In the present study the combined effect of gamma irradiation (2 and 4 kGy) and modified atmosphere packaging (MAP) (30% CO2/70% N2 and 70% CO2/30% N2) on shelf life extension of fresh chicken meat stored under refrigeration was investigated. The study was based on microbiological (TVC, Pseudomonas spp., Lactic Acid Bacteria, Yeasts, Brochothrix thermosphacta, Enterobacteriaceae), physicochemical (pH, TBA, color) and sensory (odor, taste) changes occurring in chicken samples. Microbial populations were reduced by 1–5 log cfu/g for a given sampling day depending on the specific treatment. The effect was more pronounced in the case of the combination of MAP (70% CO2/30% N2) and the higher irradiation dose of 4 kGy. Of the chemical indicators of spoilage, TBA values for all treatments remained lower than 1 mg malondialdehyde (MDA)/kg meat throughout the 25 day storage period. pH values varied between 6.4 (day 0) and 5.9 (day 25). The values of the color parameters L*, a* and b* were not considerably affected by MAP. Irradiation resulted in a small increase of the parameter a*. Irradiation had a greater effect in extending the shelf life of chicken as compared to MAP. Sensory evaluation showed that the combination of irradiation at 4 kGy and MAP (70% CO2/30% N2) resulted in the highest shelf-life extension by 12 days compared to the air packaged samples.  相似文献

The combined effect of chitosan and oregano essential oil dip on shelf life of whole red porgy (Pagrus pagrus) stored in ice under refrigeration was investigated for a period up to 20 days. Quality attributes monitored during storage included microbiological (total viable counts, Pseudomonas spp., H2S-producing bacteria including Shewanella putrefaciens, Enterobacteriaceae, and lactic acid bacteria), physicochemical (pH, thiobarbituric acid reactive substances (TBARS), total volatile basic nitrogen (TVB-N), trimethylamine (TMA), and color), and sensory (odor and taste) parameters. Untreated red porgy was used as the control sample. Regarding the chemical indicators of spoilage, TBARS values for all treatments were equal to or less than 0.4 mg MDA?kg?1 throughout the 20-day storage period. pH values varied between 6.6 (day 0) and 6.9 (day 14) for the various treatments. TVB-N values increased gradually during storage reaching the proposed acceptability limit (30 mg N?100 g?1) on day 13 for control samples, days 15–16 for samples treated with oregano essential oil, day 20 for samples treated with chitosan, and >20 days for samples treated with chitosan plus oregano essential oil. Likewise, TMA values reached the proposed limit (5–6 mg N?100 g?1) for red porgy on days 11–12, 14–15, 19–20, and >20, respectively. Finally, sensory evaluation data were in general agreement with microbiological data indicating a product shelf life of ca. 11 days for control samples, 16 days for samples treated with oregano essential oil, 18 days for samples treated with chitosan, and 19–20 days for samples treated with chitosan plus oregano essential oil.  相似文献

The combined effect of chitosan (1%) and an oxygen absorber on shelf life extension of fresh ground meat stored at 4 °C was investigated. Parameters monitored over a 10‐day storage period were Total Viable Count (TVC), Pseudomonas spp., Brochothrix thermosphacta, lactic acid bacteria, Enterobacteriaceae, pH, thiobarbituric acid (TBA), colour, odour and taste. Microbial populations were reduced by 0.4–2.0 log CFU g?1 for a given sampling day using either chitosan or the oxygen absorber, with the more pronounced effect being achieved by the combination of two. Thiobarbituric acid values for all samples increased during storage with the exception of samples treated with both chitosan and the oxygen absorber in which Thiobarbituric acid values decreased. Changes in pH values with time/different treatments were statistically insignificant. Colour parameters were affected by most treatments. On the basis of microbiological and sensory evaluation, a shelf life extension of 5–6 days was obtained for samples treated with the chitosan and the oxygen absorber combination.  相似文献

Combined effects of modified atmosphere packaging (MAP) and refrigeration (7±1 °C) were studied on shelf-life extension of ready-to-bake pizza. The gas atmospheres in the present study included four variables, namely viz. MAP1, air (control); MAP 2, 100% CO2; MAP 3, 100% N2; and MAP 4, 50%CO2/50%N2. The effect of MAP variables was observed for moisture content, water activity, pH, titratable acidity, free fatty acids, peroxide value, thiobarbituric acid, tyrosine content, lycopene content and L* a* b* values. The results indicated that MAP with 100% CO2 significantly inhibited the lipid oxidation, reduced proteolysis and prevented total acidity (less decrease in pH). Also, the MAP (MAP 2) showed preservative effect on colour indices and shelf life higher than other treatments. Sensory analysis showed that the control samples had a limited shelf life of 5 days while a significant increase in shelf life of 15 days (300% increase) was achieved under modified atmospheres for unbaked pizza samples.  相似文献

