Broilers were fed diets containing oils of varying degrees of unsaturation, namely coconut oil, olive oil, linseed oil and partially hydrogenated soybean oil (HSBO), with and without α-tocopherol supplementation. The different oils significantly (P<0.01) affected the fatty acid composition of the neutral lipids and, to a lesser extent, the fatty acid composition of the phopholipids. Fatty acid composition, in turn, influenced the oxidative stability of the meat during refrigerated and frozen storage. Meat from broilers fed olive oil or coconut oil was consistently more stable than meat from the linseed oil group. Dietary supplementation with α-tocopherol significantly (P<0.01) improved the oxidative stability of the dark and white broiler meat during refrigerated and frozen storage compared to meat from the broilers fed HSBO.  相似文献

The effect of linseed oil and α-tocopheryl acetate on the fatty acid composition and the susceptibility to oxidation of lipid fraction from pork tenderloin (Psoas major) muscle has been studied. Muscles were obtained from animals fed on diets with the same ingredients excepting the oil source [sunflower (C), linseed (L) and linseed and olive (1/1, w/w) (LO)] and α-tocopherol [20 (C, L and LO) or 200 (LOE and LE) mg/kg diet]. The n-6/n-3 ratio in pork tenderloin was markedly modified by dietary linseed oil administration, which was due to the increase in the C18:3n-3 (and total n-3 fatty acids) and the decrease in the C18:2n-6 (and total n-6 fatty acids) contents (P<0.05). The α-tocopherol content of tenderloin from batches LE and LOE was about 2.8 mg/kg of muscle, significantly greater (P<0.05) than about 0.7 mg/kg muscle found in tenderloin from pigs receiving C, L and LO. Dietary supplementation with α-tocopheryl acetate markedly reduced tenderloin lipid oxidation from animals fed diets enriched in n-3 fatty acids (L or LO vs LE or LOE).  相似文献

The influence of olive leaves supplementation on feed digestibility, growth performance of pigs and pork meat quality was investigated. Pigs fed diets with olive leaves at 5% (OL5) and 10% (OL10) levels had lower daily weight gain (DG) and daily feed intake (DFI) than pigs fed a conventional diet (OL0) but differences were not observed between groups fed with the different quantities of leaves. Additionally, pigs fed diets with leaves had the worst feed:gain ratio and showed a decrease in overall backfat. Chops from pigs fed the leaf diets had lower peroxide (PV) and conjugated diene (CD) contents than chops from pigs fed conventional diets. Moreover, chops from pigs fed with the higher quantity of leaves also showed a lower drip loss. After a storage period of 8 days at 4 °C, meat obtained from both OL5 and OL10 animals also differed (P < 0.05) in PV and %CD values from those fed a conventional diet. Since the fatty acid composition of the longissimus muscles was not different, differences in oxidative stability could only be explained by the significantly higher α-tocopherol concentration in intramuscular fat and backfat in pigs fed with olive leaf diets.  相似文献

研究日粮添加有机硒和亚麻籽油对猪背长肌中硒含量、脂肪酸组成、肌原纤维蛋白特性及加工肉制品的影响。选取192头"杜×长×大"三元杂交猪,随机分为4组,设为C组(0.3 mg/kg亚硒酸钠+1.5%大豆油),S1组(0.3 mg/kg酵母硒+1.5%大豆油),S2组(0.5 mg/kg酵母+1.5%大豆油)及SL组(0.3 mg/kg酵母硒+1.5%亚麻籽油)。研究发现有机硒能显著提高猪背长肌中的硒贮存量(P0.05);亚麻籽油能改善肉品的n-6/n-3比例;亚麻籽油相比大豆油能显著提高肌原纤维蛋白的溶解性和凝胶强度(P0.05);0.5mg/kg有机硒在7~12d的储藏期内能减少香肠的脂质氧化(P0.05),但是香肠的微观结构和感官评价不受有机硒和亚麻籽油的影响。因此在日粮中添加亚麻籽油和有机硒有益于富硒富n-3PUFA猪肉的生产和加工。  相似文献

