Ground beef was either packaged in an atmosphere of 0.4% CO, 30% CO2, and 69.6% N2 (CO-MAP) or vacuum. After storage (48 h, 2–3 °C), packages of CO-MAP and vacuum were opened and overwrapped with polyvinyl chloride. Other CO-MAP and vacuum packages were left intact. Packages were initially displayed for 7 days (2–3 °C). Intact packages were further displayed up to 35 days before being opened and displayed (1 or 3 days). Intact CO-MAP packaged ground beef was always more red than intact vacuum-packaged ground beef. Color was relatively stable for both types of intact packages over 35 days of display. Upon opening CO-MAP packaged ground beef, the red color decreased slower than in ground beef from vacuum packages.  相似文献

Lamb primals (shoulders) were packaged under vacuum, 80% O(2)/20% CO(2), 50% CO(2)/50% N(2) or 100% CO(2) and stored at 5 or 0 °C. Pack contents were examined at 7 day intervals to determine the composition of the pack atmosphere, drip loss, colour (muscle and fat) and pH (surface and internal). The composition of the gas atmospheres changed very little during storage. The only significant differences between developed head space compositions above primals stored at the two different temperatures (5 and 0 °C) were noted in packs stored for 28 days under 80% O(2)/20% CO(2). Low levels of drip loss (<0.5%) were noted in all packs stored under the modified gas atmospheres. In contrast, significantly higher levels of drip loss (0.5-1.1%) were noted in vacuum packaged lamb stored at 5 and 0 °C. Acceptable muscle colour was observed 2 hr after opening of all packs. The only significant differences between atmospheres for lean muscle colour were noted after 28 days storage. Fat colour did not generally change during storage in any of the atmospheres, apart from a slight bleaching effect at 7 days. There were no significant differences between the surface or internal pH values noted after storage under any of the atmosphere/temperature combinations. In general, higher pH values were observed at the surface of the meat than in the interior. This pattern was noted before and after storage.  相似文献

Constant-weight ribeye, top loin, and sirloin steaks were collected from beef carcasses (n = 25) representing five weight/loin muscle area (LMA) groups: G1 (226.8–271.7 kg; 70.97–78.96 cm2), G2 (272.2–317.1 kg; 78.71–85.81 cm2), G3 (317.5–362.4 kg; 86.45–93.55 cm2), G4 (362.9–407.8 kg; 800 cwt, 94.19–101.29 cm2), and G5 (408.2–453.1 kg; 101.94–109.03 cm2). Consumers (n = 316) selected 3 steaks of each type and ranked selection criteria (color, marbling, thickness, texture). Consumers selected ribeye steaks from G5 most frequently (P = 0.0002), but there were no differences among HCW/LMA groups for top loin or sirloin steaks. Thickness was the primary criterion for sirloins and top loins, but marbling was the primary criterion for ribeyes. Data indicate that consumers have preferences for steak thickness and appearance, but the preferred characteristics differ among consumers.  相似文献

The effect of dietary vitamin E supplementation on cholesterol oxidation in vacuum packaged, cooked, refrigerated and frozen beef steaks, was investigated. Steers (Friesian×Charolais×Black Hereford) were fed diets providing 20 or 3000 mg α-tocopheryl acetate/head/day for 135 days prior to slaughter. α-Tocopherol concentrations in M. psoas major (PM) and M. longissimus dorsi (LD) were significantly (p<0.05) increased by supplementation and were significantly (p<0.05) higher in PM than LD. Cholesterol oxidation (monitored by measuring 7-ketocholesterol formation) increased during refrigerated and frozen storage in some, but not all, groups, and tended to be higher in PM than LD. Dietary vitamin E did not affect 7-ketocholesterol formation in LD, but significantly (p<0.05) reduced concentrations in PM during refrigerated and frozen storage. Supplementation significantly (p<0.05) reduced TBARS in PM and LD, indicating that vitamin E improved oxidative stability in both muscles. The results show that dietary vitamin E supplementation inhibits cholesterol oxidation in vacuum packaged, cooked beef during refrigerated and frozen storage, but may be influenced by muscle type.  相似文献

