BACKGROUND: Homogeneity in appearance is one of the quality aspects asked for in the supply chain. Decreasing the biological variation in batches of harvested apples (cultivars Braeburn, Fuji and Gala) becomes increasingly important. Skin colour is one of the aspects that determine both optimal harvest and stage of development. Skin colour is affected by location in the canopy. The rules of development of biological variation are now established and will be used on skin colour data. RESULTS: The Minolta colour aspects a*, b* and L* measured before commercial harvest change in a sigmoidal fashion and can be analysed including the biological variation, with a logistic model in indexed nonlinear regression, obtaining explained parts of above 90%. The mechanism of colour change is not affected by state of development or location in the canopy. The location in the canopy affects the intensity of both red and green colouring compounds. The variation in colouration is not affected by the location in the canopy. CONCLUSION: The red‐coloured apple cultivar (Gala) depends more on the location in the canopy than the less‐coloured cultivars (Fuji and Braeburn). The colour development in Fuji apples is considerably slower, with a much larger variation in stage of development. The location in the canopy affects all aspects of biological variation (biological shift factor and asymptotic starting level of colouration) for all three colour aspects L*, a* and b*, but only the mean value, not the standard deviation. Greenhouse grown tomatoes (cvs ‘Durinta’, ‘Favorita’ and ‘Liberto’) were harvested green and vine ripe. Colour measurements and chemical analyses were performed on green, post‐harvest red and vine‐ripe fruits. Partial least square (PLS) regression was applied to predict the ferric reducing ability of plasma (FRAP) by means of colour measurements (L*, a* and b*). The PLS showed that 78% of the variation in colour were able to predict 74% of the variation in FRAP value. Chemical variables and colour variables together were able to predict 88% of the variation in FRAP by means of PLS regression. Linear regression showed a high negative correlation between high values of L*, b* and FRAP, and a high positive correlation between titratable acidity, a*, hue, a*/b*, soluble solids, vitamin C, dry matter and FRAP values. Thus, colour measurements of intact tomatoes can be used as a non‐destructive method to assess total antioxidant capacity of tomatoes.  相似文献

The effect of pH on colour and iron content (Fe) of peptide fractions obtained from bovine haemoglobin concentrate (BHC) hydrolysates was studied. Four hydrolysates were obtained using three enzymes: Protex‐6‐L (P), Fungal–Protease–Concetrate (FC) and Flavourzyme (F). BHC and its hydrolysates (P, FC, P + F, FC + F) were fractioned at pH 4.5, 7.0 and 9.5. Solubility and Fe from different fractions were measured. Correlations between CIELAB colour parameters and Fe from different fractions were analysed. The colour from different fractions varied from red to yellow (a* and b* positives). Lightness values (L*) ranged from twenty‐four to seventy. FC4.5 and FC + F4.5 fractions were the clearest and yellow (higher L*, b*, h), while BHC9.5 and P + F9.5 fractions had the lowest values of L*, b* and h. There was an inverse linear relationship between b* and L* parameters and Fe from fractions. This relationship could be associated with the pH of extraction. As pH increases Fe significantly increases and lower b* and L* values were obtained.  相似文献