The effects of using α-linolenic and α-tocopherol acid-enriched pork on the fatty acids and sensory characteristics of Spanish dry-cured loins were investigated. For the study, five batches of Spanish dry-cured loins were manufactured using pork loin enriched in polyunsaturated n − 3 fatty acids and α-tocopherol. Tissues were obtained from pigs fed on diets with the same ingredients, except for the oil source which corresponded to: [sunflower (C), linseed (L) and linseed and olive (1/1, w/w) (LO)] and two different amounts of α-tocopheryl acetate [20 (C, L and LO) or 200 (LOE and LE) mg/kg diet]. Dry-cured loins with polyunsaturated fatty acid n6/n3 ratios below 4 were obtained from linseed and linseed/olive oil-enriched batches. Dry-cured loin manufactured with pork from animals fed on diets enriched only with linseed oil presented the worst sensory characteristics and higher TBAR values than did dry-cured loins from animals fed on diets enriched with linseed and olive oil and linseed oil plus tocopheryl acetate.  相似文献

The use of α-linolenic acid and α-tocopherol enriched pork on the fatty acids and the sensory characteristics of Spanish dry-cured hams have been studied. Five batches of hams were manufactured using the posterior legs of pigs fed on diets with the same ingredients except for the oil source: sunflower (C), linseed (L) or linseed and olive (1/1, w/w, LO). Two different α-tocopheryl acetate concentrations [20 (C, L and LO) or 220 (LOE and LE)mg/kg diet] were used. Biceps femoris and Semitendinosus/Semimembranosus muscles from hams with low polyunsaturated fatty acid n-6/n-3 ratio (less than 3) were obtained from animals fed on linseed and linseed/olive oil enriched diets. However, hams from animals fed on diets added with linseed and α-tocopheryl acetate (20mg/kg diet) (batch L) were rejected by consumers because of less acceptable sensory characteristics and higher TBARs. The remaining hams had satisfactory sensory and nutritional characteristics.  相似文献

The experiment was undertaken to provide information on the influence of grass intake in a high fat diet based on acorns, in either free-range or confinement, on the carcass yield and characteristics, and on the accumulation of fatty acids and tocopherols. Groups raised free-range or with acorns and grass in confinement had the highest total backfat. Grass addition to the feed did not significantly modify the carcass weight and cut yield. However, outdoor raising produced lower carcass weights and yield, Longissimus dorsi muscle and ham weights than those fed the formulated diet or acorns and grass in confinement. Neither grass intake nor outdoor rearing did modify significantly the proportion of saturated fatty acids of the backfat. However, a lower proportion of saturated fatty acids was found in the intramuscular neutral lipids from pigs fed outdoors. Pigs reared free-range had significantly (P=0.0001) higher proportions of C18:1n-9 in the inner layer and in the intramuscular neutral lipids than the other groups. The grass intake significantly (P=0.0001) increased the proportion of C18:3n-3 in the inner and outer fat layers and intramuscular neutral lipids, while the outdoor rearing system not only affected on the proportion of linolenic acid but also C22:5 and C22:6 of the inner backfat layer and intramuscular polar lipids. These results suggest that the outdoor rearing allows a higher accumulation of n-3 fatty acids maybe due to an increased activity of the desaturase and elongase enzymes. On the other hand, the accumulation of tocopherols was not significantly modified neither by the grass intake nor the outdoor rearing, while differences were detected by the type of feeding (diet vs. acorns/acorns and grass). It is concluded, that the outdoor rearing system affects the nutritional value of meat, mainly by improving the fatty acid composition.  相似文献

The objective of the present study was to evaluate the effect of Ganoderma lucidum (Reishi mushroom) or Olea europaea (olive tree) leaves on oxidative stability of rabbit meat fortified with n-3 fatty acids. Forty-eight slovenska kunka (SIKA) rabbits were divided into four homogeneous groups. The control group ( CONT−) received diet with 6% palm fat; other groups received diet with 6% linseed oil and were either unsupplemented (CONT +) or supplemented with 1% of G. lucidum (REISHI) or O. europaea leaves (OLIVE). Rabbits were slaughtered and fatty acid composition, concentration of vitamin E and malondialdehyde (MDA) in back muscle were analyzed. The results showed that linseed oil addition improved fatty acid composition by increasing polyunsaturated fatty acid (PUFA) proportion, decreasing proportion of saturated fatty acid (SFA) and reducing n-6/n-3 ratio in rabbit meat. Groups that were supplemented with linseed oil had lower content of α-tocopherol and higher content of γ-tocopherol, compared to the CONT − group. The addition of potential antioxidants did not effectively prevent oxidation of rabbit meat.  相似文献

