Global trends show that habitual omega‐3 intakes are short of recommended guidelines, particularly among vegetarians. Subsequently, alternative dietary sources of long‐chain omega‐3 polyunsaturated fatty acids (LC3PUFA) from vegetarian sources are needed. Food technology methods are advancing, and nanoemulsion technologies have improved the bioavailability of certain lipid‐based nutrients. This study examined whether ingestion of an omega‐3 algal oil nanoemulsion led to improved bioavailability compared to the bulk oil. Eleven subjects completed a single‐blind, randomised crossover trial, with a 21‐day washout between interventions. Results demonstrated that LC3PUFA absorption from the nanoemulsion was significantly higher than the bulk oil. Percentage blood fatty acids were significantly increased for docosahexaenoic acid (DHA; 0.05) while LC3PUFA: PUFA ratios increased ( 0.05) and omega‐6:omega‐3 ratios were reduced (= 0.028). Larger and longer intervention studies are now needed, but these preliminary findings demonstrate that nanoemulsion technology may improve the absorption of omega‐3 fatty acids.  相似文献

Omega‐3 long‐chain polyunsaturated fatty acids (LC PUFA) positively influence human health. Their main dietary source is fish, especially fish oil. Owing to low fish consumption in many Western countries the average intake of omega‐3 LC PUFA is below the recommended level. This raises interest in diet supplementation and food enrichment with fish oil. However, due to a high degree of unsaturation fish oil is extremely susceptible to oxidation. Oxidation of fish oil increases when added to food products, which may be enhanced by some antioxidants, under certain conditions. For quality control of omega‐3 LC PUFA‐containing foods adequate and combined methods of oxidation assessment should be used, beginning from the raw material and continuing during processing, storage and distribution. To achieve this goal correlation of instrumental and sensory methods with multivariate data analysis may give the best results. The intake of omega‐3 long‐chain polyunsaturated fatty acids (PUFAs) in the typical Western diet is usually below the recommended level. Without radical changes of eating patterns the diet may be enhanced by enrichment of foods with unhydrogenated fish oil, which is the richest source of the long‐chain omega‐3s, eicosapentaenoicacid (EPA) and docosahexaenoicacid (DHA). The aims of the study were to establish the sensorily acceptable fish oil enrichment level of a reduced‐fat spread, to enhance the omega‐3 long‐chain PUFA content and to evaluate the enriched spread's stability during 3 months of storage (6°C, limited exposure to light and air). Samples were prepared in an industrial pilot plant. Overall sensory quality, intensity of fishy flavour, texture properties (sensory and instrumental), peroxide value, acid number and fatty acids composition were measured. A spread enriched by addition of 30.0 g kg?1 of unhydrogenated fish oil could be stored for up to 3 months without significant decrease of the measured stability indicators. A daily portion of this enriched spread (30 g) would provide 0.25 g of EPA and DHA, significantly increasing long‐chain omega‐3 levels in the average diet. Polyunsaturated fatty acids (PUFA) of lean meat from domesticated and wild ruminants (cattle, sheep, goat, sambar deer and buffalo) and non-ruminants (pig, horse and kangaroo) have been examined by capillary gas-liquid chromatography. Ten different PUFA were found in all specimens with linoleic acid accounting for at least 50% of the total, and arachidonic and linolenic acids being the next most abundant. The total PUFA content for the ruminants ranged from 9 % in beef to 31 % in sambar deer and for the non-ruminants from 25 % in pig to 43 % in horse. In all species the meat phospholipids ( PL ) were rich in PUFA (range 24–46% of PL fatty acids), whereas the triglycerides were relatively more saturated (PUFA content range 2–17%). Overall, horse and kangaroo meat had the combination of lowest fat and highest PUFA content, whilst beef and sheep had the highest fat and lowest PUFA content. These results indicate that significant reductions in total fat intake and increases in the proportion of polyunsaturated fat in the diet could be achieved without necessarily requiring a diet low in meat.  相似文献

