Increased demand for processed poultry products through the growth of home meal replacements and ready to eat products, present an opportunity for the development of new value-added poultry products. Repertory grid interviews were conducted to generate insight into consumer driven product development of these products. Procrustes analysis revealed that healthiness, nutrition, convenience, and processing attributes were most important parameters for discriminating amongst 24 meat and meat alternatives. "White meat", "healthier", "leaner", "good source of protein", "easy to cook" and "convenient", were found to positively influence consumer preferences for unprocessed chicken products, eggs and salmon while price did not appear to be important for differentiating the products. Traditional processed fish and poultry products, such as chicken nuggets, represented undesirable composition, processing and quality concerns. Identification of consumer attributes for discriminating poultry products among other meat alternatives can guide the development of competitive value-added poultry products. 相似文献

OBJECTIVE: To describe the extent of the tobacco industry involvement in establishing international standards for tobacco and tobacco products and the industry influence on the International Organization for Standardization (ISO). METHODS: Analysis of tobacco industry documents made public as part of the settlement of the Minnesota Tobacco Trial and the Master Settlement Agreement. Search words included "ISO", "CORESTA", "Barclay", "compensation and machine smoking", "tar and nicotine deliveries", and the name of key players, in different combinations. RESULTS: It is clear that the tobacco industry, through the Cooperation Centre for Scientific Research Relative to Tobacco (CORESTA), play a major role in determining the scientific evidence and suggesting the standards that are eventually adopted as international standards for tobacco and tobacco products in several areas, including the measurement of cigarette tar and nicotine yield. CONCLUSIONS: ISO's tobacco and tobacco products standards are not adequate to guide tobacco products regulatory policies, and no health claims can be made based on ISO's tobacco products standards. There is an urgent need for tobacco control advocates and groups worldwide to be more involved with the work of the ISO, both directly and through their national standardisation organisations. 相似文献

Microbial food cultures have directly or indirectly come under various regulatory frameworks in the course of the last decades. Several of those regulatory frameworks put emphasis on "the history of use", "traditional food", or "general recognition of safety". Authoritative lists of microorganisms with a documented use in food have therefore come into high demand. One such list was published in 2002 as a result of a joint project between the International Dairy Federation (IDF) and the European Food and Feed Cultures Association (EFFCA). The "2002 IDF inventory" has become a de facto reference for food cultures in practical use. However, as the focus mainly was on commercially available dairy cultures, there was an unmet need for a list with a wider scope. We present an updated inventory of microorganisms used in food fermentations covering a wide range of food matrices (dairy, meat, fish, vegetables, legumes, cereals, beverages, and vinegar). We have also reviewed and updated the taxonomy of the microorganisms used in food fermentations in order to bring the taxonomy in agreement with the current standing in nomenclature. 相似文献

It has been found that malonic dialdehyde penetrates through the filters of cigarettes. The filter cigarettes, such as "Club", "F6", "Cabinet", "Semper" and "Kenton" as well as non-filter cigarettes, namely "Salem", "Real" and "Karo" generate malonic dialdehyde during smoking, in amounts ranging from 15.6 to 44.3 mg/kg, i.e. from 20.4 to 44.3 mg/kg for cigarettes with filters and from 15.6 to 27.1 mg/kg for non-filter cigarettes. 相似文献

It has been found that malondialdehyde penetrates during smoking through filters and exhales with smoke from cigarettes such as: "Pall Mall", "Winston", "Camel", "Lucky Strike", "Kansas", "Mustang", "Ronson", "Chesterfield", "Rally", "Oscar" and "Marlboro". These cigarettes exhale malondialdehyde in a different way, in free form in the amount from 8.5 to 23.5 mg/kg cigarettes on an average of 13.3 mg/kg for the whole group and totally (in free and bounded form) from 9.5 to 26.5 mg/kg (average 16.9 mg/kg). Moreover, it has been found that filters retain this aldehyde in free form on an average of 9.9 mg/kg and totally (in free and bounded form) of 19.0 mg/kg. Without filters these amounts would increase aldehyde contents in smoke by 42.7 and 52.9%, respectively. Low malonalogenic properties of tobacco, high effectiveness of cigarette filters, high degree of tar deposition before inhaling into lungs and slow (6 min and longer) smoking decide about low level of exhalation of malondialdehyde in cigarette smoke. 相似文献