BACKGROUND: Minolta and machine vision are two different instrumental techniques used for measuring the colour of muscle food products. Between these two techniques, machine vision has many advantages, such as its ability to determine L*, a*, b* values for each pixel of a sample's image and to analyse the entire surface of a food regardless of surface uniformity and colour variation. The objective of this study was to measure the colour of irradiated Atlantic salmon fillets using a hand‐held Minolta colorimeter and a machine vision system and to compare their performance. RESULTS: The L*, a*, b* values of Atlantic salmon fillets subjected to different electron beam doses (0, 1, 1.5, 2 and 3 kGy) were measured using a Minolta CR‐200 Chroma Meter and a machine vision system. For both Minolta and machine vision the L* value increased and the a* and b* values decreased with increasing irradiation dose. However, the machine vision system showed significantly higher readings for L*, a*, b* values than the Minolta colorimeter. Because of this difference, colours that were actually measured by the two instruments were illustrated for visual comparison. Minolta readings resulted in a purplish colour based on average L*, a*, b* values, while machine vision readings resulted in an orange colour, which was expected for Atlantic salmon fillets. CONCLUSION: The Minolta colorimeter and the machine vision system were very close in reading the standard red plate with known L*, a*, b* values. Hence some caution is recommended in reporting colour values measured by Minolta, even when the ‘reference’ tiles are measured correctly. The pectoralis profundus muscles of 200 selected beef carcasses were measured to develop a standard colour scale for evaluating beef carcasses at the time of classification (approximately 60 min post mortem). Five lightness (L*) values were chosen ranging from 22 to 42 with intervals of five L* units. Corresponding a* and b* values were calculated. Based on regressions between the actual reflection spectra and the L*, a* and b* values, spectra of the five chosen colours for the colour scale were predicted. The L*, a* and b* values accurately predicted the reflection spectra. A paint company imitated the five reflection spectra. Spectra could not be matched exactly, without metamerism occuring. Therefore, the colour scale should be used with specific light sources. The scale is recommended in The Netherlands to classify the colour of beef, as a supplement of SEUROP‐system for conformation and fatness. © 1999 Society of Chemical Industry  相似文献

BACKGROUND: In managing apple orchards, crop load and rate of nitrogen (N) fertilisation are two factors with a significant influence on fruit quantity and quality, because they affect all physiological processes in the tree. Both factors are strongly related to external and internal fruit quality, especially to skin colour, sugar and acid contents and mineral composition, and consequently to the keeping quality of fruits. The aim of this study was to assess the effects of both factors (three crop load levels and two N fertilisation levels) on the colour development of Golden Delicious apples during the last month on the tree in two consecutive seasons. Data on skin colour (L*, a*, b* values) were analysed using nonlinear mixed effects modelling to extract information on the variation in biological shift factor for colour and to link this variation to the different strategies used concerning N fertilisation and crop load. RESULTS: The major source of information is contained in the a* value. The behaviour of the a* value could be described by a logistic or an exponential model depending on the season and the experimental set‐up. Nonlinear mixed effects analysis estimating the biological shift factor (maturity) for each individual fruit (random effect) while estimating the rate constant of the decolouration process in common (fixed effect) resulted in explained parts well over 95%. CONCLUSION: The variation in maturity stage between individual fruits is large. Season has the most profound effect on the estimated values, far more important than that of crop load or fertilisation level. The magnitude of variation in colour due to crop load and N fertilisation is not too large. Its effect on the maturity stage of fruits is more profound: the higher the crop load, the higher the variation. The quality of six paprika pepper varieties, cultivated in a greenhouse and in the open air, has been studied. There were differences in their paprika colours with regard to the total content of pigments (ASTA unities) and the quotient of the absorbance spectra values for red and yellow pigments (tint). Using colorimetric measurements, directly carried out on the surface of the ripe fruits, the varieties are clearly separated in the CIELAB space colour, depending on their growing conditions. The colorimetric coordinates a* and b* and quotient a*/b* of the ripe fruits, cultivated in greenhouse, allow to predict the total pigments concentration of the resulting paprika. For the cultivations in the open air, the fruit brightness (L*) and the chromatic quotient 2000×a*/Lb* are the parameters which show best the correlation with the total content of the paprika pigments. The fruit colour change, from green to red, coincides in both growing conditions with the moment when the chlorophyll b concentration surpasses the a one. © 1998 SCI.  相似文献