BACKGROUND: Enriching poultry meat with long‐chain n‐3 polyunsaturated fatty acids (LC n‐3 PUFA) can increase low population intakes of LC n‐3 PUFA, but fishy taints can spoil reheated meat. This experiment determined the effect of different amounts of LC n‐3 PUFA and vitamin E in the broiler diet on the fatty acid composition and sensory characteristics of the breast meat. Ross 308 broilers (120) were randomly allocated to one of five treatments from 21 to 42 days of age. Diets contained (g kg?1) 0, 9 or 18 LC n‐3 PUFA (0LC, 9LC, 18LC), and 100, 150 or 200 mg LD ‐α‐tocopherol acetate kg?1 (E). The five diets were 0LC100E, 9LC100E, 18LC100E, 18LC150E, 18LC200E, with four pens per diet, except 18LC100E (eight pens). Breast meat was analysed for fatty acids (uncooked) and sensory analysis by R‐index (reheated). RESULTS: LC n‐3 PUFA content (mg kg?1 meat) was 514 (0LC100E) and 2236 (9LC and 18LC). Compared with 0LC100E, meat from 18LC100E and 18LC150E tasted significantly different, while 23% of panellists detected fishy taints in 9LC100E and 18LC200E. CONCLUSION: Chicken meat can be enriched with nutritionally meaningful amounts of LC n‐3 PUFA, but > 100 mg dl‐α‐tocopherol acetate kg?1 broiler diet is needed to protect reheated meat from oxidative deterioration. A total of 27 patients received an anti-atherosclerotic diet containing fatty fish Greenland halibut, 100 g/day. Significant reduction of the total cholesterol level, cholesterol levels of very low and low density proteins, triglycerides, atherogenic index, elevation of blood fibrinolytic activity in the presence of lowered levels of arachidonic acid and an increased relative content of omega 3 polyunsaturated fatty acids (PUFA) were recorded in membranes of red blood cells and platelets. The results of the investigations conducted have shown that even rather low doses of omega 3 PUFA introduced in the presence of the hypolipidemic diet are conductive to the alimentary correction of the blood serum lipid spectrum of the fatty-acid content in cellular membrane structural lipids.  相似文献

综述ω-3多不饱和脂肪酸(polyunsaturated fatty acids,PUFA)作为一类必需脂肪酸(essential fatty acids,EFAs),主要来源为海产品中的鱼油,对多种人体疾病治疗和/或预防具有的积极作用。梳理了酶法制备富含ω-3多不饱和脂肪酸油脂的研究最新进展(截至2019年),讨论很多不同产品的营养功效、不同脂肪酸组成的结构脂质、ω-3多不饱和脂肪酸浓缩液、磷脂的酶促酯交换制备技术及应用,历年研究发现,可以通过改善油脂中ω-3多不饱和脂肪酸含量的方式提高其在饮食中的摄入量。由于酶法反应条件温和,尤其是脂肪酶特异性强,且从生物利用度角度ω-3多不饱和脂肪酸在脂质分子上的位置与其含量同等重要,因此相对于化学法,酶法制备含ω-3多不饱和脂肪酸的油脂因安全高效而更受青睐。  相似文献

This paper has reviewed that Omega 3 polyunsaturated fatty acids(PUFAs), as an essential fatty acids(EFAs), mainly come from fish oil of marine products, has positive effects on treatment and/or prevention of several diseases. In this review, the recent developments by 2019 in the field of enzymatic modification of oils rich in omega 3 PUFAs have summarized. Several different products, such as structured lipids with a variety of FA compositions, nutritional aspects, omega 3 PUFA concentrates and phospholipids, have discussed from the point of process technology as well as possible applications. Enhancing omega 3 PUFA content in diet involves a number of strategies aiming to modify the content of such FAs in fats and oils. Due to the mild reaction conditions used, especially the lipase specificity, the position as well as content of omega 3 PUFAs in lipid molecules being of importance from the point of bioavailability, enzymatic processing of omega 3 PUFA oil is safe, efficient and preferred over chemical treatments.  相似文献

