One of the critical issues regarding the quality of beer is the change in its chemical composition that occurs during storage. Decomposition of iso‐α‐acids results in an undesirable decrease in bitterness as well as a deterioration in the sensory profile of the beer. These changes are caused by the susceptibility of iso‐α‐acids to degradation owing to the influence of reactive oxygen species and light. The aim of this study was to investigate the influence of storage conditions (temperature, light) on the degradation of iso‐α‐acids during aging, with the main focus on monitoring the relationship between the turnover of iso‐α‐acids, the sulphur dioxide content and the antioxidative potential of stored beer as measured by electron spin resonance spectroscopy. In agreement with previous investigations, a significant decrease in the content of bitter compounds (up to 18 % relative to the original level, depending on storage conditions) was observed. A significant decrease in the antioxidant potential of beer was recorded simultaneously and the data confirmed a strong correlation between these parameters. Total anthocyanins (TAC) and individual anthocyanidins (AN) after hydrolysis were measured in 15 red and purple-fleshed potato cultivars produced in five different locations in the Czech Republic and a new cultivar Blaue St. Galler from Switzerland. It was found that TAC, expressed as cyanidin content, varied between 0.7 mg 100 g−1 FW (cv. Blue Congo) and 74.3 mg 100 g−1 FW (cv. Blaue Ludiano). Major differences in cultivars were found for AN relative abundance. For cv. Highland Burgundy Red a high proportion of pelargonidin (98.7%) was characteristic, whereas cv. British Columbia Blue contained almost exclusively cyanidin. Cultivars Violette and Vitelotte showed a relatively high content of malvidin. Cultivar Shetland Black differed from others with its higher content of peonidin (on average 36.7%). High petunidin abundance in the cultivars Valfi, Blue Congo, Salad Blue, Blaue St. Galler, Blaue Hindel Bank, Blaue Ludiano, Blaue Schweden, Farbe Kartoffel and Salad Red was found. TAC and AN contents highly corresponded with antioxidant activity (AA) determined with the ABTS, FRAP and DPPH assays in vitro. High AA was shown by the cultivars Vitelotte, Violette, Blaue Ludiano, Hafija, and Highland Burgundy Red. Increased height above sea level, higher annual sum of precipitation, and lower annual average temperatures caused higher AA and TAC. A high degree of hydroxylation and/or methoxylation of individual anthocyanidins could contribute in conjunction with other phenolics to high AA (peonidin, delphinidin and malvidin in the cultivars Blue Congo, Highland Burgundy Red and Shetland Black). Consequently, new red and purple-fleshed cultivars with high TAC and highly methoxylated and/or hydroxylated AN could be a promising source of favourable antioxidants in human nutrition.  相似文献

The combustion characteristics of promising alternative fuels have been studied extensively in the recent years. Nevertheless, the pyrolysis and oxidation kinetics for many oxygenated fuels are not well characterized compared to those of hydrocarbons. In the present investigation, the first chemical kinetic study of a long-chain linear symmetric ether, di-n-butyl ether (DBE), is presented and a detailed reaction model is developed. DBE has been identified recently as a candidate biofuel produced from lignocellulosic biomass. The model includes both high temperature and low temperature reaction pathways with reaction rates generated using appropriate rate rules. In addition, experimental studies on fundamental combustion characteristics, such as ignition delay times and laminar flame speeds have been performed. A laminar flow reactor was used to determine the ignition delay times of lean and stoichiometric DBE/air mixtures. The laminar flame speeds of DBE/air mixtures were measured in the stagnation flame configuration for a wide rage of equivalence ratios at atmospheric pressure and an unburned reactant temperature of 373 K. All experimental data were modeled using the present kinetic model. The agreement between measured and computed results is satisfactory, and the model was used to elucidate the oxidation pathways of DBE. The dissociation of keto-hydroperoxides, leading to radical chain branching was found to dominate the ignition of DBE in the low temperature regime. The results of the present numerical and experimental study of the oxidation of di-n-butyl ether provide a good basis for further investigation of long chain linear and branched ethers.  相似文献

Uncertainty has previously been identified as an important ingredient of engaging games. Design in games can create different levels of uncertainty in players that they can recognize and describe as being either attributable to external forces, such as chance or hidden information, or internal to their own understanding of what to do in relation to their own goals. While it appears that uncertainty can contribute both positive and negative play experiences, there is little work in trying to operationalize and measure this concept as a component of player experience. Reported in this article is an analysis of data from over 700 players using modern bi-factor analysis techniques resulting in a five factor psychometric scale which captures the broad feelings of players about uncertainty in games. Three of these specific factors appear to point toward a single generic factor of uncertainty that is internal to the players, one captures experiences relating to external uncertainty, with the final factor relating to player’s experience of exploring the game to resolve uncertainty. In order to further validate the scale, we conducted an experiment with a commercial puzzle game manipulating the duration of play with predicted outcomes on the different specific factors of the scale. Overall the scale shows promise with good statistical reliability and construct validity of the separate factors and so will be a useful tool for further investigating player experiences in digital games.  相似文献

Amplification of plasma waves in shielded graphene with inverted energy distribution of charge carriers is investigated theoretically. It is shown that graphene shielding allows one to increase an amplification factor of terahertz plasmons in several times compared to the case of amplification of unshielded plasmons due to strong field confinement of the shielded plasmons near graphene.  相似文献

Dielectric properties and structural characteristics of BaTiO3 ceramics are significantly influenced by small addition (2 wt%) of ZrO2. SEM and TEM observations revealed enhanced microstructural uniformity and retarded grain growth depending on sintering temperature. Above 1320°C, Zr diffusion into the BaTiO3 lattice resulted in a chemical modification of the tetragonal structure and the development of core–shell grains. Below 1320°C, TEM analysis showed ZrO2 at the grain boundaries as discrete particles (∼0.03μm). X-ray diffraction analysis revealed a decrease in the axial (c/a) ratio with decreasing grain size. A corresponding decrease in the spontaneous polarization, and twinned domain structures, were also observed in the fine-grained ceramics. These samples also showed a flattened permittivity response with temperature and significantly lower losses.  相似文献
