Oxidation of sunflower oil during storage   总被引:1,自引:0,他引:1  
Effects of temperature and oxygen concentration on oxidative deterioration during storage of crude sunflower oils, obtained by pressing and solvent extraction, were studied. Oxidation was monitored through several analytical and chromatographic methods that determine chemical and physical changes or analyze specific oxidation compounds at different stages of the process: peroxide value, p-anisidine value, free fatty acids, weight gain, total content and distribution of polar compounds, and composition of fatty acids. Extracted oil showed a higher oxidative stability than pressed oil. Oxidative deterioration was strongly dependent on temperature, oxygen availability, and the ratio of exposed surface to sample volume. A kinetic model of two series reactions was developed to represent oxidation rate in terms of peroxide value, the reaction rate constants and their temperature dependence being evaluated by nonlinear regression. Finally, good correlations between the percentage of polar compounds or oxidized triglyceride monomers and the peroxide value were found.  相似文献

The formation of estolides was detected during the studies on dimerization of meadowfoam oil fatty acids. By adjusting the reaction conditions, it was possible to produce monoestolides with little dimer or trimer formations. Estolides have potential use in lubricant, cosmetic and ink formulations and in plasticizers. This paper reports the conditions for production of estolides from mixed meadow-foam fatty acids, commercial oleic acid, high-oleic sun-flower oil fatty acids,cis-5,cis-13-docosadienoic acid, petroselinic acid and linoleic acid.  相似文献

The metathesis of the mixture of fatty monoesters derived from sunflower oil was examined using the WCL6-(CH3)4Sn catalytic system. After distillation of the reactant mixture, a total conversion of 81% and a 17% yield of diesters was achieved using a 1∶1∶30 mole ratio of catalyst:cocatalyst:ester. The rate of reaction of the ethyl linoleate was double that of the oleate.  相似文献

Frying of frozen foods has become popular because it considerably reduces cooking time. Polymers and cyclic fatty acid monomers (CFAM) formed during frying are potentially toxic and therefore their production should be minimized. Twenty discontinuous fryings of different frozen foods were carried out over ten consecutive days, in sunflower oil (SO) and in high‐oleic acid sunflower oil (HOSO), by adding fresh oil after each frying to bring the volume of the fryer oil back to 3 L. CFAM methyl ester derivates were hydrogenated, isolated, concentrated and quantified by HPLC using a reverse‐phase column, followed by gas chromatography. After 20 fryings, significantly higher contents of polar material, polymers and CFAM (all p <0.001) were found in SO than in HOSO. Bicyclic compound formation was four times higher in SO (p <0.001). The fat from the fried potatoes presented a polymer content very similar to that of their corresponding oils. The 100‐g rations of the SO‐fried potatoes from the 20th frying supply 49 or 15%, respectively, more polymers and CFAM and 1 mg more bicyclic fatty acids than the 100‐g rations of HOSO‐fried potatoes. Because digestion and absorption of polar material, polymers and CFAM occur, the data clearly show the advantageousness and advisability of frying with HOSO rather than SO.  相似文献

The effects of air-drying temperature and storage time on several characteristics of crude sunflower oil were evaluated in terms of FFA and PV. Long storage affected oil content to a greater extent than air-drying temperature. FFA and PV varied between 0.53 and 1.22% and between 10.7 and 23.3. meq O2/kg, respectively, when samples of uniform initial moisture content (approximately 28%) were dried at various temperatures between 25 and 90°C to approximately 7% moisture content, stored for 8 mon, and then analyzed. Both oil quality characteristics increased exponentially with air-drying temperature (T) and linearly with storage time (t). Mathematical functions of the form A·exp(B·T)+C·t (where A, B, and C are parameters adjusted from experimental data) most closely predicted the experimental loss of quality of sunflower oil in terms of FFA and PV with variations in T and t. Statistical analysis showed SE of the estimated parameters of 0.08 and 1.19 and coefficients of determination, R 2, of 0.922 and 0.939 for FFA and PV, respectively, which were significant at 95% confidence. High-oleic seeds from a similar experiment were used to validate the proposed equation. The results of applying the mathematical function proposed above showed a reasonable ability to predict the experimental values with SE of 0.037 and 0.808 and R 2 of 0.983 and 0.972 for FFA and PV, respectively, which were significant at 95% confidence. Plots of residuals showed random distribution. The results obtained suggested that the equation proposed could be used as a quality-loss model in sunflower drying simulations.  相似文献

The supercritical oil extraction from oleaginous seeds (sunflower and rapeseeds) is presented here through experimental and modelling results. The experimental setup allows an accurate following of the mass of the oil extracted and to derive the experimental influences of pressure, temperature and supercritical CO2 flowrate on the extraction curves. These parameters are very sensitive and highlight the necessity of precise optimisation of experimental conditions. In order to complete the behaviour of supercritical fluids extraction, an improved modelling is proposed. The modelling basic equations are based on others modelling published previously. In this work, the determination of several parameters comes from correlations and the other constants are fitted with all the experimental results. Thus the modelling is more representative and predictive as other ones. The modelling results present a good agreement with the experimental results, and hence it can be used for the dimensioning of some extraction autoclaves.  相似文献

