The microbial, physical, sensory and nutritional quality of boiled (vacuum and conventional), steamed, pressure cooked, sous vide, microwaved (sous vide and conventional), deep-fried (vacuum and conventional) and grilled kailan-hybrid broccoli (Bimi®) after cooking was studied. Sous vide microwaving greatly decreased microbial counts, achieving very low psychrophilic and enterobacteria counts (1.1 and 0.2 log CFU g?1, respectively). Vacuum boiling and sous vide reduced the stem broccoli firmness by approximately 54–58 %, reaching a pleasant and moderate softening. Sous vide, grilling and steaming induced the lowest stem colour changes. Generally, all cooking treatments showed a good overall sensory quality. The total phenolic content (1,148 mg CAE kg?1 fw) usually increased after cooking, with microwave and grilled treatments registering the highest increases up to 2-fold. Commonly, the total antioxidant capacity (296.6 mg AAE kg?1 fw) increased after cooking by sous vide, microwaving and frying treatments registering the highest increments, by approximately 3.6-fold. Generally, the cooking process reduced the initial vitamin C content, with vacuum and conventional boiling showing the lowest and highest losses with 27 and 62 %, respectively, while vacuum deep frying preserved the initial value (1,737 mg kg?1 fw). As a main conclusion, the studied grilling and vacuum-based cooking treatments resulted in better microbial quality, colour, stem firmness and sensory quality than the remaining ones. This maintained or even improved the total antioxidant content of the new kailan-hybrid broccoli studied.  相似文献

The aim was to study spoilage during the refrigerated storage of cooked pork loin processed by the sous vide method. Samples were packaged under vacuum into polyamide-polypropylene pouches, cooked at an oven temperature/time of 70 °C/12 h, chilled at 3 °C and stored at 2 °C for 0, 5 or 10 weeks. Microbial (psychrotrophs, lactic acid bacteria, Enterobacteriaceae, moulds and yeasts), physical–chemical (pH, water activity, TBARS, acidity, L*a*b* colour, texture profile analysis and shear force) and sensory (appearance, odour, flavour, texture and acceptance) parameters were determined. The results showed that sensory spoilage preceded microbiological spoilage of sous vide pork loin. Counts bellow 1 log cfu/g of psychrotrophs, anaerobic psychrotrophs, Enterobacteriaceae and lactic acid bacteria were detected in any control week, while moderate counts (2–3 log cfu/g) of moulds and yeasts were found. Minor changes in water activity, lipid oxidation, CIELab colour, hardness, cohesiveness or gumminess were associated with spoilage of pork loin, only decreases of lactic acid, springiness and shear force were observed. The pork loin was unacceptable after 10 weeks. This loss of acceptance was mainly due to the deterioration of meaty flavour and odour, although the loss of appearance, juiciness and firmness also contributed. Moderate warmed-over and rancidity were detected. The sensory analysis was the most effective method for determining the shelf life of the sous vide pork-based dishes.  相似文献

BACKGROUND: Retention of nutrients in vegetables during blanching/freezing, cooking and warm‐holding is crucial in the preparation of both standard and therapeutic diets. In the present study, conventional cooking in water, and cooking by pouch technology (boil‐in‐bag, sous vide) were compared in their ability to retain vitamin C, total phenolics and antioxidative activity (DPPH and FRAP) in industrially blanched/frozen tip‐cut green beans and swede rods. RESULTS: After conventional cooking, 50.4% total ascorbic acid, 76.7% total phenolics, 55.7% DPPH and 59.0% FRAP were recovered in the drained beans. After boil‐in‐bag cooking, significantly (P < 0.05) higher recoveries were obtained, i.e. 80.5% total ascorbic acid, 89.2% total phenolics, 94.8% DPPH and 92.9% FRAP. Recoveries after sous vide cooking were comparable to those of boil‐in‐bag cooking. By conventional cooking, 13.5–42.8% of the nutrients leaked into the cooking water; by sous vide about 10% leaked to the exuded liquid, while no leakage occurred by boil‐in‐bag cooking. Warm‐holding beans after cooking reduced recoveries in all components. Recoveries in swede rods were comparable but overall slightly lower. CONCLUSION: Industrially blanched/frozen vegetables should preferably be cooked by pouch technology, rather than conventional cooking in water. Including cooking water or exuded liquid into the final dish will increase the level of nutrients in a meal. Warm‐holding of vegetables after cooking should be avoided. In this study different simulated meal-service systems were compared with respect to vitamin B1, B2 and B6 retention, and cooking yield in pork roasts. Initially the roasts were cooked traditionally or sous vide. No significant differences were observed between cooking methods. Further processing included warm-holding, conventional cook-chill, modified atmosphere packaging (MAP) and sous vide. Compared to retention in the freshly cooked samples, vitamin B2 retention remained unaffected, irrespective of the meal-service system used and storage period. As regards vitamin B1 and vitamin B6, retentions declined significantly, by 14% and 21% respectively during 3 h of warm-holding, and by 11% and 19% respectively after 1 day of storage and subsequent reheating (cook-chill, MAP and sous vide). Vitamin B1 retention declined by an extra 4% during storage for 14 days (sous vide) (not significant) It is concluded that conventional and enhanced meal-service systems produce roasts with similar quality attributes. Adjustment factors of 15% and 20% for vitamin B1 and B6 respectively are suggested, in addition to the losses caused by the initial heat treatment.  相似文献

