This study analyses the effect of environmental enrichment on the welfare, productive traits and meat quality of lambs housed in feedlots. Sixty lambs were placed in enriched (EE) or conventional (CO) pens (3 pens for each treatment, 10 lambs/pen) where EE had a wooden platform with ramps that provided access to a concentrate hopper, cereal straw as bedding and forage, and one play ramp. The CO pen was barren, similar to commercial feedlots. The physiological adaptation response of EE lambs was more efficient than CO, since the latter mobilised more body reserves (i.e., increased NEFA, P < 0.05), and had lower levels of immunity (i.e., increased N/L, P < 0.05), which indicate chronic stress, probably associated with the barren environment. The EE lambs had a higher (P < 0.05) average daily gain, with heavier carcasses and higher fattening scores, as well as lower pHult, higher L* and b* values, and lower values of texture (P < 0.05).  相似文献

The effect of stocking density (16 rabbits/m2, 5 rabbits/m2, 2.5 rabbits/m2, n = 60, Experiment 1) and group size (4 rabbits/cage, 8 rabbits/cage, 16 rabbits/cage, n = 88, Experiment 2) on productive performance, carcass and meat quality of a slow-growing rabbit population reared outdoors was investigated in two experiments. The highest stocking density induced the highest skin percentage. Lower stocking densities showed lower lightness of Biceps femoris and higher redness of Longissimus lumborum muscles. Four rabbits/cage group (Experiment 2) showed the highest daily weight gain and slaughter weight and the lowest skin percentage. The muscles of 16 rabbits/cage showed significantly higher pHu than 8 and 4 rabbits/cage. BF of 16 and 4 rabbits/cage showed higher L* value. Productive performance and meat quality of rabbits reared outdoors improved in low group size while stocking density needs more experiments. The best combination of density, group size and total available surface that showed the best production and carcass traits was of 5 rabbits/m2, 4 rabbits/cage, and 0.8 m2.  相似文献

The effects of dietary supplementation in pigs with plant extract (PE) from Lippia spp., titrated in verbascoside (5 mg/kg feed), from weaning to slaughter (166 days), on carcass characteristics, meat quality, collagen characteristics, oxidative stability and sensory attributes of Longissimus dorsi (LD) muscle were examined. Ten pigs per treatment were slaughter at a live weight of 109.5 ± 1.4 kg. No influence on carcass characteristics, LD meat quality parameters and collagen characteristics were observed. Dietary PE increased (P < 0.001) α-tocopherol levels in LD muscle. Raw LD of pig fed PE showed lower (P < 0.001) lipid oxidation levels than controls. A reduction (P = 0.05) of fat odor and rancid flavor intensity in cooked LD muscle stored at 4 °C for 24 h was observed in the treated group. This study shows that PE is an effective antioxidant in pork meat, enhancing oxidative status and sensory attributes, without affecting other meat quality parameters.  相似文献

The experiment was conducted to examine opportunities for enhancing pork quality through the use of post-mortem ageing when combined with different chilling regimes. Large White (LW, = 24) and Duroc × Large White (Duroc, = 24) barrows were slaughtered and alternate carcass sides were either conventionally or blast-chilled. The longissimus thoracis et lumborum muscle was dissected from the carcass sides (24 h post-mortem) and trimmed of cover fat. Three sections (15 cm length) were vacuum packaged and assigned to 2, 7 or 14 days of ageing (2 °C) randomized within muscle location. Blast-chilled meat had lower purge (= 0.009) and drip (= 0.0009) losses and higher hue (= 0.02) than conventionally chilled meat. However chilling by conventional or blast-chilling methods had no effect on sensory characteristics (> 0.1). When breeds were compared, meat from Duroc barrows had lower moisture (< 0.0001) and higher intramuscular fat content (< 0.0001), L∗ (= 0.0003) and hue (= 0.007) values than LW. Overall tenderness (= 0.005), juiciness (= 0.0007) and palatability (< 0.0001), as well as flavour intensity (< 0.0001) and desirability (< 0.0001) values were higher and undesirable flavours were lower (< 0.0001) for meat from Duroc pigs, when compared with LW. Ageing increased purge loss (< 0.0001), L∗ (< 0.0001), hue (< 0.0001), chroma (< 0.0001) and content of protein (= 0.002), with corresponding decreases (< 0.0001) in drip loss and moisture content. Instrumental (< 0.0001) and sensory (initial, < 0.0001 and overall, < 0.0001) tenderness increased from day 2 to 14. Therefore independent of chilling method, ageing improved quality of pork loins. Moreover ageing had greater effect on tenderness, while breed had greater effect on flavour which may be related to differences in intramuscular fat content.  相似文献