BACKGROUND: This study attempts to compare two possibilities of enhancing the colour of egg yolk. One of them is based on the ecological rearing of laying hens on natural green grass whereas the other uses a feeding dose supplemented with natural pigments in laying hens reared in individual cages. Is it possible to distinguish these two technologies using yolk colour determination in the CIELAB system? RESULTS: Yolk colour parameters such as L*, a*, and b* in the group of grazed hens are significantly different (α = 0.001) from those observed in hens reared in cages. The yolk colour shows a darker, redder and more yellow colour. The greatest difference was seen in the red colour parameter, a*, that increased more than twice. Visually, this means a shift towards a more orange colour. Compared to grazing in the meadow (ΔE* = 13.257), the addition of artificial pigments in the feed resulted in a more significant increase in the parameter ΔE* (CIE total colour difference), with the greatest value of ΔE* being observed with the use of both pigments (ΔE* = 24.265). CONCLUSION: Grazing increases the parameter a* whereas the values of the parameter C*ab remain relatively low. The parameter ΔE* is significantly lower in the case of grazing as compared to the supplementation of the feed with pigments. However, colourity parameters cannot be used as a specific standard to identify a particular grazing technology as their values vary during the laying period. The effects of harvest date and cold storage period on ethylene production, fruit firmness and quality of ‘Cripps Pink’ apple were investigated. Fruit were harvested from Perth Hills and Donnybrook (Western Australia) at commercial maturity (CM), 2, 4 and 6 weeks after CM prior to 0, 45, 90 and 135 days cold storage in 2003 and 2004. Delayed harvest significantly increased ethylene production, CIE values a* and C* at both locations in 2 years. Delayed harvest and extended cold storage period increased the internal ethylene production and reduced fruit firmness, soluble solids concentration: titratable acidity (SSC:TA) ratio and reduced CIE values L*, b*, h° during both years and locations. Fruit harvested 2 weeks after CM can be cold‐stored for 90 days with acceptable fruit quality. If the fruit is intended to be sold fresh immediately in local markets, the harvest can be delayed up to 6 weeks after CM to harness substantially improved fruit colour with acceptable fruit quality.  相似文献

The influence of particle concentrations (0.02–0.40%), mean particle sizes (0.45–1.5 μm) and all‐E‐isomer ratios (95–30%) on the CIELAB colour coordinates (L*, a*, b*) of concentrated β‐carotene dispersions was investigated. Particle concentration between 0.06% and 0.40% had a slight impact on the colour parameters. However, with decreasing the mean particle size from 1.50 to 0.45 μm, there were increases in ΔL* = 8.0, in Δa* = 2.26 and in Δb* = 13.1. And with decreasing the all‐E‐isomers ratio from 95% to 30%, there were increases in ΔL* = 8.66, in Δb* = 17.51 but decrease in Δa* = 7.42. The experimental results were explained in terms of the scattering and absorption of light by dispersions. These findings have important implications for food industry as they offer a means to control and optimise the colour of food dispersions.  相似文献

