Lamb loins were subjected to sous-vide cooking at different combinations of temperature (60, 70, and 80 °C) and time (6, 12, and 24 h). Different physicochemical, histological and structural parameters were studied. Increasing cooking temperatures led to higher weight losses and lower moisture contents, whereas the effect of cooking time on these variables was limited. Samples cooked at 60 °C showed the highest lightness and redness, while increasing cooking temperature and cooking time produced higher yellowness values. Most textural variables in a texture profile analysis showed a marked interaction between cooking temperature and time. Samples cooked for 24 h showed significantly lower values for most of the studied textural parameters for all the temperatures considered. Connective tissue granulation at 60 °C and gelation at 70 °C were observed in the SEM micrographs. The sous-vide cooking of lamb loins dramatically reduced microbial population even with the less intense heat treatment studied (60 °C–6 h).  相似文献

This paper describes the influence of different factors on sous-vide cooked pork. Pork cheeks were cooked at different combinations of temperature (60 °C or 80 °C), time (5 or 12 h) and vacuum (vacuum or air packaged). Weight losses were lower and moisture content higher in samples cooked for a shorter time (P = 0.054) and at a lower temperature (P < 0.001). Samples cooked at 60 °C showed more lightness (L*) and redness (a*) (P < 0.001). Lipid oxidation showed an interaction between cooking time and temperature (P = 0.007), with higher TBARs values for samples cooked for 12 h at 60 °C and lower for those cooked for 12 h at 80 °C. Samples cooked at 80 °C for 12 h showed lower (P < 0.05) values for most textural parameters than all the other types of samples. Vacuum packaging showed no influence on any of the studied variables. For the treatments evaluated, cooking temperature × time combination seems to be more important than vacuum packaging in the textural and colour parameters of pork cheeks.  相似文献

Fat cell distribution in the structure of semimembranosus muscle of goat and lamb was studied. The effect of various heating methods including conventional, domestic and industrial microwave were investigated using fluorescent light microscopy. Frequency used for microwave heating was 2450 MHz with two wattages levels of 700 (domestic microwave) and 12000 (industrial microwave). All samples were heated to internal temperature of 70 °C. The roasted samples in conventional oven were compared with microwave cooking. Fat distribution was different in various heat treatments. The roasted samples had greater fat retention in semimembranosus muscle. Results showed that uneven distribution of fat in muscle system influenced fat loss during cooking. The fat cells in the interior of muscle were lost more slowly compared to the fat located near the surface of the muscle. The overall migration of fat globules during microwave cooking was higher than conventional cooking.  相似文献

The aim was to investigate the effect of different cooking regimes on the cook yield and tenderness of non-injected and brine injected (0.5% residual NaCl) bovine M. triceps brachii caput longum (TB), M. supraspinatus (SP) and M. pectoralis profundus (PP). Injected and non-injected TB, SP and PP muscle sections (400 g) were (a) conventionally oven cooked to 72 °C or cooked slowly (using a Δ10 programme) to 72 °C or (b) cooked in a water bath to 72 °C or cooked in a water bath to 55 °C and held at this temperature for 2 h before heating to 72 °C. In addition, injected PP muscle sections were oven cooked to 69 °C and held at this temperature for up to 12 h. Slow cooking using a Δ10 programme had no significant (P < 0.05) effect on WBSF values of injected or non-injected SP and TB muscles but significantly (P < 0.05) decreased the WBSF values of injected and non-injected PP muscles when compared to conventional cooking. Slow cooking significantly (P < 0.05) increased % cook yield of injected PP, SP and TB muscles. Staged cooking significantly (P < 0.05) decreased the WBSF values and had no significant effect on sensory tenderness ratings of non-injected TB, SP and PP muscles and injected PP muscles. Staged cooked injected or non-injected PP, SP and TB muscles had lower % cook yield values than those cooked straight to 72 °C. Increasing the cooking time of injected PP muscles at 69 °C to 8 and 12 h decreased % cook yield, decreased WBSF values and increased sensory tenderness ratings. It also alleviated the problem of residual chewiness which was evident in PP muscles cooked using the other regimes.  相似文献

Semitendinosus muscles were cooked in a steam-assisted hybrid oven and also convection ovens at three different oven temperatures (180, 210, and 240°C) until three different end point temperatures [65°C (medium-rare), 72°C (medium), 80°C (medium-well)] were reached. Textural properties of cooked beef were investigated by the Warner Bratzler shear test and texture profile analysis. Cooking loss and free moisture content of muscle tissue was determined for each cooking condition. In addition, sensory analysis was carried out in order to compare with the instrumental results and correlations between instrumental texture parameters and sensory results. Steam-assisted hybrid oven cooking of beef resulted in a tougher texture, higher cooking loss, and lower free moisture content than convection cooking. High correlation coefficients (r2 > 0.70) were observed between instrumental texture measurements and sensory results for all ovens, especially in terms of tenderness. The free moisture content and adhesiveness values were also correlated well with juiciness (r2 > 0.70) for all oven types.  相似文献