Dairy cows are typically gregarious, but isolate themselves in the hours before calving when kept on pasture. Self-isolation is also a common behavior of ill animals. The objectives of this study were to determine if dairy cows would (1) isolate to calve when housed indoors in an individual maternity pen and (2) continue to isolate when ill after calving. We selected individuals from a pool of 79 multiparous Holstein dairy cows based on inclusion criteria created to address each objective. Cows were moved from a group pen to 1 of 10 adjacent maternity pens. Half of these individual pens were partially covered with plywood, creating a secluded corner as well as a window that provided visual access to the group pen. The other individual pens were uncovered on all sides. For our first objective, we selected 39 cows that were moved into the maternity pens >8 h before calving (partially covered: n = 19; uncovered: n = 20). For our second objective, we selected 18 cows housed in the partially covered pens: 9 cows with high rectal temperature after calving and signs of an infectious disease (mastitis, metritis, pneumonia, or some combination), and 9 healthy cows paired with ill cows based on the amount of time they spent in the maternity pen before calving. Ten-minute scan sampling was used to record the location and lying time from 6 h before to 72 h after calving. Individual feed intake was measured after calving. Binomial tests were used to determine if cows in both pen types were more likely to calve in the corner or window side of the pen. Repeated-measures ANOVA were used to determine if cows used the corner more as calving approached and if ill cows spent more time lying or more time in the corner compared with healthy cows in the 72 h after calving. Cows in the uncovered pens were equally likely to calve on both sides of the pen (10 vs. 10), but 79% of cows in the partially covered pens calved on the corner side of the pen (15 vs. 4). Cows in the partially covered pens used the corner side of the pen more in the 1 h before and after calving compared with those housed in the uncovered pens. Ill cows housed in the partially covered pens ate less, tended to spend more time lying down, and spent more time in the corner of the pen compared with healthy cows. These results indicate that periparturient dairy cows seek seclusion to calve and when ill, which suggests that adding a secluded area to maternity and hospital pens may be beneficial.  相似文献

The objective of the current study was to determine if group-housing Holstein heifer calves in indoor pens with poor ventilation and drainage influences performance, health, leukocytes, and behavioral responses compared with individually housed calves. Ninety colostrum-fed calves (2 ± 1 d of age) were randomly assigned to 3 treatments: individually housed (G1; n = 30 calves), 2 calves per pen (G2; n = 30 calves), or 3 calves per pen (G3; n = 30 calves). The space allowance per calf was 2.5 m2 for all treatment groups. All calves were fed 747 and 1,010 g/d of dry matter of a 28% CP and 20% fat milk replacer during the first 2 wk and wk 3 to 6, respectively. Weaning was initiated on d 46 by removing the evening feeding, and calves were completely weaned when they consumed 800 g/d of dry matter calf starter for 2 consecutive days after d 54. Calves were randomly commingled at d 90 in groups of 5 calves per pen in outdoors pens with an attached hutch. Peripheral blood was collected during the neonatal (3, 10, 21 d), weaning (46, 48, 54 d), and commingling periods (90, 93, 98 d) and was analyzed for neutrophil oxidative burst capacity when cocultured with an Escherichia coli, neutrophil surface L-selectin protein concentration, and whole blood secretion of tumor necrosis factor-α when cocultured with lipopolysaccharide. Behavior of each calf was assessed using 2 independent tests: an approach response to a human subject and the response of the calf when placed in an isolated cage. Calf starter intake was greater for G2 and G3 during wk 8 and 9, and also at wk 11 for G3 compared with G1. No treatment × time interaction or treatment effect for average daily gain was observed. Additionally, no treatment × time or treatment effect was noted for any leukocyte or biochemical variable of biological significance throughout the entire study. Individually housed calves tended to have a reduced incidence of respiratory disease during the first 90 d of life. No other treatment differences for the other health outcomes were observed. Group-housed calves also relied more on calf-to-calf interactions than calf-to-human interactions, as evident by their reduced approach of the human observer and more frequent movement when placed in an isolated pen. Group housing in an environment with poor ventilation and drainage may increase the risk of respiratory disease.  相似文献