Twenty-four multiparous Holstein-Friesian dairy cows were used in a replicated 4 × 4 Latin square changeover design experiment to test the effects of changing from ryegrass (Lolium perenne) silage to red clover (Trifolium pratense) silage in graded proportions on feed intakes, milk production, milk organoleptic qualities, and whole-body nitrogen partitioning. Four dietary treatments, comprising ad libitum access to 1 of 4 forage mixtures plus a standard allowance of 4 kg/d dairy concentrates, were offered. The 4 forage mixtures were, on a dry matter (DM) basis: 1) 100% grass silage, 2) 66% grass silage: 34% red clover silage, 3) 34% grass silage: 66% red clover silage, and 4) 100% red clover silage. In each of 4 experimental periods, there were 21 d for adaptation to diets and 7 d for measurements. There was an increase in both DM intakes and milk yields as the proportion of red clover in the diet increased. However, the increase in milk yield was not as great as the increase in DM intake, so that the efficiency of milk production, in terms of yield (kg) of milk per kg of DM intake, decreased. The concentrations of protein, milk fat, and the shorter chain saturated fatty acids decreased, whereas C18 polyunsaturated fatty acids (PUFA) and long-chain PUFA (C20+) increased as the proportion of red clover in the diet increased. There was little effect of dietary treatment on the organoleptic qualities of milk as assessed by taste panel analysis. There were no effects on the aroma of milk, on aftertaste, or overall liking of the milk. Milk was thicker and creamier in color when cows were fed grass silage compared with red clover silage. The flavor of milk was largely unaffected by dietary treatment. In conclusion, increasing the proportion of red clover in the diet of dairy cows increased feed intakes and milk yields, decreased the concentration of fat and protein in milk, increased PUFA for healthiness, and had little effect on milk organoleptic characteristics.  相似文献

Abstract: Fatty acid composition and content of 2 forms of sockeye salmon Oncorhynchus nerka from lakes in Kamchatka Peninsula (Russia) were compared. One form of sockeye salmon was anadromous (“marine”), that is, adult fish migrated in ocean to feed and grow and than return in the lake to breed. Fish of another form, kokanee, never migrate in the ocean. Per cent levels of the main indicators of nutritive value, eicosapentaenoic acid (EPA, 20:5n‐3), and docosahexaenoic acid (DHA, 22:6n‐3), were significantly higher in the landlocked O. nerka. However, concentrations of EPA and DHA per wet weight of filets were higher in the marine form, because of the relatively higher content of sum of fatty acids in their muscle tissue. As concluded, fish fed in marine environment had higher contents of long‐chain n‐3 fatty acids per wet weight than fish of the same species, fed in fresh waters. In general, both the anadromous sockeye salmon and the landlocked kokanee salmon can be recommended for human diet as a valuable product concerning contents of EPA and DHA. Practical Application: The long‐chain polyunsaturated acids (PUFA) have been specifically recommended for humans to prevent cardiovascular disease and psychiatric disorders. Fish are known to be the main source of PUFA in human diet. Data on PUFA content in diverse food fish is essential to compare the benefits they offer for consumers’ health. We compared PUFA contents in 2 forms of popular food fish Oncorhynchus nerka, migrating sockeye salmon and landlocked kokanee salmon, and found that both forms are valuable product concerning PUFA content.  相似文献

