Abstract Large deformation rheological properties of a bread dough sheet were compared with baking quality of dough from the same sheet. Both rheological test and baking test could differentiate between dough made from a strong and a weak flour. Apparent viscosity at large deformation appeared to be the best predictor of the minimum sheeting requirement to obtain high loaf volume. This is similar to Mechanical Dough Development (MDD) mixing of dough where the mixing curve (apparent viscosity) is used to determine mixing requirement. Baking tests showed that loaf quality (volume and crumb texture) for bread made with sheeting was different from bread made with MDD mixing, particularly when dough was developed beyond the minimum sheeting requirement. These differences indicate that dough development (or over‐development) by sheeting may occur through a different mechanism than by MDD mixing. 相似文献

This study aimed to extend the shelf life of non‐thermally stabilised olive‐based paste by adding different concentrations (0.2, 0.5, 1.0 g kg?1) of a natural Allium spp. extract and/or by using different packaging atmospheres (MAP1, 75% Ar‐23% CO2‐2% H2; MAP2, 70% N2‐30% CO2) during refrigerated storage. Higher amounts of the natural extract gave the highest level of microbial inhibition, increased hardness, a greater release of aldehydes, esters, and ketones, and a better colour preservation when used with MAP1. The natural extract and MAP, either alone or in combination, produced no sensory defects (except for the control in MAP2), but a greater loss of typical olive flavour. The addition of the natural extract used with an appropriate MAP, can retain the quality attributes and extend shelf life for approximately 14 days longer than the control (without natural extract and MAP), and a better performance is achieved by using greater amounts of natural extract and MAP1. 相似文献

In this experimental study, we use secondary task reaction time (STRT) to measure Attention to a media presentation and compare STRT to traditional self-report measures of Telepresence (immersion, social reality, spatial presence, and transportation) and enjoyment. Further, we compare the STRT measure with the composite items of Telepresence–Immersion. The results indicate that STRT may be useful for measuring some sub-dimensions of Telepresence. This paper presents an optimal control procedure for an on-board oscillator which provides basic switching and processing timing on the satellite. Alternate methods of measuring oscillator drift are described, and a linear discrete optimization model is developed. The optimum system minimizes a long-term phase error for any possible oscillator drift satisfying a certain constraint. The proposed on-board clock control scheme requires only a voltage-controlled oscillator on board and has a number of advantages over other methods. 相似文献

The problem of the optimization of the information rate with an assigned cost function is addressed. In the case of a constant envelope channel with a prescribed effective bandwidth as a cost function, an expression of the channel capacity is derived in the presence of Gaussian noise for large values of signal-to-noise ratio. The possibility of applying main AOP techniques, namely ozonation, H2O2/UV photolysis and TiO2 photocatalysis to provide a significant reduction of toxicity of pharmaceutical mixtures has been evaluated. For the preparation of the mixture six pharmaceuticals were chosen among those found at highest concentrations in Sewage Treatment Plant effluents, namely carbamazepine, clofibric acid, diclofenac, sulfamethoxazole, ofloxacin and propranolol. The blue-green alga Synechococcus leopoliensis and the rotifer Brachyonus calyciflorus were utilised to assess the toxicity of the mixtures after AOP treatments. All the toxicity tests were performed using chronic standardized bioassays. The best results were obtained with ozonation. With this type of treatment a complete removal of mixture toxicity on S. leopolensis was obtained even after the shortest time of application (1 min). The ozonation treatment leads also to removal of all the pharmaceutical mixture toxicity on B. calyciflorus, by applying the oxidizing agent for at least for 2 minutes. 相似文献

A procedure for estimating the undrained stress-strain behavior of sand from drained self-boring pressuremeter and seismic piezocone penetration tests is proposed in this paper. The procedure offers an inexpensive alternative to laboratory testing and avoids the uncertainty of the empirical methods based on index measurements such as the Standard Penetration Test blow count and the tip resistance in a Piezocone Penetration Test (CPTU). To check its validity, the proposed procedure was used to infer the undrained triaxial stress-strain curves and the results were compared with laboratory triaxial tests on undisturbed samples. The undrained limit equilibrium stability of a dike was also assessed using the inferred stress-strain behavior to illustrate the usefulness of the procedure. The result of the stability analysis was found to be in qualitative agreement with the observed performance of the dike during a recent field experiment attempting to trigger static liquefaction. 相似文献
