Phenolic compounds have long been associated with flavour and colour characteristics of fruits and vegetables and actually attract a great interest due to their health protecting properties. In this work, the influence of different power input of microwave baking on the amount of protocatechuic acid (1), tryptophan (2), chlorogenic acid (3), neo-chlorogenic acid (4), and cryptochlorogenic acid (5) marker compounds left over in peeled and not-peeled potatoes (Solanum tuberosus L., Agria cultivar) was assessed. A high-performance liquid chromatographic (HPLC) method with diode-array detection (DAD) was used to identify and quantify compounds 1-5. Other tubers were used to perform analysis of raw potato (control) and traditional baking potatoes products (boiled potatoes). Dielectric behavior of the irradiated tubers was also investigated to emphasize if microwaves treatments are suitable for food processing in terms of nutritional factor preservation. The main results of this work consist on the relevance of the water contents in potato matrixes during the baking processes since these have a crucial role to keep lossy features, to avoid thermal damages and to preserve antioxidant. The best compromise in terms of short baking time and reduced water and phenolic losses is obtained using 500 W as power input. 相似文献

The fatty acid compositions and the positional distributions of fatty acid in triacylglycerol (TAGs) and phospholipid (PLs) fractions of four cultured freshwater fish species (Salmo trutta, Ictalurus punctatus, Ictalurus melas and Micropterus salmoides) were investigated. As regards the TAGs fraction, the S. trutta (trout) and I. punctatus (channel catfish) species had the highest % content in n3 polyunsaturated fatty acids (PUFAs) and the lowest n6/n3 ratio; this ratio resulted always lower than 1 in all the considered fish species. The PLs fraction of the considered fish was very interesting because of the high percentage of PUFAs, both in phosphatidylcholines and in phosphatidylethanolamines. The fatty acid distribution among the three sn-positions of the glycerol backbone was non-random; generally, both n6 and n3 PUFAs were mainly distributed between sn-2- and sn-3-positions of TAGs while the contents in sn-1-position were generally lower; in PLs fraction these fatty acids preferred the sn-2-position. 相似文献

Guatavita Lake is a small, sheltered tropical high mountain lake located in the Colombian Andes, with a closed watershed and a maximum depth of 25 m. It is the freshwater source for human consumption in nearby small towns, as well as being a site of cultural value for the country, as it was a sacred place to indigenous peoples until about five centuries ago. As the structure and function of this aquatic ecosystem is poorly understood, this study provides initial knowledge on its phytoplankton biomass dynamics, which should be useful in designing efficient management plans with environmental baseline information for similar lakes elsewhere. Physical and chemical data, and photosynthetic pigment concentrations, were measured for the period November 1999–November 2000 at the central vertical axis of Guatavita Lake. The vertical profile of the chlorophyll‐a concentration was closely related to the dissolved inorganic nitrogen concentrations and the thermal stratification characteristics. The maximum chlorophyll‐a concentration in the metalimnion was recorded for the thermal stratification period (November 1999–June 2000). Deepening of the maximum chlorophyll‐a concentration began in February, continuing to June, when it reached its lowest value at the 15 m depth. The phytoplankton biomass values showed an increment within the entire water column at the beginning of the mixing period (July). The relation between the metalimnetic peak of chlorophyll‐a and the dissolved inorganic nitrogen concentration suggests the growth of the phytoplankton community is limited mainly by the availability of nitrogen. 相似文献

The AidB protein is involved in the adaptive response to DNA alkylation damages in Escherichia coli. Functional proteomic experiments were designed to elucidate AidB biological functions in the presence and in the absence of methyl methanesulfonate as methylating agent. Several proteins were identified in both conditions and according to their reported biological activities, the inter-actors were grouped into three different functional categories: stress response, energetic metabolic pathways and nucleic acid metabolism. Utilities face the challenge of enhancing long-term water security while minimising undesirable economic, social and environmental impacts of supply and demand management options. This paper provides an example of how the ecosystem services concept can be used to enumerate and organise broad impacts of water supply options. A case study of Adelaide, South Australia, is used to examine costs and benefits associated with different sources of water and source-water mix scenarios. Ecosystem service impacts are estimated using estimates from the literature. Seven water supply and demand management options are considered for Adelaide: 1) the River Murray, 2) Mt. Lofty Ranges catchments, 3) wastewater reuse, 4) desalination, 5) stormwater harvesting, 6) groundwater and 7) water conservation. The largest costs are associated with sourcing water from conservation measures such as water restrictions on outdoor watering estimated at $1.87/kL. Salinity damage costs associated with residential uses are estimated at up to $1.54/kL. Salinity damage costs of wastewater reuse were estimated at $1.16/kL. The largest benefit is coastal amenity services associated with stormwater harvesting and treatment estimated at $1.03/kL. Results show that there is a trade-off between financial costs and ecosystem services impacts with source-water mix scenarios with the highest ecosystem services cost having the lowest financial O&M cost and vice versa. The purpose of this new study was to determine the types and levels of major phytochemicals (non-nutrients) and nutrients in the different tissues from vegetative and flowering Moringa oleifera L. an important multipurpose crop. Rhamnose and acetyl-rhamnose-substituted glucosinolates were found in all of the M. oleifera tissues with different profiles depending on the tissue. In addition the tissues of M. oleifera had a relatively complex flavonoid profile consisting of glucosides, rutinosides, malonylglucosides and traces of acetylglucosides of kaempferol, quercetin and isorhamnetin. Fatty acid profiling of the different tissues showed that leaves were rich in palmitic (16:0) and linolenic (18:3) acid whereas seeds were predominated by oleic acid (18:1). Roots were rich in palmitic and oleic acid, whereas stems and twigs predominately contained palmitic acid. Potassium, magnesium and calcium were the predominant minerals in all of the tissues. Biogenic amines are organic nitrogenous compounds produced in wines mainly during malolactic fermentation. Its presence is a health risk for sensitive individuals and it could negatively affect the wine quality. The objective of this work was to determine the biogenic amines content in Chilean young varietal wines. For that, a liquid chromatographic method with pre-column derivatization was optimized and validated to achieve a reliable quantification of the most important biogenic amines in wines, i.e. histamine, tyramine, spermine, spermidine, putrescine, cadaverine and phenylethylamine. Using a face-centered central composite design derivatization and chromatographic conditions were optimized. Derivatization with dansyl chloride showed an optimum yield for all biogenic amines at 60 °C during 60 min. These derivatives were optimally separated with a C18 YMC-Pack ODS-A column set a 40 °C using a mobile phase composed of acetonitrile and water under gradient conditions. An effective separation and quantification of the biogenic amines was achieved in 40 min using ultraviolet detection at 254 nm. Validation was established according to ICH guidelines, calibrations in matrix fitted a linear regression model with R2 > 0.997. Repeatability (n = 6) and intermediate precision (n = 3) in matrix showed RSD values <2.34% and <3.16%, respectively. This method was applied to determine for the first time the biogenic amines content in Chilean wines. Twenty-seven samples of young varietal wines, i.e. Cabernet Sauvignon (n = 9), Merlot (n = 8) and Carménère (n = 10) were analyzed finding a biogenic amines content from 18.12 to 39.84 mg L-1, where putrescine showed the highest concentration in all grape varieties. No significant difference was found between grapes varieties regarding total biogenic amines content (P = 0.7842, df = 26).