The purpose of this work was to compare carrots with similar firmness cooked by traditional cooking and two vacuum treatments: sous-vide (SV) and cook-vide (CV). As a first step, consumers determined the preferred level of firmness for carrots cooked by traditional cooking (boiling). This level corresponded to instrumental firmness of 2.8 N in phloem tissue and 4.1 N in xylem tissue. Response surface methodology (RSM) established the pairing conditions of time (22 to 78 min) and temperature (78 to 92 °C) to study the effect of both factors on the firmness of carrots with sous-vide and cook-vide treatments. In both treatments, the instrumental firmness of phloem and xylem samples was measured and modeled. No significant differences were found in firmness values between phloem and xylem tissue of samples cooked by vacuum treatments (CV and SV). For CV treatment, firmness decreased linearly with time and temperature, while for SV treatment it followed a second-order model. Based on the model, conditions of time and temperature to achieve the preferred firmness (2.8 N) were selected for both treatments. Finally, consumers compared the sensory properties of carrots cooked by traditional cooking, sous-vide, and cook-vide with paired comparison tests evaluating three pairs of samples. Carrots cooked by cook-vide were considered less tasty than sous-vide and traditional cooking carrots. Carrots using traditional cooking were firmer than those obtained with SV and CV treatments. Carrots cooked by traditional and sous-vide treatments were preferred to cook-vide ones for the taste.  相似文献

Commercial samples of beef and turkey meat were prepared by commonly used cooking methods with standard cooking times: (1) broiled at 200 °C for 10 min, (2) broiled at a medium temperature (140 °C) for 10 min, (3) cooked by microwave (MW) for 3 min and then grilled (MW/grill) for 7 min, (4) cooked in a domestic microwave oven for 10 min, and (5) boiled in water for 10 min. The raw and cooked meats were then analysed to determine the carnosine, anserine, homocarnosine, pentosidine, and thiobarbituric acid-reactive substance (TBARS) contents. It was observed that boiling beef caused a loss of approximately 50% of the carnosine, probably because of the high water solubility of carnosine and its homologues; cooking by microwave caused a medium loss of the anti-oxidants of approximately 20%; cooking by MW/grill led to a reduction in carnosine of approximately 10%. As far as the anserine and homocarnosine contents were concerned, a greater loss was observed for the boiling method (approximately 70%) while, for the other cooking methods, the value ranged from 30% to 70%. The data oscillate more for the turkey meat: the minimum carnosine decrease was observed in the cases of MW/grill and broiling at high temperature (25%). Analogously, the anserine and homocarnosine contents decreased slightly in the case of MW/grill and broiling at a high temperature (2-7%) and by 10-30% in the other cases. No analysed meat sample showed any traces of pentosidine above the instrumental determination limits. The cooked beef showed an increased TBARS value compared to the raw meat, and the highest values were found when the beef was broiled at a high temperature, cooked by microwave or boiled in water. The TBARS value of the turkey meat decreased for all the cooking methods in comparison to the TBARS value of the fresh meat.  相似文献

The effect of microbial transglutaminase/sodium caseinate (MTG/C) systems on meat batter characteristics (water binding and textural properties of raw and cooked products) was studied in the presence of NaCl (1.5 g/100 g) and sodium tripolyphosphate (0.5 g/100 g), and storage time (96 h at 3 °C) for three meat species (pork, chicken, lamb). Samples prepared from pork and lamb with only MTG/C (no salts) had the highest cooking loss (CL) values, about 23 and 29 g/100 g, respectively; for chicken, the CL was less than 13 g/100 g. Hardness (Hd) and chewiness (Cw) generally tended to be higher in cooked samples containing MTG/C than in samples containing only salts. Products combining salts and MTG/C had higher (P<0.05) Hd and Cw. The efficiency of the MTG/C system as a texture conditioner of cooked products varied with the meat source.  相似文献

The objective of the present study was to obtain data about cooking time and temperature of kiymali pide in the restaurants and to investigate thermal inactivation of E. coli O157:H7 during experimental kiymali pide making. A field study was conducted in randomly selected 23 of 87 pide restaurants. Processing parameters including oven temperature, cooking period and post-cooking temperature were determined. Kiymali pide samples were prepared using ground beef filling experimentally inoculated with E. coli O157:H7 (7.6 log10 CFU/g). Pide samples were cooked at a conventional oven at 180 °C for 180, 240, 270, 300 and 330 s. Results of the current study suggest that cooking kiymali pide at 180 °C for at least 330 s (5.5 min) may provide sufficient food safety assurance (≥ 6 log10 CFU/g) for E. coli O157:H7.  相似文献