The very long chain polyunsaturated fatty acids (PUFAs) (C18–C22) and n‐3 Omega PUFAs are apparently widely accepted as a part of modern nutrition because of their beneficial effects on metabolism. Most significantly, the reported protective effect of the n‐3 omega fatty acids in relation to cardiovascular inflammatory diseases and cancer has led people to consider these fatty acids more beneficial than other dietary supplements. Unfortunately, there is a lack of studies relating to the physical performance increasing effect in sports diets, cholesterol‐reducing effect in meat technology, effects on human serum profile, the application dose and the side effects with/without omega‐6 PUFAs, which has left us with several crucial unanswered questions. We still do not know the correct dose of n‐3 omega and the correct ratio of n‐3 omega to n‐6 omega or their possible contraindications when combined with drugs, other foods and herbal supplements. Another reported aspect of n‐3 omega PUFAs is that they protect and even enhance the effect in medical treatment of important diseases such as Alzheimer’s, multiple sclerosis and cancer. These reports led to PUFAs becoming one of the most accepted and consumed food supplements. Despite this weight of evidence and the considerable current use, there is still a need for studies, which will determine whether the n‐3 omega fatty acids are in fact important functional supplements with no adverse effects. This review will attempt to outline the current position of n‐3 omega fatty acids in the field of clinical nutrition and healthcare and outline the studies needed to determine whether there are significant advantages in taking them as food supplement without any adverse effects.  相似文献

Recent research has focused on the importance of supplying essential fatty acids to the lactating dairy cow. The addition of essential fatty acids, specifically linoleic and linolenic acid, to dairy cow diets has been investigated as a method to increase reproductive efficiency. Rumen bacteria, however, biohydrogenate polyunsaturated fatty acids (PUFA) to saturated fatty acids. This is an important issue because it can also lead to milk fat depression when unsaturated fatty acids are fed. The formation of Ca salts has previously been shown to partially protect unsaturated fatty acids from rumen biohydrogenation. The objective of this experiment was to evaluate feed intake, milk production, and milk composition of cows fed Ca salts of palm fatty acids (CS) compared with those fed Ca salts of palm fatty acids with an increased content of PUFA (CS+PUFA). Nineteen lactating Holstein cows were used in a switchback experiment to determine any differences between CS and CS+PUFA on milk production and composition. This experiment consisted of 3 consecutive periods of 14 d. Treatments were formulated to provide 450 g/d (dry matter basis) of the Ca salt supplement and were mixed with the same basal ration. Milk weights and feed intakes were recorded daily for each cow. Milk samples were collected the last 2 d of each period and analyzed for milk composition and fatty acids. Dry matter intake [28.0 vs. 27.0 kg/d; standard error of the mean (SEM) = 0.4] and milk production (44.4 vs. 44.0 kg/d; SEM = 0.7) were not different between treatments for CS and CS+PUFA, respectively. Milk fat percentage (3.34 vs. 3.22%; SEM = 0.07) and milk protein percentage (2.78 vs. 2.80%; SEM = 0.01) were not different for CS- and CS+PUFA-fed cows. Feeding CS+PUFA reduced the concentration of palmitic acid in milk fat (28.3 vs. 26.8 wt%; SEM = 0.3). Supplementation of CS+PUFA increased the linoleic acid concentration (3.96 vs. 4.61 wt%; SEM = 0.1) of milk fat, indicating that linoleic acid was partially protected from rumen biohydrogenation. Concentrations of conjugated linoleic acid were also increased (0.44 vs. 0.52 wt%; SEM = 0.02) when cows consumed CS+PUFA, indicating that some biohydrogenation did occur. Supplementing CS+PUFA did not alter milk production, milk fat percentage, or dry matter intake when compared with CS. The CS+PUFA supplement supplied more linoleic acid to the small intestine for milk fat synthesis.  相似文献

The aim of this study was to investigate the effect of diets supplemented with fish oil, flaxseed, and chia seed on the omega‐3 fatty acid composition and sensory properties of hens’ eggs. No significant difference in yolk fat content was found between treatments. The fatty acid composition of egg yolk was significantly affected by the dietary treatments. Inclusion of chia at 300 g/kg into the diet produced eggs with the highest concentration of omega‐3 fatty acid. Eicosapentaenoic acid and docosahexaenoic acid were only detected in eggs from laying hens fed the diet supplemented with fish oil. Diet had a significant effect on color, flavor and overall acceptability of eggs. Types and levels of omega‐3 fatty acids in feed influence the level of yolk omega‐3 fatty acids in egg yolk. Inclusion of chia into the hens’ diet significantly increased the concentration of yolk omega‐3 fatty acid without significant change in sensory properties.  相似文献