A study was conducted to evaluate the influence of chestnut tannins (CT) on welfare, carcass characteristics, meat quality, and lipid oxidation in rabbits under high ambient temperature. Rabbits in one group were raised at 20 °C and fed with basal diet (N) and other three groups (33 °C) were fed basal diet with 0 (C), 5 (CT5), and 10 g (CT10) of CT/kg of diet. Compared with the C group, rabbits in CT10 had higher pH24 and lower cooking loss and thiobarbituric acid reacting substance values at 0, 30, and 60 min of forced oxidation. Rabbits in C group had higher cortisol levels, creatine kinase activities, white blood cell counts, neutrophil percentage, neutrophil:lymphocyte ratio and lower T3, T4 levels, lymphocyte percentage than N and CT10 groups. Supplementation of CT seemed to have a positive effect on growth performance, welfare, and meat quality of rabbits under high ambient temperature.  相似文献

Effect of production system on carcass and meat quality was investigated in four groups of lambs: i. W-C lambs were weaned between 45 and 60 days of age and then were fattened with concentrate feed until slaughter; ii. W-G-S lambs were weaned and then taken to pasture and wheat stubble; iii. UW-C lambs were fattened with concentrate feed and they suckled their dams until slaughter; iv. UW-G lambs were kept with their dams and were taken to pasture in the day-time. Hot carcass weight was 13.62, 12.52, 14.37 and 13.88 kg (P < 0.001), and dressing percentage was 55.24, 51.77, 57.83 and 55.38% (P < 0.001), for W-C, W-G-S, UW-C and UW-G lambs, respectively. Ultimate meat pH was higher in W-G-S lambs than lambs from W-C and UW-C systems (P < 0.05). W-G-S lambs had higher shear force value in longissimus dorsi muscle (P < 0.05) and lower meat lightness (P < 0.001) than those of other systems. Panellists gave the lowest sensory scores, except juiciness, to meat of W-G-S lambs.  相似文献

Additive genetic Angus-Brahman differences, heterosis effects, and least squares means for six carcass and six meat palatability traits were estimated using data from 1367 steers from the Angus-Brahman multibreed herd of the University of Florida collected from 1989 to 2009. Brahman carcasses had higher dressing percent (P < 0.0001), lower marbling (P < 0.0001), smaller ribeye area (P < 0.0001), and less fat over the ribeye (P < 0.0001) than Angus carcasses. Brahman beef was less tender (P < 0.0001), had more connective tissue (P < 0.0001), and it was less juicy (P < 0.001) than Angus beef. Heterosis increased hot carcass weight (P < 0.0001), dressing percent (P < 0.017), ribeye area (P < 0.0001), fat over the ribeye (P < 0.0001), and kidney, pelvic, and heart fat (P < 0.01) in Angus-Brahman crossbred steers. Results indicated that crossbred animals with up to 50% Brahman showed limited negative impact on meat quality while maximizing meat yield due to heterosis.  相似文献

The aims of the study were to investigate the effects of immunization against GnRH using OL protein (Ovalbumin-LHRH-7) on feedlot performance, carcass, meat quality and some reproductive traits in K?v?rc?k ram lambs. Ram lambs in the immunization (I, n = 7) group were immunized against GnRH using OL protein and boosted 2 weeks later. Control (C, n = 7) group was not treated. The animals were kept at pasture for 6 weeks after the first immunization, subjected to a 70 day fattening program, and then slaughtered. Growth performance, various carcass and meat quality characteristics were not affected from the immunization. GnRH immunization induced GnRH antibody production, suppressed testosterone production and testicular growth (P < 0.01). Testicular structure was negatively affected from the immunization, but not pituitary. These results suggest that immunization against GnRH with OL could be an alternative castration technique in ram lambs without negatively affecting carcass and meat quality characteristics.  相似文献