The objectives of this study were to investigate the effects of using commercially low and high modified atmosphere packaging (MAP) on quality characteristics of sirloin beef steaks. Gas mixtures used included 80% O2:20% CO2 (O280), 70% O2/30% CO2 (O270) and 50% O2/30% CO2:20% N2 (O250) and for commercial packs O275 ± 5%, CO225 ± 5%, < 5% N2-(O2Com). All samples were packed in similar tray and packaging film formats. The experimental parameters monitored included microbiological, physiochemical and sensory measurements (naïve assessors). Microbial counts did not exceed the recommended legal ranges over the storage period. However the numbers of LAB (lactic acid bacteria) were the highest for commercially-packed samples (O2Com) in comparison to laboratory packaged samples (O280, O270 and O250). Commercially-packaged samples eventually spoiled due to the occurrence of off-flavours and off-odours and subsequently were the least acceptable to sensory naïve assessors.  相似文献

The effect of atmosphere containing 80% CO2 and 20% O2 on growth of Mucor plumbeus, Fusarium oxysporum, Byssochlamys fulva, Byssochlamys nivea, Penicillium commune, Penicillium roqueforti, Aspergillus flavus, Eurotium chevalieri and Xeromyces bisporus was investigated. Production of aflatoxin by A. flavus, patulin by B. nivea, roquefortine C by P. roqueforti, and cyclopiazonic acid by P. commune was also studied. Fungal growth was evaluated by three methods: colony diameter, hyphal length or mycelium dry weight and ergosterol content. Among the nine fungal species examined, two E. chevalieri and X. bisporus, did not grow under these conditions. In this study, fungi differed in their response to modified atmospheres in biomass, ergosterol content, mycotoxin production and morphology. Reductions of 57.8-96.9%, 73.7-99.6% and 91.5-99.9% were obtained in colony diameter, hyphal length and ergosterol content, respectively, under this atmosphere compared to air. Ergosterol content was more affected in most species than other measurements. Patulin, cyclopiazonic acid and roquefortine C were produced in this atmosphere, although levels were very low and aflatoxin was not produced at all. Growth was quite extensive as measured by colony diameters, but hyphal lengths were low and ergosterol production was also affected in all species of this study.  相似文献

This study investigated the relationship between length (1, 2, 4, or 6 days) of exposure to carbon monoxide (CO) and the subsequent rate of loss of carboxymyoglobin color during display (0, 24, 48, 72 h) after repackaging in an oxygen permeable polyvinyl chloride (PVC) overwrap. In addition, the ability of CO to cause color reversion of metmyoglobin to carboxymyoglobin in brown colored, aged (4 days, PVC) or low oxygen-induced (2 days, (LOX-MAP) ground beef was studied. Extending CO exposure time increased overall mean redness. However, overall mean redness decreased after packages were opened. Day 6 exposed ground beef only maintained about 1.5 Minolta a∗ units higher than day 1 exposed after opened 72 h. The color of brown ground beef was converted to carboxymyoglobin upon exposure to carbon monoxide, regardless of how the initial brown color was formed. This color changes was relatively faster in LOX-MAP packaged ground beef compared to that formed by aging in PVC. Although color reversion is possible, consideration should be given to the microbiological status of the ground beef at the time of CO packaging.  相似文献

Modified atmospheres (MAs) with high CO2 concentrations are used for packaging several commodities with different purposes, including as an alternative method for pest control. When used in gas-tight flexible packages, sorption by the commodity produces a vacuum effect that causes the package to adopt a random shape and makes it impossible to reshape it without opening the package. Other than storage problems in retail storehouses, sorption can affect the amount of gas inside the packages needed for pest control. This study reports the amount of CO2 sorption by chickpeas packaged with different MAs and the negative pressure produced due to the decrease in the partial pressure of the gas. Trials were conducted in 710 mL semi-rigid plastic containers filled up to 24%, 48% and 96% of their capacity (filling ratios). Three MAs (90%, 70% and 50% CO2 with a residual of 3%, 6% and 10% O2, respectively, and balanced by N2) were used during 24 h, 48 h, 240 h and 384 h of exposure at 20 °C. The maximum sorption (1.28 g CO2/kg of chickpea) was obtained with the lower filling ratio (24%) and with an initial concentration of 90%. Sorption decreased with the decline in the initial CO2 concentration and with the rise in the filling ratio. The time needed to reach the equilibrium sorption varied between 141 h and 27 h, depending on the initial CO2 concentration and the filling ratio of chickpeas. The vacuum effect produced inside the containers by sorption produced a negative pressure that increased with the increase in the filling ratio and the initial CO2 concentration. Whether the amount of CO2 available in packages after gas sorption is still effective for controlling chickpea pests remains to be tested.  相似文献