BACKGROUND: This experiment was designed to examine the effect of dietary humate supplementation primarily on pH and colour parameters of carcasses, breast fillets and drumsticks and, secondarily on performance and carcass characteristics in broilers. RESULTS: A total of 240 male broiler chicks (Ross‐308) were randomly allocated to four dietary treatments varying in supplemental humate level (0, 0.1, 0.2 and 0.3% for H0, H1, H2 and H3). Dietary humate supplementation did not affect performance traits and slaughter, hot carcass weights and yields. Carcass‐related variables (pH, L*, a*, b*, H* and C*) were responsive to the dietary treatments. The L*, a*, b*, and C* values for drumstick muscles were higher than those for breast muscles. Except for the L* value, meat colour parameters changed due to packaging. The a* value was higher and b* value was lower for vacuum packaged breast and drumsticks than for those aerobic packaged. Storage period affected colour parameters; while L*, b*, H* and C* values were higher for drumstick skin than for drumstick meat; the a* value was greater in drumstick meat than in skin. CONCLUSION: pH and colour parameters of carcasses, breast fillets and drumsticks of broilers were improved by dietary humate supplementation. BACKGROUND: Generally, biodegradable films from fish muscle protein become yellow after preparation. This discolouration is more likely associated with lipid oxidation and can be prevented by minimising the oxidation in the films. Thus, the effects of oxygen and antioxidants on lipid oxidation and yellow discolouration of film from red tilapia mince during storage were investigated. RESULTS: Both films prepared at pH 3 and 11, and kept under atmosphere containing 100% N2 had the lowest TBARS value with the concomitant lowest b* and ΔE* values during storage (P < 0.05), when compared with other films kept in air and a 100% O2 atmosphere. Films prepared at pH 3 and incorporated with antioxidants (Trolox and catechin) at all levels (100, 200 and 400 mg L?1 film‐forming solution) had the lowest TBARS value, b* and ΔE* values during storage, indicating the retardation of lipid oxidation and yellow discolouration in films. Nevertheless, films prepared at pH 11 had no difference in TBARS values, in comparison with control film, regardless of antioxidant incorporation. Coincidentally, increases in b* and ΔE* values were observed in those films. CONCLUSIONS: Lipid oxidation was the main factor inducing yellow discolouration of film exposed to oxygen and the incorporation of antioxidants in film prepared at acidic pH was able to prevent yellow discolouration of resulting film. The effects of four types of packaging atmosphere, each with a different gas composition (20–80% CO2), on the meat quality of Spanish Manchega lamb were examined in order to suggest a gas composition for optimal preservation. Meat quality was assessed by pH, colour (L*,a* and b* values), water‐holding capacity (WHC), cooking loss (CL) and shear force (SF). Gas composition affected all parameters except L* and SF. The pH values decreased significantly in samples packed with 80% CO2 but remained constant in the other groups. The b* values were lower in samples packed without O2 than in the other groups and increased with time. However, the a* values decreased in all groups with time. Samples packed in low‐CO2 atmosphere tended to lose more water (ie to have less WHC and show more CL). The SF values decreased with time, and similar values of this parameter were observed for all treatments. © 2001 Society of Chemical Industry  相似文献

When the color reflectance of red pepper powders and their yellow seeds were measured using a colorimeter, the mean lightness (L*), redness (a*), and yellowness (b*) values differed considerably between the pepper powders and seeds. On the basis of this difference, we determined the seed content in the red pepper powders by using the correlated reflectance values. As the seed content of the powders increased, both L* and b* increased, while a* decreased. The polynomial regression curve equation, Y( seed content, % ) = 3.51 ×L * - 1.10 ×a * - 1.34 ×b * - 72.74 Y\left( {{\hbox{seed content}},{ }\% } \right) = 3.51 \times L * - 1.10 \times a * - 1.34 \times b * - 72.74 , was obtained from the tristimulus data (L*, a*, and b*) of all the samples used. This is an easy method for the determination of the seed content in red pepper powders and it can be applied to a similar system.  相似文献

BACKGROUND: Phycobiliproteins are coloured proteins produced by cyanobacteria, which have several applications because of their colour properties. However, there is no available information about the colour stability of phycobiliproteins from Nostoc sp. in food systems. The aim of this work was to study the colour stability of a purple‐coloured phycobiliprotein‐rich extract from the cyanobacterium Nostoc PCC9205 in acidic solutions and yogurt. RESULTS: Variations of pH for Nostoc PCC9205 extract have shown stability for the L* (lightness) and a* (redness) indexes in the range 1.0–7.0. The b* index (blueness), however, increased at pH values below 4.0, indicating loss of the blue colour. The Nostoc PCC9205 extract was used as colorant in yogurt (pH 4.17) stored for 60 days. Instrumental colour analysis showed no changes for the L* and a* indexes during storage, whereas the b* index changed after 20 days of storage. A multiple comparison test showed colour instability after 20 days of storage. A hedonic scale test performed on the 60th day of storage showed acceptability of the product. CONCLUSIONS: The red component of the phycobiliprotein‐rich extract from Nostoc PCC9205 presented an improved stability in acidic media and yogurt compared with the blue component of this extract. Over several years, many fresh-cut apple processors have complained about browning of slices made from ‘Granny Smith’ apples during the harvest season, before fruit have been stored for any length of time. ‘Granny Smith’ apples are a late harvest apples and quite often, at higher latitudes, they are harvested to avoid frost injury and may not always be physiologically mature. It was postulated that immature fruit would have greater susceptibility to browning, despite the application of anti-browning solution after cutting. Fruits were harvested from selected trees beginning five weeks before anticipated commercial harvest and continued weekly until two weeks after commercial harvest. The maturity indicators internal ethylene and starch clearing indices were measured. Ten fruits were sliced, dipped in 7 g L−1 NatureSeal® and then packaged in zip-loc bags and held at 5 °C. Slices made from apples that were harvested two weeks early or earlier than the optimal maturity, as determined by the maturity measures, had significant levels of cut-edge browning despite the post-cutting application of anti-browning dip. These results clearly indicate that ‘Granny Smith’ apples harvested two weeks or earlier before induction of climacteric ethylene production (when starch index is less than 2.5) should be avoided for use in fresh slicing.  相似文献