The effect of reduced oxygen atmosphere and sodium acetate treatment on the microbial quality of seer fish (Scomberomorus commerson) steaks was determined during chilled storage (1–2 °C). The O2 absorber reduced the oxygen content in the pack to less than 0.01% corresponding to 99.96% reduction within 24 h. The use of O2 absorber with sodium acetate dip treatment (2% w/v) extended the sensory shelf life up to 25 days compared to only 12 days for control air packs and 20 days for untreated samples with O2 absorber. A prominent lag phase was observed for many bacterium studied, particularly for the sodium acetate treated samples with O2 absorber. On the day of sensory rejection, both the total mesophilic and psychrotrophic counts reached 7.7–8.1 and 7.1–7.9 log cfu/g, respectively. The sodium acetate treatment and reduced O2 atmosphere affected the type of major spoilers. In air packed samples, H2S-producers predominated followed by Brochothrix thermosphacta, Pseudomonas spp., where as in the untreated samples with O2 absorber, H2S-producers predominated the microbial flora followed by Lactobacillus spp. For treated samples with O2 absorber, B. thermosphacta formed the major micro-flora followed by Lactobacillus spp. The use of O2 absorber inhibited the growth of Pseudomonas spp., and total Enterobacteriaceae.  相似文献

In the present study the combined effect of an O2 absorber and a citrus extract (0.1 and 0.2 ml/100 g), on shelf life extension of fresh ground chicken stored at 4 °C was investigated. Microbiological changes [Total viable count (TVC), Pseudomonads, Lactic acid bacteria (LAB), Enterobacteriaceae, and Clostridium spp.)], physicochemical changes (pH, total volatile nitrogen (TVB-N), and colour) and sensory changes (colour, odour and taste) were monitored as a function of treatment and storage time (14 days). Aerobically packaged ground chicken meat stored at 4 °C was taken as the control sample. On day 6 of storage TVC was reduced by 0.5, 1.0 and 1.5 log cfu/g by the citrus extract (0.2 ml/100 g), the O2 absorber and the combination of the O2 absorber plus citrus extract (0.2 ml/100 g), respectively (p < 0.05). Initial pH (6.38) showed an increase (6.73) or decrease (5.83) depending on specific treatment. TVB-N ranged between 42.5 and 57.5 mg/kg at the time of sensory rejection. Colour parameters remained unaffected in samples containing the O2 absorber and/or citrus extract. A 4–5 days product shelf life extension using the combination of O2 absorber and citrus extract (0.1 ml/100 g) as compared to control samples was achieved.  相似文献

The use of 0.02 or 0.05% chitosan is proposed to reduce from 450 to 150 mg kg 1 the SO2 required to preserve pork burgers aerobically packed and stored at 2 °C for up to 21 days under retail display conditions. The effects of chitosan and/or sulfite addition and the storage time were determined in fresh (color deterioration, lipid oxidation, pH, total viable counts, Escherichia coli and coliforms, Salmonella, appearance and odor) and cooked (appearance, odor, flavor and texture) burgers. The addition of either 0.02 or 0.05% chitosan was not detected by sensory analysis, and extended the shelf life of low-SO2 burgers from 7 to 14 days. Chitosan enhanced the preservative effects of sulfite at a low dose, acting on the main causes of meat deterioration (bacterial spoilage, color stability and lipid oxidation), and provided good sensory properties to fresh and cooked pork burgers.  相似文献