Single strand conformation polymorphism (SSCP) of an amplicon (148 bp) obtained by polymerase chain reaction (PCR) of the mitochondrial cytochrom b gene used to identify tuna species was studied with other fish and animal species. Single-stranded DNA (ssDNA) patterns of two to four strong bands were obtained with blue ling, carp, haddock, mackerel, mackerel shark, saithe, catfish, Alaska pollack, and skipjack which, however, differed from those obtained with tuna samples. Other fish species resulted in weak (cod, spined dogfish) or no ssDNA bands (Atlantic salmon, halibut, herring, pike-perch, plaice, redfish, sprat, trout). Samples from animals other than fish resulted in strong ssDNA bands differing from those of tuna and from each other (crayfish; cattle, European rabbit, fallow deer, hare, horse, red deer, roe deer; goose, turkey), in bands differing from tuna but not from each other (domestic goat/sheep, domestic pig/wild boar), or in weak bands (octopus, shrimp; chicken, duck). Increasing the stringency of PCR caused a more pronounced difference between strong and weak ssDNA bands. Inter-laboratory reproducibility of the method was good.  相似文献

Inactivation rates of a cocktail of Salmonella spp. in sous vide cooked beef exposed to varied ‘come-up’ heating times of zero (control), and 1–3 h from 10 °C to the processing temperature of 58 °C were examined. The observed survival curves, determined for 58 °C, displayed a slight ‘shoulder’ followed by a non-zero asymptotic D-values. Comparisons of the survival curves confirm that the rate of heating can substantially influence the heat resistance of Salmonella spp. While there was no significant difference between the estimated asymptotic D-values for the control and 1-h come-up heating time survival curves, the estimated D-values were significantly larger for the 2- and 3-h come-up heating times curves. The estimated averages of the asymptotic D-values for the control and 1-h come-up time survival curves are approximately 5.7 min; for the 2-h come-up time curves, 7 min; and for the 3-h come-up time curves, 8 min. These findings could have substantial practical importance to food processors in sous vide cooked beef that are processed by slow heating rate/long come-up times and low heating temperatures.  相似文献

Sous vide technology, which implies vacuum packaging, pasteurization and storage at a chill temperature, also implies a challenge to obtain a balance between an extended shelf life and microbiological safety of the product with a fresh‐like appearance and a high nutritional value. The aim of this work was to determine the effect of fat content of two fish species (salmon and trout) on survival of mesophilic, psychrotrophic, Enterobacteriaceae, Micrococaceae and anaerobes during sous vide cooking and their control during chilled storage for 3, 20 and 45 days. Proximate and fatty acid composition was also determined using a traditional cooking method. Analyses were undertaken comparatively with the same culinary technique for sous vide and traditionally cooked fish. Higher fat levels in all products resulted in fewer microbial reductions. In order to establish adequate pasteurization (temperature/time) combinations for the assurance of microbial quality and shelf life of sous vide processed fish, fat content and fatty acid composition of food should be considered.  相似文献

The influences of three different culinary methods: cooking, sous vide and grilling were studied with regards to quality and oral processing characteristics of pork ham. Besides instrumental analysis of color and textural properties of pork ham, sensory panel with 12 trained panelists participated in temporal dominance of sensations, oral processing analysis, boluses collection, particle size distribution analysis, and saliva incorporation. The results revealed that number of chews, mastication time and saliva incorporation are correlated with textural properties and cooking losses. In‐mouth sensation was intertwined with juiciness, fibrousness and firmness depending on the culinary methods. Cooked pork ham showed highest results for hardness and cooking loss. Firmness and fibrousness were dominant sensory attributes. Sous‐vide results show that firmness and juiciness dominated during the first third of consumption time. This corresponds with textural values for lowest values for hardness and cooking, number of chews and total exposure time. Sous‐vide also resulted in lower values for number of chews and total exposure time associated with oral processing.  相似文献

