

The migration of trimellitic acid and its esters from epoxy anhydride coatings was determined in simulants as well as in canned foods. The most appropriate simulant was a combination of EC simulants B and C: 2% acetic acid/10% ethanol in water. The average migration into food was 900 μg kg-1. This far exceeds the 50 μg kg-1 for which the safety of trimellitic acid and its anhydride is ensured and the Swiss legal limit (QM(T) of 5 mg kg-1 coating). Furthermore, much trimellitic acid migrated as (unidentified) esters, i.e. toxicological testing of free trimellitic acid is inadequate for the material that in reality migrates.  相似文献

In 1999, 116 samples of non-alcoholic beverages were analysed for the intense sweeteners cyclamate, acesulfame-K, aspartame and saccharin. High contents of cyclamate close to the maximum permitted level in 1999 of 400 mg l-1 were found in many soft drinks. The estimated intake of the sweeteners was calculated using the Danish Dietary Survey based on 3098 persons aged 1-80 years. The estimated intake with 90th percentiles of 0.7, 4.0 and 0.2 mg kg-1 body weight (bw) day-1 for acesulfame-K, aspartame and saccharin, respectively, was much lower than the acceptable daily intake (ADI) values of 15, 40 and 2.5 mg kg-1 bw day-1 for acesulfame-K, aspartame and saccharin, respectively. However, the 90th percentile of the estimated cyclamate intake in 1-3 year olds was close to the ADI value of 7 mg kg-1 bw day-1; and the 99th percentile in the 1-10 year olds far exceeded the ADI value. Boys aged 7-10 years had a significantly higher estimated intake of cyclamate than girls. The 90th percentile for the whole population was 1.8 mg kg-1 bw day-1. After the reduction in the maximum permitted level in the European Union in 2004 from 400 to 250 mg cyclamate l-1, the exposure in Denmark can also be expected to be reduced. A new investigation in 2007 should demonstrate whether the problem with high cyclamate intake is now solved.  相似文献

Antimony residues, a result of the use of a polycondensation catalyst in the production of polyethylene terephthalate (PET) oven-proof trays, were analysed in ready-to-eat meals. The toxicity of antimony has raised concerns about consumer safety; therefore, the migration of small fractions of these residues into ready meals and foods as a result of cooking directly in the PET trays was studied. A straightforward approach of measuring real samples was selected to obtain accurate exposure data. Background antimony concentration was determined separately from a series of lunch meals, which ranged from not detectable to 3.4 µg kg-1. Microwave and conventional oven-cooking caused a distinct increase in the concentration of antimony in food and ready meals of 0-17 and 8-38 µg kg-1, respectively, depending, to a certain extent, on the industrial preparations. The migrated quantities of antimony corresponded to 3-13 µg. For comparison, PET roasting bags and ready-made dough products in PET baking dishes were also evaluated. About half of the products prepared at a temperature of 180°C exceeded the specific migration limit set for food contact material by the European Commission. However, the migrated amounts of antimony relative to the accepted tolerable daily intake (TDI) show that exposure from this type of food is currently not of toxicological concern.  相似文献

The mercury content of 25 samples of fish and seafood products most frequently consumed in Spain was determined. A simple method comprising cold vapour and atomic absorption spectrometry was used to determine separately inorganic and organic mercury. In all samples inorganic mercury content was below 50 µg kg-1. There was wide variability, among not only the mercury levels of different fish species, but also for different samples of the same species — with the methylmercury content ranging from below 54 to 662 µg kg-1. The highest mean methylmercury content was found in fresh tuna. Based on an average total fish consumption of 363 g/person week-1, the methylmercury intake was estimated to be 46.2 µg/person week-1. Therefore, the mercury intake of Spanish people with a body weight ≤ 60 kg is lower than the Joint FAO/WHO Expert Committee on Food Additives (JECFA) provisional tolerable weekly intake (PTWI) of 1.6 µg kg-1 body weight, but exceeds the US National Research Council (NRC) limit of 0.7 µg kg-1 body weight week-1 based on a benchmark dose.  相似文献

About 400 food samples, mainly Asian foods available in Hong Kong, were tested for acrylamide by an LC-MS/MS method using [1, 2, 3-13C3]-acrylamide as surrogate. The acrylamide levels in the more commonly consumed food items in the food groups such as rice and rice products, noodles, bakery and batter-based products, were generally less than 60 μg kg-1. Higher levels were found in the food groups such as biscuit-related products and crisps. The highest levels were detected in potato crisps (1500-1700 μg kg-1). Lower levels were found in rye flour-based crisps (440 μg kg-1), followed by corn-based (65 to 230 μg kg-1) and wheat flour-based crisps (61-200 μg kg-1), and then rice flour-based crisps (15-42 μg kg-1). The acrylamide formation during deep frying of a wheat flour-based product, Chinese fried fritter, was studied. Deep-frying at 170°C resulted in gentle but steady rise in acrylamide content. A steep rise for frying at 210°C was recorded. The moisture content of the product decreased with frying time, but the fat content increased. It is proposed that the reaction for the formation of acrylamide was initiated on the surface and then penetrated into the interior of the food matrix by heat transfer via radiation/conduction and diffusion of hot oil.  相似文献

Total mercury was measured in 259 total diet food composites from two Canadian cities. Levels were generally low, with 46% of the composites having concentrations below the limit of detection, which ranged from 0.026 to 0.506 ng g-1. The fish category contained the highest mercury concentrations, which averaged 67 ng g-1 and ranged from 24 to 148 ng g-1. All composites were below the Canadian guideline for total mercury in fish of 0.5 ppm. Dietary intakes of mercury averaged 0.022 μg kg-1 body weight/day (μg kg-1 day-1), and ranged from 0.012 μg kg-1 day-1 for females over 65 years old to 0.062 μg kg-1 day-1 for 0-1-month-old infants. For fish consumers, fish contributed to more than half of the ingested mercury. All intakes were well below Joint FAO/WHO Expert Committee on Food Additives Provisional Tolerable Weekly Intakes, expressed on a daily basis, of 0.71 μg kg-1 day-1 total mercury and 0.47 μg kg-1 day-1 methyl mercury, and also below a recent Health Canada recommended maximum methyl mercury intake of 0.2 μg kg-1 day-1 for children and women of child-bearing age.  相似文献

The European Union Baby Food Directive (1999/39/EC), which came into force on 1 July 2002, set legal maximum residue levels at 0.01 mg kg-1 for all pesticides in baby foods. The combination of large volume-difficult matrix introduction (LV-DMI) with gas chromatography-time of flight-mass spectrometry (GC-TOF-MS), described herein, provides the analyst with a simple but rapid alternative GC-MS technique for the multiresidue analysis of pesticides in fruit-based baby foods. Samples were extracted with ethyl acetate in the presence of Na2SO4 and NaHCO3 and the crude extracts were analysed directly using LV-DMI-GC-TOF-MS. The best overall results (98 pesticides quantified satisfactorily at a spiking level of 0.01 mg kg-1) were obtained by analysis of concentrated extracts (2.5 g crop ml-1) using a 30-m column, with a chromatographic run time of 25 min. A good signal-to-noise ratio was obtained at the lowest calibrated level (0.0125 μg ml-1), with excellent linearity achieved over the range 0.0125-0.25 μg ml-1 (equivalent to 0.005-0.1 mg kg-1). Average recoveries for the analysis of five replicate determinations at a spiking level of 0.01 mg kg-1 were between 79 and 114% with relative standard derivations generally less than 20%.  相似文献
