Microbial characteristics under different atmospheres (vacuum, air, MAP1: 80% O2/20% CO2 and MAP2: 5% O2/65% N2/30% CO2) of poultry patties made of a mixture of ostrich, chicken and turkey meat were evaluated. The meat preparations were examined for changes in pH, colour properties (CIE L*, a*, b*), headspace composition, and bacterial counts (total viable cell, psychrotrophs, Enterobacteriaceae, lactic acid bacteria, Staphylococcus spp., Brochothrix thermosphacta, Pseudomonas spp.). The use of a high O2 atmosphere (MAP1) quickly leads to a loss of the appealing red colour. A limited alteration occurred with use of MAP2 and vacuum. For total viable counts a cell load higher than 8 log cfu g?1 for the samples packaged in air, MAP1 and MAP2 at the end of storage was observed. Whereas, for the vacuum packed samples the cell load never reached values higher than 8 log cfu g?1. Enterobacteriaceae, B. thermosphacta and Pseudomonas spp. cell load was less with the vacuum (7.60, 5.06 and 7.17 log cfu g?1, respectively) and MAP2 packaging (7.08, 5.60 and 7.40 log cfu g?1, respectively). However, the high microbial loads suggest that an improvement of the microbiological quality of poultry meat is necessary if the producers are going to propose this new meat preparation on the market. 相似文献

Technological activities of Staphylococcus carnosus and Staphylococcus simulans strains isolated from fermented sausages 总被引:2,自引:0,他引:2
The aim of this study was to determine the technological properties of 2 strains of Staphylococcus simulans (Ssm12, Ssm21) and 4 strains of S. carnosus (SC28, SC31, SC54 and SC55) for the selection of a potential starter cultures to employ in the processing of dry fermented sausages. The strains were studied to evaluate nitrate reductase, proteolytic, lipolytic, decarboxylase and antioxidant activities as well as growth ability at different temperatures, pH and NaCl concentrations. Nitrate reductase activity was determined at 15, 20 and 30 °C. By spectrophotometric method all the strains were able to reduce nitrate to nitrite at the different temperatures but these results were not confirmed by the agar plate method. Antioxidant and lipolytic activities were evaluated by spectrophotometric assay. All the strains showed antioxidative enzymes superoxide dismutase (SOD) and catalase whereas all appeared unable to hydrolyse pork fat. Proteolytic activity was determined by agar plate method, spectrophotometric assay (OPA) and sodium dodecyl sulphate gel-electrophoresis (SDS–PAGE) and all strains appeared to be able to hydrolyse sarcoplasmic proteins but not myofibrillar proteins. Finally, all the strains grew at 15 and 20 °C, in presence of 10%, 15% and 20% of NaCl and at pH 5.0 and 5.5 and were unable to produce histamine, cadaverine and putrescine. The results showed that all strains studied possess useful technological activities that would make them eligible as a good starter cultures for fermented sausages. 相似文献

This paper describes the development of pH-sensitive poly(methyl methacrylate-acrylic acid) copolymers for the enteric coating
of pharmaceutical products for oral administration. To obtain the dissolution at the desired pH level, different pH-sensitive
polymers are available on the market. Usually, for each desired dissolution pH, an ad hoc polymer is designed. Thus, different
dissolution pH values could ask for completely different polymers. Instead, the materials proposed in this work are copolymers
of the same two monomers, and the different dissolution pH was obtained by changing the volume fraction of the hydrophobic
methyl methacrylate monomer to the hydrophilic acrylic acid monomer. Increasing the volumetric percentage of methyl methacrylate
causes the polymer to dissolve at increasing pH, until the dissolution does not take place at all, and it is replaced by a
slow swelling phenomenon. The copolymers obtained were characterized by differential scanning calorimetry, in order to evaluate
their glass transition temperature, and these latter were related to %MMA. The molecular weights of the pure polymers (PAA,
PMMA) were measured by intrinsic viscosity, to further validate the glass transition temperatures observed. The dissolution
of the copolymers was carefully tested in buffer solutions for a dense set of pH values. A linear relationship between dissolution
pH and volumetric percentage of methyl methacrylate was obtained from these measurements. As a result, for any physiological
compartment, the copolymer which dissolves at the pH of interest can be easily synthesized. 相似文献

