In this work the influence of different packaging strategies on the shelf life of ready to use peeled shrimps was investigated. First, the effectiveness of the coating (Coat) and the active coating loaded with different concentrations of thymol (Coat-500, Coat-1000, and Coat-1500) on the quality loss of the investigated food product packaged in air was addressed; afterwards, the thymol concentration that had shown the best performance was used in combination with MAP (5% O2; 95% CO2). Microbial cell load of main spoilage microorganisms, pH and sensorial quality were monitored during the refrigerated storage. Results of the first step suggested that the sole coating did not affect the microbial growth. A slight antimicrobial effect was obtained when the coating was loaded with thymol and a concentration dependence was also observed. Moreover, the active coating was effective in minimizing the sensory quality loss of the investigated product, it was particularly true at the lowest thymol concentration. In the second step, the thymol concentration (1000 ppm) that showed the strike balance between microbial and sensorial quality was chosen in combination with MAP. As expected, MAP significantly affected the growth of the mesophilic bacteria. In particular, a cell load reduction of about 2 log cycle for the samples under MAP respect to that in air was obtained. Moreover, the MAP packaging inhibited the growth of the Pseudomonas spp. and hydrogen sulphide-producing bacteria. The MAP alone was not able to improve the shelf life of the uncoated samples. In fact, no significant difference between the control samples packaged in air and MAP was observed. Whilst, the use of coating under MAP condition prolonged the shelf life of about 6 days with respect to the same samples packaged in air. Moreover, when the MAP was used in combination with thymol, a further shelf life prolongation with respect to the samples packaged in air was observed. In particular, a shelf life of about 14 days for the active coating under MAP compared to the same samples in air (5 days) was obtained.  相似文献

The secondary structure of legume (Phaseolus vulgaris L. and Lens culinaris L.) proteins was investigated by studying the amide I infrared absorption band in whole seed flours, before and after dry heating and autoclaving thermal treatments. The analysis procedure, set up on 7S and different model proteins, shows that the content of β-sheet structures in lentil is higher than in common bean (47% vs. 32%). The dry heating does not appreciably affect secondary structures in lentil, while it causes a reduction of β-sheets (to 13%), an increase of aggregates, and the appearance of random coil structures in common bean. The autoclaving treatment produces high amounts of aggregates in both legumes. However, in lentil, random coil structures are lower than in common bean and some β-sheet structures are still detectable. These results indicate that multimeric heat-induced complexes of legume proteins have a high stability because of the high content in β-sheet structures, in particular in lentil, which may adversely affect protein utilization.  相似文献

Poisson's ratio of polymeric materials, although generally assumed as a constant, is known to display a viscoelastic dependence on time, temperature, and strain. This article investigates the phenomenology of this dependence on two crosslinked epoxy systems with different glass transition temperatures. Poisson's ratio measurements are performed by contact extensometers simultaneously measuring the axial and transverse deformations under two different tensile testing conditions: (i) constant deformation rate, in which the effects of strain, strain rate, and temperature are highlighted; (ii) stress relaxation (or constant deformation), where the dependence of Poisson's ratio on time is studied at various strain levels. The viscoelastic Poisson's ratio increases as strain, temperature, and time increases, with trends markedly depending on the materials glass transition. POLYM. ENG. In view of possible applications as single-ion electrolyte for lithium batteries, some aspects of the lithium form of Hyflon Ion ionomer, a sulfonic short side chain (SSC) electrolyte, have been investigated. The synthesis of the ionomer and the successive membrane preparation is reported. An appropriate methodology for the direct salification of the ionomeric membrane from the SO2F form to lithium salt, using lithium hydroxide in absence of organic solvent has been found. Utilizing these SSC lithium ionomer membranes and though a particular methodology for the dehydration of the lithium ion membrane in non-aqueous media, it has been possible to achieve an ionic conductivity of 10−3 S cm−1 at room temperature [W. Navarrini, S. Panero, B. Scrosati, A. Sanguineti, European Patent 1,403,958 A1 (2003)]. Surprisingly it was observed that the membrane ionic conductivity depends on the dehydration methodologies adopted.  相似文献

The AISI 304 and AISI 1018 steels (frequently used in solar collectors’ plants) in contact with four different ionic liquids (ILs) suitable as diathermic fluids, were studied. Immersion tests were performed at 220 °C (the working temperature in such plants) for 10 days. The corrosion morphologies of the steels were investigated by scanning electron microscopy coupled with energy dispersive X-ray (EDX) microanalysis and the content of metals in the solution were detected via ICP-OES. The tests showed that the most performing IL is the ethyl-dimethyl-propyl-ammonium-bis(trifluoromethylsulphonyl)imide. The corrosion properties of the two alloys in contact with such IL were investigated by means of Tafel plots and resistance polarization at room temperature in open-to-air vessels.  相似文献

In this paper we present a new model to assess the firm value and the default probability by using a bivariate contingent claim analysis and copula theory. First we discuss an unfeasible case, given the current derivative market on corporate bonds, which involves univariate digital options to compute the risk neutral probabilities. We then discuss a feasible model, which considers risky interest rates, instead. Moreover, we develop in this framework a new methodology to extract default probabilities from stock prices, only, going beyond the standard KMV-Merton model. Besides, the non-observability of the Merton model’s state variable requires numerical methods, but the results can be unstable with noisy risky data. We show how the null price can be used as a useful barrier to separate an operative firm from a defaulted one, and to estimate its default probability. We then present an empirical application with both operative and defaulted firms to show the advantages of our approach.   相似文献

Carbon nanotube (NT) actuators were fabricated using the micromolding method. In order to prevent the nanotubes from aggregating, they were enclosed in a partially cross-linked polyvinylalcohol–polyallylamine matrix. A unimorph matrix bender in the form of a small multi-layered strip, 5 mm × 15 mm was fabricated. The resulting composite system: NT/PVA, solid polymer electrolyte and metal contact, was characterised using impedance analysis and cyclic voltammetry. Initial measurements on electro-mechanical transduction show a conversion efficiency of 0.2 μm/mV. An electrochemical model of the impedance of the system was then developed, with which the experimental results agree fairly well.  相似文献