In the present study the combined effect of an O2 absorber and oregano essential oil (0.4% v/w) on shelf life extension of rainbow trout fillets (Onchorynchus mykiss) stored under refrigeration (4 °C) was investigated. The study was based on microbiological [TVC, Pseudomonas spp., Lactic Acid Bacteria, H2S-producing bacteria including Shewanella putrefaciens, Enterobacteriaceae and Clostridium spp.), physicochemical (pH, PV, TBA, TVBN and Drip loss) and sensory (odor, taste) changes occurring in the product as a function of treatment and storage time. Aerobically-packaged rainbow trout fillets stored at 4 °C were taken as control samples. Results showed that TVC exceeded 7 log cfu/g on day 4 of storage for control samples, day 7–8 for samples containing oregano oil, day 9 for samples containing the O2 absorber and day 12–13 for samples containing the O2 absorber and oregano oil. Pseudomonas spp., Enterobacteriaceae and LAB were only partially inhibited by the O2 absorber and/or the oregano oil. In all cases the inhibition effect was more pronounced when the combination of O2 absorber with oregano essential oil was used. pH decreased from an initial value of 6.65–6.09 and subsequently increased to 6.86 due to formation of protein decomposition products. % Drip loss ranged between 7% and 11–12% at the end of the product shelf life. PV values ranged between 11.4 and 27.0 meq O2/kg oil while malondialdehyde (MDA) ranged between 9.6 and 24.5 mg/kg. TVBN ranged between 10.6 and 54.6 mg/kg at the time of sensory rejection. Sensory shelf life was 4 days for the control samples, 7–8 days for samples containing oregano oil, 13–14 days for samples containing the O2 absorber and 17 days for samples containing the O2 absorber plus oregano oil.  相似文献

The effects of two doses of electron-beam irradiation (1.5 kGy and 2.5 kGy) on the microbial populations (total mesophilic aerobes, Pseudomonas genus, Enterobacteriaceae family, molds and yeasts) and sensory characteristics of Tuber aestivum packaged under modified atmospheres were monitored immediately after treatment, and weekly during 42 days of storage at 4 °C. Treatment with 1.5 and 2.5 kGy reduced the pseudomonads populations by 4.3 and 5.5 logs, respectively. Enterobacteriaceae counts decreased by 5.4 logs with the 1.5 kGy dose and counts below the detection limit (<1.0 log cfu/g) were obtained with the 2.5 kGy dose. Lactic acid bacteria and yeasts were less affected by the ionizing radiation treatments and they became the dominant microbial populations throughout storage with microbial counts up to 7.1 log cfu/g. The carbon dioxide levels inside the packages containing irradiated truffles were lower than those of the non-irradiated ones, suggesting a decrease in the respiration rate of the treated ascocarps. The treatments with 1.5 and 2.5 kGy e-beam did not negatively affect the sensory characteristics of truffles, but a visible superficial yeast growth was detected in truffles irradiated with 1.5 kGy at the end of their shelf life (day 28). Treatment with 2.5 kGy e-beam has prolonged the shelf life to 42 days, compared with 21 days for the untreated samples.  相似文献

In the present study the combined effect of an O2 absorber and oregano essential oil (0.1% v/w) on shelf life extension of Greek cod roe paste (tarama salad) stored under refrigeration (4 °C) was investigated. The study was based on microbiological [Total viable count (TVC), Lactic Acid Bacteria (LAB), Enterobacteriaceae, H2S-producing, yeast and molds and Clostridium spp.), physicochemical (pH, fatty acid composition, thiobarbituric acid (TBA), and color) and sensory (color, odor, and taste) changes occurring in the product as a function of treatment and storage time. Aerobically packaged tarama salad stored at 4 °C was taken as the control sample. Results showed that TVC exceeded 7 log cfu/g on day 12–13 of storage for control samples and day 31–32 for samples containing oregano oil. Samples containing either the O2 absorber or the O2 absorber plus oregano oil never reached 7 log cfu/g during the 60 day storage period. LAB were only partially inhibited by the oregano oil and/or the O2 absorber. Yeasts and molds were totally inhibited by the O2 absorber. Enterobacteriaceae populations were below the method detection limit (2 log cfu/g) H2S-producing bacteria were the dominant spoilage microorganisms. Clostridum spp. was absent in 25 g sample. pH decreased from an initial value of 4.36 to 3.03 depending on specific treatment. Color parameters L and b increased and a decreased in control samples as well as in samples containing oregano oil. Color parameters remained unaffected in samples containing the O2 absorber. TBA expressed as malondialdehyde (MDA) values increased from 1.5 mg/kg to 3.4, 3.2 and 2.9 mg/kg for samples containing oregano oil, the O2 absorber and O2 absorber plus oregano oil at the point of sensory rejection, respectively. Saturated fatty acids (SFA) increased during storage with a respective decrease in monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA) both in control samples and samples containing oregano oil. Fatty acid composition remained unaffected in all samples containing the O2 absorber. Sensory shelf life was 24 days for the control samples, 32 days for samples containing oregano oil, 60 days for samples containing the O2 absorber and at least 60 days for samples containing the O2 absorber plus oregano oil.