Olive oil traceability by means of chemical and sensory analyses: A comparison with SSR biomolecular profiles 总被引:1,自引:0,他引:1
The relationship between genetic diversity and phenotype in olive, instrumental to improve the efficacy of olive clonal selection, is still far from being fully understood. This work reports on a comparison made between plant SSR genetic data and quality of monovarietal olive oils. Nine monovarietal oils produced by selected genotypes were characterised under chemical and sensory profiles. Fatty acid compositions were determined to evaluate quantitative differences among oils; some fatty acids are actually highly correlated with the genetic matrix, and PCA of fatty acids composition explains 85.53% variability. Moreover some oils characterised by high levels of oleic acid appeared interesting from a nutritional standpoint. Organoleptic profiles evidenced differences especially for the attributes defined as “pleasant flavours”; oils obtained by different genetic matrices were characterised by different flavour intensities of tomato or artichoke, almond or aromatic herbs, correspondence analysis among sensory pleasant attributes and olive oil samples explaining 91.68% variability. 相似文献

The interaction of a living organism with external foreign agents is a central issue for its survival and adaptation to the environment. Nanosafety should be considered within this perspective, and it should be examined that how different organisms interact with engineered nanomaterials (NM) by either mounting a defensive response or by physiologically adapting to them. Herein, the interaction of NM with one of the major biological systems deputed to recognition of and response to foreign challenges, i.e., the immune system, is specifically addressed. The main focus is innate immunity, the only type of immunity in plants, invertebrates, and lower vertebrates, and that coexists with adaptive immunity in higher vertebrates. Because of their presence in the majority of eukaryotic living organisms, innate immune responses can be viewed in a comparative context. In the majority of cases, the interaction of NM with living organisms results in innate immune reactions that eliminate the possible danger with mechanisms that do not lead to damage. While in some cases such interaction may lead to pathological consequences, in some other cases beneficial effects can be identified. 相似文献

Thermal stability is a critical criterion for assessing the long-term stability of perovskite solar cells (PSCs). Here, it is shown that un-encapsulated co-evaporated MAPbI3 (TE_MAPbI3) PSCs demonstrate remarkable thermal stability even in an n-i-p structure that employs Spiro-OMeTAD as hole transport material (HTM). TE_MAPbI3 PSCs maintain over ≈95% and ≈80% of their initial power conversion efficiency (PCE) after 1000 and 3600 h respectively under continuous thermal aging at 85 °C. TE_MAPbI3 PSCs demonstrate remarkable structural robustness, absence of pinholes, or significant variation in grain sizes, and intact interfaces with the HTM, upon prolonged thermal aging. Here, the main factors driving TE_MAPbI3 stability are assessed. It is demonstrated that the excellent TE_MAPbI3 thermal stability is related to the perovskite growth process leading to a compact and almost strain-stress-free film. On the other hand, un-encapsulated PSCs with the same architecture, but incorporating solution-processed MAPbI3 or Cs0.05(MA0.17FA0.83)0.95Pb(I0.83Br0.17)3 as active layers, show a complete PCE degradation after 500 h under the same thermal aging condition. These results highlight that the control of the perovskite growth process can substantially enhance the PSCs thermal stability, besides the chemical composition. The TE_MAPbI3 impressive long-term thermal stability features the potential for field-operating conditions. 相似文献

LFB1/HNF1 and LFB3/HNF1ß bind DNA as dimers and formheterodimers together in vivo and in vitro. The dimerizationdomain has been located in both proteins in the 32 N-terminalresidues. In previous papers we have described the conformationalstability as determined by CD and the secondary structure byNMR studies of a peptide with the amino acid sequence of thedimerization domain of LFB1/ HNF1. This study presents a morecomplete characterization of similar synthetic peptides spanningthe LFB3/HNF1ß dimerization domain and the /ßheterodimer. The HNF1 peptides represent an example of structureswhich cannot be determined by NOE data alone because they arenot sufficient to define one unique solution. An approach ispresented which combines NMR data, the protein structure databaseand structural analyses according to known principles of proteinstructure. Zirconium oxide (ZO) has outstanding mechanical properties, high biocompatibility and high resistance to scratching. Since
dental implants are made with ZO and the genetic effects of ZO on osteoblasts are incompletely understood, we used microRNA
microarray techniques to investigate the translation process in osteoblasts exposed to ZO. By using miRNA microarrays containing
329 probes designed from Human miRNA sequences, we identified in osteoblast-like cells line (MG-63) cultured on ZO disks several
miRNA whose expression was significantly modified. The most notable regulated genes acting on osteoblasts are: NOG, SHOX,
IGF1, BMP1 and FGFR1. The data reported below represent the first study on translation regulation in osteoblasts exposed to