The effect on lamb muscle of five dietary supplements high in polyunsaturated fatty acids (PUFA) was measured. The supplements were linseed oil, fish oil, protected lipid (high in linoleic acid (C18:2 n-6) and α-linolenic acid (C18:3 n-3)), fish oil/marine algae (1:1), and protected lipid/marine algae (1:1). Eicosapentaenoic acid (C20:5 n-3) and docosahexaenoic acid (C22:6 n-3) were found in the highest amounts in the meat from lambs fed diets containing algae. Meat from lambs fed protected lipid had the highest levels of C18:2 n-6 and C18:3 n-3, due to the effectiveness of the protection system. In grilled meat from these animals, volatile compounds derived from n-3 fatty acids were highest in the meat from the lambs fed the fish oil/algae diet, whereas compounds derived from n-6 fatty acids were highest in the meat from the lambs fed the protected lipid diet.  相似文献

This study was set up to determine how pan-frying either without culinary fat or with different culinary fats (polyunsaturated fatty acids (PUFA)-enriched culinary fat, olive oil and margarine) affects the fatty acid (FA) composition of pork. The meat samples (longissimus thoracis (LT)) originated from pigs fed different dietary fat sources (animal fat, soybean oil or linseed oil) and thus had different FA compositions before frying. Pan-frying resulted in considerable increases in the meat total-FA content, although this was not always significant and highly variable, despite standardisation of the frying process. The FA composition of the pan-fried meat tended to become similar to that of the culinary fat used, and the extent of changes in the content of a particular FA was relative to the FA gradient from the culinary fat to the meat. However, this was also dependent on the culinary fat used, since frying in olive oil appeared to affect the FA composition of the meat more than did frying in the other culinary fats. Differences in FA composition of meat resulting from different animal feeding treatments remained unchanged after pan-frying without fat, they became smaller after frying in margarine and PUFA-enriched culinary fat, whereas frying in olive oil largely masked the initial FA profile differences. Long chain PUFA (LCPUFA) in the meat were not significantly lost by the frying process, but their proportion was influenced by the uptake of the culinary fat.  相似文献

The qualitative characteristics, lipids and chemical composition of the meat of 35 Nellore young bulls were analyzed. These bulls had an average slaughter weight and fat thickness of 532.17 ± 30.2 kg, and 7.00 mm, respectively. Significant differences were found only in the meat's water holding capacity (WHC), which was higher for animals fed with fresh linseed oil. More conjugated linoleic acid (CLA) was found in the meat of animals fed with unprotected soybean oil, while better omega-6/omega-3 ratios were noted for those fed unprotected linseed oil. The addition of different vegetable oils to the bulls' diet (soybean or linseed, either protected or not protected from rumen digestion) did not interfere with the qualitative characteristics of their meat while improving the lipid composition of the longissimus muscle. Of the oils examined, unprotected linseed oil most improved the omega-6/omega-3 ratio, thus producing the healthiest meat for human consumption.  相似文献

Over 40 days, lambs were fed: concentrate (C), concentrate containing 20% linseed (L), concentrate containing 35% olive cake (OC), or concentrate containing 10% linseed and 17% olive cake (OCL). The polyunsaturated fatty acids (PUFA) and peroxidation index (PI) in phospholipids were increased by the L and OCL treatments (P = 0.007 and P = 0.003, respectively). The OC and OCL diets increased the concentration of tocopherol in muscle (P < 0.001). Compared to the OC and OCL diet, the L diet increased fatty acid oxidation, measured as conjugated dienes (CD; P = 0.003), peroxides (PV; P < 0.001) and TBARS (P = 0.002) in minced muscle over 11 days of storage in high-oxygen atmosphere. Also, the L diet increased (P < 0.001) the levels cholesterol oxidation products (COPs). In conclusion, feeding olive cake improved the oxidative stability of lamb meat and the combination of olive cake and linseed improved the fatty acid composition of meat without compromising its oxidative stability.  相似文献