Industrial relevance

Oxygen absorbers as well as plant essential oils are considered natural means of preservation and may substantially extend the shelf life of foodstuffs while maintaining desirable sensory attributes (taste, odor and color).  相似文献

The present study investigated the effect of active and modified packaging as well as packaging material oxygen permeability on quality retention of dark chocolate with hazelnuts. Dark chocolate was packaged in: a) polyethylene terephthalate//low density polyethylene (PET//LDPE), and b) polyethylene terephthalate coated with SiOx//low density polyethylene (PET-SiOx//LDPE). Samples were packaged either under, vacuum or N2 or with an oxygen absorber and stored in the dark at 20 °C for a period of 12 months. “Commercial” control samples for comparison purposes consisted of chocolate packaged in aluminum foil in air while “model” control samples used for sensory evaluation consisted of chocolate packaged in glass jars and stored at ? 18 °C. Quality parameters monitored were: peroxide value, hexanal content, color, fatty acid composition and volatile compounds. Of the sensory attributes color, texture, odor and taste were evaluated. PV ranged between 0.80 for fresh dark chocolate with hazelnuts and 6.51 meq O2/kg chocolate fat for commercially packaged samples after 12 months of storage. Respective values for hexanal were 0.53 and 7.56 mg/kg. % Saturated fatty acids (SFA) increased with a parallel decrease in monounsaturated fatty acids (MFA) and polyunsaturated fatty acids (PUFA) after 12 months of storage mainly in least protected samples (commercial package). Likewise, after 12 months of storage an increase in concentration of aldehydes, ketones, alcohols and alkanes (p < 0.05) with a parallel decrease in pyrazines where observed especially in case of least protected products after 6 and 12 months of storage. In general after 12 months of storage chocolate showed whitening of the surface resulting to an increase in L* and a* values (p < 0.05) and a decrease in b* value. Dark chocolate with hazelnuts retained acceptable quality for ca. 8 months in commercial packages. For samples packaged in PET//LDPE irrespective of storage atmosphere the shelf life was 8 to 9 months and for samples packaged in PET-SiOx//LDPE irrespective of storage atmosphere the shelf life was 11 months. Finally for samples packaged with an oxygen absorber irrespective of packaging material the shelf life was at least 12 months.Industrial relevanceChocolate packaged with an oxygen absorber in a barrier packaging material will maintain its aroma, taste and nutritional quality substantially longer than other packaging methods.  相似文献

ABSTRACT

The aim of this work was to study the effects of nisin (30 ppm) and modified atmosphere packaging (MAP) on the chemical, microbial and sensory properties of emulsion‐type sausage stored under two different atmospheres (%CO2/%N2/%CO/%O2): 39.5/60/0.5/0 and 39.5/20/0.5/40. The samples were stored at 3 ± 1C for 42 days. Microbial count, values of pH, CIE L*, a* and b* color parameters, lipid oxidation, production of nitrosomyoglobin and sensory properties were assessed throughout the storage period. The data showed that nisin was able to reduce the growth of mesophilic, psychrotrophic and lactic acid bacteria. In addition, the MAP did not show any significant effects on microbial growth. However, free O2 MAP, in combination with nisin, reduced the growth of yeast and mold. MAP could produce a stabilized red color and minimize the oxidative reactions in the samples. Packaging conditions had no significant effect on pH and sensory properties.

PRACTICAL APPLICATIONS

The results of this study confirmed that nisin can reduce the growth rate of lactic acid bacteria, psychrotrophic and mesophilic bacteria in emulsion‐type sausage, and free O2 MAP, in combination with nisin, inhibits the growth of yeast and mold. The use of 30 ppm nisin, in combination with MAP containing 39.5% CO2 and 0.5% CO gases, can lead to better quality preservation of the emulsion‐type sausages stored at low temperature and can extend their shelf life.  相似文献