Consumers (n=316) were recruited from college football picnickers to select ribeye, sirloin, and top loin steaks from 3 price groups based on thickness (n=10 steaks per price/type combination). Constant weight steaks were assigned to these groups: P1, thinnest, $19.80/kg ribeye and top loin, $10.99/kg sirloin; P2, average thickness, $22.00/kg ribeye and top loin, $13.19/kg sirloin; P3, thickest, $24.21/kg ribeye and top loin, $15.40/kg sirloin. Consumers selected 3 steaks per type and ranked selection criteria (price, color, marbling, thickness, texture). Percentage of steaks chosen from each price group did not differ (P>0.05), but consumers tended to select thinner ribeye steaks (P1 and P2) and thicker sirloin steaks (P2 and P3). Across all steak types, a greater number of consumers reported that marbling, color, and thickness were more important than price and visual texture. Data indicate that consumers may select steaks that display their preferred attributes, even if the steaks cost more.  相似文献

The flora growing on beef stored in vacuum and 100% CO2at 2 or 6°C (experiment 1) and in vacuum and different mixtures of CO2and N2at −1 or 2°C (experiment 2) was determined in two separate experiments. Both a high concentration of CO2and a low storage temperature inhibited bacterial growth, especially of the spoilage bacteria pseudomonads andBrochothrix thermosphacta. No packaging conditions gave growth of coliforms. High numbers (log85–6) of lactic acid bacteria after storage in vacuum or gas packs, inhibited growth of pseudomonads andB. thermosphactaduring subsequent storage under retail conditions. Samples of the lactic acid bacteria obtained in experiment 2 were identified by genus-specific rRNA probes. The aim was to investigate the effects of ageing large beef cuts, 10-cm-long longissimus dorsi (LD) and 4-cm-long semimembranosus (SM), on colour stability during subsequent storage of steaks in air for 5 days. Ageing solely in high oxygen modified atmosphere (MA, 80% O2 + 20% CO2) for 5 or 10 days or ageing in vacuum for 5 or 15 days followed by high oxygen MA for 5 or 10 days were compared with ageing in vacuum for 5, 15 and 25 days at 4 °C. Ageing system and ageing time influenced colour stability. For short ageing times, 5 to 10 days, large beef cuts could be aged in high oxygen MA without negative effect on colour stability compared with vacuum ageing. Longer ageing times, 15 to 25 days, decreased colour stability. Then vacuum ageing was preferable to ageing in vacuum for 5 or 15 days followed by high oxygen MA.  相似文献

Vacuum packaged, oven-roasted turkey breasts and sliced turkey breast luncheon meat were prepared with and without potassium sorbate or sorbic acid. Control and treated products were inoculated with one of the following organisms: Salmonella, Staphylococcus aureus , or enteropathogenic Escherichia coli. The samples were vacuum packed and stored at 15°C for 10 days. The addition of 0.25% sorbate to the breasts and 0.12% sorbic acid in the slices provided excellent protection against the growth of Salmonella, E. coli , and S. aureus in uncured, cooked, vacuum packaged turkey.  相似文献

Beef steaks were treated with 1.5% lactic acid alone or supplemented with antioxidants (0.1% rosemary extract and 0.05% ascorbic acid). The steaks were stored under modified atmospheres containing either 60% O2/40% CO2 or 70% O2/20% CO2/10% N2. Both the 40% CO2 atmosphere and the lactic acid treatment significantly (P<0.05) inhibited growth of lactic acid bacteria, Brochothrix thermosphacta and Pseudomonas spp. Neither CO2 in the pack atmosphere, treatment with lactic acid, nor a combination of both, affected formation of thiobarbituric acid reactive substances, myoglobin oxidation, or CIE a* values. However, treatment with antioxidants significantly (P<0.05) delayed oxidation of both myoglobin and lipids, and so extended the storage-life.  相似文献

