Antioxidative properties of Geranium macrorrhizum, Potentilla fruticosa and Rosmarinus officinalis (as a reference) extracts were evaluated in Dutch style fermented sausages. Extracts were incorporated into sausages during preparation. The sausages were subsequently fermented, tested and compared to a standard spices mix, traditionally used for the production of such sausages. Formation of the primary oxidation products – peroxides, and secondary – TBARS and hexanal was monitored. The polar extracts from Potentilla showed some antioxidant activity, especially in combination with ascorbate, however the activity was low compared to the standard spices mix. Polar extracts from Geranium showed only negligible antioxidant activity.  相似文献

 The behaviour of α-, β-, γ- and δ-tocotrienols (structurally related to tocopherols with naturally trans-configurated double bonds in the side-chain) during HPLC on a permethylated β-cyclodextrin phase was studied. A newly developed isocratic HPLC method is described with an acetonitrile/water (58:42 by vol.) eluent and fluorescence detection at an emission wavelength of 330 nm (excitation wavelength = 295 nm). Each of the separately injected tocotrienols exhibited four peaks. The four separated components of α-tocotrienol were identified by spectroscopy (MS, 1H-NMR, FTIR) to be structural side-chain isomers. The order of retention times was determined to be all-cis-α-tocotrienol followed by cis-trans-/trans-cis-α-tocotrienol (differentiation between the two compounds was not possible) with all-trans-α-tocotrienol as the last eluting isomer. The effect of supplementation of vitamin E (200 W kg−1 feed) in the diet of pigs on colour stability and lipid oxidation in minced pork was studied. Control and enriched diets were provided for the last 12 weeks before slaughter. Half of the samples of minced shoulder meat from control and supplemented pigs were packaged on trays with oxygen-permeable overwraps and half in modified atmosphere packs (initial gas mixture: O2/CO2/N2 = 66/ 27/7). Meats were stored for 10 days at 7 °C in an illuminated retail display cabinet. The meat from vitamin E-supplemented pigs was more resistant to lipid oxidation than was the control meat. Gas packaging appeared to increase lipid oxidation in control meat, whereas lipid oxidation was stable in meat from vitamin E-supplemented pigs. Colour stability for gaspacked meat was comparable for both dietary groups. However, oxygen-permeable overwraps had a negative effect on colour stability in vitamin E-enriched meat. The reason for this is not known. The shelf-life of enriched and control meat was similar. Thus supplementation of pig feeds with vitamin E is recommended if an improved stability against lipid oxidation of (minced) pork is required.  相似文献

An explicit slice-based mode type selection scheme for use in H.264/AVC has recently been developed, which reduces the burstiness effect of standard frame-based H.264/AVC by breaking up the Group of Picture structure. In this paper, slice-based encoded video streams are characterized using the token bucket traffic model and compared to standard frame-based encoded streams. Both lossless, loss bounded and delay bounded token bucket models are investigated and the high quantiles are found for the amount of loss. Loss above the amount given by the high quantiles will happen only with a very small probability. It is shown that the reduced burstiness for the slice-based video encoding leads to lower token bucket parameters compared to frame-based video encoding for a stream without scene changes, and a larger reduction in the token bucket parameters compared to the frame-based video encoding when a small amount of delay or loss is allowed for the stream with scene changes. Next, reshuffling of the frames of the video streams with scene changes is employed to better understand the effects of long-range dependence on the token bucket parameters. Only small effects are found from reshuffling the scenes, but reshuffling of the frames inside the scenes leads to lower token bucket parameters. Finally, an approach to estimate the parameters for the token bucket model using simple characteristics of the slice-based stream is developed.  相似文献

Observers' perceptions of a male and a female torso were investigated using monocular and stereoscopic images under varying conditions of illumination. Observers judged the shapes of these torsos by adjusting a gauge figure to estimate the local slant and tilt at numerous probe points arranged in a lattice over the torso's surface. The results revealed that the judged surfaces in the monocular and stereoscopic conditions were related by an affine stretching transformation in depth that accounted for approximately 95% of the between-condition variance. There was also a strong affine component between the judgments obtained for the different illumination directions, although a further analysis of the residuals indicated that changing the direction of illumination influenced perceived structure in a piecewise manner. The authors report on different methods to probe the structure of visually perceived surfaces in 3 dimensions. The surfaces are specified by patterns of shading with Lambertian and specular components, which deform over time and over stereoscopic views. Five observers performed 2 probe tasks, 1 involving the adjustment of a punctate probe so as to be on the apparent surface and the other involving the adjustment of a small gauge figure that indicates surface attitude. The authors found that these rather different methods yielded essentially identical depth maps up to linear transformations and that the observers all deviate slightly from veridicality in basically identical ways. Historically, human civilisations have striven to protect themselves against natural and man-made hazards. The degree of protection is a matter of political choice. Today this choice should be expressed in terms of risk and acceptable probability of failure to form the basis of the probabilistic design of the protection. It is additionally argued that the choice for a certain technology and the connected risk is made in a cost-benefit framework. The benefits and the costs including risk are weighed in the decision process. A set of rules for the evaluation of risk is proposed and tested in cases. The set of rules leads to technical advice in a question that has to be decided politically.  相似文献