Modified atmosphere packaging (MAP) is increasingly popular for meat, but raw, chilled pork in vacuum or anoxic environments has a purple color. The retail shelf‐life of pork chops dipped in 500 ppm ascorbic acid, 250 ppm citric acid, or no acid dip and stored at 1 °C before simulated retail display in MAP with gas exchange or air‐permeable packaging after vacuum pouch storage was determined. The 80% N2:20% CO2 in MAP was exchanged with 80% O2:20% CO2, and chops were removed from vacuum packages and overwrapped with permeable film (VP‐PVC) on the 7th day before simulated retail display at 4 °C. Shelf‐life traits were determined at 1, 7, 8, 10, 12, and 14 d postpackaging. The pH values changed with time, but returned to post‐dipped, prepackaged levels at the end of simulated retail storage. Weight loss of chops increased (P < 0.05) in VP‐PVC compared with MAP. The a* values increased (P < 0.05) and L* and b* values decreased during simulated retail display, with higher L*, a*, and b* color values for chops in MAP than VP‐PVC. Log numbers of psychrotrophic microorganisms were higher (P < 0.05) on VP‐PVC samples than for chops in MAP on days 12 and 14. Psychrotrophic counts on ascorbic acid‐treated samples were decreased compared with citric acid or no dipping on pork during simulated retail display. Pork chops in MAP with gas exchange had lighter and redder color, increased weight retention, decreased psychrotrophic counts, and increased lipid oxidation compared with conventional vacuum and overwrap packaging systems.  相似文献

The effects of chitosan coating on quality and shelf life of silver carp during frozen storage were investigated. Fish samples were treated with aqueous solution of 2% chitosan, and then stored at −3 °C for 30 days. The control and the treated fish samples were analyzed periodically for microbiological (total viable count), chemical (pH, TBA, TVB-N, K-value), and sensory characteristics. The results indicated that the effect of chitosan coating on fish samples was to retain their good quality characteristics and extend the shelf life during frozen storage, which was supported by the results of microbiological, chemical, and sensory evaluation analyses.  相似文献

The objective of this study was to develop a multilayered edible coating with antimicrobial agent to extend the shelf life of fresh-cut cantaloupe stored at 4 °C. Three different sets of experiments were designed to test the effect of different concentrations of chitosan (0.5, 1, 2 g/100 g), pectin (0.5, 1, 2 g/100 g), and encapsulated trans-cinnamaldehyde (1, 2, 3 g/100 g), on the quality of fresh-cut cantaloupe. The first set (chitosan concentrations) provided the optimum concentration of chitosan based on preferences by the panelists. The second set (pectin concentrations) produced an acceptable coating that maintained shelf life. The third set (antimicrobial concentrations) helped establish the optimum concentration of trans-cinnamaldehyde in the coating. Changes in fruits texture, color, moisture, acidity, and pH were monitored. Sensory testing was carried out to support the objective quality data and microbiological analysis helped verify the antimicrobial effectiveness of trans-cinnamaldehyde. Uncoated fresh-cut cantaloupes stored at 4 °C served as controls. To test for the antimicrobial activity of chitosan alone, a second set of controls consisted of samples coated only with chitosan.  相似文献

In this work, the effect of active coating on the shelf life of low-moisture Mozzarella cheese packaged in air and modified atmosphere (MAP) was studied. The active coating was based on sodium alginate (2%, wt/vol) and potassium sorbate (1%, wt/vol). The MAP was made up of 75% CO2 and 25% N2 (MAP1), 25% CO2 and 75% N2 (MAP2), or 50% CO2 and 50% N2 (MAP3). The product quality decay was assessed by monitoring microbiological and sensory changes during storage at 4, 8, and 14°C. Results showed that the combination of active coating and MAP was able to improve the preservation of low-moisture Mozzarella cheese. Specifically, the shelf life increased up to 160 d for samples stored at 4°C, and 40 and 11 d for those at 8 and 14°C, respectively. A faster quality decay for untreated samples packaged in air was observed. In particular, the Pseudomonas spp. growth and the appearance of molds were responsible for product unacceptability. The combination of active coating and MAP represents a strategic solution to prolong the shelf life of low-moisture Mozzarella cheese and to ensure the safety of the product under thermal abuse conditions.  相似文献

The objective of this study was to investigate how color stability of beef is affected by vacuum skin packaging (VSP) compared with vacuum packaging (VP) and high-oxygen modified atmosphere packaging (MAP; 80% O2 and 20% CO2). Longissimus lumborum muscles were aged in vacuum for 7 days and then cut into 2-cm-thick slices and repacked using VSP, VP and MAP for another 7 days. Color stability was measured during the next 5 days in air and samples for α-tocopherol and NADH analyses were obtained at the beginning and end of aerobic storage. Color stability, α-tocopherol and NADH of steaks were affected by packaging methods and storage time in air (P < 0.05). Higher a* value was obtained in VSP on day 5 compared with VP. Steaks packed in VSP had better color stability than in VP and their color was similar to MAP at the end (day 5) of storage.  相似文献