Methyl esters of alkali-isomerized safflower oil fatty acids after elaidinization with sulfur were treated with styrene in the presence of hydroquinone, with or without solvents. A combination of column chromatography and gas liquid chromatography techniques was employed for the estimation of the methyl esters of unreacted fatty acids, Diels-Alder adduct and polymers in the reaction products. Maximum yield of the Diels-Alder adduct (26.6%) was obtained when the elaidinized methyl esters of the fatty acids were treated with 1.5 moles of styrene per mole of linoleic acid in safflower oil fatty acids at 200–210 C for 6 hr. The methyl ester of the adduct was isolated in about 90% purity from the reaction product by vacuum distillation followed by solvent fractionation. The butyl ester of the adduct and the epoxy derivative of the methyl ester adduct were prepared and characterized.  相似文献

The generally accepted methods for the synthesis of triglycerides are unsatisfactory when they are applied to highly unsaturated systems such as those present in fish oil. The methods either fail to g ive sufficiently high yields, or they are prohibitive in cost when applied to large scale production. Of the numerous reactions studied, the most feasible was the zinc-catalyzed esterification of fish oil fatty acids with glycerol. Thinlayer chromatography (TLC) showed that this reaction gave yields of 75–78% triglycerides. Gas-liquid chromatography (GLC) demonstrated the composition of the triglycerides was essentially the same as that of the original fatty acids.  相似文献

Methyl sterculate was rearranged by use of 0.5% of rhodium catalyst to isomeric conjugated diene fatty acid methyl esters containing both methylene-and methyl-branched isomers. The rearanged products were hydrogenated directly to saturated, methyl-substituted, branched-chain fatty acid methyl esters with the methyl substituent at one of the positions formerly occupied by the cyclopropenoid ring. The crude branched-chain fatty acids from these esters were purified by recrystallization from a mixed solvent of ethanol and water (80:20, v/v) and flash distillation; the product contained about 90% of branched-chain fatty acids (C19:80%, C18:10%). Esters of the branched-chain fatty acid were prepared with 2-ethylhexyl alcohol or trimethylolpropane, and the characteristic properties of these esters were investigated. The branched-chain fatty esters appear to have potential utility in lubricants; other uses may be possible. Presented at the AOCS meeting in New Orleans, May 1981.  相似文献

About 1949, with the advent of effective fractional distillation, the tall oil industry came of age, and tall oil fatty acids (TOFA), generally any product containing 90% or more fatty acids and 10% or less of rosin, have grown in annual volume ever since, until they amount to 398.8 million pounds annual production in the U.S. in 1978. Crude tall oil is a byproduct of the Kraft process for producing wood pulp from pine wood. Crude tall oil is about 50% fatty acids and 40% rosin acids, the remainder unsaps and residues; actually, a national average recovery of about 1–2% of tall oil is obtained from wood. On a pulp basis, each ton of pulp affords 140–220 pounds black liquor soaps, which yields 70–110 pounds crude tall oil, yielding 30–50 pounds of TOFA. Separative and upgrading technology involves: (a) recovery of the tall oil; (b) acid refining; (c) fractionation of tall oil; and occasionally (d) conversion to derivatives. TOFA of good quality and color of Gardner 2 corresponds to above 97% fatty acids with the composition of 1.6% palmitic & stearic acid, 49.3% oleic acid, 45.1% linoleic acid, 1.1% miscellaneous acids, 1.2% rosin acids, and 1.7% unsaponifiables.  相似文献

High-oleic, high-palmitic sunflower oil (HOHPSO) is a seed oil from a new mutant sunflower line characterized by increased levels of both oleic acid (>50%) and palmitic acid (>25%) and a high oxidative stability. In this study, its performance at frying temperature was compared with that of palm olein in thermoxidative assays (4 h, 180°C). Also, industrial discontinuous frying of almonds, peanuts, and sunflower seeds (200 kg of each product) was carried out to define both the performance of HOHPSO and the main changes undergone by the foods. The evaluation of polar compounds and their distribution in the main groups, i.e., polymers, oxidized monomers, and DAG, as well as changes in tocopherols and oxidative stability, demonstrated the excellent behavior of HOHPSO during thermoxidation and frying. The increase in polar compounds and the loss of tocopherols and stability were much lower for HOHPSO than for palm olein under identical heating conditions. Only 1.3% polar compounds were formed during industrial discontiuous frying for 4 h and the oil stability increased, probably due to the formation of antioxidant compounds. As for the foods, the FA composition of the surface oil was clearly different from that corresponding to the internal oil, the former denoting the presence of HOHPSO in high concentration, particularly in fried sunflower seeds. Changes in oil stability of the foods attributable to the frying process clearly demonstrate the interest in using a highly stable oil such as HOHPSO to protect the surface against oxidation during food storage.  相似文献