This paper presents a study combining the use of cryomechanical freezing and phosphate. Red shrimp (Pleoticus muelleri) were treated with sodium tripolyphosphate at 5 g/100 mL and a phosphate blend at 5 g/100 mL. Treated shrimp were partially frozen in liquid nitrogen (−86 °C) and finish in blast tunnel (−30 °C) before glazing with water. Frozen shrimp were held for 15 days at −25 °C before analysis. Drip loss on thawing and after cooking process was evaluated and sensory attributes were analyzed using acceptance tests. Results indicated that dipping shrimp in phosphates solutions can be used to prevent large cooking-related yield losses. Sensory analysis showed that shrimp treated with phosphate retain sensory attributes, contributing to major preference and acceptance of panellists. Cryomechanical freezing combined with phosphate treatment offers a simple and economical solution to increase freezing capacity, improve water retention and, consequently, improve product quality.  相似文献

The comparison between equivalent cooking treatments should be applied in a systematic way. This study proposes a methodical way to provide cooked samples with similar firmness using two cooking treatments. In addition, the structural, nutritional and sensory properties of red cabbage cooked with sous-vide treatment in comparison with traditional cooking (boiling water) was evaluated. Changes in texture, color and anthocyanin content were measured in samples cooked with traditional cooking (for different times) and sous-vide (modifying time and temperature according to a Response Surface Methodology). Heterocyclic amines (HCAs), potent mutagens and a risk factor for human cancers, are produced in meats cooked at high temperature. The aim of this study was to determine the HCA content in cooked meat products (beef, chicken, pork, fish) prepared by various cooking methods (pan frying, oven broiling, and oven baking at 170 to 230 °C) that are preferred by U.S. meat consumers. The primary HCAs in these samples were PhIP (2-amino-1-methyl-6-phenylimidazo [4,5-b]pyridine) (1.49-10.89 ng/g), MeIQx (2-amino-3,8-dimethylimidazo [4,5-f]quinoxaline) (not detected-4.0 ng/g), and DiMeIQx (2-amino-3,4,8-trimethyl-imidazo [4,5-f]quinoxaline) (not detected-3.57 ng/g). Type and content of HCAs in cooked meat samples were highly dependent on cooking conditions. The total HCA content in well-done meat was 3.5 times higher than that of medium-rare meat. Fried pork (13.91 ng/g) had higher levels of total HCAs than fried beef (8.92 ng/g) and fried chicken (7.00 ng/g). Among the samples, fried bacon contained the highest total HCA content (17.59 ng/g).  相似文献

Distilled dietary rosemary leaf (DRL) was tested to prevent lipid oxidation and sensory deterioration of cooked lamb under retail display conditions. Pregnant sheep were fed with a basal diet supplemented by 0%, 10% and 20% DRL. Cooked lamb fillets were stored for 0, 2 or 4 days at a temperature of 4 °C in a display cabinet and re-heated, simulating catering practices. The cooked lamb suffered rapid lipid oxidation and odour and flavour spoilage associated with slight rancidity and warmed-over flavour, and, to a lesser extent, with loss of colour and juiciness. DRL feeding delayed lipid oxidation measured as TBARS and volatile compounds, this being more effective in the first two days of storage. 10% and 20% of DRL provided equal antioxidant capacity. However, DRL feeding hardly prevented sensory deterioration, although incipient rancidity was delayed. Feeding DRL to ewes contributed to extend the shelf life of cooked lamb under retail display conditions.  相似文献

Instant rice produced from a conventional process consisting of the cooking, washing and drying steps possesses poorer eating quality compared with that of freshly cooked rice. The objective of this work was therefore to study the effects of cooking, pretreatment and drying methods on microstructure, textural properties and starch digestability of instant rice after rehydration; jasmine white rice was chosen as a test material. Conventional boiling method and electric rice cooking were selected as the methods to prepare cooked rice. In the case of boiling, cooked rice was frozen at −20 °C or cooled at 4 °C for 24 h prior to drying, while the cooked rice from an electric rice cooker was washed with ambient or cool water for 30 s prior to drying. After pretreatment the cooked rice was dried either by freeze drying or hot air drying at 80 °C. Based on the scanning electron microscopic results it was found that the cooking, pretreatment and drying methods all affected the rice morphology. The hardness and stickiness of instant rice after rehydration were lower for samples prepared from the rice cooker than those of freshly cooked rice, while both textural properties appeared to be improved significantly for the samples from boiling. The texture of the freeze-dried products was not different from that of the air-dried one. The freezing pretreatment provided the texture and glycemic index of instant rice after rehydration similar to those of the freshly cooked rice. On the other hand, the cooling pretreatment resulted in the harder texture and higher glycemic index of the samples.  相似文献