The current study was aimed to study the shelf life of beef meat at refrigeration storage using novel chitosan derivative (Ch‐D). Chitosan was modified with antimicrobial monomethyl fumaric acid (MFA). The chemical structure of the resulting material was characterized by FT‐IR and HR‐XRD. The results confirmed the successful synthesis of conjugate sample. For the shelf life study, following lots were used: control (distilled water), chitosan 0.5%, Ch‐D 0.5%. The samples were kept at 4 °C for 16 days and analyzed at 4‐day intervals. Ch‐D treatment significantly reduced the total viable counts, enterobacteriaceae, lactic acid bacteria, psychrotrophic bacteria, and yeasts–moulds when compared with the chitosan and control during refrigeration storage. The peroxide value (PV) for Ch‐D was 0.19 ± 0.04 meq O2 kg?1 fat and chitosan was 0.21 ± 0.07 meq O2 kg?1 fat and showed no significant difference (< 0.05) at the end of the storage. Thiobarbituric acid reactive substance (TBARs) value for Ch‐D was 0.48 ± 0.02 mg MDA kg?1 and chitosan was 0.57 ± 0.09 mg MDA kg?1, while the carbonyl contents for Ch‐D was 3.16 ± 0.23 nm  mg?1 protein and chitosan was 3.11 ± 0.16 nm  mg?1 protein at 16 days of storage. Values for Ch‐D and chitosan treatments were significantly lower (< 0.05) for all the quality attributes as compared with the control throughout storage. At the end of storage, Ch‐D treatment showed a significant increase (< 0.05) in lightness (L* = 41.54 ± 0.09) and yellowness (b* = 2.23 ± 0.04). The redness for control was high (a* = 6.12 ± 0.09) as compared with the treated samples. Based primarily on microbial counts, Ch‐D treatment extended the shelf life of beef meat by about 8 days, maintaining acceptable quality attributes.  相似文献

We examined the influence of chitosan on lipid oxidation and color stability of ground beef stored in different modified atmosphere packaging (MAP) systems. Ground beef patties with chitosan (1%) or without chitosan (control) were packaged either in high-oxygen MAP (HIOX; 80% O2 + 20% CO2), carbon monoxide MAP (CO; 0.4% CO + 19.6% CO2 + 80% N2), vacuum (VP), or aerobic packaging (PVC) and stored at 1 °C. Chitosan increased (P < 0.05) redness of patties stored in PVC and CO, whereas it had no effect (P > 0.05) in HIOX. Chitosan patties demonstrated lower (P < 0.05) lipid oxidation than controls in all packaging. Control patties in PVC and HIOX exhibited greater (P < 0.05) lipid oxidation than those in VP and CO, whereas chitosan patties in different packaging systems were not different (P > 0.05) from each other. Our findings suggested that antioxidant effects of chitosan on ground beef are packaging-specific.  相似文献

Morcela de Arroz (MA) is a ready‐to‐eat blood and rice cooked sausage produced with pork, blood, rice, and seasonings, stuffed in natural casing and cooked above 90 °C/30 min. It is commercialized whole, not packed, with a restricted shelf life (1 wk/0 to 5 °C). The objective of this work was to establish sliced MA shelf life considering both the behavior of L. monocytogenes through a microbiological challenge test (MCT) and the consumer acceptability of MA stored: vacuum packed (VP), modified atmosphere packed (MAP: 80% CO2/20% N2), and aerobic packed (AP). The MCT was conducted inoculating ±3 log CFU/g of L. monocytogenes cell suspension on the MA slices. Packaged samples were stored at 3 ± 1 °C and 7 ± 1 °C until 20 d. At 3 ± 1 °C, L. monocytogenes behavior was not affected by packaging or storage time. At 7 ± 1 °C, the pathogen increased nearly 1 log CFU/g in the first 4 d. L. monocytogenes populations in AP were higher (P < 0.05) than in MAP. The pathogen may grow to hazardous levels in the 1st days if a temperature abuse occurs. Considering the acceptability by the consumers, the shelf life of MA stored at 3 ± 1 °C was 4.4 d for AP, 8.1 d for VP, and 10.4 d for MAP. The sensory shelf life established based on sensory spoilage is shorter than the shelf life to maintain the population of L. monocytogenes in safe levels.  相似文献