The goal of this study was to evaluate the effects of modified atmosphere in packing sous vide of pirarucu in tucupi and shrimp sauce under refrigeration. Three treatments were carried out vacuum at 98%, 60%CO2/40%N2, and 70%CO2/30%N2. The composition of CO2 and N2 was monitored along with evaluation of pH, aw, water retention capacity, acidity, texture, N-TVB and TBARS, color, mesophilic and psychotropic anaerobes, presence of Salmonella spp, sulphite-reducing Clostridia, counts of coagulase-positive Staphylococci, coliforms at 45 °C and sensorial analysis. All results were compared through ANOVA, Tukey's test, Principal Component Analysis and Multiple Factor Analysis. We observed a trend towards the reduction of CO2 in packages while O2 has increased by the end of storage. The microbiological results were within the established limits by law during the entire period. The shelf life of sous vide stored could be defined by N-TVB, TBARS, b* and C*, general acceptance, texture and flavor in 49 days of storage.Industrial relevanceThe development of sous vide with freshwater fish is an alternative for a value-added product to be supplied to market niches. Employing the sous vide technique on fish yields a product with better color, taste, texture, and nutrient retention than the traditional cooking processes, which makes it an attractive alternative for its consumption. This study aimed to prepare sous vide using captive pirarucu, tucupi and shrimp and to analyze the microbiological, physicochemical and sensory quality parameters during refrigerated in atmosphere modified packaging storage. The results of this study establish the product's shelf life (49 days) and contribute to defining processing and storage conditions for fish sous vide.  相似文献

The glucosinolates, sulforaphane, vitamin C and lutein content after several industrial cooking methods on the new kailan-hybrid broccoli and their changes during storage for 45 days at 4 °C were studied. Boiling and sous vide induced the highest glucosinolate loss (80%), while low pressure (LP) steaming, microwaving (MW) and sous vide-MW showed the lowest (40%) loss. Glucoraphanin was the most thermostable glucosinolate. Throughout their commercial life, microwaved and grilled samples showed a decrease in total glucosinolates. Generally, myrosinase activity was completely inhibited after cooking with undetected sulforaphane contents. The initial total vitamin C dropped by up to 58% after cooking and progressively decreased during storage, with sous vide-MW (92%) and microwaving (21%) showing the highest and lowest decrements, respectively. LP steaming and microwaving were the best industrial cooking methods for maintaining the glucosinolate and vitamin C contents, and enhancing up to 7.5-fold the initial lutein content.  相似文献

This study aimed to assess the effect of sous vide cooking on the total and resistant starch content, color, and shear force in three potato cultivars (Agria, Agata, and Carrera). Potato strips were also cooked by three common treatments (boiling, frying, and microwaving) to evaluate the differences between the methods. According to principal component analysis (PCA), sous vide-processed cv. Agria and Agata potato strips were grouped with boiled samples, in contrast, cv. Carrera sous vide samples were grouped with microwaved samples. Higher water losses were associated with microwaved potatoes due to the diffusion of water inside the tuber. In addition, a significant decrease in shear force was obtained after microwaving and sous vide cooking (p < 0.05) irrespective of the treatment strength. The three cultivars became less bright, and the intensity of the color decreased; however, variations in the cook value (C 100, min) between treatments did not affect the lightness and hue angle. Regardless of the initial value of resistant starch and the intensity of the cooking process, all of the cultivars reached a final content of less than 5%. From our results, in-pack sterilization may be considered for application in the food industry as a technology that has a similar impact to conventional cooking treatments used on potato products.  相似文献

Sterol contents (desmosterol, cholesterol, stigmasterol, and sitosterol) of 36 fresh and cooked seafood and four freshwater fish species were investigated by high performance liquid chromatography (HPLC) method. Cholesterol and sitosterol were main sterols in seafood and freshwater fish species. Raw shellfish and molluscs contained cholesterol above 18.92 mg/100 g fish muscle, while the cholesterol content of marine fish ranged from 6.5 to 78.40 mg/100 g fish muscle. The cooking process resulted in significant effects on the sterol contents of seafood and freshwater species (p < 0.05). A remarkable increase in sitosterol (more than 3–4 fold compared to raw fish) was recorded for some fish species cooked in the oven. The highest desmosterol content was observed for fried fish, whereas the frying process resulted in a significant loss in cholesterol and sitosterol contents of marine fish (p < 0.05). The impacts of cooking methods on sterol content of seafood and their form varied depending on fish species and the cooking method used.  相似文献

