一、绪言近年来,国内外深层发酵法制醋在技术上有了很大发展,除选用优良菌株外,发酵罐型式的定型是整个发酵生产中的关键。从国内情况而言,不外乎三种型式:机械通风发酵罐、外循环带升式发酵罐和自吸式发酵罐。前两种发酵罐均需空气压缩机和一整套空气净化系统,动力消耗比较大;而自吸式发酵罐则不需上述设备,由罐内转子自行吸入空气,溶解氧效果得到加强,工艺先进,质量稳定,发酵周期短,劳动生产率高,厂房面积小,完全省去辅料,便于生产实现机械化、连续化、管道化和自动化。我厂自吸式发酵罐制醋的正式投产,填补了河南省在制醋行业中的空白。 相似文献

自吸式发酵罐在制醋工业中于60年代后期由西德开始应用,并在69年首先取得了美国专利。自1972年起,石家庄、济南、天津、上海等地先后研究并采用液体深层发酵法制醋工艺。1977年上海醋厂首先采用自吸式发酵罐应用于食醋生产。这是我国近代制酷工业向工业化生产发展的一个重要标志,使我国制醋工业跨入了世界较先进行列。该工艺的特点是发酵周期短、劳动生产率高、厂房占地面积少、原料利用率高,可以节约大量辅料和不用任何填充料,解决了工业化生产中的一些重大问题。为了进一步完善和提高我国液体深层发酵制醋 相似文献

通过对单宁酶固态发酵工艺分析,结合传统厚层通风制曲的结构,设计了移动式填充床固态发酵反应器。利用设计的固态发酵反应器以发酵茶梗为基质中试化生产单宁酶,探究10、15、20 m3/h通风量对单宁酶中试化发酵效果。结果表明:在通风量为10、15、20 m3/h的条件下,发酵达到的最大酶活分别为8.21、8.08、8.41 U·gds-1,达到最大酶活的时间分别96、120、144 h。利用设计的填充床固态发酵反应器以茶梗为基质发酵生产单宁酶,不仅原料来源广泛、价格低廉,还能有效提高单宁酶酶活。 相似文献

Developing a sustainable continuous fermentation reactor is one of the most ambitious tasks in brewing science, but it could bring great benefits regarding volumetric productivity to modern breweries. Immobilized cell technology is often applied to reach the large densities of yeast needed in a continuous fermentation process. However, the financial cost associated with the use of carriers for yeast immobilization is one of the major drawbacks in the technology. This work suggests that yeast flocculation could address biomass immobilization in a gas‐lift reactor for the continuous primary fermentation of beer. Nearly 25 g dry wt L?1 of yeast was flocculated in the reactor before interruption of the fermentation. Stable sugar consumption and ethanol production (4.5% alcohol by volume) from an 11°P wort was evidenced. Maloalcoholic fermentation (MAF) of grape must by Schizosaccharomyces pombe immobilised in calcium‐alginate double‐layer beads (ProMalic®) was studied in Erlenmeyer flasks and in a total recycle fixed‐bed reactor operating in batch mode. The reaction is pseudo‐first order with respect to l ‐malic acid and under similar conditions deacidification is faster in the recycle reactor. This was attributed to mass transfer limitations which were confirmed in the recycle reactor by studying the influence of yeast load on the rate of MAF. Mass transfer limitations are also responsible for the lower activation energy of fermentation with the immobilised yeast (67 ± 9 kJ mol?1) in comparison with the free cells (126 ± 19 kJ mol?1). Alcoholic fermentation and MAF were performed simultaneously, both in the recycle reactor and in the industrial trials, confirming the efficacy of immobilised S. pombe to reduce grape must acidity without interfering with the main fermentation. Altogether, the present results are useful for the scale‐up of a recycle reactor to process large volumes of grape must. 相似文献

Comparison of thermophilic anaerobic digestion characteristics between single-phase and two-phase systems for kitchen garbage treatment 总被引:1,自引:0,他引:1
Lab-scale single-phase and two-phase thermophilic methane fermentation systems (SPS and TPS, respectively) were operated and fed with artificial kitchen waste. In both SPS and TPS, the highest methane recovery ratio of 90%, in terms of chemical oxygen demand by dichromate (CODcr), was observed at an organic loading rate (OLR) of 15 gCODcr/(l.d). The ratio of particle CODcr remaining to total CODcr in the influent was 0.1 and the ratio of NH(4)-N concentration to the input total nitrogen concentration was 0.5 in both SPS and TPS. However, the propionate concentration in the SPS reactor fluctuated largely and was 2 gCODcr/l higher than that in TPS, indicating less stable digestion. Regardless, efficient kitchen waste degradation can be accomplished in both SPS and TPS at an OLR of <20 gCODcr/(l.d), even though TPS may be more stable and easier to maintain. Bacillus coagulans predominated with an occupied ratio of approximately 90% in the acid fermentation reactor of TPS, and then a richer microbial community with a higher Shannon index value was maintained in the methane fermentation reactor of TPS than in the SPS reactor. 相似文献