The aim of this study was to assess whether different grazing management affect animal performance and meat fatty acid composition. Thirty-five lambs were divided into three groups: 12 lambs grazed from 9 am to 5 pm (8h group); 11 lambs grazed from 9 am to 1 pm (4hAM group) and 12 lambs grazed from 1 pm to 5 pm (4hPM group). The trial was conducted over 72 days. The 8h lambs had greater DMI (P < 0.0005) and final body weight (P < 0.05) than the 4hPM and 4hAM lambs while carcass weight was not different between the three groups. The meat of the 4hPM lambs contained greater (P < 0.05) percentages of polyunsaturated fatty acids, C18:2 cis-9 trans-11 and lower saturated fatty acids and C18:0 than the meat of the 8h and 4hAM lambs. It is concluded that allowing lambs to graze during the afternoon rather than during 8 h does not compromise the carcass yield and results in a healthier meat fatty acid profile.  相似文献

We analysed the effect of enriched housing on the sensory meat quality and fatty acid composition of longissimus muscle in 60 entire Rasa Aragonesa lambs, housed indoors for 5 weeks in six pens (10 lambs/pen, 0.95 m2/lamb, initial weight 17.13 ± 0.18 kg and carcass mean 12.23 ± 0.23 kg); three control pens (barren) and three enriched pens (straw, platform with ramps and a small ramp). The final weight, carcass weight, fatness scores and cooking losses of meat from enriched lambs (EG) were higher and pH 24 was lower (P  0.05). The EG lambs had more C18:0 and total SFA (P  0.05). Lamb odour and grass odour were more intense in EG (P  0.05). Overall liking was higher for EG (P  0.05) and associated with tenderness (P  0.0001). The results suggest that environmental enrichment can have effects on fatty acid composition and sensory meat quality.  相似文献

Sixty Hereford (H) and Braford (B: 3/8 Zebu and 5/8 H) steers were finished on: D1) rangeland plus corn grain (1% of live weight) (H n = 15, B n = 15); and D2) high quality pasture (H n = 15, B n = 15) to study the effect of diet, temperament and lairage time on carcass and meat quality. Steers were slaughtered the same day in two groups, spending 15 and 3 h in pens, respectively (50% from D1, 50% from D2 in each group). Animals from D1 had better carcass performance without effect of the diet on meat quality. Regardless of breed, calmer steers showed higher average daily gain and lower shear force values. Carcasses from animals in the long lairage group had a better rate of pH decline and more tender meat, suggesting that more than 3 h preslaughter time should be necessary to rest and recover, mainly depending on lairage conditions.  相似文献

To clarify the impact of feeding co-extruded flaxseed on carcass quality and pork palatability, 96 pigs (48 barrows and 48 gilts) were fed three different levels of flaxseed (0%, 5% and 10% of dietary intake) for 76 days. Carcass quality and meat quality characteristics of pure loin muscle and ground pork (20% fat) were evaluated. Fat hardness and belly firmness decreased (< 0.001) with increasing co-extruded flaxseed. Pigs fed co-extruded flaxseed levels had higher lean yield (= 0.045) and total lean content (= 0.034). Loin from barrows had higher fat content compared to gilts (< 0.001). Co-extruded flaxseed supplementation increased (< 0.001) omega-3 content in loin and ground pork. Pork flavour intensity and off-flavour intensity scores lowered (< 0.001) with increasing levels of co-extruded flaxseed, being more accentuated (= 0.023) in reheated pork chops from barrows. Diet affected all texture and flavour sensory characteristics (< 0.05) as tissue levels of omega-3 fatty acids increased, likely as a result of increased lipid oxidation.  相似文献

This study aimed to examine whether growth performance, carcass and meat quality traits differed among high (H), medium (M) and low (L) birth weight (BtW) gilts and barrows born from large litters (> 16 piglets born alive). Regardless of gender, H pigs grew faster (P < 0.05) during the suckler period than L and M pigs. From weaning to slaughter at 113 kg catch-up growth was observed in M barrows. In gilts and barrows percentage ham was greater (P < 0.05) and percentage total subcutaneous fat was lower (P < 0.10) in H compared to M and L pigs. Compared to L and M pigs, H pigs displayed in general better quality in the longissimus muscle whereas the opposite was observed in the semitendinosus muscle. The superiority of H compared to M and L BtW littermates regarding carcass and meat quality appears to be less evident when pigs originate from large litters.  相似文献