The aim of this study was to determine the effect of seed size and cultivation location on the diversity of colour of rapeseed surface and the level of fungi infection of sound, dry rapeseed and the correlation between colour attributes and fungal growth during storage of wet seeds. It has been reported that the colour, mouldiness degree and genera differentiation on the surface of sound seeds depend on both the seed size and the seed cultivation location. The storage of wet rapeseed led to a colour shift to a green‐yellowish hue with higher lightness and to about a 1000‐fold increase in colony‐forming units (CFUs) per seed mass. During the first 15 days, fungal growth was undetectable both by human eye inspection and by digital image analysis (DIA). The onset of fungal growth was associated with slight increase in G (of RGB) and a* and b* (of CIE L*a*b*) colour attributes.  相似文献

Fresh pork sausages containing natural colorants, red yeast rice powder (Monascus purpureus; Frame®) or a crude red beet root (Beta vulgaris) juice or commercial betanin (E‐162), at different concentrations, were packaged in an atmosphere containing 80% O2 and 20% CO2 and stored in the dark for 20 days. The following parameters were measured at 4 day intervals: instrumental colour (CIE L*, a*, b*, a*/b*, C* and h*), reflectance spectra, sensory discoloration (trained panel) and acceptability and willingness to purchase (habitual and non‐habitual consumer panels) under two different lighting displays (standard fluorescent and Promolux® lamp). The use of colorants improved the colour properties of fresh pork sausages. Sausages with red yeast rice, red beet root juice and betanin had lower L* and h* and higher a* and a*/b* values than control samples. The colour properties of sausages with red beet root were the closest to control sausages, while sausages with red yeast rice had significantly lower b* values. Both natural colorants and betanin protected sausages from discoloration and extended acceptability and willingness to purchase by about 4 days, according to evaluation by habitual consumers under two different types of lighting display. Therefore, red beet root juice may be envisaged as the most suitable natural colorant for use in fresh pork sausages. Copyright © 2005 Society of Chemical Industry  相似文献

Backround The present study evaluated the quality of raw peanuts and pistachio nuts as a function of irradiation dose in order to determine dose levels causing minimal undesirable changes to these products. Physico‐chemical (colour, peroxide value, hexanal content, fatty acid composition, volatile compounds) and sensory (colour, texture, odour, taste) properties of raw peanuts and pistachio nuts were determined after irradiation at doses up to 7 kGy. Results Results showed an eight‐ and seven‐fold increase in peroxide value and a twelve and five‐fold increase in hexanal content after irradiation at a dose of 7 kGy for peanuts and pistachio nuts, respectively. An increase was also observed in saturated fatty acids (20.51–28.28% and 15.24–24.87%) with a parallel decrease in unsaturated fatty acids (79.49–71.72% and 84.76–75.13%) for peanuts and pistachio nuts, respectively. Likewise, volatile compounds such as aldehydes, alkanes, ketones and alcohols comprising secondary oxidation products of peanut and pistachio nut lipids increased after irradiation. Pistachio nut colour parameter a* and to a lesser extent parameters, L* and b* decreased after irradiation leading to a slight but noticeable darkening in product colour while colour parameter L*, b* and a* of raw peanut remained unchanged by irradiation up to 7 kGy. Conclusion Based on sensory evaluation, peanuts and pistachio nuts become unacceptable for consumption when irradiated at doses higher than 3 kGy.