Ground beef with 1% NaCl was incorporated with 0.5% unencapsulated sodium tripolyphosphate (uSTP), 0.5% encapsulated sodium tripolyphosphate (eSTP), 0.5% unencapsulated sodium acid pyrophosphate (uSAPP), or 0.5% encapsulated sodium acid pyrophosphate (eSAPP) prior to being cooked and stored (0 or 6 d, 3 °C). The pH was higher (P < 0.05) for sodium tripolyphosphate samples (6 d: uSTP 5.98; eSTP 5.89) and lower (P < 0.05) for sodium acid pyrophosphate (6 d: uSAPP 5.31, eSAPP 5.33) samples than control sample (6 d, 5.50). Overall, samples with uSTP had the least cooking loss and lowest TBARS values. TBARS (mg/kg) for the phosphate treatments were lower (P < 0.05; ave. 1.78, 0 d; 3.49, 6 d) than for the control samples (3.07, 0 d; 22.85, 6 d). Therefore, phosphate incorporation into ground beef prior to cooking aids in the reduction of oxidation in the cooked, stored product, although a longer period of time before thermal processing may be necessary for the encapsulated phosphate to have significant benefits.  相似文献

Restructured beef steaks were cooked under four institutional cooking methodologies: oven roasting, grill frying, deep fat frying and broiling. The samples were evaluated for fat and moisture contents, cooking loss and texture. Sensory panels evaluated the steaks for texture desirability, flavor desirability, appearance and overall palat-ability. Evaluations were repeated using breaded, restructured beef steaks cooked by the four institutional methods, with grilled unbreaded steaks included for comparison. Deep fat fried, breaded and unbreaded steaks were significantly lower in moisture and higher in fat than those cooked by any other methodology. No significant differences in juiciness, flavor desirability or overall palatability were found between the unbreaded broiled, oven roasted or grilled samples. Broiled and grilled steaks were preferred for texture in the unbreaded and breaded samples. The unbreaded, deep fat fried samples received the lowest scores for all sensory attributes. Breading significantly improved the juiciness, texture and overall palatability of the deep fat fried steaks. For both breaded and unbreaded samples, grill frying was the preferred method of preparation.  相似文献

The effect of two thermal treatments (fast freezing at −40 °C and vapor cooking at 100 °C) on connective tissue extract (CTE) from jumbo squid (Dosidicus gigas) was investigated. Samples of CTE frozen at −40 °C were taken at 0, 3, 5 and 12 min. Also CTE was cooked at 100 °C and samples were taken at 0, 1, 2.5 and 5 min. Light microscopic observations of CTE after 12 min of freezing showed rupture of fibres. The CTE fibres showed agglutination during cooking time. The CTE insoluble fraction increased with freezing and cooking time. Maximum zeta potential value of untreated CTE was detected at pH 5.0 at +30 mV, meanwhile in the frozen CTE it was detected at pH 7.0 at +30 mV and two peaks (at pH 5.5 and 9.0) were observed at +20 mV in the cooked CTE. One endothermic peak was found at 105.9 °C in the untreated CTE, while in the frozen and cooked CTE the endothermic peaks were found at lower temperatures and enthalpies. Electrophoresis analysis of untreated CTE showed three bands. In the frozen CTE two bands appeared above 200 kDa, and in the cooked CTE, a 45 kDa band disappeared. These results suggest that during freezing and cooking processes there were modifications to molecular bonds that hold the integrity of the structure of the connective tissue of the jumbo squid mantle.  相似文献

In this work, changes of the cooking and pasting properties as well as starch digestibility of waxy rice (RD6) during hot air fluidized bed drying were investigated. Re-moistened waxy rice at an initial moisture content of 28% dry basis (d.b.) was dried at 90-150 °C. Semi-dried waxy rice was tempered and dried again by ambient air until the moisture content reached 16% (d.b). It was found that the degree of gelatinization increased with an increase in the drying temperature. At 130 and 150 °C the appearance of some waxy rice kernels changed from opaque to translucent, indicating complete gelatinization. Thermal degradation of amylopectin granules during high-temperature drying caused the starch to be more rapidly digested; this led to lower peak viscosity and setback viscosity. In addition, waxy rice processed at higher drying temperatures (90-150 °C) could adsorb more water and exhibited larger loss of solids during soaking. Such effects subsequently led to samples with lower hardness and higher stickiness. Based on the sensory analysis results, however, waxy rice dried at the above temperatures, when cooked, did not significantly differ in overall acceptability from the reference waxy rice.  相似文献