The aim of the study was to determine whether food dry matter intake had an effect on endogenous ileal amino acid flows in the rat when the flows were expressed in units of mg g?1 dry matter. Eighty 200 g body weight rats were trained for 7 days to consume a casein‐based diet over a daily 3 h feeding period, and then an enzyme‐hydrolysed casein (MW < 5000 Da)‐based diet, with chromic oxide as an indigestible marker, was fed for a further 8 days. The mean ratio of food intake to metabolic body weight over all 80 rats was determined on days 11 and 12. On day 15, food was offered to groups of 10 rats at each of eight intake levels. The intake levels were calculated from the mean food intake value and individual metabolic body weights and scaled in increments of 0.1 by factors ranging from 0.3 to 1.0. Digesta were collected from the terminal ileum 3 h after the start of the meal, and endogenous ileal amino acid flows were determined after amino acid and Cr analyses of the diet and endogenous ileal digesta fractions prepared by centrifugation and ultrafiltration (10 000 Da molecular weight cut‐off). The linear regression relationships between ileal amino acid flows, expressed as mg g?1 dry matter, and dry matter intakes demonstrated that all slopes were negative but that the slopes for nine of these amino acids were not significantly different from zero (P > 0.05). There were significant slopes (P < 0.05) for the other eight amino acids, although the magnitudes of the effect were small. When the data were re‐examined after removing the lowest feeding level, the slopes for most of these amino acids were no longer statistically significant. The results showed that the measures of amino acid flow (mg g?1 dry matter), except for isoleucine and cystine, over a wide range of food intakes were not materially affected by food intake. From the perspective of bioassay logistics the results indicate that expressing ileal amino acid flows proportional to dry matter intake is justified over the range of intakes found in practice for determining true ileal amino acid digestibility by the enzyme‐hydrolysed casein method. © 2002 Society of Chemical Industry  相似文献

An increase in the intake of the n-3 series polyunsaturated fatty acids (PUFA) is recommended by nutritionists for the human diet and beef is a significant source of these fatty acids. Enhancing the n-3 PUFA content of beef is important in view of the generally saturated nature of fatty acids in ruminant meats and the potentially negative effect this can have on human health. This study examined the effects of breed and diet on the fatty acid composition of beef M. longissimus. Ninety-six steers were used, 48 Aberdeen Angus cross (AA) and 48 Holstein-Friesian (HF). At 6months of age, 3 groups were identified, to be slaughtered at 14, 19 and 24months, respectively. Each group consisted of eight steers of each breed fed on a concentrate or a grass silage diet, rich in n-6 and n-3 PUFA, respectively. The intake of the concentrate diet was restricted so that steers of each breed grew at a similar rate on each diet. The early maturing AA produced heavier, fatter carcasses with better conformation. Animals fed grass silage had higher carcass fatness and conformation scores and higher levels of neutral lipid and total lipid in muscle than those fed concentrate. When all animals were pooled, a decline in PUFA% as total muscle lipid increased was evident. Feeding a grass silage diet rich in α-linolenic acid (18:3n-3) increased levels of this fatty acid in muscle neutral lipid by a factor of about 3.0 compared with the concentrate diet, as well as enhancing the synthesis of the n-3 series long-chain C20-22 PUFA in the phospholipid fraction, including docosahexaenoic acid (DHA, 22:6n-3). In contrast, both levels and proportions of linoleic acid (18:2n-6) and the n-6 series C20-22 PUFA were higher in animals fed the concentrate diet. The proportions of 18:1trans and conjugated linoleic acid (CLA) in muscle neutral lipid were higher in animals fed concentrate compared with silage in all 3 groups. This was partly due to increased consumption of 18:2n-6. The ratio of PUFA to saturated fatty acids (P:S) in muscle was reduced by feeding grass silage, partly as the result of increased fat deposition. However, the increase in levels of n-3 series fatty acids with silage-feeding resulted in beneficially low n-6:n-3 ratios in muscle in all age groups (approximately 1.2 compared with 12.0 in the concentrate diet). Subtle breed differences in PUFA amounts and proportions were noted. Holstein-Friesians had higher proportions of PUFA and higher P:S ratios compared with AA, partly due to a higher proportion of phospholipid in total lipid. In phospholipid itself, HF in the 19 and 24months groups had higher proportions of most n-3 PUFA. In all age groups the ratio of DHA to its precursor, 18:3n-3 was higher in HF.  相似文献