PCR–RFLP analysis was applied to the identification of two closely related flatfish species: sole (Solea solea) and Greenland halibut (Reinhardtius hippoglossoides). Amplification of DNA isolated from fish muscle samples was carried out using a set of primers flanking a region of 321 base pairs (bp) from the mitochondrial 12S rRNA gene. Restriction endonuclease analysis based on sequence data of this DNA fragment revealed the presence of polymorphic sites for AciI and MwoI endonucleases. The restriction profiles obtained by agarose gel electrophoresis when amplicons were cut with AciI and MwoI enzymes allowed the unequivocal identification of sole and Greenland halibut species. © 2000 Society of Chemical Industry  相似文献

Sous vide is increasingly used to process convenience foods including ready-meals as it is reputed to give superior quality because of the mild process and the absence of oxygen in the pack. The potential for temperature abuse is greater for sous vide ready-meals than for sous vide catered items as the distribution and retailing chain for the former is usually longer. Freezing sous vide foods is, therefore, a potentially safer alternative to sous vide processed foods followed by chilling. The objective of the current study was to investigate production of sous vide frozen sliced (discs) carrots, with similar quality to sous vide chilled product. Sensory trials were used to determine the acceptable shear texture range (1.0–2.8 kN) for steamed carrots and this was the target texture in the processing trials. A Barriquand Steriflow retort was used for sous vide processing and the optimized conditions using carrot discs were: low temperature blanch (50 °C/30 min; firms product); blanch (90 °C/3 min; inactivates enzymes); sous vide cook (90 °C to core P9010 values > 4 min and < 6 min); blast freeze (? 35 °C/2 h); and store (? 25 °C). Carrot discs prepared from untreated raw carrots had a firmer texture than those prepared from either blanched or blanched and frozen material. Freezing post-sous vide cooking softened texture in comparison with chilling, but freezing rate (nitrogen; blast; cabinet methods) and frozen storage (9 months) had a minimal effect on product texture and quality. Scanning electron microscopy showed no significant structural differences between sous vide frozen and chilled carrots of similar shear values. Paired comparison sensory testing of sous vide frozen and chilled sliced carrots indicated a significant preference for the latter at the 20-day storage date.Industrial relevance: The trials dealt with the effects of freezing on the quality of sous vide processed carrots. This is of relevance to companies who wish to produce texturally acceptable sous vide frozen or chilled components as part of ready-meals.  相似文献

Cook‐vide (CV, vacuum boiling) and sous‐vide (SV, cooking in a vacuum‐sealed pouch) have been applied to cook purple‐flesh potatoes. Response surface methodology (RSM) sets up the work conditions of temperatures (78–92 °C) and times (16–44 min). Textural parameters, colour and anthocyanins have been measured in cooked samples, and microstructure of cooked tissues was observed with cryo‐SEM technique. CV and SV provided similar hardness (P > 0.05), while SV treatments provided samples more adhesive and cohesive than CV ones (P ≤ 0.05). Micrographs of cooked samples showed rounder cells in cook‐vide samples and higher swelling than in sous‐vide ones. SV treatment avoided the leaching into the water of anthocyanins (chromophore) retaining more of them in potatoes (P ≤ 0.05), as a consequence of which total colour difference was lower in SV samples compared with CV ones (P ≤ 0.05). Particularly, CV samples were lighter (higher values of L*) and less reddish (lower values of +a*) than SV ones (P ≤ 0.05).  相似文献