The kinetics of the esterification of free fatty acids (FFA) in sunflower oil with methanol in the presence of sulphuric acid at concentrations of 5 and 10 wt% relative to free acids as catalyst and methanol/oleic acid mole ratios from 10:1 to 80:1 was studied. The experimental results were found to fit a first-order kinetic law for the forward reaction and a second-order one for the reverse reaction.The influence of temperature on the kinetic constants was determined by fitting the results to the Arrhenius equation. The energy of activation for the forward reaction decreased with increasing catalyst concentration from 50 745 to 44 559 J/mol.Based on the experimental results, a methanol/oleic acid mole ratio of 60:1, a catalyst (sulphuric acid) concentration of 5 wt% and a temperature of 60 °C provided a final acid value for the oil lower than 1 mg KOH/g oil within 120 min. This is a widely endorsed limit for efficient separation of glycerin and biodiesel during production of the latter.  相似文献

A modified low-temperature solvent crystallization process was employed for the enrichment of polyunsaturated fatty acids (PUFA) in borage and linseed oil fatty acids. The effects of solvent, operation temperature, and solvent to free fatty acid (FFA) ratio on the concentration of PUFA were investigated. The best results were achieved when a mixture of 30% acetonitrile and 70% acetone was used as the solvent. With an operation temperature of −80°C and a solvent to FFA ratio of 30 mL/g, γ-linolenic acid (GLA) in FFA of saponified borage oil can be raised from 23.4 to 88.9% with a yield of 62.0%. At a yield of 24.9%, α-linolenic acid in linseed oil can be increased from 55.0 to 85.7%. The results of this work are comparable to the best results available in the literature.  相似文献

‘Omega‐6 vegetable oils’ are a small but important group of vegetable oils used widely in the food, neutraceutical, cosmetic and pharmaceutical industries for their linoleic acid (18:2 n‐6) and more importantly gamma linolenic acid (18:3 n‐6) content. These omega‐6 fatty acids have numerous health benefits recognized worldwide. With linoleic acid being readily available from many dietary sources, one wonders why there is a need to extract the oil from speciality oilseeds, however those that suffer with many of the conditions that omega‐6 fatty acids are said to be beneficial for are frequently advised to take extra supplements of these fatty acids. Due to their wide use as a nutraceutical, omega‐6 fatty acids are in high demand, causing a niche market for extraction of these oils from speciality seeds.  相似文献

A methodological study was conducted to test the potential of near-infrared reflectance spectroscopy (NIRS) to estimate the oil content and fatty acid composition of sunflower seeds. A set of 387 intact-seed samples, each from a single plant, were scanned by NIRS, and 120 of them were selected and further scanned as husked seed, meal, and oil. All samples were analyzed for oil content (nuclear magnetic resonance) and fatty acid composition (gas chromatography), and calibration equations for oil content and individual fatty acids (C16:0, C16:1, C18:0, C18:1, and C18:2) were developed for intact seed, husked seed, meal, and oil. For intact seed, the performance of the calibration equations was evaluated through both cross- and external validation, while cross-validation was used in the rest. The results showed that NIRS is a reliable and accurate technique to estimate these traits in sunflower oil (validation r 2 ranged from 0.97 to 0.99), meal (r 2 from 0.92 to 0.98), and husked seeds (r 2 from 0.90 to 0.97). According to these results, there is no need to grind the seeds to scan the meal; similarly accurate results are obtained by analyzing husked seeds. The analysis of intact seeds was less accurate (r 2 from 0.76 to 0.85), although it is reliable enough to use for pre-screening purposes to identify variants with significantly different fatty acid compositions from standard phenotypes. Screening of intact sunflower seeds by NIRS represents a rapid, simple, and cost-effective alternative that may be of great utility for users who need to analyze a large number of samples.  相似文献

Summary The methyl esters of menhaden oil have been separated into three fractions by low temperature crystallization; saturated esters, monoethylenic esters, and polyethylenic esters, the contents of the fractions being roughly 30.9, 15.1 and 54.0%, respectively. The saturated fraction was contaminated with about 5% of the ME esters. The ME fraction, in turn, contained small amounts of methyl myristate and PE esters; further, the recovery of ME esters by the procedure was incomplete. The saturated and ME fractions were separately distilled, and observations were made on the nature and amounts of the acids in the resulting fractions. The low temperature crystallization technic was shown to be useful in the separation of the complex mixtures of esters found in fish oils. Summary Analysis of the fractions obtained as a result of distillation of the methyl esters of the hydrogenated acids of menhaden oil show the amounts indicated (wt. %): C14, 6.9; C16, 30.4; C18, 26.8; C20, 17.5; C22, 10.8; C24, 4.0; C26, 1.2; above C26, 2.4.
