The chess program “Cray Blitz” is the current World Computer Chess Champion and North American Computer Chess Champion (ACM). The program has also played in human chess tournaments and is a chess master. At speed chess, where its ability to perform very accurate analysis is particularly important, it has maintained a performance rating of over 2600 for the past two years. This indicates that at speed chess, the program is one of the top players, electronic or human, in the world. It is currently running on a Cray XMP-48 computer system and has been designed around the parallelism that the XMP architecture provides.  相似文献

In recent years, some beneficial effects on health of melanins that are formed as a result of polyphenol oxidase action have been discovered. However, it is also known that similar polymers have a detrimental effect on proteases activity. Thus, the aim of this work was to assay whether melanins from two different substrates act as carboxypeptidase A and carboxypeptidase B inhibitors. It was found that melanin synthesized from l-tyrosine decreases both the apparent affinity between carboxypeptidases and their substrates and the maximum reaction rate. Consequently, it is possible to conclude that these melanins inhibit CPA and CPB activity in a mixed way. On the contrary, no inhibition was found in the case of melanin synthesized from 4-methylcatechol.  相似文献

Traditionally, it was assumed that non-Saccharomyces (NS) yeasts could only survive in the early stages of alcoholic fermentations. However, recent studies applying culture-independent methods have shown that NS populations persist throughout the fermentation process. The aim of the present work was to analyze and quantify Saccharomyces cerevisiae (Sc) and Hanseniaspora guilliermondii (Hg) populations during alcoholic fermentations by plating and culture-independent methods, such as fluorescence in situ hybridization (FISH) and quantitative PCR (QPCR). Species-specific FISH probes labeled with fluorescein (FITC) were used to directly hybridize Sc and Hg cells from single and mixed cultures that were enumerated by epifluorescence microscopy and flow cytometry. Static and agitated fermentations were performed in synthetic grape juice and cell density as well as sugar consumption and ethanol production were determined throughout fermentations. Cell density values obtained by FISH and QPCR revealed the presence of high populations (107–108 cells/ml) of Sc and Hg throughout fermentations. Plate counts of both species did not show significant differences with culture-independent results in pure cultures. However, during mixed fermentations Hg lost its culturability after 4–6 days, while Sc remained culturable (about 108 cells/ml) throughout the entire fermentation (up to 10 days). The rRNA content of cells during mixed fermentations was also analyzed by flow cytometry in combination with FISH probes. The fluorescence intensity conferred by the species-specific FISH probes was considerably lower for Hg than for Sc. Moreover, the rRNA content of Hg cells, conversely to Sc cells, remained almost unchanged after boiling, which showed that rRNA stability is species-dependent.  相似文献

Table olives are one of the main fermented vegetables in the world. Olives can be processed as treated or natural. Both have to be fermented but treated green olives have to undergo an alkaline treatment before they are placed in brine to start their fermentation. It has been generally established that lactic acid bacteria (LAB) are responsible for the fermentation of treated olives. However, LAB and yeasts compete for the fermentation of natural olives. Yeasts play a minor role in some cases, contributing to the flavour and aroma of table olives and in LAB development.  相似文献

Grape (Kyoho) skin, used to retard lipid oxidation in edible oil foods, was investigated to reduce lipid oxidation in an oil-in-water (O/W) emulsion during 20 day of storage. The antioxidant efficacy of Kyoho skin extracts in O/W emulsions was determined by the measurement of secondary oxidation products. Moreover, principal component analysis (PCA) was conducted to determine similarities between emulsions treated with or without Kyoho skin extracts and standards. The data revealed that Kyoho skin extracts exhibited >93% inhibition and reported a similar p-anisidine (4.30–20.71) and TBARS (6.08–11.15 mg MDA L−1) values over the standards during 20 day of storage. PCA (PCs 1 (51.83%) and 2 (18.85%)) demonstrated a similarity in the contribution of Kyoho skin extracts over the synthetic antioxidants in O/W emulsion. Overall, these findings highlighted the possibility of using Kyoho skin extracts as natural antioxidants to decrease oxidative rancidity in foods.  相似文献

The aim of this paper, in which clogging occurs on the filter at a constant vacuum pressure and constant pectin weight, is to find the optimal values of the variables, temperature and time, to know the best conditions to reduce this clogging by enzymatic hydrolysis. Moreover, different properties of the compression of the cake in the filter were determined such as the filtering medium total resistance (RfT), bed porosity (ε) and the cake‐specific resistance (α) at different times and temperatures. The filter area was 0.142 m2, and the value of the mass fraction of solids in the filtered suspension (S) was 0.12. Scanning electron microsopy (SEM) analyses were performed. The results showed that the compressive stress corresponding to the cake improves the flow rate in the filtration flux at the optimal temperature and time for the process, where the enzyme reaches its highest activity. The test results of this study can be applied in different system of filters during cross‐flow filtration.  相似文献