The aroma properties of fish broths prepared from 16 fish species (10 saltwater, three freshwater, two anadromous and one brackish water species) were described quantitatively by reference to 10 sensory attributes. Principal component analysis (PCA) and cluster analysis of sensory attributes classified the fish into four groups. Group 1, characterised by a strong ‘green’ odour, comprised all three freshwater species (loach, pond smelt and carp), two saltwater whitefish species (snapper and conger) and eel. Group 2 included migratory coastal species (sardine, banded blue‐sprat and mackerel) and was distinguished by strong ‘fish oil’ and ‘grilled fish’ notes. Group 3 consisted of swordfish, sablefish and salmon, which exhibited a strong ‘fried chicken’ note. Group 4 included flounder, cod, tuna and goby, which were scored high for ‘cooked fish’, ‘roasted soy sauce’, ‘canned tuna’ and ‘sweet’ aromas. Partial least squares regression (PLSR) models derived from selected influential peaks in the gas chromatograms of the volatile components in the broths for each attribute were highly predictive (R2 ≥ 0.936). In this paper, physico‐chemical and structural properties of cut and cooked purple‐flesh potato, green bean pods, and carrots have been studied. Three different cooking methods have been applied: traditional cooking (boiling water at 100 °C), cook‐vide (at 80 and 90 °C) and sous‐vide (at 80 °C and 90 °C). Similar firmness was obtained in potato applying the same cooking time using traditional cooking (100 °C), and cook‐vide and sous‐vide at 90 °C, while in green beans and carrots the application of the sous‐vide (90 °C) required longer cooking times than cook‐vide (90 °C) and traditional cooking (100 °C). Losses in anthocyanins (for purple‐flesh potatoes) and ascorbic acid (for green beans) were higher applying traditional cooking. β‐Carotene extraction increased in carrots with traditional cooking and cook‐vide (P < 0.05). Cryo‐SEM micrographs suggested higher swelling pressure of starch in potatoes cells cooked in contact with water, such as traditional cooking and cook‐vide. Traditional cooking was the most aggressive treatment in green beans because the secondary walls were reduced compared with sous‐vide and cook‐vide. Sous‐vide preserved organelles in the carrot cells, which could explain the lower extraction of β‐carotene compared with cook‐vide and traditional cooking. Sous‐vide cooking of purple‐flesh potato is recommended to maintain its high anthocyanin content. Traditional boiling could be recommended for carrots because increase β‐carotenes availability. For green beans, cook‐vide, and sous‐vide provided products with higher ascorbic acid content.  相似文献

The influence of microwave cooking and traditional cooking methods such as baking, grilling and frying on the nutritional composition of eels (Anguilla anguilla) was studied. All methods reduced moisture and increased the protein and fat content. Although the potassium and sodium content of fish cooked by different methods decreased significantly (P = 0.000), the calcium and magnesium content increased. The zinc content of the fish was not affected by cooking. The manganese and iron content significantly increased only in fried fish. The copper content was increased by grilling and microwave cooking. The proportion of saturated fatty acids and monounsaturated fatty acids in cooked fish decreased. Omega‐3 polyunsaturated fatty acids were increased by all cooking methods. The grilling and microwave‐cooking methods were the most suitable considering the n3/n6 ratio and eicosapentaenoic acid levels. The increase in the docosahexaenoic acid level of fried fish enhanced its nutritional value.  相似文献

The effect of sous vide (SV) pretreatment on the physicochemical (texture, water holding capacity (WHC) and protein modifications) and sensory (appearance, odour, flavour and overall acceptability) properties of sturgeon fish burgers cooked by four common methods (steaming, baking, microwaving and frying) were investigated. The texture analysis results showed that SV combined with transglutaminase could make the structure of cooked fish burgers denser and increase the springiness (ranging from 3.60 to 4.97 mm) and chewiness (ranging from 4.50 to 9.57 N), especially in microwave-cooked samples. In terms of sensory quality, on the one hand, SV could effectively inhibit off-flavours from oxidation and prevents evaporative losses of flavour volatiles (nitrogen oxides, organic sulphur and aromatic compounds) during cooking. On the other hand, the overall acceptability of microwave-cooked sample pretreated with SV was higher than that of other cooking methods, especially compared with steaming (P < 0.05). The above results indicate that it is feasible to obtain common cooked fish burgers with improved physicochemical and good sensory properties using SV pretreatment.  相似文献

BACKGROUND: Predatory fish tend to accumulate high levels of mercury (Hg). Food safety assessment of these fish has been carried out on the raw product. However, the evaluation of the risk from Hg concentrations in raw fish might be modified if cooking and bioaccessibility (the contaminant fraction that solubilises from its matrix during gastrointestinal digestion and becomes available for intestinal absorption) were taken into account. Data on Hg bioaccessibility in raw predatory fish sold in Spain are scarce and no research on Hg bioaccessibility in cooked fish is available. The aim of the present study was to evaluate Hg bioaccessibility in various kinds of cooked predatory fish sold in Spain to estimate their health risk. RESULTS: Both Hg and bioaccessible Hg concentrations were analysed in raw and cooked fish (swordfish, tope shark, bonito and tuna). There were no changes in Hg concentrations during cooking. However, Hg bioaccessibility decreased significantly after cooking (42 ± 26% in raw fish and 26 ± 16% in cooked fish), thus reducing in swordfish and tope shark the Hg concentration to which the human organism would be exposed. CONCLUSION: In future, cooking and bioaccessibility should be considered in risk assessment of Hg concentrations in predatory fish. Copyright © 2011 Society of Chemical Industry  相似文献