Steaks from five bovine muscles [psoas major (PM), longissimus lumborum (LL), deep semimembranosus (DSM), superficial semimembranosus (SSM), and semitendinosus (ST)] were packaged in atmospheres containing 20% or 80% oxygen, with and without 0.4% carbon monoxide. Steaks were evaluated on d 0, 4, and 7 of retail display for instrumental (CIE L, a, and b) and visual colour, total- and metmyoglobin-reducing activity, and oxygen consumption rate. Combining carbon monoxide with either oxygen level had no effect (P > 0.05) on any measured attribute. Using higher oxygen levels increased colour stability and reduced variability (P < 0.05) among muscles for all measured attributes. In general, colour stability and reducing activity for the muscles were LL > ST > SSM > PM > DSM. Including 0.4% carbon monoxide with 20% or 80% oxygen may not have impacted colour, due to preferential formation of oxymyoglobin, rather than carboxymyoglobin, at these oxygen levels.  相似文献

This study evaluated the shelf-life quality of Cameros cheeses packaged under modified atmospheres. Five different modified atmosphere conditions were studied (carbon dioxide/nitrogen mixtures and vacuum). Control cheeses were packaged in air. The product stored at 3–4°C was evaluated periodically to investigate its sensory quality, microbiological condition and physicochemical characteristics. Weight loss and pH evolution were similar in vacuum and air packaging. Cheeses packaged in 100% CO2showed the greatest weight losses and lower pH values. CO2reduced proteolysis and lipolysis during storage in all conditions studied. Fat acidity and NPN/TN values were slightly higher in vacuum than in CO2, but lower than in air. Modified atmosphere packaging presented an extended shelf life. Those containing CO2reduced the growth rate of mesophiles, psychrotrophs, Enterobacteriaceae and coliforms, which was lower when the CO2concentration increased. The lowest microbial counts were at 100% CO2while vacuum conditions presented microbial counts only slightly lower than the controls. Salmonella spp.,Staphylococcus aureus and Listeria spp. were not found in any of the samples. Faecal coliforms, moulds and yeasts were not detected under CO2atmospheres or in vacuum. After 7 days of storage, the sensory characteristics of the control cheeses were unacceptable in all the parameters studied. However, the overall score for cheeses stored in 40% and 50% CO2did not change substantially, retaining a reasonable acceptability until the end of the storage period. The 100% CO2atmosphere had a very negative effect on sensory quality. With regard to Cameros cheese, packaging in 50%CO2/50%N2and 40%CO2/60%N2are the most effective for extending shelf life and retaining good sensory characteristics.  相似文献

Our goal was to obtain > 21 days red color stability for carbon monoxide (CO)-treated beef steaks in vacuum packaging (VP). In preliminary tests, pretreatment for 24 h in a 5% CO modified atmosphere package (MAP) was needed to maintain redness after re-packaging in VP. Pressure pretreatment with 5% CO for 2 h developed redness, but was impractical for large-scale application. Color stability and microbial load were then compared after treatment of steaks in 5% CO-MAP for 24 h, then VP; 100% CO-MAP for 1 h, then VP; steaks and ground beef in 0.5% CO-MAP; and steaks and ground beef in polyvinyl chloride (PVC) wrap. Steaks remained red for 5, 6, 8 and <1-week storage at 2°C, respectively. Steaks microbial load exceeded spoilage levels (>10(6)cfu/cm(2)) at 5, 6, 7 and <2-weeks, respectively. Thus, extended color stability in VP was achieved by pretreatment with 5% CO for 24 h or 100% CO for 1 h.  相似文献