To evaluate the effect of different rearing systems and sex on productive performance and carcass composition and quality, 80 rabbits (40 males and 40 females) of Carmagnola breed were reared from 9 to 16 weeks of age in individual California type cages (0.12 m2) or in group ground pens (0.25 m2/head). The animals were kept in standard and uniform environmental conditions and fed the same ad libitum pellet feed. Data on live weight and feed intake were recorded. At the end of the fattening period 10 animals per group were slaughtered and data provided in the World Rabbit Science Association (WRSA) standard method were collected, as well as pH and meat colour. Animals reared in ground pens showed lower productive performances, while, as to slaughtering performances, rabbits reared in cages showed the highest slaughtering weight and also the highest weights for most body parts. Gender slightly affected productive and slaughtering performances: females showed higher feed consumption and higher perirenal fat weight than males. Meat colour parameters showed significant differences in Longissimus lumborum and Biceps femoris due to housing systems and gender effects. In both muscle, rearing system affected pH only 24 h after slaughter.  相似文献

Chemical and mineral composition and the intramuscular fatty acid (IMF) profile of the Longissimus dorsi muscle (LM) of 60 purebred Hereford, 1/4 Braford and 3/8 Braford steers finished either in a feedlot or on improved pastures of the Pampa biome were evaluated. Pastures were improved with the introduction of Lolium multiflorum, Trifolium repens, and Lotus corniculatus. On average, beef from pasture-fed steers presented higher concentrations of the fatty acids C18:3n − 3 (P < 0.001), C20:3n − 3 (P = 0.035), total n − 3 (P < 0.001) and lower n − 6/n − 3 ratio (P < 0.001) in the IMF, and higher Mg and lower K content in muscle relative to those finished in the feedlot. C12:0 concentration in IMF was higher (P = 0.027) for 3/8 Braford than the purebred Hereford steers, whereas purebred Herefords presented lower C14:1 (P = 0.003) and higher C18:0 (P = 0.022) concentrations than the two Braford groups. The meat composition of purebred Hereford and Braford steers was not substantially different; however, beef produced exclusively on improved pastures presented higher concentration of components that are considered beneficial to human health, such as n − 3 fatty acids, and a lower n − 6/n − 3 ratio.  相似文献

Variation in the ovine CAPN3 gene was analysed using PCR-single strand conformational polymorphism, and its effect on growth and carcass traits was assessed in 513 New Zealand Romney lambs produced by 17 unrelated rams. Among the four allelic variants detected, the presence of variant *02 was found to be associated with an increased proportion of shoulder yield (absent: 32.6 ± 0.01%; present: 33.4 ± 0.03%; P = 0.016), and tended to be associated with increased shoulder yield (lean meat yield of the shoulder expressed as a percentage of the hot carcass weight) (absent: 16.6 ± 0.06%; present: 17.02 ± 0.20%; P = 0.067). Twenty-seven lambs were used to investigate the effects of the inclusion of 4% hydrogenated palm oil (HPO) or sunflower oil (SFO) in the concentrate on animal performance, carcass and meat quality and fat characteristics and fatty acid composition. Animals (16.2 ± 0.27 kg initial weight) were fed concentrate (Control, HPO or SFO) and barley straw ad libitum and slaughtered at 25 kg. SFO lambs tended to eat less concentrate than HPO animals (P < 0.10). Neither HPO nor SFO affected any of the carcass characteristics studied, meat pH and meat and fat colour (P > 0.05). SFO decreased proportions of C16:0, C18:1 cis-11 and C18:3 (P < 0.05) and increased C18:1 trans (P < 0.001) and C18:2/C18:3 ratio (P < 0.05). Atherogenicity index was lower (P < 0.05) when SFO was included in the concentrate. HPO did not affected and SFO improved fatty acid composition of fattening lambs without affecting animal performance.  相似文献