A number of studies have shown that dietary omega‐6 and omega‐3 long‐chain fatty acids can be incorporated into muscle tissue of ruminants despite the biohydrogenation of dietary fatty acids in the rumen. The main focus of this review is on eicosapentaenoic (20:5n‐3) and docosahexaenoic (22:6n‐3) fatty acids because health authorities around the world consider the sum of these fatty acids as the basis of classifying a food as a source or good source of omega‐3 polyunsaturated fatty acids (PUFAs). A high proportion of polyunsaturated fatty acids are hydrogenated in the rumen, leading to a higher concentration of 18:0, but some escapes the rumen to be absorbed intact by the small intestine. Feeding strategies for ruminants have been successfully applied to increase the absorption of PUFAs in the small intestine and therefore to increase the levels of PUFAs in muscle tissue. Protected fats and algae are strong candidates to improve the nutritional value of red meat in ruminants in terms of health‐claimable omega‐3 fatty acids. Efforts to understand the genetic basis of fatty acid metabolism have been underway. The knowledge of the main genes which control the output of omega‐3 fatty acids is still lacking, but gene expression studies have helped to explain the deposition of these acids in muscle, liver, and subcutaneous fat.  相似文献

BACKGROUND: Consumer awareness regarding the intake of beef of organic origin is strongly associated with the beneficial outcomes to human health, the environment and animal welfare. In this paper the effects of slaughter season and muscle type on the fatty acid composition, conjugated linoleic acid (CLA) isomeric profile, total cholesterol, α‐tocopherol and β‐carotene contents and nutritional quality of intramuscular fat in organic beef (n = 30) are reported for the first time. RESULTS: Organic beef showed a very low total lipid content, with seasonal changes in the levels of some fatty acids, CLA isomers, n‐6/n‐3 polyunsaturated fatty acid (PUFA) ratio, total cholesterol and β‐carotene. In addition, differences between longissimus lumborum (relatively red) and semitendinosus (relatively white) muscles were found for many fatty acids, specific CLA contents, many CLA isomers and both PUFA/saturated fatty acid (SFA) and n‐6/n‐3 ratios. However, in spite of the seasonal and carcass variations, all organic meats analysed had values of beef similar to pasture‐fed cattle. CONCLUSION: From a nutritional perspective, organic meat from both slaughter seasons seems to have high CLA contents, PUFA/SFA and n‐6/n‐3 indices within the recommended values for the human diet. Experiments on growing albino male rats were made to study the food value of the vegetable oils: soybean and rapeseed ones containing different quantities of linolenic acid. These oils were included in the animals' diet in the amount of 25% with respect to caloric value for 12-13 weeks. It has been established that as the content 18:3 omega 3 in the food fat was reduced, the metabolism of fatty acids in the body improved, manifesting in a noticeable rise of the efficacy of food fatty acids metabolization. This process was affected not only by the ratio 18:3 omega 3 and 18:2 omega 6 in the food fat but also by the total balance in it of fatty acids.  相似文献

The effect of rising atmospheric carbon dioxide concentration ([CO2]) on seed production and the fatty acid profiles of mung bean (Vigna mungo L. Wilczek) were studied under field conditions. Increased [CO2] (ca 250 ppm above ambient) resulted in significant increases in pod number, pod weight and total seed weight, but also significantly increased the percentage of immature pods at harvest. Qualitatively, increased [CO2] significantly decreased the percentages of palmitic and omega‐6 fatty acids, but increased the percentage of omega‐3 fatty acids and the relative proportion of omega‐3 to omega‐6 fatty acids in mature seed.