The effects of L- or D-lactate on internal cooked colour development of steaks packaged in high-oxygen (80% O2/20% CO2) modified atmosphere packaging (MAP) was investigated. Ten USDA Select beef strip loins were divided individually into 4 equal-width sections, and one of four treatments (control, 0.3% sodium tripolyphosphate, 2.5% L-lactate + 0.3% sodium tripolyphosphate, and 2.5% D-lactate + 0.3% sodium tripolyphosphate) was assigned randomly to the loin sections. Loin sections were injected to approximately 10% of their raw weight. Steaks packaged in high-oxygen MAP were stored in the dark at 1 °C for 10 days. Instrumental internal colour of raw and cooked steaks (70 °C), total reducing activity (TRA), NADH concentration, and percent myoglobin denaturation (PMD) were measured. Cooked steaks enhanced with 2.5% L-lactate/phosphate maintained higher a*/b* ratios, lower hue values, higher TRA and NADH concentration, and lower PMD than the control and D-lactate-injected steaks, whereas enhancement with 2.5% D-lactate did not affect cooked colour, TRA, NADH, or PMD. Thus, inclusion of an L-lactate/alkaline phosphate blend increased the reducing activity of muscle tissues by replenishing NADH and subsequently decreased the thermal denaturation of myoglobin by maintaining the reduced state of myoglobin in the high-oxygen package.  相似文献

High oxygen modified atmosphere packaging (MAP) is currently used by the industry to maintain an attractive color in fresh meat. However, it can also promote lipid oxidation and sensory changes. The aim of this study was to compare the quality of beef steaks displayed under different levels of oxygen. For that purpose, meat was stored with 50%, 60%, and 80% of oxygen for 4 and 8 d at retail conditions. A control treatment with steaks vacuum packaged, without exposure to retail display, was included, and color, lipid oxidation, organoleptic characteristics, and aroma compounds were analyzed. Steaks displayed under high oxygen MAP with 50% of oxygen showed the lowest color stability, according to hue values. Higher oxygen levels did not necessarily correspond with higher rancidity levels in the raw meat. Thiobarbituric Acid Reacting Substances (TBARS) values were higher than 2.2 mg malonaldehyde (MDA)/kg muscle in all the samples displayed for 8 d at retail conditions. These samples exhibited the highest intensities of rancid and the least intense beef odors and flavors. The ketones: 2,3-butanedione, 2-octanone, 2,3-pentanedione, 2-heptanone, 4-methyl-2-pentanone, and the aldehydes: pentanal, 2-methyl-butanal, and 2-furfurylthiol, 1-octen-3-ol and 2-methylpropyl-acetate, were proposed as candidates for the aroma differences between the cooked beef steaks stored under vacuum and high oxygen packs. PRACTICAL APPLICATION: High oxygen modified atmosphere packaging (MAP) is used to increase shelf-life and color at the retail level. However, oxygen deteriorates faster some quality attributes, being a contributor to lipid oxidation that could be perceived at consumption. This study attempts to find the best gas composition in a MAP in order to maintain the color, minimizing the oxidation. Aromatically relevant chemicals have been analyzed by gas olfactometry-gas chromatography as a key to measure beef oxidation after display.  相似文献

The influence on Yersinia enterocolitica counts of a gradual increase of carbon dioxide concentrations (percentage by volume in air) during packaging and storage of ground pork meat artificially contaminated with this pathogen was evaluated. Ground meat was packaged under customary conditions using modified atmospheres with various carbon dioxide percentages (0, 30, 50, 70, and 100% CO2 by volume; for atmospheres of less than 100% CO2, the rest of the gas was O2). The packs were stored at 2 degrees C for 12 days. During the entire storage time, counts of Y. enterocolitica were determined by the spread plate method for direct plate counts (DPCs). Microbiological shelf life of the stored ground pork also was assessed by total mesophilic aerobic bacterial plate counts (APCs). Y. enterocolitica counts were not significantly different (P > or = 0.05) in the ground pork packaged under the various CO2-enriched atmospheres. The growth of Y. enterocolitica was nearly entirely inhibited in all tested modified atmospheres containing the protective CO2. However, in ground pork packaged with 100% oxygen, there was a significant decrease (P < or = 0.05) in the DPC for Y. enterocolitica from 4.30 log CFU/g (day 0) to 3.09 log CFU/g at the end of the storage time (day 12). The decrease was presumably due to the marked increase in APC seen only in those packages stored under 100% O2. Packaging with high CO2 concentrations had significant inhibitory effect (P < or = 0.05) on the growth of mesophilic aerobic bacteria.  相似文献