Gilthead sea bream (Sparus aurata) and sea bass (Dicentrarchus labrax) were fed with two experimental diets: olive pomace diet and olive pomace oil diet, in order to examine whether fish oil substitution in fish feeds by olive oil production wastes, such as olive pomace and olive pomace oil, has an influence on growth performance, fatty acid composition and cardio protective properties of fish. Gilthead sea bream fed with both experimental diets exhibited satisfactory growth performance factors while sea bass did not. The total lipids of gilthead sea bream fed with olive pomace diet contained statistically decreased levels of fatty acids, while exhibited the most potent biological activity against platelet aggregation induced by Platelet Activating Factor. These data indicate that olive pomace can be used as a partial substitute of fish oil in fish feed improving its cardio protective properties.  相似文献

To establish the relationships between the fatty acid composition of adipose tissue in growing pigs and the intake of fatty acids, we performed a feeding trial and did a literature survey. Six groups of pigs were fed diets with variable combinations of corn, linseed and fish oil. After 38 days, biopsies of adipose tissue were analyzed for their contents of linoleic, -linolenic, eicosapentaenoic and docosahexaenoic acid. For the four fatty acids, intake data and adipose tissue levels were also collected from the literature. Linear correlations were computed for the intake of each polyunsaturated fatty acid and its level in adipose tissue, the data set consisting of either the original results only or combined with literature figures. The observed strong correlations between dietary and fat tissue polyunsaturated fatty acids indicate that the fatty acid composition of the diet may be used as an index of the fatty acid composition of the diet, and vice versa. The regression equations presented can be used to steer the fatty acid composition of adipose tissue of growing pigs by the fatty acid composition of their diet.  相似文献

BACKGROUND: The objective of this study was to determine the effects of sources of supplemental fat on laying performance, egg quality, and fatty acid composition of egg yolk. RESULTS: Two hundreds Isa Brown layers were assigned randomly to be fed ad libitum a standard commercial layer feed (BD), basal diet plus 2% tallow (T), basal diet plus a mixture of 1% tallow and 1% flaxseed oil (MTFO), basal diet plus 2% sunflower oil (SO), or basal diet plus 2% flaxseed oil (FO), which were offered for 8 weeks. Each diet was given to five groups, each containing 10 hens. The feed efficiency and egg production were 2.78 and 53.51% for BD; 2.30 and 63.47% for T; 2.45 and 60.14% for MTFO; 2.29 and 64.30% for SO, and 2.62 and 61.18% for FO groups, respectively. Dietary fat supplementation affected the laying performance but had no significant effects on egg quality parameters. The fatty acid composition of egg yolk lipids were significantly affected by dietary fatty acid composition. The supplemental tallow increased palmitic fatty acid. The proportions of linoleic and arachidonic fatty acids in egg yolks for layers fed the SO diet were higher than in the BD group and those on diets containing other fats. Concentrations of oleic and omega‐3 fatty acids were the highest in layers fed the FO diet during the laying period. Fifty-seven York-crossed barrows and gilts were fed either a grain and soy diet (CONTROL with 28% C18:1) or a similar diet enriched with oleic acid (HO with 43% C18:1, Greedy-Grass OLIVA®). There were no interactions between dietary treatment and gender and there were no differences in intramuscular and subcutaneous fatty acid composition between sexes (P > 0.05). Similar primal cut yields, composition of major primal cuts, and carcass and meat quality characteristics were found for HO and CONTROL fed pigs. Apart from a few significant but small differences for some fatty acids, intramuscular fatty acid composition was similar for both dietary treatments. Subcutaneous fat from HO fed pigs had a 6.9% increase in total monounsaturated fatty acids and a 9.3% reduction in total polyunsaturated fatty acids (P < 0.05) compared with CONTROL fed animals, without adversely affecting carcass quality and producing suitable hams for processing by the meat industry.  相似文献

The suitability of backfat high in polyunsaturated fatty acids (PUFA) for salami manufacture was assessed. Eighty pigs (barrows and gilts) were fed four diets, containing 21, 25, 28 and 28 g PUFA/kg feed, originating mainly from soybeans and/or soybean oil in the first three diets and from linseed in the fourth. Salami was prepared with backfat from these pigs, according to gender and dietary treatment. Samples were taken throughout the ripening. The taste panel rejected the two high PUFA (diet 3 and 4) levels; moreover fishy off-flavours were detected for dietary treatment four. Twenty-five grams PUFA/kg feed, corresponding with 23% PUFA in backfat or 15% PUFA in salami, results in acceptable taste, if linoleic acid is the predominant PUFA. However, all PUFA levels resulted in salamis too soft to be commercialized, as evidenced by a fatty film on the salami slicing machine.  相似文献

A total of 48 pigs (11.4 and 107.2 kg initial and final weight) were used to evaluate increasing dietary levels of bacterial protein meal (BPM) produced on natural gas (0, 50, 100, or 150 g kg−1) on fatty acid composition, sensory properties, and susceptibility of pork to lipid oxidation. Increasing levels of BPM to diets increased the content of C16:1 fatty acids in backfat and muscle and total monounsaturated fatty acids in muscle, but decreased the content of polyunsaturated fatty acids and iodine value in backfat and muscle. Pigs fed diets containing BPM had reduced thiobarbituric acid reactive substances (TBARS) value in backfat and muscle, reduced intensity of odor and rancid odor and taste in pork after short-time storage, and reduced off-odor and off-taste after intermediate-time storage. To conclude, adding BPM to diets for pigs changed the fatty acid profile, improved the oxidative stability, and sensory quality of pork.  相似文献

This experiment was conducted to study the effect of vitamin A concentration in the diet on fatty acid composition in pigs. One-hundred and twenty eight Duroc × (Large White × Landrace) castrated male pigs were used. Pigs were randomly distributed and located in cages of four pigs each to the following treatment: vitamin A-enriched diet (100,000IU/kg) (n=16) and control diet with a basal level (7500IU/kg) (n=16). The pigs were slaughtered at an average weight of 125.9kg. No effect of diet vitamin A level on performance, carcass traits and intramuscular fat percentage was observed. The retinol concentration in subcutaneous backfat and retinol and retinol palmitate contents in liver were higher in the pigs that were given the vitamin A enriched diet than in those receiving the control diet. However the vitamin A supplementation did not increase the retinol content in the muscle. Pigs receiving the vitamin A enriched diet showed a higher C16:0 and ∑SFA proportions in the outer layer and C18:0 and ∑SFA proportions in the inner layer. Moreover, the diet rich in vitamin A led to a reduction of C18:1 n-9 and ∑MUFA proportions in subcutaneous backfat inner layer. Dietary vitamin A concentration had not influence on main fatty acids composition of intramuscular lipids. Dietary vitamin A enrichment lead to a higher C16:0, ∑SFA concentration in liver lipids.  相似文献

The influence of two diets with different fatty acid compositions has been studied with regard to overall pork quality and significance of specific fatty acids on sensory attributes in fried chops and oven roasts. Twenty castrates and 20 females were in a balanced experimental set-up fed with a standard diet supplemented with α-tocopherol (200mg/kg feed) where the fat source was either 3% of palm oil or 3% rapeseed oil. After slaughter, despite differences in lipid composition and sensory attributes, no significant difference in overall meat quality parameters and flavour precursors was found. Comparison of the two diets showed that supplementation with rapeseed oil resulted in a significantly higher content of C18:3n-3 (polar lipid (PL), neutral lipid (NL)), C18:2n-6c (NL) and C20:2 (NL) in LD and C18:1n-9c, C18:2n-6c, C18:3n-3, C20:3n-3, C22:5n-3 in backfat, while supplementation with palm oil resulted in a higher content of C16:0 (NL), C16:1 (PL), C18:1n-9t (NL) in LD and C16:0, C17:0, C18:0, C16:1, C20:4n-6 in backfat. A positive and significant correlation between the contents of C18:2n-6c, C20:3n-6 in the PL fraction and the sensory attributes fried meat odour and sweet odour were found in fried pork chops from female pigs. Likewise, positive correlations were seen between the content of C18:1n-9c in the PL fraction and sensory attributes such as sourish odour, piggy odour and piggy flavour in whole oven roasts. These data substantiate the view that specific fatty acids in the PL fraction influences flavour attributes in pork.  相似文献
